Reflections Home away from home Welcome to another exciting issue – this month our special edition is on hotels and resorts. The hospitality industry has gained prominence over the last many years ever since travelling for business as well as leisure has moved on new spheres. Hotels and resorts no longer market themselves as transitory accommodation for the visitor but prefer to appeal to clients as ‘home away from home’. In the September issue of Crème de la Crème, we take a look at some unique properties around the world. We bring you some of the most expensive hotel rooms from around the world. Fashion designers have been lured by the arc lights of hospitality industry – there are quite a few properties designed by them and we bring your our favourites. The Crème de la Crème team also lists out our most favourite aspects of select hotels in Oman. From hospitality, move on to luxury and futuristic as we feature two amazing automotives – the Spyder variant of Audi and Maserati GranCabrio Fendi. Haute Hotels Hotels designed by fashion designers are soon gaining ground in a world where a brand name can change just about everything. Kelly K takes you on a whirlwind tour of leading hotels designed by international fashion designers
W
hat do Versace, Christian Lacroix, and Ralph Lauren have in common? They are among the fashion designers who know that their clientele want the same qualities in a hotel as they do in clothes: excellence, style and impeccable taste. The concept is not new, but its proven success means that hoteliers continue to seek out partners in the fashion world. In Dubai, the Italian fashion house of Missoni has a 250-room hotel planned for the famed Palm Island Jumeirah, Giorgio Armani unveiled his minimalistic and contemporary hotel at Burj Khalifah and Palazzo Versace has already broken ground in the booming city. In Kuwait, Missoni has opened their much awaited hotel and Moschino plans to open a fashion/hospitality hybrid hotel soon. Oman too will have the much-talked about Missoni

We went to several industry experts for their thoughts on the parallels between these design worlds and the growing presence of fashion hotels. Style guru Todd Oldham believes that clothiers are sensitive to the body in a way that is often overlooked in interiors. “Fashion designers are more sensual in their approach as to how to ‘wear’ a room,” said Oldham. “They’ll design rooms that people look good in, as opposed to rooms people litter by being in.” A crossover designer himself, Oldham transitioned from runway to reception when he
designed The Hotel in South Beach in 1999. The Hotel is at once “conservative and bawdy” and complements its jet-setting guests with playful colour schemes. Oldham’s custom touches abound: satin-ribboned pillows, handairbrushed tiles, tie-dyed robes, all in a soft riot of coluors. A transformed landmark building in the heart of South Beach’s Art Deco district, the lifestyle is indoor/outdoor retro chic with ultramodern amenities. He also recognises the similarity in approach that an architect and fashion designer may take to a hotel project. “The tenets of design come from the same place. I like to ask myself: who’s joining me here? How can I make this the loveliest experience possible?” Buick Audra agrees. Audra is a New York-based

Another modern classic, Oscar de la Renta brought a casual version of his couturier elegance to the villas and rooms at Tortuga Bay in Punta Cana on the eastern coast of the Dominican Republic
designer and stylist whose clients include Joss Stone, Alison Krauss and Rachel Hunter. “I am of the mind that all art is related, especially when you get into visuals that all break down to balance, colour, texture and structure.” Her taste runs towards the “modern fun-house effect” of Christian Lacroix’s Hotel du Petit Moulin. “I would absolutely choose a hotel based on its fashion influence,” says Audra. “Design of a space contributes so greatly to how you feel in that space. To be able to express a vision on such a huge scale must be thrilling for such visionaries.” Occupying the site of a former bakery in the Marais neighborhood, Christian Lacroix says of his hotel: “It’s like couture, where the harmony is created from a puzzle of inspirations.” Each of the 17 rooms has a unique theme, merging lush fabrics like velvet and taffeta with sixties furniture and 17th century architectural detail. HotelChatter.com said of Hotel du Petit Moulin, “If you never get the chance to attend a Parisian fashion show, staying in this hotel should suffice.”

There is also a business advantage to encompassing guests in a total design environment. “A designer hotel acts as a great branding tool for a major brand that seeks a new audience,” says Brandusa Niro, editor in chief of TheFashionWeekDaily.com. “A hotel is a great way to open up an old-school brand to the new and the young.” For instance, a guest at the Palazzo Versace will be immersed from floor to ceiling in the Versace lifestyle — linens, rugs, cutlery and toiletries are all part of the experience and of course, available for purchase at the on-premise Versace boutique. Not all designers are out to mass-market a line of furnishings. The G Hotel in Galway is milliner Phillip Treacy’s ode to his favorite artists and designers. The “g” is for glamour as much as

