Extending the theme to the walls are shadowy medieval feast backdrops and installations such as the stunning kinetic spit roast that has all the intrigue and ingenuity of a watch complication. It’s an interpretation of the first automated spit-roast mechanism, invented by the British clockmakers of Greenwich. Of the à la carte menu – meat fruit, salamagundy, frumenty, umbles – the offerings are elegant, fresh, intense, modern and clever, making much of the best local produce providores have to offer. There is much to choose from. Try the slow-cooked pork belly, chicken with grilled onion emulsion or snapper in cider. Or perhaps steak – Black Angus dry-aged for a minimum of 28 days – cooked over charcoal embers, served with the original form of ketchup (mushroom ketchup) with fries, mash or triple-cooked chips on the side. Or try Rice & Flesh, a saffron risotto with lightly curried kangaroo tail, inspired by a manuscript dating back to 1390. And … there’s a Hestonesque ice-cream trolley – you can’t quite escape the Blumenthal theatre. Dinner by Heston Blumenthal opens for lunch on Friday, Saturday and Sunday, and nightly for dinner. When the Fat Duck pop-up departed Crown Towers late last year, Dinner by Heston Blumenthal passed it in the corridor, making Melbourne just the second city to play host to this extraordinary restaurant. As it approaches its first birthday, and now a permanent fixture at Crown, Dinner has become a Melbourne mainstay. It is a place for lunch, dinner and cocktails that will challenge your senses. Dinner offers everything from special-occasion dining at the Chef’s Table (served by the chef, no less, with your own sommelier), to à la carte offerings in the main dining room, to steak and chips with a glass of wine when you just want brasserie-style casual after work. “So smooth is the service, so glam the dining room, so solid and flat-out flavoursome the menu, so deftly democratic the wine list that it’s hard to remember Dinner is a new restaurant,” wrote the editors of the Australian Gourmet Traveller national restaurant guide in singling it out as one of their New Restaurant of the Year nominees in August. “It’s a big, grown-up breath of fresh air.” And what a fascinating experience Dinner is. Run with the precision of an intensive care unit, under the auspices of Executive Head Chef Ashley Palmer-Watts, this ode to English cookbooks resurrects recipes from between the 13th and 19th centuries, everything from creations of the royal chefs of King Richard II to Lewis Carroll’s fanciful feasts.

A BIRD’S-EYE VIEW 居高临下 Seeing is believing and one of the best ways to see the iconic sights and get your bearings in Melbourne is on a scenic 30-minute flight over the city in the Crown-liveried Microflite helicopter, taking in the Melbourne Cricket Ground, the Royal Botanic Gardens, the Grand Prix track, the Albert Park track, Albert Park Lake and the beach boxes at Brighton. Alternatively, you and a guest can be whizzed off to the Levantine Hill Estate winery, just 20 minutes away, to sample some of the Yarra Valley’s finest drops. At The Signature Restaurant, part of Ezard@Levantine Hill Estate, you’ll be seated at table 53 (usually reserved for the winemaker), coming back down to earth with Beluga caviar, a glass of 2010 Late Disgorged Methode Traditionelle bubbles and a five-course tasting menu. Both flights are tailored especially for Crown and part of two exclusive packages offered to guests of Crown Towers. Crown took delivery of its bespoke helicopter, one of a fleet of 16 European Airbus helicopters, in December 2015. It has a leather interior, noise-cancelling headphones, air-conditioning and boasts excellent visibility from all seats. Microflite Helicopter Services operate the largest fleet in Victoria. Their red helicopters have become a familiar sight and are synonymous with luxury charter flights.

Ask Melburnians about the beauty and benefits of their chosen city and invariably they come up with a list of impeccable credentials. It’s a gourmet city with a profusion of world-class restaurants and edgy up-and-coming venues; a global fashion capital where iconic international brands rub shoulders with local designers, making it also a top shopping spot. It’s a vibrant cultural hub, whether you’re a comedy fan, an art or theatre lover or a balletomane. And it’s internationally recognised as an unparalleled sporting city where people flock to major annual events. Cricket or football at the famous MCG, anyone? Or how about the Formula 1 Australian Grand Prix at Albert Park? Surely, 2016’s memorable moment was watching Germany’s Angelique Kerber steal centre-court glory from world No.1 Serena Williams at the Australian Open? Melburnians revel in its pervading mix of prestige and personality, evident in thriving laneways from which the aroma of single-origin coffee wafts, courtesy of the many cafes nestled between specialist stores and quirky bars. They discuss their favourite cycle and walking tracks in this most navigable city that encompasses 480ha of pristine parks and gardens. The Economist Intelligence Unit (EIU) Global Liveability Index adopted a bigger-picture, more practical approach when it named Melbourne the world’s most liveable city for the sixth year running in 2016 – it has been one of the top three cities since the index began a decade ago. The EIU awarded Melbourne perfect scores in healthcare, education and infrastructure, outranking Sydney in areas of stability, culture and environment. The report noted that as global instability grows, cities in the top tier presented few, if any, challenges to residents’ lifestyles. It’s little wonder, then, that Melbourne is attracting investors, new residents, and both national and global businesses. According to the global real estate property consultants, Knight Frank, the headquarters of five of Australia’s top 10

