Chamber President Message Last summer, my husband contracted COVID-19 and was in the ICU for eight days. Luckily for us, his condition improved, and, after many months, he has made a full recovery. To say this was a stressful, uncertain time for our family is an understatement, and one thing we didn’t anticipate was the full effect it would have on our small business. It’s a challenging time to own a small business, but I’m not telling you anything you haven’t seen. Personal illness, new regulations, supply chain issues, labor shortages, financial fragility … the pandemic has dumped a myriad of unforeseen stressors at the feet of small business owners everywhere. Luckily for us, the Payson/Santaquin area has a chamber of commerce dedicated to helping our businesses recover and thrive! In 2022, the chamber will redouble its efforts to help by providing different avenues of advertising, sharing resources of education and assistance, creating opportunities for businesses to sell and to serve, and facilitating valuable networking opportunities to build connections. Even with these efforts, however, our businesses can’t thrive without the increased support from the communities they call home. One thing the pandemic hasn’t taken from us as community members is the freedom to choose how we spend our money. With so many small businesses struggling right now, I’d like to encourage us to be more intentional about where we

choose to shop. Now more than ever, let’s sound the watch cry of Shop Local, Shop Small. Now, you may be wondering how this benefits you and your family. The answer is simple: when our businesses thrive, our community thrives. • When local businesses feel supported, they tend to support the community more. Business owners tend to volunteer at events, sponsor teams, participate in Onion Days and Orchard Days, and invest time and money in the local schools. Local businesses have a vested interest in making their communities great. • Local small businesses help create community identity. They help shape our area’s culture. For example, we’re lucky to be surrounded by beautiful orchards and farmland. As we choose to support these farms and agribusinesses, they’re able to continue as pillars in our communities, and it comes together to contribute to a strong sense of home and identity. • Local small businesses create more local jobs and happier employees. Aflac’s 2018 Small Business Happiness Survey reported that 87% of employees at small businesses say working for a small business is more fun than working at a large one. Employees feel seen and employers are more understanding because they have better relationships with their employees. •Local small businesses will pay local property taxes that contribute to our

Payson Mayor’s Message Citizens and friends of Payson, It’s that time of year again; 2021 is already over and we’re well into 2022. In last year’s message, I mistakenly said that we were through with COVID. That has been proven not to be true! We must and will continue to take the necessary, common sense measures to protect ourselves. We will get back to the business of everyday life! We are continuing to experience growth in the residential and retail sectors. Here are a few of the projects we have finished and some ongoing developments we are working on. • The new baseball fields, all six of them, have been completed. We are looking forward to future league and tournament games this spring, summer and fall. The Kenny Sang Construction Company has done a wonderful job. Kenny Sang promised that it would be a show place for the city. He has more than kept his promise. Thank you, Kenny! • The Parris RV dealership is nearing completion. We are looking forward to their grand opening with great anticipa-

tion. They will be a wonderful addition to our community. • Planning on the Red Bridge development continues to progress. The Higher Education Board has ranked the Payson Mountainland Technical College building number one on its funding list. We are keeping our fingers crossed that MTEC will get the funding needed to build its first building on its 13-acre campus! • We are actively working with Colliers, Woodbury, Kroger’s/Smith Food King and other representatives and companies to persuade them to establish new businesses in Payson. • During last year’s legislative session, we were able to secure $5 million to replace the failing infrastructure beneath our Main Street. We are currently working on the engineering for that project, including rebuilding Main Street from 100 North to 700 South after replacing the aging infrastructure. • Last June, we officially introduced our new brand for Payson and adopted the new tag line “Home to Adventure.” We are happy with how you, our cit-

izens, have accepted this change and are looking forward to a bright future. These are just few of the exciting projects we are working on. I am grateful to have the privilege of being Payson City’s mayor. Thank you for the faith and trust I have felt from you, the citizens of Payson. Abby Woodland is the daughter of Scott and Amberlee Woodland. She was born and raised in Payson and is proud to call it home! She graduated from Payson High School with the class of 2021 where she participated in many extracurricular activities. She has enjoyed working as a CNA and recently completed the Medical Assisting program at MTECH. Abby loves working in healthcare and finds passion in caring for others during difficult times. She looks forward to pursuing a bachelor’s degree in nursing within the coming years. When she isn’t working, she enjoys traveling, spending time outside, shopping, reading and being with friends and family. She is honored to be given the opportunity to serve Payson City and impact others around her.

