LETTER From the Editor
Summer LOVING
Is there anything better than the first few blessed moments of summer? The season, which we’ve awaited more eagerly than ever this year (remember that horrible winter?), is ripe with possibilities. The parties! The beach days! The farmstands! The outfits! To perfectly capture l’esprit, we went to our favorite fashion insiders for inspiration and then took a mini-break to St. Barth to meet up with our dear friend Gilles Bensimon and our summer muse Toni Garrn. Cavorting in the surf, surrounded by volcanic rock, flora, and fauna, we remembered what makes this time of year so essential—the freedom to escape from la vie quotidienne, rediscover nature, and indulge in simple pleasures. Go forth, and do so in style! FA S H I O N W E E K D A I L Y. C O M

chic moments BULGARI’S BALLET gala The Youth America Grand Prix performance and dinner glittered with major ballet star wattage and head-spinning Bulgari jewelry. (YAGP is the largest international dance network and student ballet scholarship audition organization.) Teen Vogue’s Amy Astley, donning Proenza Schouler avec Bulgari baubles, served as gala chair. “I used to dance, but I wasn’t very good!” Astley said. “But I love the ballet, and it’s so fun to be here tonight.” The fashion cognoscenti were fixated on the charming David Hallberg, the first American to become a principal dancer with the Bolshoi Ballet in Moscow in 2011. “I didn’t think I would love Moscow, but I really love it,” he said. Astley’s other dates were starlets Bella Thorne, who sported a stunning Bulgari Diva necklace and Serpenti bag, and Hailey Baldwin, outfitted in a Spiga bracelet and Bzero 1 and Diva rings. Also spotted: Woody and Soon-Yi Allen, Hamish Bowles, Bill and Donna Acquavella Karen LeFrak and (their son Alex is getting married soon Isabella Boylston in St. Barth), Jared Angle, Alberto Festa, photographer Henry Leutwyler (who was shooting Hallberg the next day), the brilliant creative director Ruba Abu-Nimah, designer B. Michael, and Jamee Gregory, to name a few. Veronica Bulgari arrived with her young son and his fetching date, who was in awe of all the ballet stars spinning around the Promenade of the David H. Koch Theater. “I love ballet,” Bulgari said. “We’re thrilled to support Youth America Grand Prix and so many talented young artists.”

chic moments The Whitney Museum flung open its doors with a week full of festivities, kicking off with a party hosted by Michael Bloomberg and the building’s famed architect, Renzo Piano. “The new Whitney is almost ready to take off, but don’t worry, it won’t, because it weighs 28,000 tons,” Piano quipped to the crowd before yielding the stage to Rufus Wainwright, who performed a rendition of Billy Joel’s classic, “New York State of Mind.” The week carried on with a host of parties every night, including the launch of MaxMara’s Whitney Bag in collaboration with the Renzo Piano design workshop and a dance party at the Standard Hotel on Friday evening hosted by André Balazs avec on-again off-again girlfriend Uma Thurman.

CHIC CHAT! With Sandra Choi How did you come up with the idea for the #choohound? One morning, I woke up and saw an e-mail from a friend telling me to check out the Jimmy Choo dog. Turns out Rafael had illustrations of his dog on his website. I e-mailed him directly and after a few conversations, I said, “You know what? Jimmy Choo needs Jimmy Choo. Let’s join forces!” What are your summer plans? I’m planning to do very little. My family is off to Italy. We’ve booked a holiday at a villa in Umbria, and we are just going to drink wine and chill. After that, I’m going to hide at my country home in England for a week.

MAYBELLINE TURNS 100 To celebrate Maybelline New York’s 100th anniversary, nothing less than a blowout bash would do. The brand took over the IAC Building to both reminisce about its storied history and toast the strong women who make it all happen. Faces Gigi Hadid, Jourdan Dunn, and Emily DiDonato took in a DJ set by the Misshapes while Maybelline New York president David Greenberg unveiled a new philanthropic effort, donating $100,000 to the Girl Project, Glamour magazine’s collaboration with nonprofits to raise funds for young women’s education. “We’re celebrating a pretty monumental occasion, and it makes me so happy to see so many friends and colleagues from the industry all coming together to help us celebrate,” Greenberg said. “The best thing about 100 years is it makes me feel incredibly young. Compared to Maybelline, I’m a baby!”

CHOOSING FAVORITES! With Jaimie Alexander
What was your first experience with makeup? I grew up watching my mom do her makeup. She never wore that much, so I think I learned and appreciated from a young age that less is more. I never overdid it! What’s your favorite Maybelline product? I love The Nudes palette eye shadow. I haven’t found any other product like it—a compact that has all of the colors I actually want to use. I don’t really wear a lot of bright makeup—I like neutral shades. What do you think makeup will be like in 100 years? You’ll probably put your face in a tube, press a button, and walk away looking like Beyoncé!
What’s your favorite Maybelline product? Great Lash! I know it sounds cliché, but I’ve used it since I was 15 years old. What do you love about makeup? Makeup is one of the most incredible ways for an actress to become a character. On my new show, Blind Spot, I wear seven and a half hours’ worth of temporary tattoos.
LASHING OUT! With Cindi Leive What was your first experience with makeup? Gigi Hadid and Like all women, I stole things out of my mother’s cabinet, but that wasn’t Jourdan Dunn very fruitful because my mother was a complete makeup phobe. What’s your favorite Maybelline product? Great Lash, duh! What do you think makeup will be like in 100 years? Forget 100 years! I think in three years we’re going to be printing out of our 3-D printers, right? I think men will start wearing it in all kinds of different ways, and coming up with ways to create your own makeup will also be a thing. It’ll be interesting to see how beauty companies help women do that. What are you looking forward to this summer? There’s going to be this magical two-week period where for the first time both of my kids are in sleep-away camp, so I get to have a conversation with my husband! Shocking, right?
KEEPING ROUTINES! With Jourdan Dunn What was your first experience with makeup? I was always invading my mom’s makeup bag, and I was always struck by the pink and green Great Lash mascara. That was my first introduction to makeup. Is that something you still wear today? Oh, yes! It’s a great mascara. What is your beauty routine? It’s quite intense. I do a 10-step skin regime every morning and evening. It’s Maybelline’s 100th anniversary. What do you want to be doing at 100? I want to still be enjoying life.
MAKING A DIFFERENCE! With Toni Garrn What do you want to be remembered for in 100 years? I would like to be remembered as someone who did something for women’s empowerment. I’m working with a charity called Plan International, and we’ve been working to educate 700 girls at a school in Burkina Faso in West Africa. Which beauty product do you always wear? Mascara, always! Tonight, it’s the only thing I’m wearing.