companies – BHP Billiton, ANZ, CSL, NAB and Telstra – are based in Melbourne, while some of the world’s most innovative technology brands including Amazon, Facebook and LinkedIn have also moved in. The southern city is tapping into an international innercity living imperative. The allure of its liveability has brought steady growth in the number of people residing in Melbourne’s CBD, with almost 30,000 now living in the city itself. Only 10 years ago, the Australian residential investment market was dominated by local buyers, now it is increasingly attracting offshore investors, especially Ultra High Net Worth Individuals looking to invest in homes away from home. According to New World Wealth data, published in the Knight Frank 2016 Global Wealth Report, the population of UHNWIs living in Melbourne increased by 135 per cent between 2005 and 2015; compared with Dubai (111 per cent) and Singapore (95 per cent) and way ahead of other cosmopolitan centres such as Hong Kong, London, Paris, New York, LA and Vancouver. Indeed, prime residential property markets in the Antipodes generally have performed strongly. Sydney, Melbourne and Auckland all recorded double-digit annual price growth in 2015, reports Knight Frank. Todd Nisbet, Crown’s Executive Vice President, who moved to Melbourne from Las Vegas six years ago, has discovered an appealing quality in the southern city that’s overlooked in official reports: the Australian character. “Australia’s got a fantastic welcoming nature,” Nisbet says. “There’s a sense of inclusiveness. The ability to fit in is quite unique. I don’t feel like an outsider and my kids probably now feel more Australian than they do American.” Nisbet echoes the sentiments of many who view Australia, in comparative terms, as “a very safe place, with a great environment – blue sky, clean air, clean water”. Melbourne truly is one of the world’s most liveable cities, Nisbet says. “It has great infrastructure, convenience, an

Says Baker, “The ambition is that this is the sort of building you can move into without having to throw everything away in order to live the ultimate minimal lifestyle. You’ve got storage, wine cellar, proper cupboard space. You can live elegantly and beautifully – and have somewhere to put things.” Research has been meticulous, says Knight Frank’s One Queensbridge director Erin van Tuil, right down to the expectations of “new city believers” around wardrobe space and ceiling height. The design, subject to planning approvals, embraces three interlocking sculptural forms; it draws on glass and light artistry, an articulated façade, and geometric and ripple patterns to create cohesion throughout. The top of the 325m building will be a public space destined to become an iconic Melbourne address. “The rooftop experience will be extraordinary,” says Baker. Crown’s Todd Nisbet believes One Queensbridge will be the perfect amalgam of residence and permanent holiday. ease of getting around. It’s incredible that you have so many fantastic offerings – parks, entertainment, galleries literally at the doorstep of a city. It’s such a unique situation to see the sporting complexes of Olympic Park, the Botanic Gardens, the National Gallery [of Victoria], Hamer Hall and the State Theatre and Melbourne Recital Centre, all in such close proximity.” Adding to Melbourne’s connectivity will be the A$10.9 billion Melbourne Metro Rail line (work begins next year), which includes a 9km twin rail tunnel running from Melbourne’s south under the city centre through to the University of Melbourne and the health precinct in the city’s north. The Fisherman’s Bend industrial precinct is an urban renewal project akin to Sydney’s Barangaroo development and global benchmarks such as London’s Nine Elms/Battersea and Kings Cross and the 400-hectare Innovation District in Boston, claims Knight Frank. The big news in inner-city living in Melbourne is where the CBD and Southbank intersect, the precinct that Crown Resorts transformed 20 years ago from an industrial area into the pulse of Melbourne lifestyle, with its hotel towers, entertainment facilities, river walk and top-drawer shopping. Set to change the skyline and the way people live is One Queensbridge, a new addition to the Crown Resorts portfolio and a joint venture with property developers and interior construction specialists Schiavello Group. It will comprise a six-star, 388-room luxury hotel that will contribute to the city’s evolution as a worldclass tourist destination; along with luxury residences that set a new standard in Melbourne. UK architects Wilkinson Eyre won an international competition to design One Queensbridge. The brief: timeless, elegant, iconic Melbourne. Director Paul Baker, impressed by the vibrancy and character of the city, has promised “lightness, geometry, cleanness of line, simplicity and purity”. The living will be elegant, spacious and will evoke the world’s most desirable addresses. Think One Hyde Park in London, and New York’s One57 and 432 Park Avenue.

The dashinglydressed Melbourne-based milliner specialises in look-at-me pieces that range from demure to larger-thanlife, beautifully custom-made in his workshop in Fitzroy. His style gives a nod to Victoriana but translated through a very contemporary eye, with clever construction and juxtaposition of shape and technique. Nylon is seeing a resurgence of traditional brimmed hat styles. “And there have been some lovely hats featuring veiling recently."

Says the London-based designer: “I like simplicity of design, and pops of colour, but also wearability. I love millinery because it’s so open-ended and you’re not constrained by form or function.” The key to looking incredible in a hat, Golding says, is confidence.●

A

vast open-plan workspace lined with rows of wooden bench tops, each filled with hundreds of varieties of tools, microscopes and industrial instruments are brought to life each morning as a unique crew of artisans begin to work their magic. A symphony generated by tiny screws, torches and polishing machines fills the air with a hive-like buzz. The “Golden City” of Pforzheim, known historically for its goldsmiths, is located at the northern edge of Germany’s Black Forest. It is home to the legendary atelier, Victor Mayer, masters in the art of engraving and enamelling for famous luxury brands such as Bottega Veneta, top-drawer watch brands, the Australian pearl jewellers Kailis and, for two decades, the legendary Fabergé, with its iconic egg and highly-prized objets d’art. When Victor Mayer established his company in 1890, he had graduated as one of the first students at Pforzheim’s Decorative Arts School and set his firm apart with an art form he had learned in Vienna. It was the practice of guilloché, a superior engraving technique that developed unique depths and stunning reflective effects when combined with layers of luscious enamel. The art of guilloché dates back to the late medieval times. Introduced in France in the 18th century, the technical terms of the engraving technique derives from the French guillocher, to ornament with lines. Early examples of this intricate goldsmith work include beautifully engraved tobacco and watch cases, medallions, cufflinks and other metal ornaments. During the 19th century, the guilloché technique was implemented for the security of printing banknotes, stamps

