Eid ul-Fitr literally means ‘festival of breaking the fast’. Like
other festivals observed by the Muslim community, this festival symbolizes faith.
Meat supplier were all prepared to anticipate the high demand
for beef not just during Ramadan, but also Eid ul-Fitr. Not
suprisingly, when the increase in demand surpass the supply

There were a couple other notable lessons I stumbled upon
from last Eid ul-Fitr. I found that a simple act of goodness goes a long way. From helping old folks to cross the road or even to

Cleaning up meat formulations
D
espite the fact that clean label is an arbitrary term with few in the food-supply chain agreeing on any one exact definition, most players have made clean label
a priority. Be it simple formulations, transparency on labels or
avoiding specific categories of ingredients, clean label is driving innovation and reformulation.
This was very apparent at the 35th annual Natural Products
Expo West that took place in early March in Anaheim, Calif. It’s
the world’s largest natural, organic and healthy products event and the exhibitors are the forerunners in clean label.
One of the key macro trends identified at this year’s Expo
was “transparency.” Consumers are increasingly demanding
to know what is in their food and brands are responding by using technology and other innovations to provide greater transparency and traceability for their products.
“To us, a clean label means ingredients you can read, understand and feel good about purchasing,” said Suji Park, founder and CEO, FDMR Inc., Omaha, Neb., marketers of the heat-and-eat refrigerated Suji’s Korean Cuisine line. “We don’t use any artificial flavorings or preservatives. We take an all-natural and healthy approach to our food, because at the end of the day, it’s what we would want to eat. To stay clean label, we spend a lot of time sourcing the best ingredients for our brand.” 20
Another trend was “ancient wisdom gets wiser.” Brands
continue to innovate by producing simple, delicious products that take minimal processing to new levels and contain short lists of nutrient-dense ingredients. Driving the business Here’s what some Natural Products Expo West exhibitors
had to say about how clean label drives their business. “To
us, a clean label means ingredients you can read, understand and feel good about purchasing,” said Suji Park, founder and
CEO, FDMR Inc., Omaha, Neb., marketers of the heat-andeat refrigerated Suji’s Korean Cuisine line. “We don’t use any
artificial flavorings or preservatives. We take an all-natural and
healthy approach to our food, because at the end of the day, it’s what we would want to eat. To stay clean label, we spend a lot of time sourcing the best ingredients for our brand.
“If you’re cooking any ethnic cuisine, there are ingredient
sets that are specific to that cuisine,” Park said. “Korean food is all about bold flavors: umami, spice, acidity, sweetness; it encompasses a lot of the flavor spectrum.”
Park and her culinary staff go out of their way to achieve these
flavors through the use of real food ingredients, not by adding flavors that mimic the authentic ethnic tastes. For example, the savory beef bulgogi uses the same centuries-old technique of marinating lean meat in a blend of soy, fruit puree, vinegar and
sesame oil to achieve a balanced sweet and tangy flavor. The

“We make real food from ingredients you can understand and
pronounce – ingredients you can find in your pantry at home,”
said Andrew Jaffe, vice president of marketing. “Our products are always free of preservatives, antibiotics, artificial ingredients
and synthetic growth hormones. Our chicken, beef, pork, eggs and cheese come from animals raised in the US without the use of antibiotics and never fed animal by-products.”
These players are helping define clean label, much like Whole
Foods’ forbidden ingredient list characterizes the term natural. Their opinion counts.

This ranges from grass-fed, free-range, antibiotic-free beef and lamb from New Zealand, Australia and Uruguay, to farm-raised
Wagyu beef from Idaho and organic chicken from Virginia, the
company’s home state, making the chicken a locally sourced ingredient.
An increasingly prominent clean-label retail brand is Evol
from Evol Foods, a division of Boulder Brands USA Inc., Boulder, Colo. The company started out with frozen burritos and now
plays in the frozen meals – both single-serve and multi-serve – categories. Most include a meat and poultry component.

Companies must stop self-certifying products Halal ........................................................................................................................................................ Sharia Halal Board held an emergency meeting recently regarding the recent Halal issue with a Scottish food company named Punjab Pakora. It expressed extreme disappointment both with Punjab Pakora and Aldi, the supermarket chain that was selling the product. Speaking at a held Press Conference after the meeting Allama Shahid Raza Naeemi OBE a senior panel member stated:
” We are horrified and appalled that Muslim consumers were being sold a product that could have zero possibility of being Halal. Furthermore that the meat used was from the most forbidden animal to Muslims” Meat from Pig is strictly forbidden in Islam and is mentioned categorically in the Holy Quran. Muslims will feel sickened at the fact that not only was the product Haram (Forbidden) but was also from pig. Grand Mufti of United Kingdom, Mufti Abdul Rasool Mansour who is also a senior panel member stated “We will be writing to the FSA and DEFRA regarding this issue and have asked for both companies to be investigated thoroughly. An apology is simply not enough after making such a major mistake. We need to understand how this mistake occurred and what the company in question is doing to avoid such a mistake in the future”.Senior scholar Allama Qazi Abdul Aziz Chishti, stated: President of the Central Association of Sunni Scholars
“We have trying for a while now to put a stop to self certification of factories and processing plants. This is one of the key issues that Muslims face in UK and this gives companies the right to actively mislead Muslim consumers stating a product is Halal by simply using a local religious person or in house Imam to support. This practice gives way to mess-ups such as the recent one made by Punjab Pakora. It must stop.” and senior panel member Prof Syed Ahmed Hussain Tirmizi explained further: “Companies knowingly employ such Muslim workers

