Due to the diversity of people who comes over for different purposes, Bangsar has provided a variety of food that meets with people’s preferences whether or not they are rushing to have their meal or they want to have a relaxing and slow meal with a friend. "HOW DOES THE BUSINESS OPERATION AFFECTS THE LAYOUT OF RESTAURANT?"
1|FOOD&OPERATION
Alexis
BAR AND BISTRO
A renowed high-end restaurant in Bangsar. Specialised in dessert especially their cakes that comes in different flavour, texture, size and color! A place known to jazz lovers as Alexis features live jazz performances on the weekends by both international and local artists. Its mainly a place where people come by to hang out enjoy the music and food. Together with its relaxing ambience and an addition of its humble wine list, this tend to make people to stay here even longer.
2|FOOD&OPERATION
alexis layout plan The cash register counter is right in front of the shop as customer enters Alexis. However, as seen in the floor plan the aisle space around the counter is not as spacious.
CASH REGISTER/ BAR COUNTER
This serves the purpose to the business operation of Alexis as a casual dining restaurants serving food that is slightly higher than moderate. The menu, bill and food will be served to you. Thus, this explains that the aisle is just nice enough for staff to circulate to serve the customers.
KITCHEN
Like most casual dining restaurants, the kitchen is usually located at the back of the shop hidden away from the eyes of the customers. The reason to this is to not disrupt the flow of the circulation in the dining area, the relaxed ambience, people’s conversations and also not to forget, to hide their secret recipes! Alexis is as well based on the same concept.

Here in Alexis, the table arrangement is put in such a way to suite the amount of customers coming in whether they come in as a couple, a group or even singles. These arrangement is to meet the needs of the customer to get them cozy and comfortable in the environment, and make them sit and catch up with one another. That is the main purpose of Alexis, to provide a cozy ambience for customers to enjoy their meal over good food, good music and good company.

Devi’s Corner Bangsar’s most treasured Indian restaurant that is located at the corner lot of Jalan Telawi 4. One of the most famous “lepak” spots in Bangsar as it opens 24 hours daily. On a daily basis, you can observe that Devi’s is always occupied no matter at what time of the day especially during lunch hour.
A fast food restaurant that is renowed for its nasi lemak that is available 24 hours, but what is impressive about Devi’s Corner is the banana leaf rice that is only served during the day and situated upstairs in an air-conditioned space. Famous for its creamy and dreamy Kerala fish curry, this banana leaf is not exactly the cheapest banana leaf in town but air-conditioned Bangsar comes with a price.

Different restaurant has each of their own unique layout accordance to the convenience in terms of circulation of the place whether it flow of customers or flow of staff.
The layout of Devi’s is rather straight forward. Once you enter Devi’s, you can tell where is everything placed. From the arrangement of the dining tables, cashier counters, buffet self-service counter and hawker stalls.
Based on my observation, the cashier counter is right in front of the shop when one enters which makes it visible and notified from a distance.
From a distance as well, you also can tell that the kitchen is an open kitchen by means that it is in the open space thats visible to its customer.

devi’s corner layout plan Devi’s corner is considered as a fast food restaurant. Although, it has both self-service buffet and table service. Similar to Alexis, the menu and food will be assisted to the customers but for the self-service buffet the customers has to bring their own food to the table. However, payment has to be made at the payment counter and thus the requirement of a spacious aisle to allow customers to que up without distrubing the flow of circulation in Devi’s.
The arrangement of tables in Devi’s is for the purpose of convenience. During peak hours, customers tend to share their table with others and they do not mind as well for the reason that they are they to just grab a meal and leave. As the food at Devi’s are mostly pre-prepped and simple, it does not take long for the customers to wait for their meal to arrive. Therefore, Devi’s Corner meets the need of customer who are in need of a quick but filling meal. Devi’s corner serves as a restaurant that provides convenient and efficient service towards their customers.
KITCHEN
Unlike Alexis, the kitchen is placed out in the open. The layout of the kitchen is as so due to the limited kitchen space at the back and also for convenience of serving the food.

SO, does the business operation affect the layout of the restaurant? YES! The type of business does affect the layout of the restaurant which will give different experiences to the customers. Every restaurant differs according what kind of business that they are running. Whether or not its fast food, fast casual dining, casual dining or fine dining. Each type serves a different purpose as well as the kind or experience or environment provide to their customers are all different. Some type of restaurant may want their customer to stay longer and some may want their customer to just come have their meal then leave right away. All these relates back to the type of business operation that they run. Hence, explains the 3 different types of business operation which are Alexis (casual dining), Devi’s Corner (fast food) and Subway (healthy fast food). Alexis’ intention is to give their customers a cozy environment listening to good music, to have the best serving and most importantly to feel relaxed where as Devi’s Corner operates to serve meals that takes minimal time to prepare. For instance, nasi lemak or banana leaf takes the least time to ber served as it has already been prepared earlier. The customers that Devi’s get are usually regulars, which are those working class in Bangsar. This is because they are given a limited lunch break and thus they choose to have their meals where they serve food fast. Lastly, Subway serves as its purpose of being a “grab-and-go” restaurant. Subway’s layout is much smaller in scaled compared to Alexis and Devi’s Corner because theres not much preparation need to be done nor any big kitchen appliances are needed or even worry about the experience they want to provide to the customers.
alexis’ famous pavlova!
