If we are what we eat, then it may be a good idea to take inventory of the foods the average person consumes on a daily basis. Although some foods are sought after for their taste, there are many foods that can be enjoyed because they have a positive effect on a person’s appearance. In the simplest sense, eating a healthy diet can help maintain a good body weight, which is one way to improve individual appearance. But more specifically, there are certain foods that have particular benefits for the skin, hair and body. The key is knowing what to eat. SOY: Soy is rich in amino acids. This food, whether eaten as a soy bean or in the many foods made from soy, including tofu, can help the skin retain moisture and improve elasticity. Soy is also protein-rich, which can help a person feel full longer and avoid overeating. BLUEBERRIES AND CHERRIES: These fruits are chock full of antioxidants, which studies show can reduce inflammation, a culprit of puffy, aging skin. Cherries are also a natural source of melatonin, which can help a person get a restful night’s sleep -- another component of looking your best. FRESH HERBS: Seasoning food with flavorful herbs instead of salt is another way to improve looks. Salt is often a culprit in water retention, which can lead to bloating and puffiness. This is also advantageous to people who need to reduce salt intake thanks to high blood pressure or other ailments. LIME, PEAR, APPLE, AND STRAWBERRY: These power fruits are high in vitamin C and other nutrients, making them an important component of a healthy diet. Furthermore, some research has suggested that certain foods, including limes, pears and apples, can whiten teeth. EGG PRODUCTS: Eggs are high in vitamin A, which helps repair skin. Not getting enough vitamin A may contribute to wrinkles. MILK PRODUCTS: Consuming low- or nonfat dairy products helps promote strong bones and teeth. Nothing says beautiful more than a big, bright smile. B vitamins in dairy also help with red blood cell growth, cells that are responsible for bringing oxygen to other cells. This can promote healthy, young-looking skin. YOGURT: Yogurt contains beneficial bacteria, which help with digestion. This can help cleanse out the system and prevent toxins from backing up in the body. WATER: Of course a person needs to stay hydrated, and water can flush the body of excess salt and toxins while also plumping the skin. There are many nutritionally sound foods that can boost outward appearance as well.

Beware foods that may not be vegetarian or vegan

substance is made from the solid fat of sheep and cattle separated from the membranous tissues. It can be used in margarines, soaps, ice creams, spice flavoring for baked goods, and other food products.

egetarians and vegans face the challenge of finding foods that fit with their lifestyles and ideals. There are many foods that aren’t vegetarian- or vegan-friendly but might appear to be so. That’s because these foods contain certain ingredients that are largely animal-based products. Here are some ingredients used in common foods that can be troublesome. • RENNET: Sometimes called rennin, this is an enzyme used in the making of cheese. It is often derived from mammal stomachs, such as the fourth stomach in cows. Rennet is used to coagulate milk products so that they turn into the curds that make many different cheeses. Some cheesemakers offer vegetarian alternatives that rely on vegetable or microbial enzymes. Rennet may not only be in cheese. It might be an ingredient in some chocolate candy bars as well. • GELATIN: Gelatin is made from the structural protein called collagen that is found in many animals. Most gelatin is derived from the collagen in cow or pig bones, hooves, and collective tissues. Gelatin is obviously in gelatin desserts, but can also be found in puddings, whipped creams (to stabilize them), and marshmallows. • ALBUMIN: This is the protein component of egg whites. Albumin is added to thicken or add texture to foods. Many baked goods or icings contain albumin through the addition of cream of tartar, which is a powdered albumin product. • LARD: Different foods are

It is now being touted as a very important natural health food for it’s antioxidant properties. • CAESIN: This is another milk protein that coagulates with the addition of rennet. It is used in many creams, cheeses and dairy products. • BONE CHAR: Sugar is bleached using a process of running it through bone char, sometimes refered to as natural carbon. You’ll have to read the packaging to determine if it’s in there. • COCHINEAL, CARMINIC ACID OR CARMINE: This is the pigment that makes red candies red. Practically anything colored red is made with this ingredient, which comes from the female Dactylopius coccus costa, or cochineal insect ... a type of beetle.