for Galway. He chose a palette of black, white and fuchsia, Andrew Martin chairs for lounging and custom made Etro fixtures for the bath. “I want to entertain and surprise as well as to delight,” says Treacy on the hotel’s website. “But it is the impression of glamour that I most want to convey.” Treacy says of his opus “Each guest responds to this experience in a quite different way but for each of them it is their moment on the red carpet.” Treacy’s signature is prominent in The Pink Salon, a lounge with camouflage print chairs, blackand-white vortex carpet and, what else, shocking pink walls Fusion of new and old elements is a recurring motif with fashion designers, who often give classic silhouettes new twists in a clothing collection. John Rocha’s Morrison Hotel in Dublin is an exercise in sleek reserve in every way that The G is not, using mostly neutral tones and organic shapes, yet it is set within the façade of an 18th century mansion. Rocha is known as the Calvin Klein of the UK and his sleek, east-meets-west aesthetic has drawn celebrities like Christina Aguilera, Beyoncé and Kate Moss, among others. The furnishings are quiet, varied more in texture than colour – smooth stone floors are punctuated with grey handmade carpets, furnishings add splashes of orange and gold. The building incorporates the 18th century façade of a Georgian townhouse with a contemporary, south-facing front onto the River Liffey. Vincent de Cotiis uses similar contrasts throughout STRAF hotel in Milan, juxtaposing rough industrial textures like concrete with the warmth of antiqued mirrors, high tech amenities with rough-hewn slate. “I imagine the STRAF as a type of installation; from which I began to extract a multitude of elements with contemporary art,” said Vincent de Cotiis, a designer for Haute. Rough slate, burnished brass, hand-aged mirrors and custom designed furnishings are paired with high-tech touches like
chromotherapy chairs and LCD televisions in each room. “A hotel by a fashion designer is a great way of expressing the brand philosophy and the lifestyle that a designer sees behind the clothes,” says Pia Catton, author of White Shirt and a seasoned fashion reporter. “The Ralph Lauren sense of interiors is very comfortable and what you want in a hotel is to feel comfortable and at home.” Lauren has been visiting Round Hill Hotel in Jamaica for over 20 years and is a partial owner. A $6 million renovation in 2007 was largely dedicated to redesigning the guest rooms under Lauren’s direction. He transformed this former pineapple and coconut plantation into an elegant yet laidback resort just west of Montego Bay, Jamaica. There are 36 ocean front rooms in the Pineapple House 27 private villas; nearly all have their own pool. The atmosphere is relaxed - white stone floors, mahogany and bamboo four-poster beds and understated Ralph Lauren Home collection furniture compliment bay views. Tortuga Bay is the first Dominican hotel to be included among the elite Leading Small Hotels of the World. “The de la Renta home line is elegantly tropical,” says Catton. “I think it would give you a wonderful feeling of being in Cuba in the ‘50s.” Fifteen villas, each with their own manager, are perched on the edge of the Caribbean. The rooms are the work of Oscar de la Renta, who has a home of his own nearby. Custom designed fabrics compliment the locally crafted mahogany and rattan furniture. “I wanted guests to feel as if they were in my home,” de la Renta told Vogue at last year’s opening. The only question left is: what on earth to pack?

