MICHELLE sMITH’s BREAD PUDDING WITH PEACHEs AND CARAMEL 2 cups fresh peaches—peeled, pitted, and halved 1 can sweetened condensed milk 3 eggs, lightly beaten 1 1/4 cups hot water 1/4 cup butter, melted 1 tsp ground cinnamon 1 tsp vanilla extract 4 cups French bread, torn into small pieces
Caramel sauce: 1/2 cup brown sugar 1/2 cup butter 2 tbsp light corn syrup 1 tbsp rum Preheat an oven to 325°F. Grease a 9x13-inch baking dish. Chop the peaches and lightly mash them in a mixing bowl. Combine the sweetened condensed milk and eggs; add to the peaches and mix well. Stir in the hot water, melted butter, cinnamon, and vanilla. Stir the French bread into the custard mixture until the bread is completely moistened. Turn the pudding into the prepared baking dish. Bake until a knife inserted in the center of dish comes out clean (about 1 hour and 10 minutes). While the pudding is baking, combine the brown sugar, 1/2 cup butter, corn syrup, and rum in a saucepan. Bring to a boil over medium heat and simmer for 3-4 minutes or until just slightly thickened. Let cool. Serve warm with caramel sauce drizzled on top.

VINCE CAMUTO’s ROAsTED THANKsGIVING TURKEY 1 (16-pound) turkey, rinsed well and patted dry 1 1/2 sticks unsalted butter, softened 1 1/2 bottles of dry red wine 3 tbsps chopped fresh flat-leaf parsley 1 1/2 tbsp chopped fresh sage Mix cream, butter, and sugar. Add 1 1/2 tbsp chopped fresh rosemary nuts and flour. Chill in refrigerator. 1 1/2 tbsp chopped fresh thyme Drop rounded half-teaspoons of Kosher salt and black pepper dough onto a cookie sheet. Flatten 6 cups homemade chicken stock slightly with fingers. Bake 12-15 3 large carrots, chopped minutes at 350°F or until light 2 celery stalks, chopped brown. Don’t overbake!
