Craft Beer Basics The craft beer industry is brewing to heights of unprecedented popularity and is harder than ever to pigeonhole.

Craft connoisseurs use many terms to describe their favorite brews – specialty, artisan, gourmet, boutique and microbrew to name a few.

That number is expected to continue to rise in the future as craft beer fans flock to local liquor stores, festivals and wineries to find their favorite varieties.

But no matter what you call it, craft beer’s definition is based in how it is prepared.

Where to Find It You’ve never tried craft beer? Don’t worry, your secret is safe. Just be sure to be prepared for a mountain of options when trying to select your first venture into the craft beer world.

Local liquor stores and distributors will surely have an option or two for you to choose from, but why not go straight to the brewery? One of the more unique aspects of the niche industry is that you can see it being produced from the hop to the glass – all while you’re enjoying a juicy burger or steak.

Microbreweries and Brewpubs Catalyzed by the home breweries that helped turn a hobby into a tangible industry, microbreweries produce limited amounts of beer to the public in various methods. They are small operations focused on filling a specific segment of the population who demands its services.

an intimate tour of their facilities. Most owners are usually willing to show off their stuff and give you a taste test in the process. Grassroots community involvement is how small businesses of any kind – especially craft brewers – keep their doors open.

Festivals Music, entertainment and beer have gone hand in hand for years, but craft brewers have found a customer demand for special festivals celebrating the industry’s unique products. Annual events are sprouting across the country and feature bigname artists, bands and performers.

Brewpubs are similar in scope but brew their beer for sale in their restaurant or bar.

Craft Beer At Home

Beer enthusiasts know that sometimes finding the right brew can be a labor of love.

Many beer drinkers have dreamed about what it would be like to brew their own batch of beer. Before advancements in homebrewing technology, this may have been just a passing whim. But now that there are brewing supply stores and ingredients that can be purchased in-store or online more readily, many beer enthusiasts have determined there’s never been a better time to craft their own beer. Brewing beer at home can be both inexpensive and easy. You may want to try your hand at homebrewing and be the merry-maker for friends and family. There are a few basic steps and a few

main ingredients. Ingredients • malt extract • hops • yeast • filtered water • sugar Equipment • brewpot -- a stainless steel, 4 or 5 gallon pot • fermenter -- any vessel that can hold the beer while fermenting • funnel • strainer • siphon hose • thermometer • airlock and stopper -enables air-tight seal on fermenter • bottling bucket -- holds finished beer and priming solution • beer bottles and capper

Kits also can be purchased that include all of the ingredients needed to make beer. Although the process will vary depending on the variety of beer that will be made, some common steps include: 1. Sanitize all of the equipment to eliminate bacteria and fungi. 2. Make the “wort” from boiling water and the malt extract. Then add the hops and keep it boiling. 3. Cool the wort down until the boiling pot is cold enough to touch. 4. Strain the wort into the fermenting container. 5. Add yeast to the

fermenter. Stir gently to provide oxygen. 6. Put the airlock on and store the container somewhere cool and dark. The entire fermenting process should take a week to 10 days. 7. Prime your beer with boiled sugar water. The sugar will reactivate the yeast and carbonate the beverage while it is bottled. 8. Fill the bottles to one inch below the top. Securely cap the bottles immediately after filling. 9. Let the bottles sit for an additional week at room temperature to condition. Then the bottles can be chilled for drinking.

Craft Means Local

Besides their deliciousness, craft beers are drawing new customers every day because of the industry’s reliance on local business owners. Craft beer makers are, by definition, local and small. They produce relatively small batches of beer and are focused on exceeding customer expectations with every ounce. That’s because word of mouth is often the most important factor deciding the success or failure of a small, familyowned operation. And with most small breweries falling under this category, you can expect to find knowledgeable, responsive professionals to help you along your craft beer journey.

Economic Impact More money spent on local products means more money pumped into the local economy. Local brewery owners often reinvest revenue into their schools and community projects. Surveys have found that small business owners are more likely than their chain or franchise counterparts to support local efforts, with both finances and time. Buy your craft beer locally for a chance to win the ultimate prize – economic prosperity.

Camaraderie Take a look inside your local brewpub or microbrewery. Within those walls are your neighbors, community partners and acquaintances trying to turn their entrepreneurial dreams into sustainable incomes for their families. Much like any small business owner, they pour long hours and hard work into making a product for you to enjoy. By supporting their efforts, you are helping them advance their goals, building quality local relationships and providing an economic boost to your area.

Make a Statement Staying local will help you in your quest to support your friends, family and neighbors. And making a statement never tasted so good. Local brewers stay on top of current consumer trends and flavor combinations to make sure they are on the cutting edge of an everchanging industry. So the benefits are two-fold. You get to enjoy innovative local beer and they grow their business.

A Great Variety

Between the eclectic names and the varying colors, choosing a craft beer can be a tricky exercise.