n old Persian proverb goes like this: Real estate and carpets can get sick, but never die. It couldn’t be truer than in a scenario much of the world is currently going through today. The real estate market may be facing a slump but experts predict it will not be long before the rise happens. As for carpets, the woven wonders besides bringing aesthetic beauty to homes are also seen as alternate investment options. While they do serve utilitarian purposes, carpets have gone on to become
cherished pieces of art. In fact many people have started discovering how valuable some their investments have become over the years. While all carpets do not serve as investment pieces, rare and hand woven pieces bring home the biggest prize money. Persian carpets remain the most valuable and demanded variety. Of these, hand knotted carpets are considered to be the best choice, be it an art object or investment. Though rare and definitely not easy to come by, the 18th century French Savonnerie carpets, which were made for the French Royal family are among the costliest. And understandably hand-knotted Persian carpets are more appealing and vibrant than factory rugs. Persian carpets are made from pure wool, which makes it durable and even improves with age. While factory manufactured carpets could wear out with time, the hand made variety take on a shiny embossed look after several years wear which also increases the value of the hand-knotted Persian carpet. Carpets are often compared to art – the right choice can assure you good returns as time passes. Which again brings us back to handmade Persian carpets. One of the main reasons Persian carpets are popular among buyers lies in the fact that it can be sold and purchased at high prices in all developed countries making them a currency in their own right. Unlike other investments like property and stocks, Persian carpets can be conveniently transported and stored anywhere. Tabriz: They have many unique designs, but the typical pattern is filled with dense floral motifs, large palms, vases, or vivid hunting scenes or pictorials in the field. These patterns can be with or without a medallion, and geometric designs are also seen. This variety is of exceptional quality too, with the carpets being made from wool, silk, or a combination of the two. Isfahan: This rug is hand knotted with wool/silk on a cotton foundation. Its main colour is sea green with a burgundy border. Patterns include pictorial and tree-of-life schemes, as well as the Shah Abbas field with its floral vines. The knotting on these rugs are fine and even throughout. It is believed by carpet auctioneers that this particular variety will be in much demand in the next few years. Nain: A favourite of collectors, these rugs and carpets have curvilinear patterns. Its unique characteristic is a single medallion set in a blue or ivory background. They are woven on cotton, or on silk and are mostly beige and blue, with stunning silk highlights. Besides Persian carpets there are a few other handmade varieties that are also popular. The Carpet Oasis exhibition, an annual carpets fair held at the Dubai Airport Expo during the Dubai Shopping Festival is a good haunt for carpets collectors and buyers. The exhibition has been growing in fame and is among one of the most renowned handmade carpet exhibitions in the world today. The exhibition showcases masterpieces of handmade carpets from the carpet capitals of the world. There are five factors that affect the quality and price of carpets which every buyer has to keep in mind: the number of the knots, the material being used (preferably wool or silk), the origin of the carpet, colour combination and design. The size, age, country of origin, quality of the wool or silk, dyes and knotting, and intricacy of design are all important aspects when one values carpet. fter the recent release of sketches of the Audi urban concept, Audi has now added a Spyder variant of the technical study to be presented at the International Motor Show (IAA) in Frankfurt. The 1+1-seat, ultra-light car for congested urban spaces does not fit under any of the conventional categories – the Audi urban concept combines elements of a racing car, a fun car and an urban car into one radical new concept. The Urban Concept Spyder will share the same basic features as the orginal Urban Concept; that is, it will continue to use eye-popping 21-inch alloy wheels, a carbon fiber-reinforced plastic (CFRP) body shell, and a 1+1 seating arrangement that places the passenger to the right of and behind the driver. The exterior appearance will be roughly the same as well. The Spyder retains the R8-style side wings, along with the Audi corporate face, complete with

narrow LED running lamps and headlights. A visionary concept car isn’t complete without some crazy doors; on the Spyder, they open up and to the rear of the car instead of swinging out. Beneath the CFRP shell, the Spyder gets the same powertrain as its fixed-roof sibling. Two electric motors, powered by a lithium-ion battery pack, help whisk the car along. No power figures were given, but Audi says to expect that the Spyder will accelerate “powerfully.” Not much else appears to differ from the Urban Concept coupe, but that’s not necessarily a bad thing: dropping the top on a car usually makes it a little more enjoyable. Besides, having a conversation with someone on the sidewalk about how cool (or green, in this instance) your car is doesn’t require you to roll down the windows if a roof isn’t in the way.

rtist and Bait Zubair Art Advisor & Manager Sarah White along with Omani artist Juma Al Harthy will showcase an exquisite collection of art works end of this month that pays tribute to the historical Jabreen Fort. Sarah White talks to us about the exhibition and her journey as an artist. It has been a while since we have had the opportunity to see your works. What has been keeping you busy? We are very busy at the moment preparing our new wing that will open at Bait Al Zubair museum before the end of the year and also various new exhibits of collections not as yet viewed. We are also working on a fabulous new series of books initiated by H.E. Mohammad al Zubair called Inspired by Tradition - the first of which is nearly finished
and traces Oman’s architectural journey from ancient to modern. So that keeps me quite busy !!! In the evenings and at weekends I paint. I am working on this show and the annual fine arts festival arranged by the Omani Society for Fine Arts and other shows I am preparing for. Please tell us about the forthcoming exhibition. This forthcoming exhibition is being curated Fahad Al Hasni the exhibitions and collections officer at Bait Al Zubair. The show is being held at Shangri-La’s Barr Al Jissah Resort & Spa and is situated in the art gallery in Al Bandar hotel opposite the Al Tanoor restaurant. The art shows we put on in partnership with our colleagues at Shangri-La are aimed at exposing the very best of creative talents in Oman and nurturing art and culture in Oman. The venue also exposes the artists to the world through the guests of the three hotels and enables them to experience the art and artists of Oman.