Super-Couponing Tips

A Grab Bag of Coupon Questions By Jill Cataldo CTW Features This week, I'd like to answer a few quick questions that landed in my email inbox. Question: ''I enjoy reading your column and particularly love the topic of stockpiling. I would love to start, but I'm concerned about food going bad. I know flour, sugar, pasta and soup all have expiration dates. I'm nervous I'll stockpile, forget about the food and everything will be bad by the time I need it. Any suggestions?'' Answer: Stockpiling groceries and coupon use go hand in hand. Watching for good sales and buying a little more than needed when prices are low keeps us from paying full price. It also keeps us from running out of pantry staples. At our house, it's never a tragedy when one of the kids uses up the last squeeze of ketchup from the bottle. We just grab another one from the pantry. When I refer to stockpiling, I'm typically buying about 12 weeks' worth of a product. If I

use one bag of flour per month, I'll buy three when I'm stocking up. In about 12 weeks another sale may come around and I'll stock up again. When we stock up on three months' worth of food, it's unlikely that we'll be faced with expiring food on the shelves at home. If you keep your stockpile limited to the items you use most, you won't have issues with expiration dates. You'll also be able to keep your stockpile to a reasonable size. Don't forget that if you hit a great deal on non-perishable items, like paper products or cleaners, it's fine to stock up in larger quantities. *** Question: ''I wanted to ask you about the dark side of extreme couponing: the quality of foods that these people are buying or that stores are offering. When I see overweight people buying ten packs of hot dogs just because they have coupons, I think to myself, this is the socioeconomic effect that is basically increasing healthcare costs.'' Answer: I think it's outside the scope of this column to debate the impact of shoppers' food choices on long-term health. While I personally enjoy great savings with coupons, I also make a point of focusing on healthier food choices for my family. I know that may be a silly question to you, but some of us can't get out to the store. And we may have the time but not the endurance to stay at a table that long to cut out coupons. Any ideas would be highly appreciated.'

Peapod.com, a national service available in market areas around the country, accepts manufacturer coupons. Simply clip them and give them to the delivery driver when your groceries arrive. If you're unable to clip coupons but you do make trips to the store, you may wish to look into electronic coupons, which can be loaded to a store's loyalty card. Check your stores' websites to see if they participate in electronic coupons. It's easy to click and load a card no scissors necessary!

Answer: If you aren't able to get to the store or cut out coupons, it's honestly going to be difficult to fully embrace life as a coupon shopper. Taking advantage of the best coupon deals each week is typically going to require trips to the store and picking up a pair of scissors. However, I do

9 ways to eat better now Although it is widely known that eating a healthy diet and exercising frequently are the key ways to maintain a healthy weight, it’s easy to fall into bad habits. Some men and women find it difficult to avoid temptation and stay on track with diet. But balance and portion control are great ways to enjoy food without gaining weight. Here are some tips to live by. 1. USE A SMALLER PLATE. This will trick the eye and brain into thinking you are eating a lot. A large plate seems empty with smaller portions, prompting many men and women to eat more than is necessary. Using a smaller dish can give the impression of eating from an overflowing dish. 2. MAKE VEGETABLES A PRIORITY, not an afterthought. Fill up on vegetables and make meat and other higher-calorie foods the afterthought, instead of vice-versa. In fact, two-thirds of your dish should be consumed by vegetables, with the remaining portion for a protein or starch. 3. AVOID FAMILY STYLE MEALS. That means placing large serving dishes full of food directly on the table. It encourages going in for seconds when you really may not be hungry. It takes the brain at least 20 minutes to register feeling full. So serve yourself from the stove and wait to see if you’re still hungry before going back for more. 4. SWITCH TO SKIM PRODUCTS. It is widely known that dairy products are an important component of healthy living. However, wholemilk varieties tend to be heavy on calories and saturated fat. Opt for skim milk whenever possible. Today, there are ultra-pasteur-

ized varieties of skim milk that are creamy and filling. 5. RELY ON SEAFOOD PROTEIN. Eating fish once or twice a week is an excellent way to cut calories and enjoy a food that is rich in essential fatty acids. 6. EXPERIMENT WITH HERBS, not salt. A lot of sodium in a diet may not be good for blood pressure and it can lead to water retention. Instead, reach for herbs to add flavor to foods. Keep a fresh selection of parsley, chives, cilantro, basil, and other herbs at the ready and chances are you won’t even miss the salt. 7. GO SPARINGLY ON DRESSINGS AND SAUCES. You can quickly turn a healthy salad into an unhealthy meal if you drizzle on too much creamy salad dressing. Studies show that some fast food salads have more fat than other fast food fare, including hamburgers. Opt for the dressing on the side, or select among fat-free alternatives. Use only about 1 to 2 teaspoons for flavor. 8. INDULGE ONCE IN A WHILE. Depriving yourself of everything that is tasty can lead to binge eating or overeating. Just remember to keep the portions of sweets or fattening foods modest and try not to over-do it the rest of the day. 9. DON’T FORGET THE EXERCISE. The American College of Sports Medicine offers benefits of exercise beyond simply helping you to lose weight: • Lowers risk of heart disease by 40 percent. • Lowers risk of breast cancer by 20 percent. • Lowers risk of depression by 30 percent. • Lowers risk of hypertension by 40 percent. • Lowers risk of type 2 diabetes by 58 percent.