and financial documents, and since its peak during the Art Deco period it has been reserved only for the finest luxury jewellery and watches. Today, it’s Victor Mayer’s great-grandson, Marcus Oliver Mohr, who continues the legacy. “From my childhood on, it was clear to me that my interests would always focus on jewellery making,” Mohr says. “At the same time, I had to find my own way and adapt to new market conditions. My emphasis was in developing what already existed. We have evolved the complexity of our craftsmanship and the versatility of our design.” From the expert stone-setter to the polisher and enamel painters, the Victor Mayer Factory’s artisans are masters in their chosen fields; most of them have been working in the jewellery industry for decades. There are only a handful of highly-practised artisan guillocheurs in the world, one of whom has worked for Victor Mayer for more than 16 years. Among the 20 employees at Victor Mayer, the guillocheur is a one-of-a-kind. Tucked away in a separate workshop, his space has abundant natural light and heavy antique guilloché machines, big brothers to the delicate gold and silver jewellery awaiting its fine, ornamental engravings. For this time-consuming process he requires the understanding of an engineer, the creativity of a designer, the rational thinking of a mathematician, practical intelligence for the realisation of his ideas, and the precision of a watchmaker. The guillocheur etches specially-designed geometric patterns into a rotating surface, striving for consistent speed and pressure to achieve a perfect result of evenly spaced straight, curved or wavy fine lines. During those moments of intricacy, he acutally holds his breath. With the help of

a numbered wheel that makes a distinctive clicking sound when moved, he needs to lock in mathematical codes for adjustments. Think of a ticking bomb safe-cracker scene in a movie and you get the degree of concentration needed. Many luxury brands are looking to the past to shape the future. Nicola Andreatta, vice-president and general manager of Tiffany & Co’s watch division, says the luxury world is rediscovering metiers d’art, the expertise beloved of watch connoisseurs – marquetry, granulation, filigree, perlage – as well as the champlevé, cloisonné, plique-à-jour, and grisaille that are the enameller’s stock in trade. “I have a dream,” said Andreatta during a recent visit to Australia. “My dream is that of establishing a kind of time lab in Switzerland, a laboratory where we have our craftsmen from the US, our craftsmen from Switzerland, doing amazing work together to show each other these techniques, doing things by hand, the old way… hammering the metal, using different alloys, decorating by hand. It’s all part of our world, our ability to do something better than anyone else.” Cartier, whose guilloché work has long been a feature of its jewels, last year established, in a fourstorey 1872 farmhouse in La Chaux-de-Fonds in Switzerland, its own Maison des Metiers d’Art, a “beehive” of 28 craftsmen sharing expertise. Nowadays, the majority of companies use automatic machines and robots to make guilloché patterns, often using stamping methods for faster, cheaper and larger productions. However, the traditional handmade guilloché manufacture allows for customisation and embraces the individual customer experience. Prestige watchmakers who seek the guilloché technique from specialists in the field include

Vacheron Constantin, Blancpain, Breguet, Rolex and Jaeger LeCoultre; labels that are stocked in Crown’s stable of luxury watch retailers. It’s a craftsmanship that stands for lasting values and unique limited editions. “Our workshop is a dinosaur living outside Jurassic Park,” declares Marcus Mohr. “It gets nourished by the connoisseurs who, world wide, appreciate our existence and who guarantee that I can continue our legacy.” The guilloché technique creates an endless variety of exquisite patterns. What all of its pieces encapsulate is depth, radiance and movement that plays with light and brings the jewellery to life. Even more so when combined with intense, glossy enamels, again the work of expert enamellers skilled in illumination. Using old recipes, they mix enamel powder with water to form a translucent substance to be applied to the engraved surface. Layers need to be perfectly even. After each layer, the piece is fired in an oven. It takes up to four layers of enamel to achieve the desired intensity of colour. Each collection has its own set colour patterns. Mediterranean Blue, for example, is unique to Kailis’ Enlightenment collection, as is Aurora Green, Chinese Red and Daybreak. The Australian luxury brand, famous for its pearls, teamed up with the Victor Mayer workshop two years ago. Says Mark Majzner, general manager of Kailis Jewellery, “The engraving and saturated colour of guilloché add another layer of depth and dreamlike fantasy to a piece of jewellery. It takes them from special occasion luxury to an heirloom for a modern generation. We are so pleased to have been able to tap into such a revered tradition of craftsmanship.” ●

