SautĂŠ Shallots in a large pan in a lil oil or butter until translucent. Add spinach and liquid to pan Cook until all spinach is wilted. Remove from heat to cool. Pound chicken cutlets into thin sheets. Place a piece of Brie and cooled spinach in center. Roll up. And tie with twine...brown on stove top. Bake at 350 for 15-20 mins. until chicken is cooked through
