Pumpkin Nachos Directions Heat oil in a large pot (dutch oven) to 375 degrees. Fry pasta until golden brown. Lay a good amount of pasta on a sheet pan. In a small bowl mix 1/4 teaspoon salt,pepper, nutmeg and pumpkin. Put dollops of pumpkin mixture and ricotta cheese on pasta chips. Top with grated manchego cheese and banana peppers. Bake at 400 degrees for approximately 5-8 minutes and until the cheese is good and melted.
