Grind, pour, serve Mindemans establish BittyBean on Bismarck’s Main Street By Maria Bichler

BISMARCK, N.D. — The grinding of fresh roasted coffee beans lls the crisp morning air with a satisfying sound. Those on Main Street in Bismarck may smell the consequent aroma as they go about their daily duties. The activity is centered around BittyBean, a drive-thru coffee and culinary location operating in the heart of North Dakota’s capital city for the last eight years. The Mindeman family — Trent and his wife, Dawn, and their sons, Durant and his wife, Sydney, and Daryle and his wife, Angele — serve as the backbone for the business and are aided by a team of more than 20 part-time and full-time employees. Trent and Dawn’s daughter, Nicole Bartlett, and her husband, Peter, manage a dairy farm alongside Peter’s family near Bottineau.
The Mindemans take pride in offering fresh, locally roasted coffee that is served with a smile alongside quality food — almost all of which includes a dairy product. When the Mindemans relocated from western North Dakota to Bismarck, they had previously been operating a catering business. A small coffee shack, complete with running water, a bathroom and basement, was for sale in Bismarck. The Mindemans saw the potential and opened BittyBean the week before Thanksgiving of 2015. “We knew how busy drivethrus were,” Trent Mindeman said. “Then, of course, we were all set up, ready to go during the pandemic when everybody else was scrambling to put a drivethru window in. Our business actually grew exponentially during that time.” As business has grown, Mindeman has used his carpentry and entrepreneurial skills to transform the original coffee shack into a Bismarck staple. Two years after opening, they added two food trucks and transformed one of the box trucks to be used as a commercial kitchen on-site.

At BiƩyBean in Bismarck, North Dakota, one of the menu items is a housesmoked pulled pork quesadilla served with sour cream and cheddar cheese. BiƩyBean uses 30 pounds of various cheese every week.
“We didn’t have air conditioning, so it was pretty regularly 108 degrees in there in the summer,” Mindeman said. “Every couple of years, we kind of changed things and started adding.” Two years ago, Mindeman built a coffee facility to better accommodate growing demand. The location is now comprised of three facilities and a green space for outdoor seating. BittyBean offers a robust menu featuring items customers can depend on, as Mindeman said one of their priorities is a consistent product delivered in a timely fashion. “When you say waiting, that’s a dirty word to us,” Mindeman said. “One of the reviews we got this week was, ‘The line is usually pretty long, but the customer service, the food and the drinks are out of this world.’ We’re always trying to think of ways to make the line move faster because we don’t want people to even have to think about the line being long.” Being a coffee shop, dairy is a xed ingredient. When BittyBean opened, Mindeman said, they used around 5 gallons of whole milk per week. Now, they are receiving 86 gallons of milk weekly. After all, lattes are a popular item, Mindeman said. “Real dairy is irreplaceable, really,” Mindeman said. “We use heavy whipping cream, too, because there is no replacement for that.” Over the course of a week, BittyBean uses 30 pounds of various chees-
es, 24 quarts of heavy whipping cream, 15 pounds of Greek yogurt, 14 pounds of butter and 4 quarts of sour cream. The culinary talent at BittyBean bakes bread daily in addition to scones, cookies, mufns, bars and other pastries. A sourdough focaccia bread is used for a breakfast sandwich, which includes cheese. The focaccia is also the base of a savory cream cheese avocado toast. “We use pounds and pounds of butter for baking,” Mindeman said. House-made granola is coupled with a berry blend and Greek yogurt for a parfait. Pork is smoked in-house to be used on items such as a quesadilla complete with cheddar cheese, sour cream and house-made barbecue sauce. A marinated grilled chicken pita is served with fresh mozzarella, tomato and spinach, and paired with a savory pesto. A house salad featuring fresh mozzarella and feta is one of the most popular food items, Mindeman said. Customers can also nd pepper jack, provolone, American and marbled Monterey cheeses on sandwiches and wraps. “We’re always looking to expand our menu,” Mindeman said. “There’s always ideas in the background. BittyBean also offers three alternative products to milk, for those who request it. “I see people who are getting the alternative milks for maybe a valid reason but also maybe just because it’s trendy,” Mindeman said. “I also have a number of people who want to make sure they’re getting heavy whipping cream. They don’t want half and half.” Gluten-free items are available as well, which are made in-house. Local tea and matcha are used in addition to local raw honey and local in-season produce. Mindeman said he nds contentment in owning and operating a business alongside his family. The fact that coffee is served every day is a perk. “I love coffee,” he said. “And, I love problem solving. I have a creative outlet for both my construction skills and my entrepreneurial skills, and the whole family is the same way. We all love coffee; all love being creative and solving problems and making things work better.” The relationships created with those who frequent BittyBean is not lost on Mindeman either. “Last, but not least, I just enjoy meeting people and making people happy,” he said. “The feedback that we get is just amazing. I had one lady tell us today that we were like Big Boy. We haven’t been here as long, but we’re a Bismarck icon. That’s pretty cool.” With thoughts stirring of a second location, Mindeman said BittyBean is anchored. “We’re always looking to expand and trying to assess Bismarck and how Bismarck is growing,” Mindeman said. “We don’t ever want to have the sign on the window saying, ‘Closed due to stafng.’ Consistency is No. 1 in the food business, so having the same thing every time people order and being there when they expect you to be there is key.”