I would hope that each piece of work is individual but follows a thread of study and contemplation. All the works I am exhibiting have never been shown before and they have all been completed this year
Juma and myself have been talking about showing together for a long time, and finally it is happening. Both of us have been inspired by Jabreen and have produced numerous works connected to this monumental 17th century palace that stands as a testament to Oman’s rich history and heritage. Although we are both using Jabreen in many of our works it is not a literal representation but a response to space and its decorative features that transport us back in time. Your works have struck me as being lively, colourful yet intense. Is it a reflection of your personality? I guess every artist’s work reflects their personality. My work has often been described as intense and slightly unnerving! Sometimes I am torn between my heads as arts advisor, curator and artist, as the first two I tend to over intellectualise my work and stress over meaning, context and relevance- whereas as an artist I want to have no fear and create- make a mess- and explode with ideas and colour! So on one hand I want to be planned and the other spontaneous.
”
Over the years how do you feel you have changed as an artist? Studying art has trained me in various techniques and processes in which to produce my work. On my artistic journey I began at school producing powerful pieces expressing my concerns with various key issues like pollution, drug and alcohol abuse, prostitution, consumption, poverty and mental health issues. I then spent my art foundation year preparing my portfolio to get into a degree course. At this stage I was focusing on studying people, through life drawing and studies. I used to have a sketch book with me everywhere I went I sketched what I saw on buses, trains, cafes and at homefascinated by the human form, and the complexity of our anatomy, facial expressions and moods. Then at Bristol where I studied for my first degree I become obsessed with the man made environment. Bristol is a historical city that once had a very thriving port and many derelict buildings associated with this remain- and they became my fascination. I spent my time exploring them, sketching, painting and making etchings. Imagining what these lonely discarded buildings once where, feeling the spirit

I used to have a sketch book with me everywhere I went I sketched what I saw on buses, trains, cafes and at home- fascinated by the human form, and the complexity of our anatomy, facial expressions and moods of their history and the layers memory they contain- at this time I was also travelling to Oman and experiencing the same interests and feelings for my exploration of mud brick settlements and fortifications. I first came to Oman in 1986 and from day one started painting and sketching madly wishing to record all I saw. Then on to my second degree at the Royal College of Art in London where my focus became the city with its innumerable layers of history and symptoms of city life. Then back to Oman and its vernacular architecture. I began with the literal and now I feel like I am finding my feet, understanding how I want to work here. I strongly believe you have to begin with the basics and understand your subject and then experiment and explore your ideas and inspirations more diversely, but they need strong foundations. I am still focused on my response to the man-made environment and the people I interact with, and more recently I have been looking at how we humans adorn ourselves. 64

Are your works for the new exhibition different from what you have produced in the past? I would hope that each piece of work is individual but follows a thread of study and contemplation. All the works I am exhibiting have never been shown before and they have all been completed this year. Please tell us about the large canvas that you have created comprising of smaller paintings. Last year I started working with multiple mini-canvases and connected them to make one large piece. I exhibited one of these at the 2010 Annual Fine Arts Festival and won an award for it. It was called ‘A Life Electic’ and deals with my identity as a ‘third culture’ artist. I have used the same idea in some of these works in this exhibition - where each mini-canvas is connected and multiple images brought
together. I have always enjoyed working on connecting pieces together. Please tell us how and Juma Al Harthy decided to exhibit together. I have known Juma for over a decade and as expressed earlier we have wanted to arrange a show together for sometime. We both have quite different styles and I have admired Juma’s work for many years, especially with our joint Jabreen interest. We commissioned Juma for ShangriLa’s Barr Al Jissah Resort & Spa and his work can be seen at the reception and lobby of Al Waha hotels. He has also exhibited at numerous shows at Bait Al Zubair museum and I have shown with him at several group shows. Did you find it easy to not tread into each other’s spheres especially since you have similar themes? We did not work together on this show, we have both been working in our own studios for the same goal- the exhibition. And although our focus has been Jabreen, we have both worked in our own particular styles. We compliment each other. We hope that we will inspire visitor’s to our show to visit or re-visit Jabreen and also be inspired. You have been in Oman for a long time. Would you say that the art scene is changing? Life is all about change! Whether you are in Oman or not. And yes, art, like everything else is changing, especially with all the new technologies we have and new types of paint. We need more art in Oman, more international exposure not just for Oman’s artist but we need more international art
here for both the audience and artists to grow. What would you like to see improve or change in the art world pertaining to Oman? I would like to see more investment in art education at all levels. Art is such an important subject that is often disregarded, but art helps us to communicate and to think on a more deeper level. Sometimes we are all too busy rushing around being busy, sometimes we need to feed our spirit and get lost in a painting and appreciating each stroke! It would be great to have more galleries also and get more people interested in art and culture. Are there any interesting aspects or information about the exhibition that you would like to share with our readers? The show will be on for 2 months so there is plenty of time to visit. The gallery is open everyday from 10am10pm and purchases can be made through the Mocha Cafe adjacent to the gallery. The opening night will be on the 25th September and the show will run till the 25th November..