There are light beers, dark beers and beers of every shade in between. There are smoke-flavored and wood-aged beers, as well as fruit beer and sour ales. The most popular craft beers are described below, but feel free to reach out to your local vendors to find out more about their varieties. Brewers are known to experiment with seasonal offerings and local ingredients to set their beer apart from the competition.

India Pale Ale

Brewed in a variety of ways, the color of an American IPA can range from pale golden to amber. Generally bitter and high in citric content, IPAs offer a balance of brightness and bite. Their average content of alcohol content is higher than your standard beer.

Light Lager Much lighter and very low in malt flavor, light lagers are brewed to satisfy the less adventurous beer drinker. Brewers infuse high

amounts of rice or corn to bring down the color. They are typically lower in alcohol content by volume, offering the perfect drink for casual drinking.

Stouts Stouts offer the exact opposite drinking experience than light lagers. Strong and meant to be enjoyed gradually, stouts are typically dark brown to pitch black and hard to see through when filling a glass. The roasted barley used to create coffee or

chocolate flavorings is the distinct ingredient in most stouts.

Seasonal Varieties From the fall to the spring, every season calls out creativity in local brewers. Pumpkins make their way into many craft beers in the fall months, while cherries and wheat are integrated in the summer months. Spring time is perfect for a honey beer and winter ales are generally made with higher alcohol contents to provide a warming kick.

Beer boasts some surprising health benefits

Though beer is not something many people associate with health, some might be surprised to learn that beer does provide some notable health benefits. To some men, the major food groups include burgers, chicken wings and beer. Whether hanging out with buddies watching a game on TV or firing up the grill for a backyard barbecue, many men prefer beer as their beverage of choice in social settings. Beer should always be consumed in moderation, but beer fans should know that those cold ones aren’t just refreshing but potentially healthy as well.

Builds bone strength

A 2009 study from researchers at Tufts University determined older men and women who consumed one or two drinks daily had higher bone density. Beer contains silicon, which has been linked to bone health. Of the various types of beer, pale ale has been shown to have the highest concentration of silicon, so beer drinkers might want to enjoy a

pale ale when having their next beer. Keep in mind, however, having more than two drinks has been linked to increased risk of bone fractures, so stick to one or two.

Antioxidant boost

Beer contains flavonoids, which are natural antioxidants that help to protect the body from disease. Dark beer contains more flavonoids than other varieties. Beer also contains vitamin B6. This is essential to making hemoglobin, the red protein in blood that also helps ferry oxygen around in the body. More oxygen helps muscles work more efficiently and has other health benefits.

Lowers heart disease risk

Dark beers have roughly one gram of soluble fiber in each 12-ounce serving. Various research suggests that consuming adequate amounts of soluble fiber through a healthy diet can help lower LDL, or

bottle of beer men drank daily lowered their risk of developing kidney stones by 40 percent. Researchers suggest beer’s high water content helps keep the kidneys working and flushing out the system.

Reduces risk for kidney stones

Beer may be associated with hazy thinking and forgetfulness the morning after consumption -- but that’s only when consumers overindulge. A 2005 study published in the New England Journal of Medicine that examined the effects of moderate alcohol consumption on cognitive function found older women

who consumed about one drink per day lowered their risk of mental decline by as much as 20 percent when compared to nondrinkers. Such benefits may be applicable to men as well.

Guards against stroke

According to researchers at Harvard School of Public Health, moderate amounts of alcohol, including beer, help prevent blood clots that block blood flow to the heart, neck and brain. These clots are contributors to ischemic stroke, which occurs when an artery to the brain is blocked.

Beer can also promote relaxation, reduce stress levels and help bring on a more restful sleep. The United States. Department of Agriculture also reviewed various studies that indicate moderate drinkers live longer than nondrinkers due to lower rates of heart disease, stroke and diabetes.

Know Your Glasses What’s the difference between a snifter and a flute? No, this isn’t the start to a bad joke. It’s a legitimate question that you need to consider when deciding how to enjoy your favorite craft beer.

Different glasses yield different results, and when drinking beer, it’s all about the results. From traditional pints to specialty stemmed glasses, what you pour your craft beer into can have a major impact on the taste.

The Snifter Oddly shaped and best suited for strong beers, the snifter is a craft beer favorite. Its large round bottom curves into a narrow top to optimize beer flow and fluidity. The short stem and cupped bottom make the snifter the perfect glass for serving brandy, which is how this glass is traditionally used. But it also serves as a fine home for your craft beer. Turn your glass to about 30 degrees and start your pour down the inside of the narrow top, letting the beer swirl into the bottom. This helps release the rich flavor combinations of your favorite brew.

The Flute Comparable to, but a bit wider than a champagne flute, the

pilsner flute is a tall, slender glass most popular for the unique, ultra-tall view of beer that it conveys when full. Fill it up and watch the bubbles take a long journey from the bottom to the top of this narrowly designed glassware. Avoid pouring your craft beer directly to the center and instead take special care to use the tall sides and rotate the glass slightly as you pour.