A look back at 5, 10 and 20 years ago 5 years ago
Focused on sustainability In 2018, Jon and Lori Peterson and their son, Taylor, installed solar panels on their dairy farm near Peterson, Minnesota, where they milked 65 cows and raised beef cattle and ewes. They began using the panels June 1, and by October, Jon reported good results. The panels were placed in one of the farm’s paddocks in two 12- by 120-foot rows. The total cost of the project was $120,000, part of which was paid for through a grant. Before installing the panels, the farm’s monthly electric bill was between $700-$800. After the installation, the energy generated covered the cost of that monthly bill and usually gave the Petersons between $150 and $200 in credit per month. Peterson planned to have the project paid off in 11 years.

Striving for responsible antibiotic use Jami Schultze, herd manager at Maple Ridge Dairy LLC in Stratford, Wisconsin, received top national distinction in the fall of 2018 from among more than 100 applicants in the Boehringer Ingelheim’s Producers for Progress Recognition Program. The award was created to recognize dairy producers for their judicious use of antibiotics in their herds. At the time, Schultze was managing the 1,650-cow herd owned by Brian Forrest. Schultze and her team worked with their veterinarian to keep improving their antibiotic protocols as well as protocols to treat problems such as milk fever and ketosis. Culturing of mastitis cases, along with only administering antibiotics when it made sense according to those cultures, led to more responsible use of antibiotics.
Grazing for three generations The Boland family of Boland’s Terrace Acres Farm near Gays Mills, Wisconsin, had been nding success for three generations in grazing their cows. In autumn of 2018, Don Boland was milking 180 cows while rotational grazing the herd to keep his feed inputs low. The farm consisted of nearly 300 tillable acres with 110 acres of permanent paddocks and pasture for grazing. Boland grew hay to supplement the herd during winter months but relied on stockpiling pasture to extend his grazing season as long as possible. Boland said he weighed his management options and had not ruled out the idea of going to an all-grass-fed system.
Mechanic by day, musician by night When Nick Stadick was not helping on his family’s dairy farm near New Ulm, Minnesota, or at his job with an area implement dealership in October 2018, he could often be found entertaining folks with his concertina. Nick, the son of Mike and Tammy Stadick, was 20 years old at the time, but he had already been playing old-time concertina music since the age of 8 when his grandpa, Johnny Helget, rst taught him the basics. Helget was a qualied teacher since he was a member of the World Concertina Hall of Fame and was soon to be inducted into the Minnesota Music Hall of Fame. The duo played their rst gig together when Stadick was 9. By 2018, Stadick was playing three or four times a month. He said he especially enjoyed playing for dairy functions such as Holstein twilight meetings and the New Ulm Farm City Hub Club’s Family Night on the Dairy Farm.
Keeping the farm in good hands The Jopp family found out in fall of 2013 that they had been named Carver County Farm Family of the Year. Rick and Colleen Jopp, along with their son, Ryan, and Rick’s brother, Phil, milked 92 cows and raised 280 acres of corn and alfalfa on their dairy farm near Mayer, Minnesota. They represented the fourth and fth generation on their farm, which Leopold Jopp homesteaded in 1886. Each generation made upgrades to the farm, with the most recent having been a new calf barn built in 2011 that had two big pens for weaned calves and 18 individual stalls with heated oors. In 2013, with cows housed in both a stanchion barn and a freestall barn, the Jopps had perfected their routine of rst milking the cows in the stanchion barn

More dairy in the cafeteria Local yogurt made on the farm was serving as an important part of Farm to School Month during October 2013 in Iowa. Dave and Carolee Rapson’s family had been making Country View Dairy yogurt on their farm near Hawkeye, Iowa, for two years. Many schools in northeast Iowa had already been serving their products, so incorporating them into the Farm to School activities was a good t. During Farm to School Month, food service directors in Iowa school systems were offering local items on the menu. Bob Howard, an organizer for Farm to School, began working with the Rapsons several months before, coordinating yogurt orders for schools and doing outreach. Timing was good that fall with the local-food movement building momentum. Plus, having students enjoy Country View yogurt helped the Rapsons with product-name recognition.