An interview with the associates to learna more about the organisation... Please tell us about the setting up of Tabanlioglu Associates. Who was the brain behind the famous organization and who are the team members currently running the show? Tabanlıoğlu Architects was established by Arch. Murat Tabanlıoğlu in collaboration with his father Dr. Hayati Tabanlıoğlu in 1990. Arch. Melkan Gürsel Tabanlıoğlu joined the group in 1995. Murat Tabanlıoğlu (RIBA, Chartered Member) studied architecture at Vienna Technical University and his partner Melkan Gürsel Tabanlıoğlu studied architecture at Istanbul Technical University and attended Polytechnic University of Metropolitan Catalonia for her MA, she has been selected as one of the “Europe 40 under 40” for 2008. The corporate structure of Tabanlioglu Architects includes Project Management, IT, R&D departments organizing all the material and company data supporting the five project groups which behave like separate studios managed by five senior architects, all supervised by Melkan and Murat directly. We have been practicing challenges in terms of scale as well as innovation, including highest tower of Turkey (Istanbul Sapphire) or the largest construction of Europe (Zorlu Center), first Modern Arts Museum of the country (Istanbul Modern) any many other pioneering works. Last year Tabanlioglu Architects won Best Cultural and Public Sector Award for its Tripoli Congress Center in Libya, while the founders, Murat and Melkan Tabanlioglu, jointly won Architect of the Year in the Middle East. Tripoli project has been awarded in many other international platforms, another one being the best public building of the world, selected by International Property Awards and Cityscape Global. Following the success of Tripoli project, another African President, asked for a congress building in the capital Malabo of Equatorial Guinea. The building is completed and opened before the 17th Ordinary African Union Summit in June 2011. How competitive is the market? How do manage to stay different from the other players in the market? That’s why we first visualize “who” would live/work in these spaces, and how much more they feel relaxed and happy in these buildings, in harmony with the surrounding environment and with their neighbors. What are your ongoing prominent jobs? Marmara Forum, Pelican Mall and Asmacatı Meeting Point have been the three shopping facilities completed and opened during 2011. Fitness Center in Almaty is recently completed. Bodrum International Airport will also be completed by the end of the year. Besides there
are several commercial and residential projects under construction, like Zorlu Levent Office Tower, ESAS HQ, Tarabya Hotel Renovation, Alacati Resort, Camlica Residence etc. the mix-use project Zorlu Center (700,000 sqm) is the biggest ongoing project in Europe, housing residential, offices, hotel, shopping facilities and most importantly a 2500-seat performance hall. When assigned a project, how much of your team’s input is interspersed with that of the client? The environment, topography, existing social and built values, requirements and the buildings’ interaction with direct users and the public are the basic determinants to start the project. The clients’ brief is one of the criteria to start the project. Relying on the given the data, we develop the project in our own architectural language. Has the after-effects of the global economic depression subsided in the field of construction and architecture? How did you weather the storm? A first glance at Turkey’s performance in the current crisis showed that it has managed to weather the global stormy conditions relatively well and avoid collapsing into a full-fledged currency and financial crisis; Turkey was lucky and more prepared, compared to other European counties, and as the studio we didn’t feel

the harm, we already had many projects in Turkey and we continued. Construction being the leading production sector in the dynamic country, we have large investments ongoing, especially the residential projects, by public sector and private sector investors. Is architectural design art or science? Or a mix of both? Please elaborate. One of the big issues in urban life is to make the city interactive so that people become truly cosmopolitan, in that sense, environmental quality and user satisfaction is very important. To motivate an interactive, lively social mood, we offer multi-functional architectural approaches, which will define the new social routines towards a more extrovert urban lifestyle. The transitivity and synergy born out of architecture will encourage the
positive transformation. Buildings are not sculptures, but also they neither only construction; they are a part of life; they should make life easier, happier and more beautiful. Like Buckminster Fuller said once “When I am working on a problem I never think about beauty. I only think about how to solve the problem. But when I have finished if the solution is not beautiful, I know it is wrong.” Please tell us about the awards received by your organization. The office has been awarded several international and national prizes; Tabanlıoğlu received the 1st prize in the competition for the Bodrum Airport International Terminal in 1998 (now under construction) and 4th place in Dalaman Airport International Terminal in 1999. In 2000, the European Convention selected Dogan Printing Center in Ankara as one of the four best steel constructions in Europe for Constructional Steelwork. The winner of the Design Competition for the Municipality Building& City Hall of Istanbul, in 2001. In 2002, Media Town has received the Building Design Award of The Chamber of Architects of Turkey. Cityscape Architectural Review Awards Juries has granted the big awards for Galataport and Istanbul Modern Art Museum in 2005; and in 2006 for Kanyon which also received ULI Award for