The Handled Stein If you’ve been to an Oktoberfest, you know that this glass and German beer make a great combination. The dimpled sides and handy handle combine to provide a unique, convenient beer-drinking experience. Having a handle also helps reduce the amount of heat transferring from your hands that can quickly warm a beer. The thickness of the stein’s glass can withstand clinking and dropping, in most cases, while the wide mouth promotes effortless drinking.

Food and Beer Pairing Many craft beer aficionados can rattle off not only their top five foamy favorites, but also the food that goes best with them.

It’s no wonder so many craft beer makers open up shop inside restaurants and wineries. Drinking and eating go hand in hand – literally – and if paired correctly can make a good meal great. If you’re looking for a great spot on vacation to enjoy the perfect combination of craft beer and food, check in with the town’s tourism board. Its members will be able to steer you in the right direction. With many local brewers serving as proud sectors of the local economy, they should be easy to find and enjoy.

The perfect way to wash that sodium down is a medium-flavored IPA or American ale. Moosejaw Pizza & Dells Brewing Co.

Dells Brewing Co. is housed on the third level of Moosejaw Pizza which is centrally located between Chicago & Minneapolis in the heart of Wisconsin Dells, Wisconsin. Moosejaw seats 500+ customers within the three levels of the full service restaurant which specializes in fresh, piping, hot pizzas (with dough made fresh daily)! Moosejaw offers freshly prepared comfort foods such as burgers, pastas, salads, sandwiches, entrees & kids’ meals. Each of the three levels has its own unique appeal. The Brewery Bar overlooks just that, the brewery! The main floor has numerous game mounts, a massive fireplace & old-fashioned photos of its namesake, Moose Jaw, Saskatchewan. The Rathskellar, Moosejaw’s lower level, is complete with premium sports viewing, pool table, dart board & arcade games. The Northwoods themed restaurant can also host everything from large family gatherings to bus tours. The Fireplace Room offers an intimate meeting space for up to 20 people. The lower level, The Rathskellar, can host up to 120 people. The Brewery Room can accommodate 60 people & offers you a unique background for your group event. Moosejaw offers a group menu for advance bookings that features themed &

traditional buffets as well as the flexibility to order off of the restaurant menu. Entertain your group with a stop to the large arcade or remember your trip to Moosejaw with a stop in the gift shop, Little Buddy’s Trading Post! Moosejaw Pizza is sure to please the young & the young at heart…no group is complete without Moose Antlers! Moosejaw Pizza & Dells Brewing Co. is the Dells’ only brewpub, with their hand crafted beer traveling straight from their tanks to your glass…now that’s what I call fresh! Dells Brewing Co.’s Brewmaster Jamie Baertsch & her assistant Mike Balda use a 15 barrel copper-clad Bohemian brewing system to brew & serve 10 different styles of microbrew plus 3 gourmet sodas. 6 of those beers (Honey Ale, Golden Ale, Rustic Red, Raspberry Cream Ale, Dells Pilsner & Kilbourn Hop Ale) are featured year-round in the restaurant. The restaurant also rotates 4 seasonal beers on tap for customers to experience. Headliners include seasonal & specialty beers such as the Apple Ale, Weissbier, English Brown Ale, Sweet Cherry Ale, Pumpkin Ale, Oak Barrel Aged Porter, Stand Rock Bock, IPA, Milk Stout & Hazelnut Ale. Within the first year of brewing, the Dunkel Lager

attained a silver medal in the European-Style Dark/Munchner Dunkel category at the 2002 Great American Beer Festival. This was followed up in 2003 with another silver medal, this time in the Bock beer-style category for Blonde Bock. They returned to the Great American Beer Festival in 2008 & brought home another silver medal in the Scottish-Style Ale category for their Rustic Red! Brewmaster, Jamie Baertsch who holds the title as “Only Female Brewmaster in Wisconsin”, recently perfected her recipes for bottling. Dells Brewing Co. aficionados can, in addition to ½ gallon growlers or barrels, now pick up a 6 Pack of the flagship beer & awardwinning Rustic Red or the ever popular Honey Ale… with more flavors coming soon in bottles! Jamie is also a proud member of the Pink Boots Society, an organization of women that play key roles in the brewing industry & has been a featured speaker at the national Craft Brewers Conference. Beer connoisseurs can have fun pairing the distinct ingredients & flavors of each featured beer with an equally complimentary dish. Beer enthusiasts savor such flavor-minded combinations, including: the Rustic Red with Chicken Fajita Specialty Pizza or the Oktoberfest

with an Elk Burger. In Wisconsin, Friday Night Fish Fry is a rite of passage… wash it down with a Dells Pilsner & you are truly a Wisconsinite! Beers are served by the pint, pitcher or growler at the restaurant. 2013 continues to be a busy year for Dells Brewing Co., they have bought a new bottling line & now bottle their hand crafted Root Beer, Grape & Orange sodas.