ast year, after a 50-year hiatus, the Philippines returned to the Venice Biennale, one of the art world’s most prestigious events. It was an affirmation of contemporary Filipino art as something to sit up and take notice of. Tradition, religion, film noir, pop imagery, contemporary urban culture, and the cultural clashes between these influences are fuelling a new interest in the region. Indeed, many of the artists gaining attention are from The Philippines, among them Jigger Cruz, Rodel Tapaya, Norberto Roldan, Ronald Ventura, José Santos III, Alfredo Esquillo, Marina Cruz and Nona Garcia. In the past year, Rodel Tapaya has been shown in the Biennale of Sydney, Art15 London Art Fair and Artissima Art Fair in Turin. Jigger Cruz is highly collectable, having recently shown in Berlin and New York, and exhibited at Art Basel Hong Kong. José Santos III was exhibited in Berlin, while Norberto Roldan has shown at the Guggenheim in New York and the Tate Modern in London. Jonathan Crockett, Deputy Chairman, Asia, and Head of Asia 20th Century and Contemporary Art at Phillips, Hong Kong, says, “The country’s re-entry into the Venice Biennale last year was very telling and the Philippines pavilion demonstrated the country’s repositioning on a global scale as Filipino artists realigned themselves with the international art community. “Filipino contemporary art finds this same balance – for example, Ronald Ventura is absolutely a Filipino artist, but his pieces also have a unique international appeal and include immediately recognisable symbols while also drawing on more local Filipino experiences. “Globally, Filipino artists are gaining traction. Patricia Perez Eustaquio recently opened in the Palais de Tokyo in Paris, while Maria Taniguchi was awarded the Hugo Boss Asia Art prize just last year. This ‘macro’ reinvention of what it means to be a contemporary Filipino artist is what attracts many international collectors eager to discover new, collective, transnational experiences.” The archipelago of more than 7,000 islands, 11 major languages and 87 regional dialects has a hybrid character defined not only by its geography and rich cultural diversity, but also by its multilayered past. With strong Chinese and Malay influences alongside remnants of Spanish and American colonial rule, Manila stands as a progressive art hub. Its public institutions, galleries and art fairs all add to the city’s creative energy, providing a platform for a new generation of artists. A strong collector base is also emerging, among them Paulino and Hetty Que and Kevin Belmonte, who believes this is “a true golden age in Filipino art”, one that has come about on the back of a growing, vibrant economy. Marc Bollansee, a Belgian art collector and the author of Southeast Asian Contemporary Art Now (2012), attributes this burgeoning art scene to both collectors who support local artists, and an impressive arts infrastructure of serious galleries, good museums and premium curators. Constantly evolving, Filipino artists create in many different ways, using a full spectrum of media. Last year’s survey of contemporary art in The Philippines, WASAK! Filipino Art Today, produced by German publisher Distanz (wasak is a term meaning “in ruins” or, sometimes, “drunk”), identified common themes of social realism, identity, postcolonial discourse, religious iconography, mythology, domesticity and popular culture. The second edition of a group exhibition WASAK! Reloaded is currently being held

at the ARNDT gallery in Singapore (until October 8; see arndtfineart.com). A fusion of tradition and experimentation can be seen in the bold work of young art star Jigger Cruz. The collectable painter uses classic Western-style paintings of portraits and landscapes as a backdrop “vandalised” by a signature impasto layering of paint that obscures the imagery underneath. With sell-out exhibitions in Berlin and New York, this irreverent position that essentially desecrates the canon of Western art is highly coveted. His medium-scale paintings sell for US$40,000 and up. Rodel Tapaya integrates the sublime and the everyday in his work. Recognised as a socially minded artist, he offers insights into daily life in the Philippines with scenes – often depicting life on the land – enhanced by imagery from traditional mythological storytelling. Attracting critical attention, his large-scale works sell for US$60,000 and can exceed US$100,000. Drawing upon folklore and symbolism, the artist animates characters from parables using acrylic paint on canvas. These mural-style paintings feature human and animal protagonists in imaginative scenes and often include references to current social issues. Tapaya – whose seven-metre wide Adda Manok Mo, Pedro? (“Do You Have a Rooster, Pedro?” 2015-16) was included in the 20th Biennale of Sydney – is one of the three Filipino artists Belmonte collects along with painters Geraldine Javier and Ronald Ventura. According to Belmonte, Ventura is “arguably the best South-East Asian contemporary artist working today, displacing the great Indonesian artist I Nyoman Masriadi.” Represented by high-profile European galleries such as Perrotin, Ventura broke the auction record for a SouthEast Asian contemporary artist when, in 2011, his painting Grayground sold at Sotheby’s Hong Kong for US$1.1 million. Exploring the fraught history of his own country, Ventura’s mastery of the human form and appreciation of his heritage is evident in a photo-realist style incorporating motifs from East and West with contemporary cultural symbols. Acclaimed artist couple José Santos III and Pamela YanSantos have also observed the strong interest in Filipino contemporary art. “We can see a dynamic and progressive movement ... the past decade has been more hospitable to other modes of expression, too, such as photography, video, objects and installation works. The population of practising artists has also increased.” Santos held a solo exhibition in Berlin earlier this year to critical acclaim. Comprising sculpture and paintings, he often includes everyday objects such as household items, and images from the urban streetscape such as signage. In this way, the images and objects appear familiar, but also estranged, and allow for an element of sentimentality that, Santos believes, is an inherent Filipino trait. Says Mok Kim Chuan, Senior Director, China and Southeast Asia, and Head of Department, Southeast Asian Art at Sotheby’s in Singapore, “The uniqueness and interest in contemporary Filipino art lies in the way Filipino artists draw from their rich historical and cultural background, combining Western influences that cross between tradition and flamboyancy. “The tendency for artists to draw from religious themes also distinguishes Filipino art from that of other Southeast Asian countries. “We are encouraged to see increasing recognition for Filipino art among both the regional and international collecting community.” ●

To date, the Huracán coupe and Spyder convertible have both featured allwheel drive, which is a reassuring complement to their 449kW power outputs. Earlier this year, the family expanded to include the Huracán LP580-2. While making slightly less power (426 kW), the “2” reverts to a more traditional and challenging rear-wheel drive. Priced at $380,000, some $48,000 less than the regular all-wheel-drive coupe, the LP580-2 has been engineered for a more pure experience on the racetrack. If the Huracán’s low-slung, angular-styled cockpit doesn’t already transmit this 320km/h supercar’s intent, there’s a switch marked ANIMA (“soul”) on the steering wheel. This allows the driver to choose from three driving modes that electronically vary the engine, steering and handling characteristics from (relatively) tame road car to racetrack riot. Drivers can also choose how far they want to go in terms of Lamborghini’s menu of courses. Fees naturally apply for each, ranging from the basic track-test Esperienza, through high-

