Potato Soup • 1/2 Red Onion (thinly sliced) • 2 Cloves Garlic(minced) • 2 tbs Butter or Oil (grapeseed:) • One Bunch Fresh Thyme (stems removed) Sweat the ingredients above in a large dutch oven for 5 mins (medium heat) Add 2 Cans Diced Small Potatoes, and 1 cup of Unsweetened Soy milk. Bring all to a simmer for 5 minutes…then use an immersion blender to desired texture…I love Creamy soups with an occasional surprise potato chunk:) Top with Shredded or Chucked Sharp Cheddar and Crispy Shallots.