Lending a hand Orville Trettin, of Stewartville, Minnesota, returned home in fall of 2003 from a 35-day stay in Moldova. A semi-retired dairy farmer at the time, Trettin was one of eight people in agriculture who went to Moldova to help farmers there improve their methods. The effort was part of the Citizens Network for Foreign Affairs funded by the Aid for International Development. Moldova had endured three generations or more under the Soviet regime
and was far behind the U.S. in advances such as good herd genetics and basic milk production techniques. Farmers there were milking cows by hand and using public pasture for grazing. Many areas had no running water, and horses with wagons was a common sight. The village in which Trettin worked used only one A.I. sire for several hundred dairy cows, and the semen had been left behind from the Soviet system and was by then 15 to 20 years old. Trettin urged farmers to abandon the system and use genetics from elsewhere. A ʻbearʼ-able solution When October 2003 rolled around, Joe and Alaina Lyseth, of Hinckley, Minnesota, were busy working on their dairy farm, not only in relation to cows but also to bears. About eight years prior, the family’s frustration with bears getting into their crops had increased. The Lyseths milked 60 Jersey cows and raised crops on their 260-acre farm, and they did not appreciate having to contend with bears eating away at their livelihood. When someone asked them about hunting bears on their land, an idea was born. Joe earned a license through the Department of Natural Resources to be a bear guide, and the family began hosting weekly hunts during bear season. Joe said that the real work happened for about a month before the Sept. 1 opening day, when he set up and restocked bait stations. Joe put on about 14 miles on his four-wheeler with each trip to set the stations — of-ten needing to crawl into thick brush to place bait — but efforts paid off. By mid-October of 2003, ve black bears had already been bagged by hunters.

KELLOGG, Minn. — It was around 6 a.m. March 12, 2022, when Jack Stamschror woke up to the sound of knocking at the door. A woman was there to tell him and his wife that their shed was on re. “My rst reaction is that (the shed) can’t burn,” Stamschror said. “It was all metal. But yeah, it denitely did.” Stamschror is an organic dairy farmer who farms alongside his wife, Cindy, and his daughter and son-in-law, Amy and Richard Taylor. Together they milk 200 cows once a day as well as manage 450 acres of land and 200 additional acres of pasture near Kellogg. By the time Stamschror got outside that night, the retrucks were arriving. A photograph taken during the re shows the shed glowing pink from the heat in the early morning light as great mountains of smoke roil out. Somehow, the ammable trees never caught. The next hours were spent with re teams from Plainview, Elgin and Kellogg working to put out the inferno. Water was sprayed on the re until almost noon. It was an emotional scene. Stamschror’s eyes still tear up when talking about it. “(It was) one of the few times I cried,” he said. Inside the shed, the heat of the re was so intense that the steel beams supporting the roof collapsed. The American Institute of Steel Construction’s website states that steel can retain about 50% of its strength at 1,100 degrees Fahrenheit, so for design purposes, it is usually assumed that it loses all capacity at about 2,200 degrees. Stamschror said the re marshal told him the re must have been 1,600-1,700 degrees. Inside the shed, everything was destroyed and melted down to metal. Photographs taken after the re show the frames of tractors, skid loaders and anything else with a metal frame standing like charred, tired skeletons covered in places with a coating of white melted material dripping down the
determined. Stamschror lost four tractors, two skid loaders and their attachments, a grain drill, a 1977 GMC Sierra pickup, and basically all of his tools. He had also stored eight pallets of seed there worth $70,000 that he needed for spring as a dealer for Byron Seeds. “I did learn one thing; you don’t park all the stuff in one shed,” Stamschror said. The most difcult item to lose was the pickup. Stamschror’s grandson, Jayden Ihrke, had spent the last two years restoring it and was planning to paint it soon and put tires on it. Stamschror needed a skid loader to feed his grass-fed cows their forage and do chores that day, so a neighbor loaned him one. Later, Plainview Agri Power in Plainview and Hammell Equipment in Chateld loaned him skid loaders rent free until he was able to replace them. “You couldn’t sit around and wait,” Stamschror said. “We had to nd machinery.” Soon the race began to purchase equipment in time for spring. “I had the biggest shopping spree of my life for about two months,” Stamschror said. All of the equipment was found on the internet, and some was even purchased sight unseen with a tractor coming out of Ohio
and a skid loader coming from Missouri. Stamschror was insured, which helped with costs. However, when the re happened, he had been only about two weeks away from increasing his insurance values because of the inated prices then for used equipment. He purchased three tractors to replace the four he lost with the insurance money from them and the grain drill. Even with that, he said they were still $30,000 out of pocket. The seed was insured. It was replaced except for the varieties that had been sold out. The insurance claim was the second in the last several months
Stamschror had made, with the rst being to replace his barn roof after a small tornado affected the area in December 2021. About six months after the re, when their insurance was set to renew, the Stamschrors were notied that they had been dropped and that they had 10 days to nd new coverage. The destroyed building had just recently been converted into a heated shop before the re. After the re, the Stamschrors added onto and remodeled a previous shop and put up a plastic hoop barn on the cement pad from the destroyed building to park equipment in.