performance driving instruction, up to literally buying one’s own Lamborghini racing team. The company’s headquarters near Bologna in Italy coordinates these courses like a globetrotting circus, travelling to international racing circuits throughout Europe, the US, Middle East and Asia. The Winter Accademia is a favourite: drivers learn to control their wildly sliding Lambos on snow and ice venues in Colorado, Italy and Japan. The Phillip Island Esperienza and advanced, owner-only Accademia is a once-annual visit. Esperienza is the one-day, entry-level program at which prospective and current owners enjoy, typically, three outings on the track, tailing one of Lamborghini’s advanced driving instructors. Participants are first run through the car’s specifications and performance potential, and given advice on correct driving position and steering technique. “It’s important to relax your shoulders,” cautions chief instructor Peter Mueller, like his colleagues, an internationally credentialed racing driver. “You have more feeling for what is happening with the car, especially the

rear of the car. In two-wheel drive, you want to feel what happens.” Drivers are encouraged to use “Sport” mode, with track-oriented settings, which allow the car to be driven more spectacularly, yet still electronically overseen. “Corsa” mode sacrifices wheel-spinning spectacle for forcefully efficient lap times. The three on-track sessions each comprise four laps. For the latter two sessions, only four participants, each following a dedicated instructor, are on track at one time. By then, speeds are starting to climb as students become more familiar with the cars’ controls and, enjoyably, some of the secrets to smooth cornering, braking and throttle application. It’s far less daunting than it sounds. The Huracán’s acceleration is scintillating, and its handling almost telepathic, yet the instructors know to maintain top speeds down to about 200km/h on Phillip Island’s main straight and to monitor in their mirrors the following drivers’ comfort levels. Driving a Lamborghini on one of the world’s most beautiful racetracks is certainly an esperienza to remember. ●

The main hub of the Whitsunday Islands, near Airlie Beach, in northern Queensland, has a lively social scene centred on the glamorous yacht club and neighbouring marina. Other draws include the 18-hole championship golf course designed by Peter Thomson, and the luxurious qualia resort. Hamilton Island also delivers more traditional tropical delights, including sandy beaches and day trips to the Great Barrier Reef. The island’s best-kept secret is its bushwalking opportunities – 70 per cent of its area is covered by bush. As well as kangaroos, you are likely to see koalas, echidnas, sea lions and fur seals. has a spectacular location on the far south of the island and a fabulous range of activities, including evening canapés served in a paddock surrounded by kangaroos. Keep your eyes open on Bruny Island. Although it is only about an hour from Hobart (a 35-minute drive or 20-minute ferry crossing), the island is a haven for wildlife, home to echidnas and wombats, Tasmanian devils and rare white wallabies, as well as endangered birds such as the orange-bellied parrot. Perhaps the island’s cutest inhabitants are the little penguins who live on The Neck, the narrow isthmus that separates the island’s two halves. Stroll the boardwalk around dusk for your best chance to see these distinctive birds. Hikers will enjoy the trails that lead along sandy beaches, through coastal scrub and along sheer cliffs; some of the best are found in South Bruny National Park. A visit to Cape Bruny Lighthouse, the second-oldest lighthouse in Australia (1838), is another highlight. Memento: Bruny Island is home to Australia’s southern-most vineyard. Flinders Island’s wild, storm-tossed beauty hides a dark past. For many years, this island north-east of Tasmania was the haunt of sealers who also moonlighted as pirates, using lanterns to lure passing ships onto the rocks. Today, it is the sandy beaches and pristine bushland that lure bushwalkers and landscape lovers. One of the best hikes is the walk up the Strzelecki Peaks, which offers spectacular views across the coast. Another highlight is Yellow Rock Beach, where you can see the remains of the paddle steamer Shannon, one of the dozens of ships wrecked off the island’s coast.

island, located 500km off the NSW coast. It is a haven for nature lovers, with its dramatic twin peaks, palm forests, rainforests and coral reef, the most southerly in the world. Almost half of Lord Howe’s 240 plant species are endemic to the island, and the extraordinary array of birdlife includes one of the world’s most endangered species, the flightless woodhen. Despite so much natural abundance, Lord Howe does not lack for creature comforts such as gourmet restaurants. The island’s best dining, available only to guests, can be had at the luxurious Capella Lodge, an intimate hideaway with the feel of a five-star beach house; or at Arajilla Retreat, at the sheltered end of the island, which also has an Ayurvedic spa. In recent months, Blakers’ dogs have been hard at it. “It has been a perfect truffle year,” he says. “The biggest haul we’ve ever had, by a country mile.” The dogs walk the rows of the hazelnut and oak groves, jumping and dancing excitedly when they find their target. “The dogs can walk several kilometres a day in season,” says Blakers. Over the years, Blakers’ business has gone global. Today, 90 per cent of his truffles are exported. Of these, 20 per cent go to the US, 40 per cent to Asia and 40 per cent to France. A handful stays in Australia, used by chefs in restaurants that include Nobu at Crown Melbourne and Crown Perth and Rosetta at Crown Melbourne. Truffle season traditionally begins in France each November and runs through to March. The Australian season starts in May and finishes in August. The availability of Australian truffles has closed what was an eight month gap in the supply chain for French chefs. “The French now happily buy our truffles,” says Blakers. “I had dinner with Pierre Gagnaire in Hong Kong at his restaurant, and as soon as he tasted them, he started using

hird-generation farmer Al Blakers grew up in Manjimup, a small town some three hours south of Perth. In 1994, Blaker and his father, a sheep farmer, decided to try their hand at truffle farming on the family’s 45ha property. They’d researched enough to know that Manjimup’s climate – hot summers and cold winters – meant that truffles were a possibility, and so planted 300 hazelnut and oak trees, inoculating them with spores of tuber melanosporum, the highly sought Black Perigord truffle. Some 10 years later they unearthed their first truffle, marking the beginning of what would become the epicentre of Australia’s truffle industry. The Blakers now have 5,000 trees in the ground and each winter harvest their truffles with the help of specially trained dogs. Truffles, long the domain of the French, tend to grow around 20cm below ground and therefore are not easy to find. Traditionally they are harvested with the help of female pigs who are attracted to the truffle’s scent. In Australia, dogs have been trained to recognise the aroma.