A woman who looked amazing in everything—I think she might’ve been a porn star—dropped about $17,000 on clothes. Which celebs have you helped? Jennifer Lopez, Christie Brinkley, Molly Sims, Kelly Bensimon, and Gwyneth Paltrow. Barbra Streisand
was the most eclectic and engaging of them all. She was the most approachable, too. Any dressing room tales? I’ve found that older women
are more comfortable walking around stores naked than women in their twenties. Everyone starts to feel like they’re in their own closet with their naked friends. They even engage in conversation with strangers while standing around half-naked. Tell us about your worst customers, ever… There’s the woman with too many children, all holding ice cream cones. Or the woman who demands you bring her every item in the store, and then purchases nothing. Then there’s

BASIC INSTINCTS
Have you ever washed your jeans in the ocean? The most important thing is to preserve the color, so as unsanitary as it sounds, I wash them as infrequently as possible. What can we expect in your Hamptons boutique?
How big of a part does the Hamptons play in your basics line? Well, my wife [and co-founder] Petra and I met out here. She used to work at Waldman’s, the fine jewelry store in Southampton. I stalked her in 2010 while she was getting coffee. Six months later, we were married. A couple of months after that, we quit our jobs to start Håndværk. What’s the Håndværk M.O.? We take a serious approach to making very good basics and just focus on that. How did you link up with Scott Morrison? We met him a year ago for advice, and he was impressed. Conceptually, we approach things from the same place. It helps that he also wears our stuff! Available at 3x1

The store has a surf-inspired theme, so we’re creating a denim-inlaid surfboard series. We also have a limited-edition denim surf bag and travel bag, and a bunch of other exclusive items. How fast will we be able to get our bespoke blues?
Custom-made jeans should be ready inside two weeks, but bespoke is reliant on you to stop by for multiple fittings. What’s your go-to denim style out East? Here, it’s all about family, friends, and barbecuing, so I’m usually wearing selvedge jeans or selvedge twill shorts. 44A Main St., Southampton FA S H I O N W E E K D A I L Y. C O M

We’re also reopening our Southampton location with even more sneakers and a new music setup. Where’s the oddest place you’ve worn workout gear? To lunch at Daniel with my mother [Denise LeFrak]. Which workout are you craving out East? The Hamptons pretty much is a mecca for all things fitness, but there needs to be a Tone House! Where do you go for a “cheat day” treat? Ye Olde Bake Shoppe in Southampton rocks it out for me every time. I love their cookies, and their cinnamon

She said that instead of complaining, I should do something, so I created a collection of ceramics. What’s the best-decorated table you’ve ever encountered? The table I designed for Alain Ducasse at the Dorchester in London: all white and platinum at lunch, and at night the platinum pieces changed to gold. Very minimal, but

NICOLE MILLER’S
MUSTS!
Our resident foodie, Nicole Miller, fills us in on her Hamptons dining and cooking to-do list. Eagerly anticipated summer meal: The Baron’s stew and duck à l’orange at Baron’s Cove in Sag Harbor. What I’ll be whipping up: Anything with clams, of course! I love making baked clams, clam stew, and bouillabaisse. Dinner parties on deck: I’m thinking of having a Chinese dinner party; I haven’t done one in quite awhile! Hamptons dining wish list: I’d love a Vietnamese restaurant. Tipple of choice: A double cross martini at Tutto Il Giorno. Ingredient obsession: Bottarga from Buon Italia in Chelsea Market. I shave it on everything from fennel salad to pasta. Ice cream M.O.: Anything caramel or salted, eaten on the dock in Sag Harbor. When I’m home I have Häagen-Dazs dulce de leche. My latest cooking technique: I learned how to make homemade butter! I love making it with exotic-flavored salts. Recipe to master: Cazuela de Mariscos and flan. I love dabbling in Spanish and South American food!

Miami noodle joint Momi Ramen will open an East Hampton outpost in the ex-Turtle Crossing digs in early June. The noodles and the tonkotsu (pork bone) broth will be whipped up fresh throughout the day. Also expect gyoza, pork buns, and grilled short ribs. ☛ Chef sightings! Bobby Flay and Ina Garten were spotted at Bostwick’s Chowder House, separately, in April. ☛ Gurney’s has a roster of new haute spots from LDV Hospitality: Scarpetta Beach, Corso Coffee for a java jolt, the Regent Cocktail Club for boozing, and all-day bistro Tillie’s. ☛ Rosé alert: Wolffer’s 2014 vintage is out, and has a new touch: a screw cap! ☛ Philippe Chow is back out East, with Philippe, in the former Sienna space. Peking duck, anyone? ☛
A MOMENT WITH…Wolfgang Puck Why haven’t you ever opened a Hamptons resto? I like to go away in the summer with my family. I have to get away from my restaurants and go places. Our very good friend, Bruce Weber, who lives in Montauk, always invites us out. So no chance of a Spago or Cut out East?
You know, I’ve decided I need balance in my life. I like the Hamptons, but if I opened out there, I would go to work every night. And then I would say, “Well, it was not like a vacation. For my wife it’s not a vacation, for my kids it’s not a vacation…” I would run around the whole time!
WISE WORDS
With Topping Rose House’s new chef, Kyle Koenig What’s the best advice Tom Colicchio ever gave you? Keep it simple and seasonal: This allows us to offer ever-evolving menus. Also, start your dish with your vegetables and build around them. What changes are you making to the menu? The menu is constantly changing based on what’s seasonal. Some of our ideas come as we walk through the garden. Wagyu beef is the only item consistently on our menu. What’s your favorite dish? The Foie Gras Torchon—it’s made with rhubarb, lime, and pistachio. For some reason, it reminds me of key lime pie. Where else do you dine out East? Estia’s Little Kitchen for breakfast, and North Fork Table & Inn. Which summery sweets do you crave? A slice of German Chocolate Cake with fresh strawberries and a glass of milk. Also, peach pie! 1 Bridgehampton-Sag Harbor Tpke., Bridgehampton FA S H I O N W E E K D A I L Y. C O M
JAMAICAN JAMS With Winston’s chef Winston Lyons
Which nibbles will transport us to the Caribbean? I learned to make crispy fried lobster on the beach in Jamaica, and the sautéed crab meat served in the shell with a roasted garlic butter sauce and potato croquettes was also created in Jamaica. And you won’t find better jerk chicken anywhere! Any highlights from your past gigs? My early days at East Hampton Point: Nothing’s better than working on the water. At Turtle Crossing, I cooked for a senator. At East Hampton Grill, I cooked for celebrities. 100 Montauk Hwy., East Hampton

With Beautique’s executive chef, Greg Grossman Are you of legal drinking age yet? I’ll be turning 20 this weekend, so I won’t be partaking in Beautique’s fantastic-looking cocktail menu! You came from Georgica… It was a beautiful space, but in an older building, and in its seventh year. It was a Hamptons staple; Beautique brings NYC style to the Hamptons. Will we recognize lots of menu items? Two of my favorites will certainly be making the trip out East—the tuna tartare on crispy rice and the duck. The goal was to stay true to chef Alain Allegretti’s menu at Beautique in NYC, while lightening it up for the Hamptons. The Capri Hotel, 281 County Rd. 39A, Southampton B F A N Y C . “I’ll be in Paris for the couture shows in July. I just love Paris in the summer! Ahh, the light! At 9 p.m., it’s still bright and beautiful out.”
Stephen Gan, V magazine:
“I usually spend a few days in St. Tropez in August, going to the beach, taking long walks, and just relaxing. If I want more of the beach, I might go to Spain for another few days.”
Sophie Elgort:
“I’m traveling to Bjertorp Slott, a small chateau in Kvanum, Sweden, for my cousin’s wedding. I’m going with my husband and some of my immediate and extended family. After, we’ll most likely do some hut-to-hut hiking back in Norway and head to Oslo and my family’s cabin up in Lesjaskog, Norway, so I can show my husband where my (mom’s side of the) family is from.”
Anja Rubik:
“I travel all the time, but I’m thinking Argentina. I want to go see Patagonia—the mountains, the glaciers—I went there last year, and I have to go back. The space is incredible, and the nature is insane.”
Brendan Fallis, DJ:
“Hannah [Bronfman] and I are going to Vienna. I’ve been there before a couple of times but never in the prime season. Hannah’s cousin is having an engagement party there; we’re excited to explore the city and surroundings in the heart of the summer. We’re not mad at the idea of extending our trip, so we’re toying around with the idea of Porto Santo, too!”
Rebecca Minkoff:
“I’m traveling to London and Paris for a couple of fun work projects. I’ll be in London promoting my new space in Harrods, and Paris for Essie, promoting my new color collection. In London, I’ll be staying at Chiltern Firehouse, which I’ve been to a couple times—I love the vintage style of the hotel, and the restaurant is to die for. I’m excited to try its new outdoor oyster-and-champagne cart. In Paris, I’ll be staying in le Marais for the first time. I know it’s a little touristy, but I always love a fun brunch at Café de Flore and always look forward to a meal at Chez Janou.” b fa n yc . c o m ( 7 ) ; g e t t y i m a g e s ( 3 ) ; s h u t t e r s to c k