Payson City is part of the Tree City USA program and is proud of the trees it has in its parks and around the city. The annual Payson Scottish Festival and Highland Games celebrate Scottish traditions in all forms: dance, music, food, competition and entertainment. The first festival was organized more than 30 years ago as part of Payson’s Golden Onion Days, but today the festival is held for two days each July. The first event, the Friday night Ceilidh (pronounced kay-lee), is held at the

bandstand in Payson’s Memorial Park and features performers and dancers regaling the crowd with Scottish music, song, stories and dance. On the second day, the events begin with a parade on Payson’s Main Street followed by the opening ceremonies, which include music by bagpipe bands. Visitors can then enjoy a variety of activities ranging from craft and food booths to additional bandstand performances, athletic and bagpipe competitions and a Highland Dance competition. For more than 60 years, crowds of people have journeyed to Payson City each August to enjoy the Payson Salmon Supper, a tradition in the city since 1954. Thousands of pounds of fresh salmon are flown in for this event and cooked over open fruit-wood fires by local firemen. The hungry participants come from throughout the area, some arriving by buses, to enjoy the meal in Payson’s Memorial Park. Enjoy musicians and singers performing while attendees anticipate enjoying the main attraction — the food. Sides include baked potatoes, corn on the cob, salad, roll and dessert. Originally organized by local congregations of The Church of Jesus Christ of Latter-day Saints, the Salmon Supper is now run by Payson City.

GOLDEN ONION DAYS Sept. 1-5

This annual celebration was first held in 1929 as an opportunity for residents and former residents to renew old friendships and make new ones. Originally known as the Onion Harvest and Homecoming, the event honored Payson’s status as an agricultural district and outstanding producer of onions. The celebration was later renamed Payson City Golden Onion Days, and that is the name that remains to this day. Golden Onion Days is typically held each year on Labor Day weekend and includes events such as concerts, carnival, baby contest, car show, 5K and 10K races, parade, fireworks, food, and merchandise vendors.

This event will celebrate the Hispanic Heritage Month. There will be a variety of performers during the day along with food trucks and booths from different Latinoamerica countries. This is family-oriented event and it is intended to bring the community together.

Downtown Payson Group working to revitalize downtown area An organization formed to breathe life into Payson’s historic downtown area is already seeing success as it focuses on activities, beautification efforts and an upcoming reconstruction of Main Street. In 2018, three Payson businessmen formed Historic Downtown Payson, a nonprofit group “organized for preservation, restoration, beautification, utilization, upgrade, development and marketing of Payson’s designated historic downtown area,” according to HDP’s mission statement. Since then, the organization has hosted a variety of activities, including a summer block party; a Halloween extravaganza with a costume parade, pie-baking contest and jack-o-lantern carving contest; and a Christmas decorating contest for downtown businesses with prizes for the winners. “This is a very unique gem down here, and we want to assist and enhance the charm of our historic downtown area. We want to make it family centered, and we want downtown to become a destination rather than a byway,” said Ty Jones, managing agent at the Insurance Center in Payson. Jones is president of HDP; the other two founders are Ashley Guy of Goofy Guys and Dr. Thor Mongie of Balanced Health of Payson. The downtown activities are being led by Dr. Mongie and a group of local business owners serving on the activities committee. “Many people who grew up in Payson recount to me a time when downtown was the place to come in

your free time,” Jones said. His organization is trying to bring that feeling back by attracting residents of surrounding areas to downtown Payson through activities and encouraging unique businesses to locate in the area. The organization is also working to make downtown a safe, entertaining, fun and unique place to come and enjoy for patrons and a place where business owners are proud to occupy and operate a business. Payson City recently installed a sound system in the downtown area through which holiday music will be played each Christmas season. HDP will also be able to utilize the sound system to make announcements during future events. Historic Downtown Payson is working closely with Payson City as part of its efforts to improve the downtown