62 members Whitehall, Wisconsin Trempealeau County Tell us about your chapter. Our FFA chapter is a strong leadership organization based in agriculture for all students in grades 7-12. We pride ourselves in our community involvement and opportunities to improve student leadership, personal growth and career exploration so that they are better prepared to enter the workforce or further their education. How does your chapter volunteer in the community throughout the year? Our chapter is always busy planning and organizing events that benet the community. Last year, we organized a basket rafe to honor a community member who was suffering from a debilitating disease and were able to donate $3,000 toward her medical expenses. We sponsor Adopt-AFamily each holiday season where we work

The chapter focuses on community involvement, taking part in and hosƟng various service projects. with our school personnel to identify elementaryaged children and their families who are in need. Our chapter members purchase eece and make tie blankets and pick out pajamas and a book for each member of the family. We usually give back around $500 to this program. Each spring, we conduct a day of service where all 60 members participate in activities that benet the community or people living here. We do anything from cleaning up our adopted highway, pulling weeds in our Welcome to Whitehall sign, planting trees in the local parks and doing smaller jobs to help the elderly with their outside spring clean-up tasks. We host a haunted house each fall in partnership with
the Whitehall-Pigeon Rod and Gun Club and will host Dairyland Donkeyball in November. Each year, we also thank local farmers who work to feed and clothe the world through an appreiaction activity. This year, members nominated a farmer to receive a handwritten note and apple pie during the harvest season. We hold activities in our small rural community that offer entertainment for the entire family and benet others. Turn to FFA | Page 11

ConƟnued from FFA | Page 10 What fundraisers does your chapter do throughout the year? Our fruit, nut, meat and cheese sale yields funds for our members to attend leadership conferences, participate in contests, and travel to state and national FFA conventions. We also enjoy providing the community with milkshakes during our community celebration which brings in additional revenue for our scholarship funds for our senior members and those working to improve their Supervised Agriculture Experience projects through grants. Our fundraisers are successful because of the supportive community we live in. What are the biggest events of the year? Our biggest event of the year is our family and member awards night held each April. We recognize our FFA members for their hard work and dedication through awards and scholarships. Every activity our members participate in throughout the year gains them points toward this night. Members walk away feeling a sense of accomplishment and pride for our organization and excitement to continue to work hard. Our FFA members are successful at the state and national level for their SAE projects, speaking contests, and involvement in the state FFA band and choir, and we also enjoy attending the state FFA convention where our members are recognized.
What is unique about your chapter? Our chapter is located in a rural area, but very few of our FFA members are the traditional farm kids. Over 60% of our members are female who live in town. FFA is always growing and changing and working hard to give our members plenty of opportunities so that there is something for everyone. When was your chapter founded and how has it evolved? Our chapter was chartered in 1930 and reorganized in 1996 with our current FFA advisor and agriculture instructor, Melinda Goplin. She was a student intern at the time and worked hard to build our agriculture program and FFA from the ground up. There was a huge push from members of the community to get a more active department, and that is exactly what they got. Mrs. Goplin has been here for 27 years and offered our members a lifetime of wonderful opportunities.