Toni’s Tale Who better to show off l’esprit of St. Barth than 22-year-old Toni Garrn? The German stunner spills on her impressive career, childhood memories, and the extracurricular project that’s near and dear to her heart. BY EDDIE ROCHE This isn’t your first time in St. Barth. Why is it so beloved? It’s in the Caribbean, which is beautiful and has perfect weather. It’s stunning—my favorite part of the world! St. Barth is special because it has everything you want. This isn’t your first time shooting in St. Barth with Gilles Bensimon, either. Gilles shot us here for French Vogue with Karlie [Kloss] and Andreea Diaconu. We’re really close friends. This shoot was fun, because I usually stay by myself in hotels, and The Daily Summer put us in a villa. It was like having roommates. Did you have trouble getting any shots? There were a lot of rocks, and Gilles wanted me to move a lot without looking down. There were sea urchins everywhere and I was barefoot. I didn’t want to get stung! I’m also very aware that there are a lot of paparazzi on the island. I’ve never really shot here without being snapped, so whenever we had to change clothes right on the beach, it was a little tricky. But I love the beach and being outside. What’s special about working with Gilles? He’s so funny! He makes fun of everyone on set. He gave everyone different names. He makes things very relaxed, and everyone is in the best mood ever. We’d also have a long lunch break. He really believes that when everyone is comfortable, especially the models, we get the best pictures. I agree! What were your childhood summers like? I was brought up between London and Athens, and I moved to Germany when I was 10. I was very lucky because when we were living in Greece, my mom took us straight to the beach after school. I had to do homework on towels! At the time I would complain that it was sandy, but now I’m really thankful that we did that because I feel very connected to the ocean. I sometimes wonder if my hair is still so light because I got so much sun! When we moved to Germany, I had a bunch of cousins living there, and we’d travel to places like Denmark, where my grandparents spent their summer. What is so special about summer? To me, it means family. My birthday is in July, so I usually take some time off. But ever since I was 16, I’ve been traveling to amazing places throughout the whole year, so my summer doesn’t limit itself to just a few months. How has modeling changed since you started out? Models have more of a voice and a say. Social media has changed things a lot since I started out seven years ago. With Instagram, I’m getting so much back from the fans. They also post so many pictures of me that I might not otherwise see. Everyone who follows me gets to see what I’m about, and it makes my job more fun. Do you stress over what you post? A little bit, since there’s such a big following on social media. I want it to be very real and me. I don’t want to come across the wrong way, which is hard when being funny or sarcastic at times, but I also want to make my posts more interesting.

Tell us about your work with the charity Plan International. Plan International is a child-focused organization operating in more than 50 countries and founded over 70 years ago. They protect the rights of children and young women, and I’m an ambassador for the “Because I Am a Girl” campaign. I started working with them by sponsoring children when I was 16. As I got older, I told my mom that I wanted to do more, and she suggested I work with someone on a larger scale. My first foray into collaborations was with this German jeans brand called Closed, where I designed a pair of jeans and two T-shirts. The profits from the line went directly into a project in Africa that provides scholarships for the impoverished women of Burkina Faso, which is one of the five poorest countries in the world. As a result of the money we raised, about 140 more women were able to be educated as primary teachers. I keep asking where they need help and what I can be doing. I did a flea market in February where I sold half my closet and asked the other models to join in. We raised about $25,000 in two days! Those are just baby projects—I really want to do more. Natalia Vodianova and Christy Turlington Burns are big inspirations. What do you get out of this? I love helping kids. If there’s a kids’ corner at a party, that’s where you’ll find me. I want a lot of kids myself—at least three boys. Are you a tomboy? All my friends are girls, and I like girl talk and girlie music, but I can do whatever. Give me a backpack, and I can travel for a month. What’s your definition of girlie music? I love Latin music. Samba and salsa—no rap at all! Any plans for college? I’m taking a public-health class right now, which is related to my charity. It’s teaching me about illnesses worldwide. As for going to university, I already have so much going on that the class is enough for now. Maybe in 10 years if I’m working less and living in the same place—these days, I’m only in New York less than half the year because I also have a place in Germany. Are you interested in acting? I’ve always loved theater in school, especially comedy. My friends who know me well know that I’m not very serious. I’m very sarcastic. Do you have to be outgoing to be a successful model? I think so. It can be quite boring if you take it very seriously, so I dance around and I say, “Let me know when you’re all ready!” I don’t like being the center of attention necessarily, but I like being a clown. Your full name is Antonia. How did you end up as Toni? In Germany, lots of Antonias are called Toni! So when we moved there when I was 10, they just called me that, and I loved it. You come from a family of apple farmers! If you’re ever in Hamburg, look for the Garrn apples. There have been many generations of apple farmers in my family. Have you been to many of the farms in the East End? Not really, but I love the beach here. It’s so wide and beautiful. It reminds me of Denmark. I’ve also been in the area in the winter and it’s really cozy. We shot the Tommy Hilfiger campaign in Sag Harbor. You come off as a very happy person. I am, and ever since I’ve been working with Plan International, I appreciate everything a lot more. I want to be even better at this job, and have a bigger voice.

Island Life
With photographer Gilles Bensimon What did you love about shooting Toni Garrn? She has a certain kind of perfect beauty. Do you remember the first time you shot in St. Barth? It was a long time ago, but before that, I was doing a lot of shoots in the Bahamas and Mexico. What do you love about St. Barth? I just spent 18 days there, and what I enjoy is the people and the diversity of the island. There’s not much traffic—it’s a very quiet place. It’s not at all like St. Tropez. It’s very beautiful, with both mountains and beaches. I like places that are still somewhat rough and pristine. Do you ever go to St. Barth just to relax? I’d love to have more vacation time, but I’m very happy to do my job. How do you choose the shoot locations on the island? I work with Sinclair [Questel], and we always find new places. You’re known for sexy beach shoots. What do you love about summer the most? I don’t know why I have this reputation—I hope it’s a good thing! I love the winter, too. What is your mind-set when you’re shooting? I’m very focused on what I’m doing, even if I act like I’m not. I’m always very anxious before every shoot. Gilles photographed by Christy Turlington
Riding the Waves With hairstylist Kayla MiChele What look were you trying to create? The direction of shipwrecked chic led to creating hair that was very natural in texture—very worn-in, messy, and windswept. I used John Frieda’s Frizz-Ease Dream Curls Daily Styling Spray to unleash the most beautiful waves. I then let the hair air-dry and would occasionally scrunch the strands with my hands throughout the shoot for extra bends. Were you channeling any beauty icons? I was inspired by Claudia Schiffer in the ’90s with her big, tousled, messy waves. The shoot took place in a lot of off-the-beaten path locations. What was the most difficult part of doing your job on set? The beach rocks! Great water shoes are a must. Any tips for achieving the perfect summer strands? Work with the humidity, rather than against it. Play with your natural texture in lieu of pulling out your flat iron. Find the perfect products for your natural texture for the humid days. I highly recommend John Frieda’s Daily Nourishment Leave-In Conditioner and Expert Finish Polishing Serum, and to add natural highlights, try the Beach Blonde Sunstreaks Lightening Spray.