them. When a demigod chef like Gagnaire starts cooking with them, then chefs all over France are suddenly buying.” Supply in France has dropped dramatically in the past two decades. At the turn of the century, Perigord boasted an annual truffle haul of more than 1,740 tonnes. Now, due to deforestation and climate change, fewer than 200 tonnes are harvested in all of France. Hence, the French are looking to new worlds for black gold. Like Blakers, truffle grower Peter Marshall, of Terra Preta Truffles, enjoys attention from the French. Based near the town of Braidwood in the New South Wales Southern Highlands, Marshall and his wife Kate inoculated their first trees 20 years ago. Eight years later, they harvested their first truffles. Now on their eighth harvest, they can’t keep up with demand. They, too, export, with 50 to 60 per cent of each harvest shipped to Paris, Tokyo, London, Shanghai, New York and the Napa Valley. “It’s interesting to see what the French chefs do with them in summer,” says Marshall. “Suddenly they are developing recipes using summer ingredients including fruit with truffle that were never before possible.” Australian truffles retail for between $2,000 to $3,000 per kilogram depending on demand. Ingredients traditionally matched with truffles include eggs, chicken, butter and potatoes, all considered the best vehicles for carrying a truffle’s aromatic qualities. Chefs including Ashley Palmer-Watts of Dinner by Heston Blumenthal at Crown Melbourne and Guillaume Brahimi of Bistro Guillaume at Crown Perth and Crown Melbourne use Australian truffles. Brahimi presents a truffle menu each season. An entrée of West Australian Donnybrook marron and octopus is sliced into a carpaccio and served with truffles. A main course of 24-hour braised wagyu short rib arrives with a parsnip puree, fondant potato, mushrooms, turnip, charred leek and truffle jus. Even dessert features truffle. A truffle cheesecake is teamed with an apple jelly, alongside a ginger-infused pear, and a burnt fig ice-cream. Neil Perry of Rockpool Bar & Grill at Crown Perth and Melbourne, also cooks with Australian truffles in season. “We use truffles from WA, Tasmania and NSW,” says Perry. “I like to team them with eggs. At Rockpool Bar & Grill we’re doing a tart with buttered leeks, sliced bacon and spinach, which we top with scrambled eggs and truffles. One of our offerings is a chicken wing with

konbu butter and truffle. Truffles also work beautifully with pasta: at Rosetta we serve a truffled egg pasta and shave truffles over the top.” Nobu’s menus feature a beef tenderloin with truffle teriyake sauce, ribeye with truffle butter, seared Chilean sea bass with truffle mirin and soy, and a Blackmore wagyu tataki dish. Australian Gourmet Traveller Contributing Food Editor Rodney Dunn, a Tasmanian-based chef, cookbook author and founder of The Agrarian Kitchen (a farm-based cooking school in the Huon Valley south-west of Hobart) agrees that eggs and pasta are good conduits for truffles. “Pairing truffle with subtle flavours that carry the scent and flavour of the truffle is key,” he says. Dunn teaches a series of truffle workshops at The Agrarian Kitchen in season, and has recently published The Truffle Cookbook (Lantern, $60). “I wanted to write a book to show people what to do with a truffle once they had one in their hand,” he says. “The aroma lasts only two weeks and starts to drop off the moment it comes out of the ground, so you want to use it as quickly as possible. That is the great thing about Australian truffles – you can have them in your kitchen within two days of being harvested. If you were waiting on a delivery from France, all of that aroma would be lost in the transit to your front door.” Duncan Garvey, of Perigord Truffles, also in the Huon Valley, began farming truffles in the 1990s. Most of his customers are home cooks who buy online through Qantas epiQure. “This is the market we are trying to grow. I am excited to deal with the customer direct,” says Garvey, who prices his truffles by the gram. “$2.50 to $3.00 a gram is what they cost a home cook, and that price doesn’t vary much year to year.” Garvey especially likes dealing with what he calls “truffle virgins”. “I love receiving emails from customers who’ve never cooked with one before,” he says.” He recommends pairing the truffle with simple flavours. One of his customers made a truffle toastie by sandwiching shaved truffles between slices of white bread spread with butter.” Another sent Garvey a thank-you email after his first truffle arrived in the post. It read: “When I opened the bag it filled the room with perfume. I’m glad I used it simply as you suggested. It is like a singer with a unique voice, it doesn’t shine in a choir, but does well with a few back-up singers.” ●