area. Representatives of HDP and the City of Payson have come together in a group known as the Main Street Initiative. This group meets monthly to discuss downtown issues. Jones also sits as chairman of this committee. One of the largest issues it is facing is the reconstruction of Main Street through the downtown area. Payson City was able to obtain funding from the State of Utah to assist in the repair of Main Street, which has many infrastructure problems underneath the roadbed. “It’s going to be a huge project that could start as early as this fall,” Jones said. The initiative is working to find grants to fund projects such as improving rear building entrances to help businesses get through the construction with as little impact as possible. After the construction phase, the committee will move to another phase to create dining and retail experiences unique to downtown Payson. The city has been working with a third party to collect input from the public regarding what they would like to see done as part of the Main Street road improvements. This could include things such as updating sidewalks, trees and parking. Historic Downtown Payson is providing its input as well. HM Hand Made Business blending its own lotions, balms In October 2019, Heidi Maloy opened a store selling her homemade soaps, lotions and fragrances in historic downtown Payson. Just a few short months later, the COVID-19 pandemic shut her store down — nearly forever. “It was a risky move to decide to keep going,” Maloy said. “It was literally a month-to-month decision.” At a crucial point, however, she got a call from a nurse who was a fan of Maloy’s products. Nurses’ hands were drying out through the constant need to disinfect them, and Maloy’s lotion was the only product that helped. The nurse put in an order for 200 lotions so she could share them with other nurses. “And that was a moment where I was able to say, OK, one more month,” Maloy said. After being shut down for six months, Maloy reopened her brick-and-mortar location at 90 S. Main in Payson, and the business has grown ever since. During 2021, the business, called HM Hand Made, essentially doubled in sales. Inside her small historic building, Maloy and several employees create and sell a wide variety of personal care products, including skin and facial lotions, foot creams, hand creams, lip balms, bath bombs, sugar scrubs and shaving creams. They are all made using natural ingredients and recipes — including scent blends — developed by Maloy. “Literally, we make everything here by hand,” she said. Maloy wasn’t looking to start a busi-

ness when she began researching natural remedies. At first, she was simply looking for alternatives in treating her chronic migraines. She learned about essential oils and how they could be blended with lotions and balms, then began making products for herself. The batches made more than a single lip balm or bottle of lotion, however, and she began giving the extra products to family and friends. Soon, they were asking her for more, saying they were the best they’d ever used, and Maloy began developing products in earnest. She refers to herself as part baker, part chemist and part mad scientist. “The nerdy part of me would do the chemistry part and think, how can I take these butters and make them more beneficial? And the baker part of me was like, how can we make it smell good and how can we make it pretty?” she said.

She created a website and began selling her creations online, then began selling at local boutiques. The basement of her Payson home served as her business’s location. After about five years, as her children were growing older and she was considering what was next in her life, she saw the small building for rent in downtown Payson and decided to move her business there. During the COVID shutdown, Maloy took phone orders and would drop them off at people’s homes or do curbside pickup. She also continued her online sales. After reopening her storefront in September of 2020, sales began picking up, with Christmas providing a large boost. “The December of that year, I was shocked at how much business we had,” she said. She attributes part of her business’s growth to customer’s growing desire to buy local and support local businesses, especially as they saw them closing during the pandemic. Inspiring Personal Change Local musician, motivational speaker is now author Local musician, motivational speaker, business owner and veteran Ryan Stream has recently acquired a new title: author. Stream chronicles the amazing story of his life as well as principles that helped him overcome homelessness and drug addiction in his new book “Conquering Your Colosseum: Believe In Yourself.” “I’ve lost so many battles and this is how I’ve been able to conquer,” Stream said of his book. “In the book, it says I’m still losing, but I’m still learning.” A resident of Payson with his wife Elizabeth and two children, Stream experienced a rough childhood. His parents made bad decisions that led to addiction and prison, and his mother died of suicide. He lived homeless and in foster care and was separated from his three brothers before a family adopted him and, eventually, his brothers. After high school, Ryan got involved in drugs and alcohol and made poor choices, which resulted in multiple arrests. He lived in his car or on friends’ couches until he joined the military, which brought its own challenges. He was deployed twice to Afghanistan, where his unit’s mission was to locate and destroy IEDs. Many in his platoon were in vehicles that were hit with IEDs, and one soldier in his unit was killed. Despite the enormous challenges life brought to him, Stream found ways to overcome the difficulties he’s experienced and turn his life around. “My whole story is just about overcoming adversity,” Stream said. Stream has gone on to become a highly esteemed motivational speaker that has addressed groups around the United States and in multiple countries. As a singer, rapper and pianist, he also shares his music with his audiences. His videos on YouTube have attracted thousands of views. In “Conquering Your Colosseum,” Stream shares five key principles that have helped him create an incredible life. The book also offers truths that anyone can use to build an extraordinary life for themselves.