Bare Beauty
With makeup artist Misha Shahzada What was your inspiration? I wanted Toni to have a natural sun-kissed glow without looking like she was wearing any makeup. I applied a significant amount of Moroccanoil sunscreen with SPF 30 in the morning, and reapplied every few hours. Toni has impeccable skin, so I used only small amounts of Boots No7 Stay Perfect Blemish Cover Concealer where needed. I followed that by using small dabs of Boots No7 Skin Illuminator. Biggest beach beauty mistakes? People tend to apply too much makeup and shimmery bronzers, which just end up looking artificial when under the sun. ALL photos COURTESY

ST. BARTH FOREVER
For more than two decades, Sinclair Questel has been producing the toniest photo shoots in St. Barths for top photographers (Gilles Bensimon, Mert & Marcus, Inez & Vinoodh) and major fashion players (Victoria’s Secret, much?). Need to get a model through customs? Done. Or perhaps you require an amenity brought in by boat? He can handle that, too. Meet the fashion industry’s go-to guy in the West Indies. BY PAIGE REDDINGER How did you start your business? I quit school when I was 18 or 19 years old. I didn’t know what I wanted to do, but my brother was in St. Tropez so I went there and worked as a bartender at Café des Arts on Place des Lices. I stayed there for four years, and then I spent a year in Holland before returning to St. Barth. When I moved back, the producer Jack Zolty asked me to assist on his photo shoots. We worked with mostly French photographers like Patrick Demarchelier, Antoine Verglas, and the late Marc Hispard. I was the second or third assistant; I held the reflectors and helped with the lights. After two or three years, I met Gilles Bensimon when he was at Elle and started to do my own production. That was 25 years ago. Did you know anything about fashion before you joined the industry? Not really! When I was young, it was a game to me—holding reflectors and meeting famous people. After years and years, people began to know me and call me for work. Back then, the crews would come for a long time—sometimes for two or three weeks. There were bigger budgets, but we also didn’t have the ability to send pictures over e-mail, so people would need two or three days for scouting. Now, we send photos of locations to clients before they arrive, so everything is ready when they get here. What else has changed since you first began doing production? We used to work with Hasselblads and Pentax, and then we moved on to 35-millimeter cameras. I’ve seen three generations of photo equipment already! Do you really know everyone on the island? I know everyone who lives here year-round. It’s best to know a lot of people when you are doing this line of work, because when a client wants something, you have to get them what they need immediately. What is the craziest request you’ve ever received from a client?
Sinclair Questel photographed by Gilles Bensimon
When I was working on a shoot for Victoria’s Secret, the photographer couldn’t work unless he had Gatorade. There wasn’t any on the island, so we had to send a boat to St. Maarten to buy some and bring it on set! Another time, Gisele was stuck in St. Maarten. Five or six years ago you needed a visa to get into St. Barth if you were from Eastern Europe, Africa, or South America. They called me to help get her to St. Barth in the middle of the night, because she was shooting at 6 in the morning the next day. So at 11 p.m., I took a boat and went to St. Maarten and I had to go speak with the customs agents and say, “Listen, I’m from the island.
This girl is just there to work. She is not on holiday.” I was finally able to get her to St. Barth around 1 a.m. What’s the hardest part about producing shoots on the island? Managing egos. We are still a small island—it’s not New York or Paris. But St. Barth is like a huge studio. We have so many beautiful places to shoot. We have nice beaches, nice villas, and beautiful light all year long. The photographers who have been in the industry a long time don’t need much to take a beautiful picture. Now there is a lot of “blah, blah, blah” around everything. But that’s how the business works, so it’s fine! What do you love most about St. Barth? It’s funny, because I was born and raised on this island and things weren’t that easy, but in the past 20 to 25 years we have really made something special here. It’s one of the nicest places in the Caribbean. It’s safe, we have beautiful restaurants, the people are still nice, and tourists come from all over the world. SaintBarthProduction.com

From the island’s chicest spots to the local hangouts, Sinclair Questel fills us in on where in-the-know crowds dine, shop, and generally unwind in the West Indies’ most luxurious and scenic escape. Best Shopping The Cartier, Louis Vuitton, and Hermès stores are at Le Carré d’Or in Gustavia. Mademoiselle Hortense is a great shop that carries things made on the island. There are beautiful tunics sold at Poupette, and Edgar sells suits and men’s clothing. Best Restaurant L’Esprit. The owner, Jean-Claude Dufour, creates everything in-house. It’s near Saline Beach, and it’s in a big garden. To See And Be Seen Nikki Beach or Le Ti St. Barth. Le Ti has a cabaret show and after 10 p.m. they remove all the plates from dinner and everyone dances on the tables. It’s a wild place. People sometimes make reservations a year in advance. Best Bar I often go to the sushi bar, Baz. There’s live music and it’s on the harbor. They do nice cocktails and the sushi is excellent. All the crews from the boats go there. There’s also Maya’s, L’Isola, Le Ti St. Barth’s, Baz Bar, and Bonito. Some people might go to Bagatelle or Nikki Beach, but it all depends on the ambience you’re looking for. The Local Hangout The owner of Le Select Bar is a friend of Jimmy Buffet. He comes often and will play at the bar. Locals also go to Côté Port for dinner or lunch where it’s not too expensive. Best Beach I love St. John’s beach—I go there every morning for a swim. Flamands has big waves, so it’s good for surfers. Nikki Beach is not for me, but if you want to be seen, that’s the place to go.

greece is the word! Warning: If a trip to Mykonos is on your bucket list, quit reading right now, because you won’t be able to resist booking your ticket after preeminent cobbler Brian Atwood gives us the skinny on his favorite destination. BY EDDIE ROCHE

“
You can’t go to Mykonos and think you’re going to keep your usual schedule— everything starts later. Dinner usually gets going around midnight.”
How long have you been going to Mykonos? Nine years in a row! I usually spend at least two weeks there, but this year, I may stay for three. Wow. What keeps you coming back? The people, the food, and the energy. It’s a special little island—it can get as crazy as you want, or be chill and relaxing. The water is beautiful, the food is simple and delicious, and it’s a great place to be in the summer. Talk us through a typical day. It depends on what time we go to bed! You can’t go to Mykonos and think you’re going to keep your usual schedule—everything starts later. Dinner usually gets going around midnight, and it lasts for two or three hours. During the day, you stay at the beach until 7 or 8, and then you go home to take a quick nap before grabbing a drink at 9:30 or 10. It’s a very carefree and bohemian vibe. The energy of the island keeps you awake. Are you more of a pool or a beach person? Our villa has a beautiful pool and view, so I like to do both. We have a small private beach right down from the villa, where we watch the most beautiful sunsets. When I first started coming to Mykonos, I stayed at the Mykonos Blu hotel and then the Belvedere, but now I always rent the same villa. It’s just nicer. Does it come with its own chef? Yes. Butlers, chefs…you can get whatever you want, as long as you pay for it. What do you eat? I love the fish, and the grilled octopus is delicious. There’s a tomato salad that’s very simple, but the flavor in the tomatoes is so good. And all these yogurts and dips! It’s so hot, so the food is very light. Any favorite restaurants? You definitely want to go to Sea Satin and Nammos. The Jackie O’ Beach Club is great, too, and Katrin is very chic. There’s also Matsuhisa at the Belvedere.

