Tuna Confit (Atún en Manteca) We want to share with you a recipe from Andalusia and particularly from Cadiz, cooked mainly in the area of La Janda, a county within the Province of Cadiz, and in Gibraltar, “Atun en Manteca” :-) We are now in the middle of the tuna season and we want to take advantage of it and prepare rich tuna recipes, as is this one :-) In the old days, cooking both meat and fish in lard, served to lengthen the preservation of these foods and nowadays we cook it this way because it gives a very delicious taste to the recipes :-) But before we share our recipe we are going to find out some information about this tasty fish, the blue fin tuna.

Tuna fish are a very diverse family of fish that have become one of the most valued and desirable fish on the market. Their delicious taste, global availability, and healthy components make it an ideal replacement for red meat or for those who like to add some healthy variety to their diets. Amongst the many benefits, includes its ability to reduce cardiovascular conditions, stimulate growth and development, lower blood pressure and cholesterol levels, help in weight loss efforts, boost the immune system, increase energy, maintain the health of the skin, increase red blood cell count, prevent cancer, protect against various kidney diseases, reduce general inflammation, and inhibit cell membrane damage. These benefits can be attributed to the impressive content of vitamins, minerals, nutrients, and other organic compounds found in this delicious fish. These include antioxidants and protein, without much saturated fat or

sodium. Tuna also has impressive levels of selenium, and good amounts of phosphorous, iron, magnesium, and potassium. In terms of vitamins, there is a wealth of vitamin B12 and niacin, as well as a good amount of vitamin B6 and riboflavin. INGREDIENTS: * 1 lb 2 oz (1/2 kilo) Almadraba blue fin tuna loin * 8-9 oz (250 grams) of white pig lard * 1 1/16 cup (250 ml) of olive oil * 1/2 head of garlic * A little bit of parsley * 10 black peppercorns * 1 clove * Salt * 1 glass (5 oz) of local white wine, in our case we have used the “Gran Mayeto” from El Gato Winery in Rota * 1/2 cup (125 ml) water

PREPARATION: * To begin with we will cut the tuna into approximately 3/4 inch (2 cm) slices. We’ll also cut the garlic cloves into slices. * In a pot on medium heat, add the lard and the olive oil.When the lard is melted, we will add the sliced garlic, peppercorns and clove. * Then we add the chopped parsley and the white wine. * When the alcohol in the wine has evaporated, it is time to add a little water.The amount of liquid you will need should cover the tuna entirely. * Season the tuna as desired with salt, and then brown both sides of the tuna slices on a grill, just a few moments per side. * When the liquid in the pot boils we will add the tuna, then lower the heat to medium-low and let it cook for 20 minutes, until the tuna gets tender. * Once cooked, and before it cools, we are going to take the tuna slices and place them in a suitable sized ovenproof dish. * We will pour the sauce made of oil, wine and lard through a strainer. And now we will pour the liquid over the tuna slices until all slices of tuna are submerged. * Now we are going to wait until the lard sets and our Tuna Confit is ready to enjoy :-) You will see how rich and tasty :-) You can serve it on toast or accompanied by some French fries,...! Either way it will be delicious :-)

H.O.G. RALLY?

A

lthough the word “hog” is a colloquial reference to a Harley-Davidson brand motorcycle, the initials H.O.G. also stand for Harley Owners Group which is an international motorcycle riders organization that boasts over 1 million members in over 100 countries worldwide. Starting next Thursday, on the 18th of June, and lasting until the Sunday, the 21st of June, the 24th European H.O.G. Rally will take place at Puerto Sherry in El Puerto de Santa Maria. The 2015 European H.O.G. Rally is the flagship event on the international H.O.G. calendar. The event expects to attract anywhere from 6,000 to 10,000 motorcycle riders from all over Europe, the UK, and even some from South American and Australia. Although tickets for the event are available to all members of the public, the H.O.G. is encouraging all attendees to purchase them in advance since this will be a “ticket-only” event. They are available for purchase on-line. The event will feature live music, an opportunity to demo-test the latest Harley-Davidson motorcycles, and to join the iconic parade, which will be one of the highlights of the weekend. The famous Harley-Davidson Custom Bike Show will also give visitors the chance to see some very special and unique motorcycles. Also, there will be an opportunity to test- drive vehicles manufactured by JEEP, which is a co-sponsor company for this event. On Saturday, June 20th, a motorcycle run is planned to follow a touring route which will go from El Puerto to Cadiz, to San Fernando, and on to Jerez. The City of El Puerto is gearing up for this event by coordinating special bus and catamaran schedules to accommodate participants and visitors. There will be a special bus set up to make the rounds of the special parking areas in Puerto Sherry and connect them with the train

station, catamaran dock, and bus departure areas. Given the number of motorcycle participants expected, access to Puerto Sherry will be limited. The Harley Owners Group (H.O.G.) is the official riding club sponsored by the Harley-Davidson company for enthusiasts of that brand's motorcycles. The Harley Owners Group was founded in 1983 as a way to build longer-lasting and stronger relationships with Harley-Davidson's customers, by creating ties between them, the company, and its employees. HOG members typically spend 30% more than other Harley owners, on such items as clothing and Harley-Davidson-sponsored events. Much of the intent of this branding effort is presenting HarleyDavidson as an American icon, with the focus on authenticity and pride in being American-made. Licensing of the HarleyDavidson brand and logo accounted for $40 million (0.8%) of the company's net revenue in 2010. The European event calendar for the Harley group started off on May the 7th of this year in the St-Tropez area of the Cote DÁzur. In 2014, over 13,000 Harley devotees were in attendance, and this year more than 20,000 attended this H.O.G. event. As mentioned above, the 2015 European H.O.G. Rally, is being held in El Puerto next week.The European rally, however, moves to a different location every year. The next event on the H.O.G. calendar is the annual Barcelona Harley Days which will be held this year from the 3rd of July to the 5th. Finally, the season celebrations come to an end at the Faaker See in the province of Carinthia, Austria which will host Europe´s biggest open and free biker festival: European Bike Week. From the 8th to the 13th of September, more than 100,000 riders from all over Europe, and beyond, will attend. The concert schedule for the 2015 European H.O.G. rally, next week, is as follows:

Chiringuito Moustaky Another sign of summer is that Chiringuito Moustaky is open every day from noon to midnight. Chiringuito Moustaky is a beach shack, but it is more than the average beach shack. This one is well set up and has a more permanent air. The interior is very inviting with lots of plants and great views of the sand dunes and beach. The outside area is also inviting and well cared for. The food is good and quite abundant; typical beach shack fare: lots of grilled fish and meats as well as salads. Chiringuito Moustaky is located on Playa Tres Piedras, right after Costa Ballena and before Chipiona. The GPS coordinates are in the ad on page 2 this week.