“The book is about believing in yourself and getting through every conflict in life,” Stream said. The book’s title references the idea that as challenges arise, a person needs to meet them head on. Stream said that in his life, as he encountered challenges, “It was time to enter the colosseum. Local Champion Payson girl winning national horse-riding events When Enaya Carroll was 5 years old, her older brother Adriel wanted to go horseback riding. Enaya went along. That fateful day led the now 12-yearold Payson girl to a love of competitive riding and a skill that has her winning national competitions. In 2020, she became the youngest person ever to win the U.S. Arabian Sport Horse Nationals competition, taking home a $3,000 prize. In 2021, she returned to the competition — and won again. This was especially impressive considering the competition has no youth category. Enaya competed against adult professional riders. She’s also won or placed in the top 10 at other national competitions, including the United States Hunter Jumper Association National Championships in Las Vegas, Nevada, and the Scottsdale Arabian Horse Show in Scottsdale, Arizona. “I am so proud of her. I have seen her lose with grace and I have also seen her win with grace,” said Enaya’s mother Tahira Carroll. “I’ve also seen a shy little girl blossom into a very articulate young lady, and I think all of that is the confidence she got from horses.” A seventh-grader and straight-A student at Valley View Middle School,

Enaya started taking horse-riding lessons while living in Provo. Five years ago, the family purchased its first Arabian horse. Living in the city meant having to board their horse elsewhere, which was expensive and inconvenient. Her parents Tahira and Fernando Carroll had talked about moving onto a farm someday where they could raise their two children. Four years ago, they found a farm property in Payson and decided to do it. “It was a good life for the kids, I thought. It’s been a really good decision,” Tahira said. The Carrolls now own five horses that all live at their property, which the family refers to as Fate Barn. Enaya trains with Kate Healey at Valley View Equestrian in Payson and with Isaac Taylor at Taylor Ranch Arabians, also in Payson. Her favorite sport to compete in is show jumping, where she and her horse have to clear obstacles up to 3 feet high. She also competes in dressage, where horse and rider are judged as they complete a required series of

movements. Both show jumping and dressage are Olympic sports. Enaya also competes in Mounted Native Costume, a sport where the rider and horse dress in an Arabian costume. The horses must move in specific ways while always under complete control of their rider. “You have to make them look like they’re floating, like they’re running in a desert,” Enaya said. All three of these sports are considered English forms of riding, which, as a Utah resident, sets Enaya apart. Most riders in Utah are involved in Western-style riding such as that featured in rodeos. While Enaya has competed in Western riding, even making the top 10 in 4-H state competition, she prefers the English styles and the different challenges they offer. For example, each show jumping competition features a unique course that must be navigated. “I like trying new things a lot. I like pushing myself a lot,” Enaya said. “We joke that she’s very intense,” Tahira said, adding that both Enaya and her horse visibly get into the “zone”