Who do you travel with? My partner, Dr. Jake Deutsch, and my business partner, Riley Viall. The house we rent holds 14 people, so we switch it up and take along friends. We always want to make sure everybody gets along and has the best time. We also organize our trips with other friends, so even if we aren’t staying together, they’re still on the island. What’s the scoop on your epic parties on the island? Every year I have my birthday there, and last year’s theme was purple haze. It was crazy. My party has become sort of a thing that the island waits for. Two DJs from New York come in. Valentino was there, and even Lindsay Lohan came. It ended at 8 a.m. last year. Any hints on this year’s theme? I’m still thinking about it! People come here to go to the beach, so if you ask them to put on a full costume, they get annoyed. Any other favorite European haunts? Capri. We have an annual friends’ vacation there at the end of June. I love the Mediterranean in the summertime. And come August, the Hamptons! What do you dig about life on the East End? I love Southampton. You can take your dogs to the beach! We have a yellow lab and he just loves to run around in the sand. Everybody loves the farmstands, like Round Swamp Farm. I also love driving through tree-lined streets. Everything is so manicured! I hate the traffic, of course, but now, there’s Blade. We’ll use that to get there in 30 minutes instead of four hours. How much time do you take off? It depends! One of the things that I love about my job is that I get to travel a lot. Whenever I can, I like to mix work and pleasure if time allows it. Our factory is closed for the whole month of August, so that’s four weeks off, for sure. Work hard, play hard is my motto.

A COLORFUL OUTLOOK
Lisa Perry’s favorite local haunt? The nostalgia-imbued Sag Harbor Variety Store. Is it really a surprise to learn that the designer darling, known for her fixation with all things ’60s, is happiest raiding the candy aisle and fondling felt? BY ALEXANDRA ILYASHOV PHOTOGRAPHY BY GIORGIO NIRO We wouldn’t take you for a variety store regular… I love a five-and-dime! I’m in love with grocery stores; I see art in everyday objects. I love to play in a place like Sag Harbor Variety. I can find something in every single aisle. What kind of gems did you find on this visit? Oh, I loved exploring the fake fruit and flowers, the toy section, and the ribbons and buttons and trims—I really do love their felt! I’ve made felt art that’s hanging in my kitchen. In the detergent aisle, I tried to line up the items, like Andy Warhol’s Brillo boxes, but they didn’t have the perfect product for me to play with. I also didn’t want to take the entire store apart. Did you buy anything? Gum, candy, and a popsicle. I mean, I’m there weekly when I’m out in the Hamptons. I’m always finding something! You’re quite the candy junkie. Yeah, it’s a little bit of a problem. I’m a penny candy girl. I love Swedish Fish, Jawbreakers, and bubble gum. People buy me retro candy all the time. I used to keep more candy around than I do, but it’s still in all my houses and stores. I have M&M’s everywhere you look. My design studio is below my store on Madison, so at least I have to walk up the stairs to get candy! It’s a little bit of exercise on the way. Do you have cavities? I don’t, for some odd reason! I’m lucky. Indeed! So how did you become a Sag Harbor–ite to begin with? My husband [Richard Perry] and I were pioneers in Sag! We’ve been in the Hamptons a long time—even when we lived in Watermill, we’d go to Sag Harbor for date night. They used to have “a dinner and a movie” deal: You’d go to the Sag Harbor Cinema for a movie and the American Hotel for dinner. What are your favorite restos these days? I know this sounds weird, but I love turkey tacos, and the ones at Provisions are so delicious. At Tutto Il Giorno, you sit down and get this amazing flatbread—I can eat the entire plate before the food comes. La Parmigiana in Southampton really is one of my favorite restaurants in the world! I’m a real Midwest girl. I love comfort food; I don’t like fancy food. Where can we get the finest patty out East? My house definitely has the best burger in the Hamptons! LT Burger in Sag also has a great one, but I usually go there for buffalo wings and chopped salad. You’re making us hungry! What’s on the menu at your East Hampton boutique for season deux? We’re excited to be the exclusive retailer for Manolo Blahnik in the Hamptons. We did an exclusive collection of shoes with them, and we curated 10 other styles for the East Hampton store. It’s our first time having a shoe area, which is very fun. Any surprises about having an East End outpost? When you try to get something done in the Hamptons, there are lots of rules. You’re dealing with a village! I want to paint the wall outside the store—why can’t I do that? What if I want to have an ice cream stand outside my store? That’s not the easiest. You’re always pairing up with Pop Art icons. Who remains on your collab wish list? I’m so lucky to have worked with the most important ones to me: Warhol, Lichtenstein, Koons, Indiana. They’re my biggest influences. We’re going to work with a younger, contemporary artist, but I can’t reveal anything yet. What’s your very earliest art memory? My dad was a drip painter in the style of Jackson Pollock, and he would work on canvases on the floor in the basement when I was very, very young. My brothers, sisters, and I would go down and hang out with him while he painted. We had a Jackson Pollock puzzle on our game table that took us, like, five years to finish. Beginning when I was 8 or 9 years old, we’d take trips to the Chicago Art Institute. Art is just a part of my DNA. r u nway : g e t t y i m a g es
How did your look—and life—become so mod? I’ve been collecting vintage fashion from the ’60 for close to 20 years. I really zeroed in on this era and just fell in love with this look, and then got into everything else—the art, the furniture. I just love the aesthetic; it’s a very focused world. Where do you store your fashion archive? I have a whole closet devoted to vintage in my New York apartment. I also have vintage pieces floating around that I use as inspiration in my design studio. Do you give tours of your vintage closet? I certainly show guests, and if I’m giving an art tour of my apartment for an institution, I’ll include my closet, too. Your NYC and Hamptons abodes are pristine. Where do you get messy? I’m not a messy person, but I do projects in my art studio. Beyond the East End, where are you jetting off to this summer? We always get to either Italy or France at least once a summer. This summer, we’re going to Venice for a friend’s wedding. I love Rome, and one of my favorite places is the South of France: the light, the little restaurants, the art...the people are so chic! There’s just something about driving around the winding roads. It’s a very special place. What’s on your travel bucket list? Greece. I’m such a fan of white with a pop of color, and that’s what Greece is about. It’s hard to believe I haven’t been there yet. What do you always buy internationally? Candy! Grocery stores in different countries are interesting to me. Where do you want to travel? Asia! In Tokyo, everything is so luxurious, clean, beautiful, and pristine. I just got back from a design inspiration trip to Beijing, Seoul, and Tokyo. I particularly liked the 24-hour shopping in Seoul; I was at a store at 3 a.m. That’s surreal! How did you spend your summers as a kid? In our little neighborhood in the suburbs of Chicago, we just went to the pool down the block and played. We weren’t scheduled like all the kids are now! It was just a very normal, middle-class upbringing.