ood allergies are something often associated with children. That’s because most children grow out of their food allergies early in childhood. However, not all youngsters see their allergies go away, and many adults have allergic reactions to food throughout their lives. Though it’s possible for any food to trigger an allergy, most foods will not. Allergic reactions to food are, more often than not, triggered by the following foods.

ndividuals who were hard hit by the economy saved money by reducing the number of meals eaten out, preferring to cook at home. But with grocery store prices now rising faster than restaurant menu options, many people could be turning back to dining establishments for one or more daily meals. According to analysts, grocery stores tend to pass charges in food costs on to consumers faster than operators of large restaurant chains, which keep key food item prices relatively steady. Factor in slight improvements to the economy, and restaurant dining could be popular once more. Individuals who live alone or retired couples could find it’s more affordable to eat the majority of their meals outside of the home instead of stocking up on grocery items that could spoil before they are enjoyed. For those who do choose to dine out, follow these tips for even more savings.

• DINE EARLY. Live up to those early-bird stereotypes. Head to

restaurants when they offer special discounted prices, whether for breakfast, lunch or dinner.

• SHARE A MEAL. Dine at establishments that don’t charge for an extra plate. Order a meal (which tends to be an oversized portion anyway) and split it.

• CLIP COUPONS. Restaurants routinely offer coupons for “buy

one, get one,” and other deals. Scour advertisements for the restaurants you enjoy.

• CURBSIDE PICKUP. Instead of dining out and paying for a tip or items you don’t need, consider curbside pickup and simply dine at home.

• JUST ORDER APPETIZERS. Sometimes a salad and a side item can be a filling meal -- and one that’s less expensive.

• SKIP THE SOFT DRINK. Choose water with the meal, which is often complimentary. Beverages can quickly run up a bill.

These tips can make dining out even more affordable for the average diner.

1. PEANUTS: While some kids outgrow a peanut allergy, it’s often lifelong. One of the most common causes of food allergy, peanuts can cause anaphylaxis, a life-threatening reaction. Such severe side effects is one reason medical professionals often recommend people with peanut allergies avoid even the tiniest amounts of peanuts. Even a trace of peanuts can cause severe reactions, so it’s sometimes best to avoid tree nuts as well. These include almonds, walnuts, hazelnuts, Brazil nuts, and cashew nuts. Crude peanut oil might also contain peanut allergens, and many people with peanut allergies avoid such oil as a result. 2. EGGS: Many children with an egg allergy outgrow it by the time they become toddlers. However, some have such a severe egg allergy they cannot even be around when someone is cooking eggs. Cooking the eggs can destroy the allergens most people react to, but cooking won’t necessarily kill all of them. People with an egg allergy should check labels when visiting the grocery store, as products like ice cream, hot dogs, mayonnaise, and some pastas are hidden sources of eggs and can trigger an allergy. 3. MILK: A milk allergy is another type that children often outgrow by the time they reach toddlerhood. However, not all kids outgrow a milk allergy, which can manifest itself as rashes, diarrhea, vomiting or stomach cramps. When a person has a milk allergy, it’s caused by a reaction to certain allergens in cows’ milk, including whey and casein. Even small amounts of casein and whey can trigger an allergy, and the allergens in cow’s milk are very similar to those in goat’s and sheep’s milk as well, meaning it’s possible that a person with a cow’s milk allergy will also be allergic to goat’s and sheep’s milk. 4. FISH: Adults are more likely to have an allergic reaction to fish and shellfish than children. Those with a specific fish allergy should be wary of cross-contamination, and many are advised that it’s best to avoid seafood entirely. What’s more, because the allergens in fish are so similar, people who are allergic to a specific type of fish will often find that other types of fish trigger a reaction as well. When shopping, be careful of certain Caesar salad dressings, as some contain anchovy paste, and read the labels before buying any fish sauce or even Worcestershire sauce. 5. WHEAT: Wheat allergy is one of the more common food allergies. One of wheat’s most prominent allergens is gliadin, a protein found in gluten. As a result, many people with a wheat allergy follow a gluten-free diet, which means they must avoid many processed snacks, deli meats, some ice creams, and even beer. When it comes to food allergies, some of the more enjoyable foods are common triggers. To avoid many of the more harmful side effects of food allergies, always read product labels before cooking or consuming foods.