What do you look forward to most in the upcoming FFA year? We have new events and a young of-
cer team, and I’m excited to help them grow and supply our community with fun things to do. This year, we have brought back donkey basketball, and my mom is riding a donkey.
How has FFA shaped you as a person? Being in FFA
I look up to my advisor. She runs a strong FFA program with great involvement. There are great opportunities within FFA to meet people and take advantage of other opportunities. Tell us about your farm and family. My family runs an 80-cow dairy. We have Holsteins and Jerseys, and we crop 385 acres. My two younger brothers, Bo and Jack, help at home on the farm, and my two older brothers, Sam and Christian, graduated from high school and moved off the farm and are working. Mostly my younger brothers and I help our parents, Steve and Amanda, on the farm. Jack and I show at the fair every year. Why did you join FFA? I joined FFA when I moved to Whitehall school my freshman year because
goal for this year to apply for the Star Chapter award. Qualications for this involve a certain amount of community service and fundraisers, etc. All of the ofcers have different events they are in charge of. I am running our Chicken Q and our Ag on the Lawn event. This is where members bring animals and educate the elementary kids from school. This is a new event we started this past year. What FFA contests do you compete in? I am a part
of parliamentary procedure, which is a Leadership Development Event. I also compete in the Career Development Event which was a veterinary science event this year. Last year, our chapter got a bronze medal for the Star Chapter award at the Wisconsin State FFA Conference.
and especially an ofcer has helped me in my senior year with all the priorities I have to keep track of. Life is busy, and I have always had to balance farm life, being a tri-sport athlete and managing school work. My FFA advisor has helped me learn how to prioritize all of that, and it will help me in my future.
What are your duties on the farm? I am in between
sports right now and it’s hunting season, so I am expected to milk more often. I also help with regular chores when I’m home, such as getting the barn ready for cows, feeding calves, getting cows in, feeding colts, feeding heifers and helping with eldwork. I also have an apprenticeship through our farm and International Ingredients in Whitehall, which is a cheese processing plant that also makes milk replacer.
What are your future plans? I am looking at going to a four-year school for environmental engineering. I have a few schools in mind, but the University of Wisconsin-River Falls is my top pick right now. Anything scientic, engineering or having to do with biological science is my interest. I’d love to get a job within the state after graduation.

University of Wisconsin-Extension will be sponsoring Dairy Facility Farm Tours Oct. 30. The tours will include seven dairy farms located in Green and Lafayette counties that have all made modernization improvements to their dairy facilities to increase productivity and animal comfort as well as reduce labor. The tours are popular with dairy farmers as they feature an open house format in which dairy producers can visit any number of the seven farms they wish between 10:30 a.m. and 3 p.m. There is no central meeting place or any formal presentation for the tours. A farm representative will be on hand at each farm to answer questions for the tour participants. The webinar will feature KeepOrBeef, a new app from Dairy Records Management Systems. “KeepOrBeef” assigns an economic value to the cow and a value to each of the three potential mating sire choices: sexed dairy semen, conventional dairy semen or beef semen. Greg Palas, manager of DRMS support services at Iowa State University, will lead a discussion and demonstration of how the program can be accessed and used by dairy producers. Thankful for Family Farmers: Growing our Future is a program for area farmers to gather and discuss how to build a positive mindset and resiliency for tough times. The fourth annual Dairy Summit is Nov. 15 at the University of Wisconsin-Platteville. This free, public event will be held in-person on campus with virtual options. The summit features the newest research and outreach funded by the Hub, along with farmer and legislative perspectives, and facility tours. There is an optional pre-conference reception the night before. Reducing Market Risk is a farm nance program, offered by University of Minnesota Extension, targeted toward increasing resiliency in dairy producers in complex markets. This program is open to all livestock producers Dec. 5 in Little Falls, Minnesota. The program will begin at 10 a.m. with two speakers over two hours, continue with a catered lunch, and wrap up with two nal speakers. The afternoon’s speakers will conclude at 2 p.m. The free meal, sponsored by Farmers and Merchants State Bank, will be offered at noon. Farmers, agronomists and conservation professionals from around the state of Wisconsin are invited to attend the new, Wisconsin Water and Soil Health Conference, Dec. 7-8 at the Kalahari Conference Center in Wisconsin Dells, Wisconsin. The WWASH conference is building upon the legacies of two pivotal events, the Wisconsin Cover Crop Conference and the Discovery Farms Conference. This all-encompassing conference will cover all things water quality, cover crops and soil health with access to two full days of learning opportunities from three distinguished keynotes and real-world examples from farmer panels and roundtable discussions.