“
First things first: your career in fashion. I started my career in the ’90s with Gianni Versace. I took care of advertising, prepared shoots, and worked on campaigns. There were also PR offices around the world to oversee. You moonlight as a pilot. What originally interested you in aviation? When I was a child, I saw a Falco F8L with my father. The plane started flying in 1955, and even by today’s standards, it’s the fastest plane in its class. Its designer, Stelio Frati, was called the Christian Dior of airplanes, because his are considered the sexiest. The day I saw it for the first time, I told my father that I would have my own someday. I started saving my money, and began building one when I was 17. It took me another 17 years to finish it! What took so long? Sometimes I didn’t have the money—there were four or five years that I didn’t touch the plane at all. But in 1997, I said to myself, “Now or never.” I finished it in my garage and dining room. Toward the end, you couldn’t even move in my house! What did friends think of your big project? They couldn’t believe it— a plane built out of wood! I also had a Doberman, who was very jealous, so any guy I dated had to pass his examination. There was the dog, the plane, the crazy fun—those were fantastic years full of dreams! How did you finally get the plane out of the house? I had to tear down a wall to get the wings out, and I ended up building the cockpit in the Versace office. Gianni was very supportive. When I first met him, we immediately clicked and said, “Okay! We have to work together.” At the same time, he understood I had so many projects going on. He wanted me to stay with him for some time, and I explained that I was building a plane and that I would sometimes need to change my work schedule. He said, “No problem! Bring your computer and we’ll work it out.” How many planes do you have these days? Two. I built the small Falco from scratch, and the other is a 1974 Beechcraft Duke. I dismantled it a few years ago and rebuilt it to “like-new” standards. It has an incredible class and design. You’re very ambitious. These are the planes that I dreamed about when I was a kid. In 1974, I went to an air show in Paris with my father. I would get catalogs—I wanted a piece of paper to dream about.
Where did you go on your first real flight? Brazil, to keep a promise I made to my dad. On the tail, I wrote Two of Us in his memory. Did you stop to refuel? I modified the plane to hold auxiliary fuel tanks inside the cockpit, so I had an extra 150 gallons. There’s no stopping across the Atlantic! Do you have a co-pilot? No! I fly alone. There’s no space for a co-pilot on the Falco. Let’s say you’ve got to go to the bathroom… You can’t even move! The plane is very small. I sat there for 16 hours. It was the only way. I used a plastic bag and threw it out the window. Do you ever get scared in the air? Sometimes. It happens when you realize you’ve taken more risks than you should have. That happened more when I was younger. Now, I’m more mature, so I don’t take as many risks. But nature is always stronger than us, and you have to respect it. Besides Brazil, where else have you flown? The United States, Iceland, all over Europe, Turkey…next, I’d like to fly to Australia. Why do you love flying The Falco F8L takes flight! so much? It’s an escape, and it’s pure freedom! My favorite color is the blue sky. Flying makes me appreciate things more. I see the world from a different perspective. When you fly commercial, you just board the plane, but when you fly a small plane, there’s the preparation, the adventure, the meteorological conditions.… You put together a big picture, then you climb onboard and the flight becomes the easiest part of the story. Any advice for someone who’s scared of flying? Ask a pilot to explain things to you! Flying is the least dangerous activity. Where are you flying this summer? I like the sea, so probably Greece, Turkey, and Spain. I might go to Iceland again, too. I was thinking of visiting the U.S. for an air show in July, but we have a new designer, so I need to work. Peter Dundas, you mean? Yes! I’ve worked with him for a month, and I love him. He knows what he wants, and he’s exactly the person the company needed. I’m very excited. I like his approach, and he’s a very nice person. He has such good energy! Enjoy your travels. If you come to Italy, let me know and we’ll go flying. Ciao!

Betts and a model in the Coco Chanel Suite at The Ritz
Before Kate Betts spent years as Anna Wintour’s protégé or served as the youngest EIC in Harper’s Bazaar’s history, she was a young reporter making her way in Paris at John Fairchild’s Women’s Wear Daily. In her new memoir, My Paris Dream, Betts reminisces about her salade days abroad. BY PAIGE REDDINGER
What was the biggest challenge of penning a memoir? Learning to write in a different voice. I never thought that I could write about myself as a third person character or describe secondary characters, who are people I know so well, in a way that would make sense to strangers. Then there was the emotional part—I had to find myself at that age again. I had to think about who I was then, how I thought, and how I approached the world. I read every memoir—and book about memoir writing—I could get my hands on. Was it hard to remember the scenes from your early twenties? I have an amazing trove of memorabilia from that time— a journal, letters, photos, invitations to parties, menus from dinners, and my Fairchild archives. I also went back to Paris three times and retraced my steps quite literally. I reconnected with a lot of old friends. Some of them I see pretty frequently, and others I hadn’t seen in a long time. What did the book make you miss most about Paris? First of all, it made me realize that I can never fully recapture that time in my life. It made me nostalgic for that period of wandering, and that freedom. But what I miss most about Paris is the city itself. Even its grittiest part seems so civilized compared to New York. You address the difficulties of assimilating into French society. What made you stay? I felt like I had to make it work. I had taken a big risk, and Betts’ Fairchild I had really talked it up a lot at home. I really wanted to be Publications ID successful. It’s a totally irrational thing, but when you’re young and trying to figure out who you are, there is a lot of peer pressure from competitive friends. Was John Fairchild an intimidating figure to work for? I was never afraid of him, but we had to be on our best behavior around him. He was very much in the scrum with everyone else at the office. But when he would get mad, everybody would freak out, mostly because it meant they had to reshoot a story. Has WWD changed a lot since Fairchild’s reign? What made it powerful at the time was the voice of John Fairchild. Even after he retired, a lot of the people working there retained their training from him and understood that voice, and in a way, Condé Nast preserved that, but now it’s changing, so I don’t know. He made Karl Lagerfeld pose for a photo eating a Big Mac! Karl wanted to do it, because first of all, Karl has a sense of humor. He played along with it instead of fighting it, which was smart. You once reviewed a fashion show without Fairchild’s approval. Were you scared you might get fired? I thought I didn’t care until I got in trouble for it! I don’t Betts with Karl Lagerfeld know why I thought that I ever had the chance to sit at the proverbial table with [Fairchild and bureau chief FA S H I O N W E E K D A I L Y. C O M
Dennis Thim], but I was naive. I thought hard work meant there was a payoff, but there was only a ceiling. You claim to have lost your personal life in Paris, but when you moved back to New York, you went straight to Vogue. Yes, but I was willing to lose my personal life for that. New York had a different pace and intensity, and yet it was not as intense as Paris, because I wasn’t working for a trade publication, so the coverage was a lot more focused. I didn’t know I was going to be in fashion forever—I still harbored dreams about something else working out. But at Vogue, I was like, “Okay, this is it.” You’ve worked for two of the toughest bosses in the business. How has that shaped your career? They were relatively good to me and taught me a lot. In a way, Fairchild and Anna are similar in terms of their expectations of others and themselves. They are two of the best people in the business. I really learned how to report from Fairchild, and Anna gave me the gift of freedom. When you first got to Vogue, you cried in your office. Did you want to return to Paris? Every day for like three or four months I thought, “Oh, my God—why did I give that up for this?” It was a huge cultural shift to move from WWD to Vogue. Vogue was such a different place—I had gone from managing people to writing captions. I had to work my way up at Vogue and I did. Can we expect another memoir about the second half of your career? Never say never, but I doubt it. ALL PHOTOS COURTESY

