How to make Urta Sea Bream “Roteña Style" Text & photo by Pilar Ruiz / You can find more of her recipes at ycomomegustacocinar.blogspot.com INGREDIENTS: • 12 glass of dry Fino wine • 1 glass of water • 1 bit of cognac • Ground pepper • Black pepper • Salt HOW TO PREPARE: • We preheat the oven to 180º. Peel the potatoes and cut them into slices, put them in the oven dish where we will cook the fish, add salt and a little bit of olive oil. introduce them the oven 10 minutes • We prepare the fish, removing the head, which set aside to prepare a good stock of fish or smoked. We do a few transverse cut and season it • Then we prepare the fried vegetables. In a frying pan we fry the minced garlic, chopped onion to slices and peppers cut in cubes for 10 minutes • Peel the tomatoes, cut them diced and reserve • Remove the source of the oven with the potatoes and add the fried mix, extend it and on top of the sauce, put the diced tomatoes and place the fish on top • We are preparing a bite in a mortar 1 clove of garlic, chopped parsley and a couple of tablespoons of bread crumbs and pepper and pour over the fish. Add a glass of water and the juice of a lemon. • hen add a little bit of oil, peppercorns and wine and put in the oven for 1 hour • Five minutes before the end of cooking, add a little bit of cognac, bathe with the broth and let it finish cooking in the oven. • Remove the tray from the oven and decorate it with slices of lemon and a sprig of parsley • And ready to serve at the table.

Coats of Arms: Chipiona, El Puerto de Santa Maria, Rota, and Sanlúcar de Barrameda by A.M. Ávila / Photos from left to right: Chipiona by Antonio M. Romero The other day I was doing some research on Rota´s website, and I was struck by the beauty of the town´s Coat of Arms. I checked the websites of other nearby towns and found other coats of arms that were equally as beautiful. Here are four of them and the stories behind them:

CHIPIONA Chipiona The town of Chipiona is in a location that has a very interesting history that goes back thousands of years. It is at the mouth of the Guadalquivir River, which leads up to the City of Sevilla. Its coat of arms bears the words “Caepionis Turris” which is Latin for the “Tower of Caepion” and it portrays a tower-like structure, in the middle of the water, with a light above it. In the Roman era, there existed a lighthouse at the mouth of the Guadalquivir River, which was called Turris Caepionis. It was built at the insistence of the Roman consul Quintus Servilius Caepion. The tower acted as a warning for a nearby navigation hazard and it also marked the approach to a navigable river. Although, in the past, the lighthouse stood on the part of a reef known as the Stone of Salmedina, the lighthouse now stands on Chipiona´s shore.

EL PUERTO DE SANTA MARÍA El Puerto de Santa Maria The coat of arms for the town of El Puerto de Santa Maria also depicts a castle by the shore. In this case, though, it is the Castillo de San Marcos (St. Mark´s Castle) which is located in downtown El Puerto. In addition, above the castle, there is a depiction of the Virgin Mary. This is a representation of the apparition of the Virgin to Spanish King Alfonso, the Wise. After the re-conquest of Spain, in the year 1260, King Alfonso named the town “Holy Virgin Mary of the Port” which was later changed to El Puerto de Santa Maria (The Port of Holy Virgin Mary). Prior to that, in the year 711, the town was known as “Amaria Alcanter” by the Moors. And prior to that, legend has it that the town was founded by an Athenian king, after the Trojan War, approximately 3200 years ago (@ 1184 B.C.!!) It was called El Puerto de Menesteo (The Port of Menestheus).

ROTA Rota The coat of arms for the town of Rota depicts a castle standing by the ocean shore. It is a depiction of the Castilla de Luna (Luna Castle), which has always been linked to the history of Rota. It was constructed in the 13th century and is presently utilized as Rota´s City Hall. The depiction of the castle is framed by a black, Catholic rosary which has been part of the coat of arms since the 17th century. It represents the town´s “constant and fervent devotion” to the Virgin of the Rosary, which is the town´s Patron. The name “Rota” is derived from the Latin word “rupta” which means route or way and is a reference to the “Via Augusta,” an ancient Roman road. During the Moorish occupation of Spain, the town of Rota was known as “Ribat Ruta,” which means “fortress” or “place of worship” on the route or road.

SANLÚCAR DE BARRAMEDA Sanlucar de Barrameda “Luciferi Fanum,” sounds ominous. However, the word “Luciferi” (meaning the “bringer of light”) does not stand for “Lucifer,” who some call the devil, rather it is a reference to the Eastern or morning star (more specifically, to the planet Venus) which is associated with the sunrise. The coat of arms for the town of Sanlucar de Barrameda is a curious mixture of Christian and pagan symbols. The words that surround it are in Latin and make reference to the fact that, during Roman times, Sanlucar was the site of an ancient Temple dedicated to the worship of the Roman goddess Venus. The tower and the star above it are symbols making referencing to that ancient temple, as well as the winged bull, which is an ancient symbol which links the astrological sign of Taurus with the planet Venus. The bull is resting upon a floating, golden Bible with an inkwell and pen. These latter symbols are a reference to the many Catholic missionaries that departed from the port of Sanlucar to Christianize the New World.

restaurant. The restaurant serves the best local produce in a varied menu that includes traditional dishes as well as more elaborate ones. The reservations system allows them to design the menu you want if you call ahead. The restaurant is open from midday until late at night; after dinner hours.Their installations offer the possibility of celebrating any type of reunion, party or event in a incomparable setting.