The decanter, made from hand-blown Baccarat crystal, is an architectural montage of eight crystal rings, again a nod to the eight master blenders: the current one, Yann Fillioux, his six predecessors, and his nephew Renaud Fillioux de Gironde, to whom Yann will hand over the baton in the next few months. The Hennessy 8 Cognac is cradled in a unique trunk designed by Paris-based Israeli artist and designer Arik Levy. Using oak staves from the Hennessy cooperage, Levy has created an object of 25 layers of wood, each symbolising 10 years of history, with copper inlays that nod to the metal tools used during the distilling process. With the bottle, the ensemble weighs in at 60kg. The 250 bottles that make up the limited-edition cache represent the 250th anniversary of the House of Hennessy, founded by Irishman Richard Hennessy in 1765. Only 100 will be released this year, each with a price tag of €35,000 (A$52,750), individually numbered and signed by Arik Levy. So, what does it taste like? We put that question to Maurice-Richard Hennessy, an eighth-generation Hennessy who is a global ambassador for the brand (now part of the LVMH conglomerate), one late-autumn day at the Sydney bistro of Crown Resorts chef Guillaume Brahimi. The occasion: an elegant repast hosted by Hennessy for fashionistas, foodies and spirit aficionados where fat white tulips tumbled from squat glass vases in a sea of gold-stemmed tulip-shaped glasses. “It is elegant, extremely elegant, without bravura.” It doesn’t show off? “It doesn’t show off. Exactly! Voila!” Gourmet Traveller Wine’s spirits editor Franz Scheurer offered his more formal tasting notes. “The Cognac itself is ultra-smooth, with roasted hazelnuts on the nose combined with crystallised grapefruit peel. On the palate, it is instantly mouth-filling with some rancio and wood-forward characters that slowly dissipate into a raisiny, white chocolate and lily of the valley fragrance with a long, dark and sweet finish that seems to go on forever.” Its maker, Yann Fillioux calls Hennessy 8 “absolute perfection ... it is a master blender’s dream come true,” he says. So what might it most resemble in the Hennessy Cognac portfolio? “You could say it is somewhat like VS,” says

Hennessy. “But VS is much younger. [Hennessy 8] has the quality of a very old, concentrated Cognac, but without the exuberance of a Paradis Imperial…” Limited-edition Cognac is part of the Hennessy strategy (collectors love it) … and a necessity. Says Hennessy: “Production is limited; it takes 100 years to make 100-year-old Cognac. The fact is, we have a stock of old Cognac, but we have to bring it out slowly and leave other Cognacs to age so that during many dozens of years we will always have the amount necessary. We can’t make a large amount. Even Cognacs not known as collectors’ items, like Paradis Imperial, take time.” Cognac is one of the main agricultural products of the Charente, a department in south-west France. The Charente is home to six crus, or growing regions. Hennessy draws its eaux-de-vie from four of them: Grande Champagne, Petite Champagne, Borderies and Fins Bois. Named for the town in the Charente, Cognac is a brandy – a distillation of grapes. Some 75,000 hectares are planted with the grapes that will become Cognac – colombard and folle blanche, but mostly the acidic, aromatic ugni blanc. There are more than 300 brands of Cognac produced in the region, two dozen produced in significant quantities. Hennessy distils its wines twice, taking the “heart” from the second distillation and leaving it to age in French limousin oak barrels. What Hennessy does differently from other producers is to age separately each eau-de-vie, then blend, rather than the reverse. Other factors in the end result are: ageing time, barrels used, and the origin and quantity of the eaux-de-vie selected. Hennessy has a capacity of some 300,000 barrels busy ageing in the region, shared among 50 chais (warehouses). Each is marked with batch number, vintage, growing area, name of vine grower and the number of barrels in batch. There’s a tasting committee whose members have responsibilities for different parts of the process: oakbarrel ageing, relationships with wine growers, distilleries, winemaking process. Every day the group of eight meets to taste from 40 to 80 eaux-de-vie and decide on, for example,

whether the batch needs to be transferred from young to seasoned barrels to control the oak influence. The committee, Maurice-Richard Hennessy tells us, tastes 10,000 Cognacs a year. “Ten that are considered outstanding are separated, aged and monitored until they have reached their summit of excellence, their summit of balance,” he says. “That could take from 30 to 100 years.” The oldest vintage in stock, he says, dates to 1800. The US is the biggest market for Hennesy, in volume, with Hennessy VS being the biggest seller in that market. The Asian markets remain the most committed and notable collectors – “Cognac goes especially well with Asian food,” notes Hennessy, adding that Nigeria and South Africa are “amazing markets”, with Kenya and Cameroon growing. According to Hennessy, the tulip glass has always been the best vessel to taste Cognac neat. It is the glass used by the tasting committee and master blender to taste the eaux-de-vie every day. Some claim it “better respects the aromas”. Hennessy’s most unlikely ambassadors have been American rappers, who incorporated the lexicon of Cognac into their lyrics. Artists such as Kanye West, Eminem, Snoop Dogg and Tupac Shakur. By default, they introduced a new generation to the premium spirit. “We did not ask them,” declares Hennessy, whose preferred Cognac tipple is XO on the rocks. “They started it and carried on doing it, and it was very useful. We love to entertain them … we have received a lot of artists and DJs in our [Friends of the House] château in Cognac. “Rappers are artists. These are tough guys, they are people living a tough life when they are young. Coming from poor families, they have dreams: ‘When I am grown-up I will have a Bentley .... Cristal ... Dom Perignon …’ That’s what they tell us in their songs. It’s the love. Why do they love to rhyme the word ‘Hennessy’? Because it is poetic.” Or poetry in motion, as converts to the liquid gold that is a fine Cognac will attest. ●

WHAT TO DRINK WITH COGNAC? Maurice-Richard Hennessy says Cognac is superb with Chinese and Vietnamese food. It suits chickenbased soups, fish, crab and lobster, but the best pairing is chocolate. “With dark chocolate I'd drink XO, which is very tannic; milk chocolate with Paradis. You can have it with something lighter, vanilla ice-cream or lobster, but nothing too spicy – and with a blue cheese like Stilton. Richard Hennessy is very concentrated, but remarkably fruity and lively and goes well with red berries, chocolate and raspberries.” ●