“
When something goes wrong, I actually care.”
FA S H I O N W E E K D A I L Y. C O M
True Life: I’m a luxury travel agent
It seems like everything is described as “luxury” these days, n’est-ce pas? Well, until you’ve had a seasoned professional manage every tiny little piece of your upcoming vacation, you don’t know the meaning of the word. Our anonymous expert spills on why his services remain so indispensable for the rich and fabulous. AS TOLD TO EDDIE ROCHE It’s 2015. Who is still using a travel agent? Anyone with a brain. Why? When something goes wrong, I actually care. For example, travel agents still make a lot of money for the airlines in ticketing, so if we call and ask for help, they pay attention. When that volcano blew up in Iceland and all the flights were canceled, people who were trying to book themselves were there a hell of a lot longer than my guys. What’s the No. 1 destination for the ultra rich right now? All anyone talks about is Cuba. There’s nothing fancy or luxurious there by anyone’s standards, but clients seem to think if they don’t get there tomorrow that their lives will end. Everybody seems to think it’s the easiest thing on the planet to book. It’s not. The rules have changed, but it’s not like I can get you to Havana in the morning. Which destinations have fallen out of fashion? I haven’t booked a flight to Russia in ages. I loved it, but you don’t really want to broadcast the fact that you’re an American there. It’s always been dangerous, but now the people are angry. The ruble is down to nothing, and everything is half the price of what it was. You can save yourself a lot of money by going now! What’s the strangest request you’ve ever fielded? I once had to get a rat named Tiny onto a plane. Why? It was a family’s pet. I know. They were going to Santa Barbara for a month, and they ended up bringing the [redacted] rat with them. They had to put it in one of those fly-my-dog planes that cost a fortune. How did the airlines respond when you requested a seat for Tiny? They said, “No way, José! Absolutely not.” No matter how much I tried to tell them how adorable he was, they explained that their services are limited to cats and dogs for the moment. You might be able to get a bird onboard if you ask really nicely. And then there’s the service dog thing…don’t get me started. Please, continue! Some clients will find fake certifications, but others will actually take their dogs to the vet and get real ones. That way, they don’t have to pay for the dog to be onboard. How cheap is that? I know somebody who schemed a way to get his blind, farting, threelegged old bulldog on a first-class flight to Singapore. If I had spent tens of thousands of dollars to sit next to that dog, trust me, I would have caused an emergency landing. I won’t deal with that client anymore. Do you get a lot of strange food requests? Not really. There aren’t that many flights that serve it anymore, at least domestically. I traveled recently in first class, and I didn’t even get a peanut! Any strange experiences booking hotels? I had a client who didn’t want a room with the number five or anything that added up to five.
Have your clients damaged hotel rooms? Not anymore. Anyone who is well-known is afraid of things like that hitting the press. I do have a colleague who has a famous client with a drinking problem, and she has to get the hotel to remove the mini bar every time she checks in. Not just the contents of the bar, but the whole fridge. Why did so many airlines get rid of first class to go to Europe? People just won’t pay. A first-class ticket to Paris is $18,000 and there are only four seats. The nonrefundable fare is $16,000! But business class is a lot less than that, like $10,000. What’s the most decadent trip you can think of? The Four Seasons does around-the-world trips, complete with a kitted-out private plane that stops in the most fabulous places around the world. Most of the trips are about three weeks long, and they’re filled with private tours of museums and reservations at the best restaurants. It costs around $150,000 per person, based on double occupancy. Now that’s a commission I’d love. What’s the most frustrating thing about travel? I’m not a fan of airports. I go crazy when people don’t know how to go through security. I want to kill the guy who doesn’t know if he should take off his belt. It’s so much better to fly private! How much does it really cost to fly private? It’s about $70,000 for a G4 to get you to New York from Los Angeles. Who are the most difficult clients? Those who get so loaded that they decide to go to Paris instead of Frankfurt after the ticket was booked. They have their assistants call me, so I change everything in the reservation. But once they sober up, it’s “Oops! He’s going to go to Frankfurt after all.” Ugh! Have you heard of sleeping pill incidents? Oh, God. I’ve had clients sleep right through departures and stay in their seats after landing while the plane goes on to its next destination. Once, one of my clients fell asleep in the bathroom during landing. I recently heard about a well-known Hamptons finance guy who took an Ambien and ended up lying down in the first-class aisle of the plane to try to sleep. The flight attendants thought he was having health issues, but luckily, his wife was there to assure them that he was going to be just fine. Is heavy boozing still a thing? You don’t hear about people getting as plastered as they used to on commercial. Most of the people we know who are going to behave like that are on chartered planes, where nobody would dare say a word. In a casual atmosphere like that, you can get really smashed. Any other vices you encounter? People used to go nuts on Halcion, and people would completely drool on quaaludes. God forbid the plane would have to go back to the gate due to some kind of mechanical problem and you’d be completely screwed up. It happened to me, and it’s awful. 2015 EDITION
EATS
Joe Realmuto, executive chef What’s your best seller these days? Spaghetti with crab, roasted local cherry tomatoes, and toasted bread crumbs. What’s the most coveted table in the restaurant? In the summer season, the outdoor patio is the place to be! Any tricks to snagging a reservation? Aside from calling 10 days in advance or booking on Open Table, the best thing to do is call day of for any cancellations. Or you can grab a seat at our outdoor tables— they’re weather dependent! Where do you eat out? The Beacon. It’s got a great view and delicious food! What do you whip up at home? Clams and oysters on the halfshell! I can spend the day with my kids harvesting them. I also do crab boils, and I get anything from Balsam Farms that I can put on the grill. 136 N. Main St., East Hampton
redbar
Erik Nodeland, chef Which underrated dish should we order? The miso-glazed local tilefish with sautéed spinach, leeks, shiitake mushrooms, and Meyer lemon. Summer libation of choice? Rosé, rosé, rosé—need I say more? What grub are you still trying to master? I deeply respect and enjoy watching the creativity of a master sushi chef—but I’m not trying to master it myself. 210 Hampton Rd., Southampton
almond
Where are vous chowing down these days? Probably at these irresistible haute spots. BY ALEXANDRA ILYASHOV and DENA SILVER
FA S H I O N W E E K D A I L Y. C O M
Jason Weiner, executive chef and co-owner What’s your kitchen uniform? A bathing suit, a trucker hat, and a pair of Crocs. How do you like your almonds? I love Almonds. In fact, I married one. But besides the human variety, my favorite style is smoked. That’s how we serve them at the bar. Goes perfectly with a MTK Driftwood Ale. Thoughts on lobster rolls? My daughter asked me that recently. Actually, she asked, “What do you like more: hot dogs or lobster rolls?” I said, “I’d go on a few dates with a hot dog, but I’d marry a lobster roll.” I like mine Connecticut style: warm with melted butter. 1 Ocean Rd., Bridgehampton
navy beach
Martin Cabrera, partner What’s the scoop on your Torpedo? It’s a launch service for our boater guests—a red 1967 Boston Whaler that we’ve named The Torpedo! During WWII, the Navy used Fort Pond Bay, just down the beach from us, as a training and testing area for torpedoes. What’s your fave rosé on the menu? I truly enjoy rosés from Bandol; islands like Corsica are making magnificent juice, and Rioja is another region catching up to France. What’s your ideal Navy Beach dinner? I’d start off the evening watching the sunset with a Fort Pond cocktail— muddled cucumbers and raspberries with Grey Goose l’Orange and rosé—followed by Peruvian ceviche mixto, nori salmon tartare, and shaved cucumber salad to share. My entrée goto’s are MTK seafood stew, fried local catch, and our seared Atlantic salmon. For dessert, our cast-iron donut crunch served with vanilla ice cream is unreal! 16 Navy Rd., Montauk
tutto il giorno
Maurizio Marfoglia, executive chef and managing partner What’s new this summer? A beautiful salad of shaved raw asparagus with lamb’s lettuce and shaved Grana Padano cheese. Favorite beach food? A burrata and tomato sandwich. What’s your Hamptons wardrobe? Cotton pants, a linen shirt, and flipflops while riding my motorcycle. 56 Nugent St., Southampton, and 6 Bay St., Sag Harbor
living room c/o the maiDstone
Mathias Brogie, chef de cuisine What’s new on the menu? Grilled local seafood bruschetta with garden vegetables and harissa aioli. What’s trending in the Swedish culinary scene? Extracting original flavors without over-engineering it. We’ll see more deconstructed dishes that are high on flavor and low on carbs. What’s the most-ordered room service item? Swedish meatballs, served with potato purée, cream gravy, and lingonberries. What do you wear off-duty? Dress codes are up to my wife, Sara, but earphones playing a Harry Belafonte song are a necessity for my perfect day off. 207 Main St., East Hampton
bay kitchen bar Eric Miller, executive chef and owner What’s your hottest dish? My Anson Mills corn-floured softshell crabs served over a summer vegetable slaw with chili crema. Cocktail of the season? The Little Bird: a blend of white rum, Peruvian Pisco, fresh lime, and coconut served on ice. You just opened up a Bay Kitchen Bar location in NYC! The New York location is a little bit more elegant, and the food is a little bit more refined. 39 Gann Rd., East Hampton
bostwick’S chowder house
pierre’s
Pierre Weber, owner What’s new? The opening of the Upstairs Project at Pierre’s. It’s a discreet, private space for evening or daytime events, and although there’s no membership fee, guests will have to be in good standing with Pierre’s or invited for a particular event to be let in. What’s the buzziest brunch dish on the menu? The lobster Benedict. A Hamptons summer, in one French word, is... Élégance. What do you don outside the kitchen? White clothing and J.M. Weston moccasins. 2469 Main St., Bridgehampton A L L P H O T O S co u r tesy
Chris Eggert, chef and owner What’s your absolute favorite type of seafood? Sautéed local bay scallops: I dip them in flour and sauté them in a hot pan with white wine, butter, garlic, and lemon. What’s your lobster order? Steamed with lots of butter! Thoughts on Manhattan vs. New England chowder? I mix them together. Other restaurant haunts? I like Fresno, the Tavern at 1770, and Dave’s Grill. 277 Pantigo Rd., East Hampton
moby’s
Gary King, chef What’s your best-selling pizza? The margherita. It’s very traditional! This year, we’ll be making our own stracciatella cheese for it. An unsung but killer pizza, please! When eggplant is in season in August, we do an eggplant Parmesan pizza that’s pretty awesome but underrated. How do you feel about pizza crusts? I’m down with old-school flour, water, and yeast. No starters or any of that fancy bread-making stuff. Just straight-up, Italian grandma style. Which restos do you frequent? Ruschmeyer’s, Surf Lodge, and South Edison. I also love tacos and cold beer at La Fondita. Got any grilling tricks? Buy the best ingredients possible, use all wood—no fire starters or fluids, do not overcook anything, avoid flare-ups, make sure the grill is hot before you put anything on it, drink beer, and be happy! 341 Pantigo Rd., East Hampton