What's Really In A Hot Dog?

or many years, hot dogs have received their share of bad publicity. Uncertainty about secret ingredients housed within that outer membrane have caused many to fear the humble hot dog. In truth, there isn’t much mystery to the contents of frankfurters, and people needn’t fear the worst. There have long been rumors that hot dogs contained many unsavory parts, making them food unfit even for pets. The term “dog” has been used as a synonym for sausage since 1884 and accusations that sausage makers used dog meat date to at least 1845. Far more recently the myth that hot dogs contain the scraps that fall onto butcher shop floors has prevailed. In the 1988 film “The Great Outdoors,” Dan Akroyd’s character alludes to hot dogs containing questionable ingredients and chastises John Candy’s character for serving them. In reality, hot dogs aren’t sinister; they can actually be quite tasty. The National Hot Dog and Sausage Council estimates that Americans eat about seven billion franks during hot dog “season,” which lasts from Memorial Day to Labor Day. At ball parks, sporting events, backyard barbecues, and so many other occasions, hot dogs are often the preferred food. While they may not be on the menu at

five-star restaurants, hot dogs have few ingredients to scoff at. Hot dogs typically contain meat, be it pork, beef or poultry, as the main ingredient. Fillers like bread, flour or oats may also be included. Spices, preservatives and curing agents often round out the ingredients list. Although the most choice cuts of meat are not used, hot dogs are not comprised of the snouts and ends from animals. Rather, they are usually the leftover pieces of meat that are removed from the choicer cuts and some fat. Organ meat is not a part of hot dog creation any longer. There are varieties of gourmet hot dogs that may have better cuts of meat, and individuals can create artisanal hot dogs that feature their own select ingredients. A word of caution regarding hot dogs may be issued in relation to their containing nitrites and salt. Nitrites are preservatives that help prevent against botulism in the meat. Many cured meat products contain nitrites, including bacon and fish. Nitrites may lead to the formation of some cancers and are best avoided if a woman is pregnant. Sodium levels in hot dogs also are high, which means those with high blood pressure or who are watching sodium intake may want to reduce their consumption of hot dogs. There are nitrite-free and low-sodium hot dogs for those who still want to indulge without as much guilt about the consequences.

Dig Into These Pumpkin Facts Little thought is given to pumpkins and their makeup. But pumpkin afficionados who want to know more about these delicious gourds can dig into the following facts. Pumpkins are a member of the squash family that grow on long vines close to the ground. Before pumpkin fruit grows, brightly colored flowers will form and then turn into pumpkins. Pumpkins adapt to many climates and are grown on all continents except Antarctica. In colonial times, settlers and natives alike relied on pumpkin as a staple of their diets. The British saw the possibilities of pumpkins as a food source and brought seeds back to Europe to enjoy as well. Pumpkins are comprised of several parts. The pumpkin is covered

in a skin that surrounds the pulp, or the meaty part of the pumpkin. The stem is at the top of the pumpkin and connects to the vine. Tendrils are thin pieces of vine that tether the pumpkin to the ground to protect it from the wind and weather. The inside of the pumpkin is known as the cavity and can contain seeds and fibrous strands. The bottom of the pumpkin is the blossom end because that’s where the flower started before the pumpkin formed. Most varieties of pumpkins are edible, but some taste better than others. Once pumpkins turn orange they can be eaten. People bake them into pies, soups and stews. It can also be used in breads and cakes. Pumpkin puree can replace the oil in cake recipes in the same

way applesauce can. Adding pumpkin to recipes provides a healthy way to increase nutritional value. There are many interesting pieces of trivia regarding pumpkins. Here are some things to ponder. • Pumpkins were once believed to eliminate freckles and were also used as a remedy for snake bites. • In 2007, people in Boston earned the world record for the most lit pumpkins with 30,128 twinkling jack-o-lanterns. • Thousands of people participate in pumpkin chucking, an event where air cannons propel pumpkins thousands of feet. Each year people compete to see who can launch a pumpkin the farthest.

• On Sept. 25, 2010, people in New Bremen, Ohio, broke their own record when they baked a 3,699 pound pumpkin, surpassing their prior record of 2,020 pounds. Pumpkins are not only a seasonal delight, but are delicious and they’re also interesting.