How has the journey been so far for Ubhar?
With the launch of Ubhar, I aimed to present the Omani brand through a new and modern approach thereby “Taking Omani hospitality to new heights”. This slogan was translated into a range of Omani fusion and traditional foods and beverages enjoyed in a modern Omani ambience. This vision was later extended to encompass Omani art and culture with the launch of Salon Ubhar, which is a conversational event that serves the purpose of inspiring people to use their minds and hearts at their maximum capacity and come to appreciate the personalities and contributions of others even if they differ from their own. The salon serves Ubhar Fuwala developed earlier this year and it presents savoury and sweet snacks with a range of teas. The Salon discussions are carried out over two seasons, with the first from January to April, and the second from September till December. With the support of National Bank of Oman, Salon Ubhar started this year with various speakers selected as leaders in the topic of discussion. We have covered topics ranging from business to self-development and family affairs. As Ubhar presents itself as an ideal location for those who seek inspirations through unique art and design, we have also supported our clients to hold a variety of events such as fashion shows, art exhibitions, poetry recitals and more. With our very own audio and visual set up, we have also organised training sessions, presentations and press conferences. Our clients were especially pleased with the professional and efficient service of our staff who are trained in various service sequence required to ensure a successful and relaxed event. More recently, we have soft launched our catering facility and I am delighted to say that since our launch, we have catered for private sit down dinners, receptions, and buffets. We are looking to also launch home deliveries before the end of 2011.
How have diners reacted to fusion or contemporary Omani cuisine?
Our menu is developed with the spirit of the Omani hospitality and culture. It also reflects the significance of Oman's geographic location at the crossroads of the Middle East Africa and the Far East, and our diverse terrain has created several cooking styles that vary from one region to another within Oman. The long

tradition of maritime and trade has brought culinary influences of several different regions to the Sultanate that were developed into the ethnic tastes of Oman. It is the unique nature of our presentation of this hospitality spirit that has attracted local and regional clients and media coverage. Our menu combines fusion and traditional food that includes some of Oman's popular dishes, such as Orsia, Harees, paplou, Qabuli and more… Our signature fusion dishes have also been very popular and especially our Shuwaa sandwich, which includes the traditional shuwaa meat mixed with homemade sun dried tomatoes, and served in the Italian ciabatta bread. Another signature dish is the Ubhar Dream, which presents the traditional Omani halwa filled in a puff pastry and served with vanilla ice cream.
What are your plans for the post-Eid menu?
We are working on the launch of our new menu which will present a new series of Ubhar signature dishes as well as some traditional dishes which include everyone’s favorite Owal (shark) along with many more. The menu items have been identified through continued discussions with our customers and the feedback we receive on our guest suggestion forms. We will remain to be in close contact with our customers to ensure that we meet their appetites!
How long did you take to finalise the menu? How challenging is it to create the kind of dishes that you have on the new menu, as the basis would be Omani cuisine, which will then be recreated to make fusion cuisine?
The menu went through several steps and the research was carried out by the Head Chef and me. As part of the development, we spoke to many Omani housewives and went through various cooking books and cuisines to come out with a menu that lives up to the Ubhar brand. There are many ways by which we create the fusion dishes but we always ensure that the food is not complicated and can be presented in a modern (Ubhar-ian) way. For example, the shuwaa sandwich was created through the translation of a traditional Omani dish, which is usually eaten with rice, into a more bistrolike everyday dish which can be enjoyed on ciabatta bread or wrapped in Arabic bread. We will be presenting a new selection of sandwiches along with a range of starters and main courses that can be enjoyed for both lunch and dinner.