MICHAELA KESZLER, Douglas Elliman
Lived out East for… 23 years Dining haunts: Tutto il Giorno, East Hampton Grill, and Silver’s Restaurant. Grocery go-to’s: The Village Gourmet Cheese Shoppe, Citarella, Herbert & Rist for wine, The Green Thumb for organic vegetables, and Tate’s Bake Shop for bread and cake. Grilling 101: Prime Meats and Clamman Seafood. I use only organic and free-range meat. Workout picks: Going for a run or doing yoga—all outside. Hamptons driving shortcut: I only use main roads—the back roads are too busy! East End first-timer mandatory activity: Definitely our amazing beaches, so take a walk or enjoy your coffee at the beach! Best beach: Cooper’s Beach. I also like Cryder Beach to be social, but Little Plains and Old Town to enjoy! Favorite “local” spot: I’m not telling, because then it won’t be private! Haute cocktail: Cranberry with soda and lemon in my own backyard. Average listings per summer: Around 20—but hopefully, none by the end of the season! Prospective Hamptons buyers must ask… “What’s the best location to invest in, within my budget?” A great client is… Someone who trusts you. Outlandish feature in a property I’ve sold: A third-floor rooftop spa with sauna, steam room, fireplaces, and a dumbwaiter overlooking the water!
Haute Properties Who knows the lay of the land more intimately than East End realtors? These five stellar sellers filled The Daily in on their musts. Plus! Memorable tales from trawling the market that you won’t want to miss. BY ALEXANDRA ILYASHOV and DENA SILVER photography by giorgio niro
CHRISTOPHER BURNSIDE, Brown Harris Stevens
Lived out East for… 24 years Dining haunts: Vine Street Café Grocery go-to: Cavaniola’s in Sag Harbor. The wine selection is always spot-on, the cheeses are divine, and they sell fantastic prepared meals. Grilling 101: Ludlow Farm for chicken and grass-fed beef; Serene Green farmstand for fish. You feel transplanted to a small New England fishing town; the drive to Cor-J Seafood in Westhampton Beach is worth it. Workout picks: Waterskiing in Sag Harbor Cove, mountain biking in Montauk, and working out in my home gym. East End first-timer mandatory activity: Swindle your way onto a boat heading to Sunset Beach for cocktails. Best beaches: Gibson Beach has only a few parking spots, so it’s never crowded. I go to Scott Cameron Beach with my 5-year-old daughter for the ocean and bay; kids can splash around and catch crabs. Top shops: I like to support my local stores, so most of my shopping is in Sag Harbor. For men’s clothing, I go to Tenet in Southampton. Haute cocktail: A jalapeño margarita at sunset at Navy Beach. Best Hamptons celeb sightings: Jennifer Lopez, George Clooney, and Madonna. Average listings per summer: 18 to 20 exclusives, ranging from $4 and $12 million. Prospective Hamptons buyers must ask… “What are the property limitations?” and “Will surrounding properties possibly be developed in the future?”

JACK PEARSON, Corcoran Lived out East for… 17 years Dining haunts: Almond and Sant Ambroeus. Grocery go-to’s: Domaine Franey for wine, Cavaniola’s for cheese. Grilling 101: Citarella in Bridgehampton for porterhouses and red snapper. Workout picks: Minardi Training on East Hampton Main Beach and SoulCycle. Top shops: Scoop and Theory. My favorite brands are Maison Margiela, Moncler, Acne Studios, and Common Projects. Favorite “local” spot: Almond on Friday nights; it’s a gay hangout. Haute cocktail: A “Jackarita” at my home in Water Mill. Best celeb sighting: Barbra Streisand at Ralph Lauren in East Hampton. Average listings per summer: My business partner, Cee Scott Brown, and I usually have from 10 to 20 listings. Trade secret: A business partner you can rely on. It’s like a good marriage! Memorable sale: A Sagaponack estate for $20 million, plus the reserve land next door for $5 million. Prospective Hamptons buyers must ask… “How will I use this house?” A great client is… Fluid like the market. Hottest hood du summer: Bridgehampton—it’s the new Sagaponack! Outlandish feature in a property I’ve sold: A locked Fifty Shades of Grey–type closet in the basement!
CLAUDETTE DIXON, Corcoran
Lived out East for… Six years. I bought my home in 2003 and moved here full-time in 2009. Dining haunts: The Beacon in Sag Harbor. The food is consistently great, and the atmosphere and views of the harbor are wonderful! Grocery go-to’s: Round Swamp Farm. Workout picks: I love Jillian Michaels’ YouTube workouts! Hamptons driving shortcut: My favorite back road is definitely Red Dirt Road from East Hampton through Amagansett on my way to Montauk. Best beach: Sagg Main on a Monday night, when the drumming circle gets together for a weekly performance at sunset. Top shops: In East Hampton, I frequent Milly, Tahari, and Ralph Lauren—and I can’t forget T.J. Maxx in Bridgehampton! Favorite “local” spot: East Hampton Point on a Sunday night with live reggae music. Haute cocktail: Margaritas at Cyril’s. My best Hamptons celeb sighting: Jennifer Lopez shopping in East Hampton. Most memorable sale: Last summer I sold a home in Ninevah, Sag Harbor. It was not on the market, and a few months later the deal fell through with the first buyer. A week later I showed it to a client through FaceTime, and the buyer loved it so much, we signed a contract without the buyer ever being in the home!
VINCENT HORCASITAS, Saunders
Lived out East for… 20 years Dining haunts: World Pie. Grocery go-to: Loaves & Fishes. Workout picks: East Hampton Indoor Tennis. Hamptons driving shortcut: It wouldn’t be a good back road if I published it! East End first-timer mandatory activity: Have a late meal on the beach in September. Best beach: Ditch Plains in Montauk. Top shop: John Varvatos in East Hampton. Favorite “local” spot: Watching the sunset at Montauket Hotel. Haute cocktail: A margarita at Mercado in Water Mill. Average listings per summer: From 30 to 40 sales listings, and from 75 to 100 rentals. Prospective Hamptons buyers must ask… “What would be my return on my investment?” A great client is… Honest and loyal. Hottest hood du summer: Southampton Village. Outlandish feature in a property I’ve sold: Underwater speakers in the pool.