who sign off for the company stating that the product is Halal. Most of those signing or approving the meat or poultry have almost zero knowledge about what makes the product Sharia compliant and Halal. Companies are also using this route to continue to sell machine killed poultry to Muslims across the UK when they know full well that the Muslims of UK have rejected this method as Halal.” Senior Consultant Saraj Murtaza stated:
“All the major Halal certifiers in UK have stated officially that machine killing is unacceptable, yet by using in house companies the slaughterhouses can get away with still labeling machine killed product as Halal. We will be lobbying the government in coming months regarding this issue. Meanwhile, we have agreed in our meeting today to immediately contact DEFRA and the FSA and ask for a detailed investigation into Punjab Pakora and to check with Aldi what methods it employs to ensure products they sell are Halal. Unlike local grocers Aldi is a major chain and should have strict policies in place.” Sharia Halal Board thanked all the media for attending the Press Conference and asked for their continued support in helping to unearth such illegal Source: halalfocus.net

Denmark To Standardize Halal Rules
........................................................................................................................................................ COPENHAGEN – In a bid to boost its halal meat exports, Denmark aims to develop common industry standards through collaboration between producers, brokers and marketers of the meat in the Nordic country. “There is a shift towards more stringent halal rules in a number of countries,” Stig Munch Larsen, a senior consultant to Danish Agriculture & Food Council trade and market department, told Global Meat News on Friday, May 29. “Malaysia is the country with the strictest rules, but also countries such as Indonesia, Saudi Arabia and Singapore have strict requirements, while African countries can also have stringent regulations.” Larsen was speaking about the two-day seminar that will tackle the aspects of halal meat industry in the European country including, slaughtering, production, and export. Scheduled on 24 June in Copenhagen, the seminar will highlight halal rules in Malaysia, as a part of the country’s efforts to accelerate the standardization of halal rules. The seminar was announced during a meeting between the Danish Agriculture & Food Council (DAFC/Landbrug & Fødevarer) and producers, brokers and marketers of halal meat. The meeting aimed to discuss developing halal standards that consider the differences of halal slaughtering conventions between countries. Networking Seeking a common ground, the DAFC council urged a large-scale networking between “Danish meat companies engaged in producing and exporting halal meat.” If agreed, the common halal standards will be applied on poultry, beef, and ingredients. The common standards will also include the entire value chain “from primary production to slaughter, transportation, storage and export management,” according to the government backed DAFC. In February 2014, Agriculture and Food Minister Dan
“Malaysia is the country with the strictest rules, but also countries such as Indonesia, Saudi Arabia and Singapore have strict requirements, while African countries can also have stringent regulations.” Jørgensen has sparked a controversy after announcing that Jewish and Muslim ritual slaughter will be illegal in Denmark. Facing growing calls for boycott over its ban on halal slaughter, Denmark has attempted to play down growing criticism by Muslims around the world, confirming that the Islamic slaughter is still legal in the north Nordic European country. The concept of halal, -- meaning permissible in Arabic -- has traditionally been applied to food. Muslims should only eat meat from livestock slaughtered by a sharp knife from their necks, and the name of Allah, the Arabic word for God, must be mentioned. Muslim scholars agree that Shari`ah provides a divine law of mercy that should be applied on all Allah’s creations, including animals. Islam also provides details about avoiding any unnecessary pain. HALAL TIPS
Currently, the Halal meat business makes close to $5 million a year. But the potential profit could be as high as $60 to $80 million. The market hasn't developed for a number of reasons, some of them can be attributed to Muslim consumers, others to Muslim businesses.
01
MAKE PROFIT THE SECONDARY AIM The first goal of a Muslim business should not be cashing in on a Muslim market. It should be pleasing Allah and establishing Halal as a way of life. Seeking profit is not a bad aim, but it should be secondary.By making Allah the goal, and implementing Islamic rules of honesty, truthfulness, and good behavior with customers, Insha Allah, any Muslim business is bound to boom.

BE OPEN TO SCRUTINY AND CRITICISM The first goal of a Muslim business should not be cashing in on a Muslim market.
BE CLEAN! This is especially important for Halal grocery stores where the presence of animal blood is expected. Not being

careful of this means not only lost customers, but also possible sicknesses from the germs in the blood. The Prophet (peace and blessings be upon him) said: "Cleanliness invites towards faith (Iman) and faith leads its possessor to paradise." (Tabarani) This cleanliness, by the way, does not just apply to those areas of a store a customer will see. It includes equipment and storage areas as well.
07
DO NOT SELL THE HARAM It is not difficult to find Muslim owned businesses selling pork, alcohol, pornographic magazines, and renting these kinds of movies on the one hand, while selling Halal meat on the other. Of a less offensive nature, perhaps, are those businesses which sell Halal products but rent or sell cultural (especially Indo-Pakistani) movies. While these movies may seem harmless in comparison to those of the pornographic variety, what must be remembered is that when Muslim parents and elders indulge in watching such cultural films, their children can very easily find an
WORK WITH OTHERS IN YOUR MARKET Yes. This can be very difficult. Finger pointing, accusations and nasty rivalry often characterize Muslim businesses aiming to market the same products. But this is not the way a Muslim economy should work. Brotherhood in the Ummah cannot be forgotten. Consider forming an association of Muslim meat retailers or distributors that can sit down together share experience, and learn to cooperate. This cooperation could, in the long run, benefit the Muslim consumer, and in turn the Muslim businesses themselves. One example of where cooperation can take place in the Halal meat industry is by having all grocers or butchers slaughtering the animals in one place, Instead of doing it the way it's been done since the beginning: every individual or couple of retailers slaughtering their own animals. By slaughtering in one place, costs are reduced, and in turn, the Muslim consumer pays less for the same product.