Chef Kinza has gone all out to present a variety of dishes that are distinctly modern yet retain the Omani flavours, says Halim. When working with a cuisine as distinct as Omani food, it is not easy to innovate and present with a fusion touch. Yet Ubhar has done this remarkably well and much credit goes to the head chef for this. “Chef Kinza does not just experiment with dishes and create something new. She understands the philosophy of food. She is extremely meticulous when it comes to food and cooking. Together with Ms.Ghada, we are able to create some great dishes that have been liked by our guests. We hope the new dishes become just as popular,” says Halim. While we were at the restaurant, we were very graciously given one of the new dishes to taste – the shuwa pastilla. A refreshing take on the Moroccan pastilla, which is often made with pigeon meat, Ubhar’s version is made with shuwa meat. Succulent and bursting with flavour, the shuwa pastilla is a brilliant innovation of the dish. And we just can’t wait to taste the rest of the dishes that will soon be introduced at Ubhar!

aking the rushed and hectic lifestyles we lead these days into consideration, often a month’s vacation or a couple of weeks twice a year might just not be enough to recharge the batteries and stay revitalized. Short and quick breaks, even over weekends, are great stress relievers and provide the much needed R&R. The resort, which has 234 rooms and 74 apartments, had a soft launch in February this year. “We are still in the soft launch phase. The work on the swimming pool is in progress and it should be ready by end of October 2011. hat’s so special about Prague? Could it be the rows of shops selling bohemian crystals and snug underground pubs featuring live jazz? Or, could it be the thrill of rediscovering the haunts of literary giant Franz Kafka surpassing the majestic beauty of ancient castles and churches? Maybe, it is the gleaming Vlatava river by the night, full of lights and sounds from a city that never seems to sleep. A visit to Prague offers all these and more. It is truly ‘the mother of cities’ that never fails to serve up a unique feast of art, architecture, religion, history and touristy

– Gothic, Baroque and even Romanesque – around me were, surprisingly, a harmonious mixture and added to the ageless appeal of the place. The striking 20th century monument of religious reformist Jan Huss was surrounded by the majestic Church of Our Lady Before Tyn and several other Gothic structures. Nestling close by was the Salon where Albert Einstein ‘played the violin and met his friends, famous writers, Max Brod and Franz Kafka’. Then the Clock struck. Every day as it strikes an hour, twelve pint-sized apostles appear in a small window of the Astronomical Clock tower while the figure of Death waves an hourglass.

And the best way to enjoy this spread is by the Old Town Square while sipping an espresso at a pavement café. I sat with my espresso and lost track of time watching the crowd milling about the nearby Astronomical Clock. This is the best part about Prague. It helps you unwind at the drop of a hat. Or, in my case, dropping into a pavement café chair did the trick. I felt far from the madding crowd as I watched the clock tick-tock. It suddenly dawned on me that all the quaint and some very outlandish examples of architecture

Catching the bizarre but the very evocative medieval spectacle reminded me to move on to the city’s other attractions. The next best thing is an aerial view of the city itself. You can either choose to climb the 14th century Powder Tower in the Old Town or take a funicular to the Petrin Lookout Tower atop the Petrin hill. We did both. First, we took a short walk from our heritage apartment that led us back to Prague’s cultural past and in front of the Powder Tower, an imposing Gothic structure. The slightly tortuous climb of the Tower is worth it as you

get a panoramic view of the city with its numerous spires, domes and stretches of cobbled paths and orange-tiled roofs of the Old Town. The 60-feet-tall Petrin Tower, heavily inspired by the Eiffel Tower in design, was even more of a climb. But fatigue vanished as soon as we set our eyes on the breathtaking view of Prague and the surrounding area. There we spotted our next sights – “Look at Charles Bridge! We should see the sunrise from there. Oh! There is the Prague Castle. What about spending tomorrow there?” And so it went. The childish excitement of ‘conquering’ the Tower increased our appetite for more. Next on the list was the mighty Prague Castle, one of Europe’s biggest and oldest structures, now the seat of the Czech Republic. It took us nearly four hours to wander in and out through the galleries and churches inside the castle premises. The St.Vitus Cathedral alone took up half the time what with its intricate stained glass work and flying buttresses. But not everything is old and medieval in Prague. The city offers you an opportunity to pay homage to the 20th century literary giant Franz Kafka. His grave in the sombre and elegant New Jewish Cemetery is close by.