here’s Naomi Watts on the red carpet at the Academy Awards … Scarlett Johansson at the Venice Film Festival … Jessica Alba at the premiere of her latest film … Olivia Wilde at the Golden Globes … Nicole Kidman at Cannes – all decked out in Bulgari jewels. Snap! Snap! Snap! These days jewellery is as much a star on the red carpet as the stars wearing it. But Bulgari’s tryst with Hollywood is nothing new. Luminaries of the big screen have long sought out Italy’s peerless gems. This month, Italian Jewels: Bulgari Style opens at the National Gallery of Victoria (NGV) to shine a light on this glittering, intimate relationship, one that dates back to the 1930s, but which reached a peak during the dolce vita years of 1950s and ‘60s, when movies such as Roman Holiday and La Dolce Vita made the Eternal City a magical place to be. Magazines devoted acres of space to that glittering world. Elizabeth Taylor, Audrey Hepburn, Ingrid Bergman, Grace Kelly, Anita Ekberg and many others discovered the Bulgari shop in Via dei Condotti and engaged in passionate affairs with its jewels on and off the screen. Elizabeth Taylor and Richard Burton, who fell in love while filming Cleopatra in Rome, celebrated their love with magnificent Bulgari creations. Since then, says Lucia Boscaini, Bulgari’s brand and heritage curator, Bulgari creations have starred in more than 40 films from Never So Few with Gina Lollobrigida in 1959 to The Visit with Ingrid Bergman in 1964, from Pret-à-Porter with Sophia Loren in 1994 to Casino with Sharon Stone in 1995 and Mission Impossible – Ghost Protocol starring Tom Cruise in 2011. Who wears it best today? Says Boscaini, “Naomi Watts incarnates the mix of beauty, elegance and charisma the Bulgari jewels are made of. Another star who perfectly embodies the discerning Bulgari woman is Julianne Moore: she was the first woman to wear the emerald necklace (on display in Melbourne) that belonged to Elizabeth Taylor after Bulgari bought it back at auction.” Australia, says Boscaini, has proved to be a very lively market for Bulgari. In Melbourne, the brand’s history will be illustrated with a selection of amazing creations from the mid-1930s until today. Showcased: the use of colour, the practice of mounting ancient coins as a reinterpretation of a time-honoured tradition

dating back to ancient Rome, the unconventional use of the cabochon cut, and the gorgeous sautoirs of the 1970s. Says Boscaini, “A ‘young’ country like Australia has a deep interest in traditions of artisanal excellence, so the theme we chose for the exhibition allows us to show how the evolution of the Bulgari style always went hand-in-hand with the adoption of exquisite craftsmanship techniques.” Back in Rome, Bulgari’s Heritage Collection today consists of more than 600 unique pieces, including jewels, watches and precious objects created from the end of the 19th century until today. It’s supported by more than 60,000 documents, vintage photographs and sketches. Buying back magnificent pieces has been part of the company’s strategy since the 1990s and it recently secured a necklace of cabochon-cut emeralds dating back to 1928. Says Boscaini, “It was the decade when Giorgio and Costantino Bulgari, sons of the founder Sotirio Bulgari, started to outline an ‘Italian way’ to jewellery – less formal, more joyful and wearable. The cabochon cut to enhance the colour of the stones is today a Bulgari hallmark. “Another interesting piece we came across in the USA recently is a 1974 ‘Serpenti Tubogas’ bracelet-watch of which only a sketch was available. We were not sure whether it had ever been produced or sold. We dubbed the piece ‘Musical Note’ as the head of the snake was rendered with this particular shape. It illustrated the extent to which the maison has been eclectic in reinterpreting the snake motif, as of today one of the most recognisable of the Bulgari icons.” Treasures turn up in the most unexpected places … a 1930s tiara in the Museum of Qatar; a garland-style necklace in platinum with diamonds around the neck of Princess Olimpia Torlonia at a gala ball, which had only ever appeared in a 1960s advertising campaign; silver ornaments made by Sotirio Bulgari, discovered in a vault inside the flagship store. On Lucia Boscaini’s wish list are two masterpiece necklaces from the 1970s that reinterpret the lotus flower motif and were inspired by the first exhibition of the treasures of Tutankhamun. “One combines cabochon sapphires, black onyx and salmon pink coral highlighted with diamonds. The second variation mounts turquoises, emeralds and amethysts in a pavé-set diamond ground.” She also has her eye on a necklace and a

bracelet, in the possession of a Spanish noblewoman, which epitomise Bulgari’s taste for colour and sumptuous volumes. Buying back Elizabeth Taylor’s pieces at auction in 2011 was one of the biggest challenges to date, she reveals. “They were really thrilling moments, as we had to meet budget constraints while also purchasing the most representative pieces of her predilection for Bulgari. In the end, we are very satisfied, and today we can display the magnificent jewels for you to admire in Melbourne.” Jewellers sell dreams – and dreams need stories with strong characters, which is why Taylor remains such an icon. “Elizabeth Taylor represented an era,” Mauro Di Roberto, head of Bulgari’s jewellery business unit, told the glittering assembly of guests at the launch of the Diva Collection in Portofino in 2013. “She was a rare woman in the sense that she was very strong, knew exactly what she wanted.” She had much to play with. The Bulgari family overturned the longstanding hierarchy of gemstones in quality jewellery: mixing up the precious and the semiprecious; taking risks with colours; the love of a cabochon gem, raised like a cupola; the smooth round finishes that eschew the spiky claw; the thick gold chain of filed curb linking known as gourmette; an underside as perfect as the upper side. “The way Elizabeth Taylor wore jewellery was not traditional, not formal,” said Di Roberto. “She had a way of wearing jewellery as if it were part of her. It reflected her lifestyle and personality, and it complemented what she was wearing. You can see how safe and strong she felt in wearing whatever she put on.” Despite owning pieces of jewellery that today would have their own Facebook page, Taylor never thought of her jewels as trophies. Many of the styling cues incorporated into the current Continental GT – the striking power line, muscular rear haunches and swooping, fast roof line – all started with this car. It has perfectly defined proportions: short front overhang, long dash to axle and long rear overhang. Overall, the design is incredibly elegant and timeless.”