just before competing. “There’s this moment before the show where they get very focused, and it’s kind of fun to watch.” It’s also unique that Enaya competes and excels in multiple sports; usually, riders concentrate on only one sport. Enaya rides her horse Thor, a purebred Arabian, in her show jumping competitions. A natural jumper, Thor has also earned national awards for his skills. She also rides Thor in dressage competition. With money won through competition, Enaya purchased an Arabian horse named Prince that she uses for Mounted Native Costume riding. She has also recently purchased Sylvie, a Warmblood horse. This breed of horse is known for jumping and used by riders competing in the Olympics. It’s an appropriate purchase as Enaya already has her eyes on competing on the 2028 Olympics in Los Angeles, California. When asked why she’s found such success, Enaya attributed it to her relationship with the horse. “For me, personally, I think I’m pretty good at understanding them and I try to always put the horse first,” she said. Tahira said at competitions, Enaya and Thor are referred to as Team Thor. “I think that explains it all. They’re a team,” Tahira said. Santaquin Mayor’s Message Welcome to Santaquin City! We love our city and invite you to visit and enjoy everything that our community has to offer. We are a family-oriented, freedom-loving and passionate group of citizens. We take pride in our heritage and work to enjoy the mountains, experience the rural atmosphere, and preserve the beautiful orchards and farmland that have placed Santaquin on the map. Like other cities in our great state, Santaquin has grown rapidly in the past couple of years, but because of wise stewardship over our resources, Santaquin City has been able to handle the influx of new residents. We have abundant water to keep our yards and parks green and farmlands producing, which has created a natural attraction for these new homeowners. Our public safety, public works and community services departments have grown alongside the population so that Santaquin has remained one of the safest and greatest places to live in the region. Although Santaquin Canyon experienced some erosion damage in 2019 that closed the road, we look forward with great anticipation to the road being repaired by the U.S. Forest Service so we can return to our beloved canyon. One of my initiatives as a new mayor is to create, with volunteer efforts and funding, a trail system at the mouth of Santaquin Canyon on city-owned land. This trail will attract walkers, hikers, equestrians, bicyclists

and outdoor enthusiasts alike. Watch for opportunities to participate in this project. In recent meetings with the USFS district ranger, we learned that phase one of the Santaquin Canyon access restoration work is going very well, and they anticipate phase two beginning later in 2022 with more work to follow. We were informed that Tinney Flat Campground will be in the first phase of repair and restoration, including repair of the water supply for that campground starting the summer of 2022. The USFS also has plans to start the restoration and rebuild of the Blackhawk Campground in the summer of 2022. It is exciting to see the work moving forward and we look forward to seeing our beautiful canyon reopened once again (hopefully in 2023). Regarding our local economy, we are so proud of the many storefront, home-occupied and orchard-owned businesses in Santaquin. We welcome new businesses to our city, especially as additional commercial pads are constructed near our new Macey’s grocery store and the commercial area at the south interchange of I-15 at exit 242. Our local orchard and farm owners are gradually introducing agritourism events to the area that create “farm to fork” experiences for participants. These unique events educate and excite people of all ages, so please plan on joining in with your family. We recognize that it takes all of us

Miss Santaquin Miss Santaquin Molly Mortensen grew up in a home where pageants were always talked about. Her relatives hosted and participated in Miss Santaquin and Miss Utah. Molly enjoyed watching pageants more than anything in the world, but she never imagined that she would be in one. After two years of convincing, Mortensen finally decided to compete in the Miss Santaquin pageant, and not a day goes by where she regrets her decision. Mortensen was thrilled to instantly serve her community through her Social Impact Initiative: “Find Confidence, Make the World Your Stage.” After going through a battle of finding her own self-confidence, she became very passionate about this topic and finds joy in helping others discover their most confident self. One of the ways Mortensen has been promoting her initiative is by choreographing and teaching line dances to different groups in her community. After her first time teaching line dancing, she posted about her experience on social media and now finds herself busy teaching plenty of different groups. She also planning an “Adult Prom” that took place in February. She believes people find confidence when they are learning new things and getting out of their comfort zones. Mortensen has been serving her community monthly by visiting elementary schools, judging science fairs, visiting and serving food to senior citizens, attending and helping out at events put on by businesses in town, and performing songs with a young group of middle