Do check out U Maltezskych rytiru (At the Knights of Malta) in Mala Strana with its excellent fare and a delightful story about an in-house ghost that haunts the dining rooms. Once evening sets in, you forget the old and the art. Prague, the party town, came to life as we hit the charming Mala Strana, on the other side of the Vlatava river from the Old Town. The streets here are dotted with small boutique shops, ancient churches and some fine traditional Czech restaurants. We didn’t go for the restaurants with lovely views of the river; we chose U Maleho Glena for its ‘most happening’ jazz bar functioning from a cosy cellar-like space. The food was superb and there were a variety of Czech chillers to choose from. The best of all was the live jazz concert by a local Czech band. We loved their riffs and sections; but mostly the honest-to-god performance by the group unmindful of the small, tight crowd around them. The night wore on and we crossed the mighty Charles Bridge under a starlit sky. Catching sunrise from the Bridge could wait. After all, we are in Prague.
Or, you could check out contemporary sculptor David Cerny’s Sigmund Freud figure, literally ‘Hanging Out’ by his fingertips above a bustling street corner; never mind the sniggering locals, it is a good photo-op even if you don’t get the Freudian hanging. The same artist has a cheeky ‘Piss’ sculpture in front of the Franz Kafka Museum. It depicts two men peeing out famous quotes into a Czech Republic-shaped water body. And of course, the Lennon wall near Charles Bridge. It is filled with graffiti, memories, poems and a small bust of the musician whose death caused an ordinary wall to transform into the city youths’ diary of grievances during times of political turbulence. Now you just pose for photographs that will save you the trouble of going through the numerous souvenir shops for an overprized trinket. Not that shopping opportunities in Prague are limited to souvenir shops alone. You find exclusive Bohemian crystal shops in and around the Old Town Square. The range of jewellery is quite eclectic, from the traditional garnet pieces to crystal danglers. They also store interesting pieces of porcelain work featuring two-dimensional cats! That is what I indulged in.

A young DutchMoroccan fashion designer, Siham Tib is a relatively new entrant in the fashion world but has but her career has been shaped by the influence of dressmaking and fashion around her. “My mother and grandmother used to make dresses. I have always had a passion for fashion. I used to dress different - which would be my own style rather than follow a trend. But it was not till I was 15 did I realise that fashion was an integral part of my life,” says Tib who was in Oman recently. “When I was 15, we were invited to a wedding and that the first time I decided to wear a Moroccan dress. My mother was surprised as I don’t usually wear dresses but

I told her I wanted something special. I did not want to wear an ordinary Moroccan dress but something that was created with a difference. So my mother made me a dress and that’s when I started to show more interest in Moroccan garments,” explains Tib. The talented and bubbly designer was in the Sultanate as part of her Middle East tour – she held her first fashion show at the Bait Muzna Gallery, which proved to be an ideal setting. The art on the walls of the gallery proved to be a fitting backdrop to the designer’s rich and classy designs. An Economics graduate, Tib had her first major stint with designing when she decided to design her wedding dresses. “In Netherlands, there are ladies who rent wedding dresses and most girls tend to approach her. But I didn’t want to wear something that had probably been worn by 10 different people! So I decided to design my own dresses – three Moroccan dresses and a wedding gown,” says the
ambitious designer. She then went on design garments for herself infusing into traditional Moroccan gowns moderate doses of modernity and elegance. She also designed for close friends and relatives. As more enquiries and requests for Moroccan dresses came her way, Tib felt she could move to designing. “I gave up job as account manager for a real estate organization and decided to pursue my passion. In Netherlands, the Arabian couture industry is underserved. I felt this would be my chance to design for ladies and young girls there authentic yet contemporary Arabic dresses,” she says. Tib went on to take part in a leading fashion show in Netherlands where her talent and striking creativity was noticed. She was invited a second time to take part in the show and Tib was sure that she was on the right path. “There is a lot that you have to understand about

dress making – the cuts, pattern creation, styling and most important, the fabrics. I use only the highest quality fabrics that are sourced from France and Italy. I do love shopping for new fabrics on my travel but the best are from France and Italy,” she says. Although Moroccan dresses are long and layered, Tib feels they can be designed to make a woman feel stylish and sensual. “A woman does not have to wear skin baring clothes to look sensuous. A well-cut and designed dress can make a woman feel glamourous,” says the designer

who has successfully managed to infuse traditional with contemporary. Tib’s designs are a mesmerising combination of Arabian splendour and contemporary sensibilities. While almost every piece created by Tib is designed to last even after seasons and tastes have changed, she ensures that every garment is one of a kind. Although she does not compromise on the traditional dressmaking styles, Tib has brought in modern touches to her creations making it simpler, easier and more stylish for the new generation to dress. For instance she combined the inner dress with the long jacket worn by Moroccan women to make it more convenient for the new generation. Her collections include Haute & Bridal Couture, Ready to Wear, Djellebas and Beach Kaftans. The designer recently introduced custom jewellery at her atelier that clients can rent or buy from her according to their requirements. When asked about her fashion influence, it is Coco Chanel that Tib names. “Her designs are timeless and elegant. There are few designers who have been able to keep these two factors in their creations,� she says. Siham Tib who works from Netherlands but also has a base in Morocco caught the interest of many ladies in Oman as well with her classy, traditional yet fashionable designs. And we are sure we will be hearing more about this young designer in the months to come!
