While sparkling wine sales slowed in the recessionary years, trade in Champagne and its siblings, prosecco and cava, are starting to fizz once again. With this resurgence comes renewed interest in the classic Champagne coupe, the glass famously claimed to be modelled on the assets of Marie Antoinette. (The tale that the coupe was molded from the shape of the French queen’s left breast is, alas, a myth.) ‘Coupes are the height of fashion these days and they certainly look gorgeous,’ observes Mary O’Callaghan, educator with the Irish Guild of Sommeliers and former Guild President. But while they add a splash of old school glamour to any occasion, the more modern flute provides a more practical vessel for Champagne, Mary advises. ‘The coupe enables Champagne bubbles to tickle the nose, which got ladies in another era rather excited,’ she reveals. ‘However, the flute is regarded as the best glass for Champagne tasting. It allows you to savour the aroma of the Champagne and to judge its appearance. There should be an even stream of tiny bubbles, and this cannot be observed in the coupe.’ Mary cautions against over-filling flutes. ‘You see sparkling wine nearly filled to the rim quite often now, but the correct serve should be two-thirds of the glass. This allows the aroma to permeate. As the curtains open on the pop-up restaurant at CATEX 2015, three lucky teams of chefs are working in state-ofthe-art facilities planned and installed by Catering Design Solutions (CDS), Bunzl McLaughlin’s dedicated design division. Always a popular feature of the show, the restaurant is operated on successive days by staff of three top member restaurants from the Restaurants Association of Ireland – The Chophouse, Dublin 4, Gallagher’s Boxty House, Temple Bar and Rock Lobster, Dundrum Town Centre – and showcases the latest in furnishing and equipment. CDS’s Martin Darling reveals that everything in the show facility is ‘bang up-to-date’, from the reception area and table settings to prep areas and a kitchen with the latest cooking equipment. The design includes an open-to-view prep area so that visitors can observe the teams at work from 11am to 3pm each day, while lunch service starts at 12.30 with successive sittings which are expected to be booked out daily. ‘We want to show customers that CDS can provide more than kitchen equipment, with expertise in planning and fitting out front-of-house as well as behind the scenes areas,’ Martin explains.

RETURN OF THE KING When the team at Cork’s Kingsley Hotel prepared to reopen the doors after a number of years of closure, they brought Bunzl McLaughlin and Catering Design Solutions (CDS) on board to project manage the refurbishment of the hotel’s three kitchens and restaurant areas. lose to five years after The Kingsley was decimated by floods, the four star hotel made a welcome return to Cork, reopening under new ownership as part of the Fota Collection. The relaunch in 2014 came after a comprehensive five-month renovation which included the redesign and refurbishment of the hotel’s three kitchens, two restaurants and bar. Bunzl McLaughlin, through its CDS design division, spearheaded the project, bringing in heavy equipment supplier, Fagor, to supply kitchen equipment.

PROVIDING VALUE AND QUALITY ‘We designed the kitchens to best suit our client and provide them with maximum value and quality,’ explains Billy O’Connor, Business Development and Project Manager at Bunzl CDS. The Kingsley’s busy food operation includes bar food in Fisher’s Bar, afternoon tea in K Lounge, casual dining in Springboard Restaurant, a la carte service in Fairbanks Restaurant, plus a thriving banqueting department. After discussing the capabilities required for each area with The Kingsley team, the three kitchens were designed to meet these needs. ‘The process included the full project management of the installation and co-ordination with all other service providers,’ explains Billy. ‘The kitchens opened on a phased basis which allowed us to complete staff training and handovers to suit the client’s schedule. While all the kitchens were being installed we secured the equipment for front of house service and bar areas.’ Marrying savvy design with functionality was important, ensuring that each outlet not only looked the part, but also operated at optimum efficiency, notes Billy. ‘The spec level was well-balanced to suit the demands of each area in this busy operation.’ INSPIRED BY BUNZL MCLAUGHLIN | SPRING 2015