Santaquin Orchard Days Each summer, Santaquin City hosts Orchard Days, a celebration that brings the city’s residents together to celebrate their community’s heritage. This year’s Orchard Days will be held Aug. 1-6. Named after the area’s plentiful orchards, the celebration includes many different events for all ages such as the Little Buck-A-Roo Rodeo at the Santaquin Rodeo Arena. This rodeo features events such as sheep riding for younger children as well as goat tying, breakaway roping and mini bull riding. The Family Night event offers activities for every member of the family including a children’s parade, food and craft vendors and musical entertainment. For the sports enthusiast, there are a variety of athletic events including the Home Run Derby and a 5K run. There’s also a car show, concerts in the park, a movie night, a teen dance, a quilt show and fireworks. Recreation Santaquin builds new outdoor basketball courts Through grant money, donations and RAP tax funds, Santaquin is now home to one of the largest and highest-quality outdoor basketball courts in Utah County. Its construction quality, however, is not the only thing that sets it apart. The first thing one notices about the facility is the huge Utah Jazz logo painted on its playing surface. The Utah Jazz awarded SantaquinDONE City a $10,000 grant for the facility as part of a Jazz program that funds the creation or refurbishment of basketball courts in Utah. Along with the grant came permission to feature the Utah Jazz logo. The new basketball facility is located at Centennial Park, 300 W. 100 South, Santaquin. It features six basketball hoops arranged to provide half-court or full-court play. A ribbon-cutting ceremony was held for the facility on Aug. 5, 2021, which was followed by a basketball tournament held as part of Orchard Days. The story of the new basketball facility began before the Jazz grant. A few years ago, Shawn Bradley, a former Brigham Young University basketball player who went on to a career in the NBA, visited Santaquin for a car show

at Centennial Park and was surprised to find no basketball court there. He helped raise several thousand dollars in one day at the show to help fund a court, and that became the seed money for the project. Santaquin Community Services Director John Bradley said he learned of the money when he came to work for the city, and he decided to apply for the Utah Jazz grant to try to get the project underway. RAP (Recreation, Arts and Parks) Tax funding was also used for the basketball court project. With the money from the Jazz grant, the city was able to construct courts of a much higher quality, John Bradley said. The courts are made of “post-tensioned concrete,” a method that will help the courts last much longer than those made with regular concrete. The city was also able to create more courts at the Centennial Park facility. The hoops even have an adjustment mechanism allowing residents to raise and lower the baskets. Basketballs can be checked out for free from the Santaquin Recreation Office located across the street from Centennial Park. The Jazz Bear attended the ribbon-cutting event for the facility and gave out Jazz items, and a lot of local children attended wearing their Junior Jazz Basketball jerseys. Santaquin City’s recreation department offers a Junior Jazz Basketball program each year. John Bradley said the city plans to use the new courts for a big basketball tournament during Orchard Days each year. About 120 people participated in the Orchard Days tournament in 2021. Of course, the courts are also open for public play. “I think one of the reasons why it’s such a great facility is it’s free. People can go and enjoy it as long as the weather is good,” John Bradley said.


Harvest View Sports Park: Phase 2 under construction In addition to its new basketball courts in Centennial Park, Santaquin City is creating recreational opportunities for residents in its Harvest View Sports Park. Located at 592 W. Summit Ridge Parkway, this 35-acre park is being built in multiple phases and will eventually be home to a variety of sports fields and courts. “It’s just a massive regional sports park,” said John Bradley, Santaquin City’s community services director. Phase 1 was completed in the fall of 2019; the park currently has 8 acres of grass as well as lighting for evening play and a small restroom. Currently, the park is used for soccer games as well as sports such as T-ball, flag football and spikeball. Phase 2 construction is now underway. This phase includes creating a paved parking area with 400 parking stalls, a restroom/concessions building, a playground and eight lighted pickleball courts. Future phases will include building softball and other recreational fields. The park is being funded through impact fees and RAP tax funds, and future phases will be completed as funding becomes available.

Business Urban farming a success for local family When the Taylors first put plastic down all over their front yard to kill the grass, the neighbors thought it was a bit strange. The raised eyebrows continued as they tilled under the dead grass and prepped the yard for planting crops. Today, however, the Taylors’ yard in Santaquin has become an attraction as passersby stop to check out this example of urban farming. Through their business Farm Yard Fresh, family members grow a wide variety of produce each summer on the property surrounding their home. “Every year, we’re grown in some form or another,” said Isaac Taylor, owner of Farm Yard Fresh with his wife Stephanie Taylor and mother Janet Taylor. Isaac said the family used to live in California where they all worked in industries unrelated to farming. “I really enjoyed working outside, working with my hands, and I wanted to create something more tangible,” Isaac said. The family made the decision to become farmers, and they educated themselves through books and YouTube videos. With property prices too expensive in California, they made the move to Utah. They bought their Santaquin home, located on a half-acre lot, with

the idea of creating a garden and potentially buying farmland elsewhere. In the meantime, they began farming operations at their home. When their next-door neighbors saw what the Taylors were doing, they invited the family to use parts of their properties for farming — in exchange for vegetables. The Taylors now farm a total of three quarters of an acre, all just steps outside their front and back doors. Their urban farm has become their full-time business. “Our immediate neighbors all love

it,” Isaac said. The community support of this urban farm was shown while Isaac was hospitalized last year for COVID-19 and dozens of volunteers showed up to help do the work in his absence. Farm Yard Fresh’s first year was very successful; the Taylors sold their produce at farmers’ markets as well as local restaurants. Just before the COVID-19 pandemic started, they decided to focus more on retail sales and began taking orders through their website. They then delivered the orders at set locations along the Wasatch Front. This decision kept their business profitable and growing during the pandemic as customers were hesitant to mingle with crowds but willing to pick up orders when the Taylors brought them to their city. While they still offer website ordering, the Taylors began focusing mainly on farmers’ markets last year, and 2021 proved to be their best season yet. The Taylors plant crops in their more than 1 mile of planting beds as well as in a greenhouse in their backyard. Janet called their methodology “high-intensity, rapid farming.” “We do three to four different crops in a single bed in a season,” Isaac said. “We turn them over that fast. We’ll have them all harvested on Thursday and on Friday we’re getting that bed ready again for planting the next Monday.” Tomatoes are grown in their green-


house, where a moving trellis system allows them to grow the plants up to 20 feet long while keeping the tomato-producing portion above the ground. Top sellers include salad greens, tomatoes, carrots, beets and radishes, but Farm Yard Fresh also produces items such as microgreens, kale, herbs, green beans, sugar snap peas, tomatillos and garlic. The eldest of Isaac and Stephanie’s five children help with the farm, and they have an employee, Nick Curtis, who helps as well. A great deal of effort goes into preparing the soil for planting. “Everything feeds off of what the soil does,” Isaac said. When they begin sprouting plants in their propagation house, they plant the seeds in a mixture of 80 percent potting soil and 20 percent worm “castings.” Castings are basically worm droppings and extremely nutritious for plants. They follow organic practices in all their other farming methods as well. One of Isaac’s creative inventions is the “chicken tractor,” a bottomless cage on wheels that’s big enough to house chickens. After a bed has been harvested, the cage is slowly rolled down the bed with the chickens inside, giving them time to eat all the earwigs, slugs and other pests that may have taken up residence in the bed while the plants were growing. The chickens also drop manure, an excellent soil fertilizer. Stephanie said one of the reasons their produce is so popular is Farm Yard Fresh can grow varieties of produce other than the more hardy varieties required for mass production. While these varieties look attractive, it may be at the expense of flavor. “We have more delicate varieties of things here, but they’re way more flavorful,” Stephanie said. “That’s a benefit of going local, it’s more flavorful.” The Taylors plan to add eggs and rabbits to their offerings during 2022.
