officially commenced operations, the farm was milking eight cows. “Twelve cows is pretty much what our maximum would be for the facility,” Fritsch said. “Right now, eight seems to be just about right. We want to stay small, and keep it unique.” Milk is piped to the creamery from the milkhouse three times a week. In the creamery, milk is pasteurized in a 100-gallon pasteurizer, but not homogenized, before being processed. Fritsch bottles milk – white, chocolate and strawberry – in glass
bottles and works with her brotherin-law, Duane Peterson, a master cheesemaker, to make cheese curds. Fritsch plans to add cheddar cheese and a variety of flavored curds to their product line. Fritsch will be working to complete her own cheesemakers license as well. The store includes a viewing area for visitors to watch the cheesemaking and milk-bottling processes. For the time being, Fritsch is relying on word-

of-mouth advertising along with social media to share the news about their fledgling business. “We can hardly keep up,” Fritsch said. “We have people coming all the time, wanting milk and cheese curds. We have had a lot of travelers headed to Door County stop in because they saw something on Facebook. The reviews have really been astonishing. It’s so rewarding to work so hard planning something that really is so unknown and have it be so well received.” In addition to the on-farm store, Fritsch is dipping her toes into the local farmers market scene to help increase exposure and name recognition. She has also been taking special orders for company picnics and events. She is working with local specialty and convenience stores to stock her cheese curds. “We have been blessed,” Fritsch said. “The community response has been great. I’ve met neighbors I didn’t even know I had.” For the time being, Fritsch does the majority of the work in both the barn and the creamery, while Breanna attends school at the University of Wisconsin-River Falls. “It makes for some pretty busy days, but so far, it has all been worth it,” Fritsch said. “I am doing what I have wanted to do for a long time, and I am loving it.”
Dairy Farmers of Wisconsin recognized for education, promotion Dairy Farmers of Wisconsin (DFW) is recognized as the 2021 Training Partner of the Year by IPAP. The award recognizes the dairy checkoff’s efforts to educate food industry professionals across the country about the Wisconsin dairy story, from farm to menu. IPAP is the largest refrigerated redistribution program in the U.S. supplying independent food service distributors across the nation and even internationally with dairy products from over 60 Wisconsin dairy companies. Their weekly cheese volume is approximately 4 million pounds a week or over 200 million pounds annually, which is about 1/12 of all the cheese produced in the state. “We are honored to be named the 2021 Training Partner of the Year by IPAP,” said Chad Vincent, Dairy Farmers of Wisconsin CEO. “This award is a true reflection of the hard work the team has dedicated to developing marketing and research materials to educate food industry teams on the quality and varieties of Wisconsin Cheese, all while elevating perceptions and growing sales of Wisconsin Cheese across the country.” DFW supported the creation of training videos and hosted buyer missions to bring IPAP’s customers to Wisconsin to receive marketing training, participate in visits to processors and farms and immerse themselves in Wisconsin’s dairy culture. In addition to increasing national sales volume by connecting Wisconsin dairy companies to distributors, these efforts have been instrumental in elevating the value of Wisconsin Cheese and dairy products to command a premium on menus by demonstrating new and exciting ways to incorporate them into recipes.

Dombeck sisters spend summer skiing By Jennifer Coyne jenn@dairystar.com
PERHAM, Minn. – With the water like glass and not another boat in sight, the Dombeck sisters jump in the lake for an afternoon of water skiing. It is a pastime all too common for the girls during the heat of summer. “When summer is here, it’s exciting,” Taylor said. “We can go ski, learn things and do different tricks. It’s a fun sport to do.” The Dombeck family – Bob and Tiffany, and their three daughters, Morgan, 16, Taylor, 13, and Karlie, 9 – spend their afternoons and weekends water skiing on Big Pine Lake in Otter Tail County near Perham. The lake is a short jaunt from the Dombecks’ 350cow dairy. “It’s a big-time stress reliever to be able to get away from the dairy for a couple hours at a time,” Bob said. Tiffany agreed. “Plus, this is something the kids are never going to forget,” she said. “They’re going to remember coming here every weekend.” Each girl can ski on their own, with both Morgan and Taylor knowing how to slalom ski. Yet, the sisters’ favorite way to enjoy the water is all three being towed behind the family’s boat at the same time. “It’s usually three of us or two of us at a time,” Morgan said. “We keep going, usually until our hands go numb from holding on to the rope. You just tough it out and keep going.” For this dynamic display to work, Morgan and Taylor take the outside ropes and then ski in and out of the wakes. The girls learned how to ski a few years ago. “The hardest thing about skiing is keeping your balance,” Taylor said. Morgan agreed. “The second biggest challenge is going on and off the wake,” she said. “When I first started, I had a bunch of big wipeouts, but I don’t have many anymore.” While the Dombecks have always spent their downtime on the water, with Bob and his siblings also enjoying lake activities as children, it was only a few years ago Morgan, Taylor and Karlie learned how to water ski. They were 11, 8 and 5 years old, respectively. The family spent a weekend on the lake at a cabin, and the girls took it upon themselves to clean the shoreline. As a reward for their efforts, a lakeside resident offered to teach the girls to ski. This resident is also a professional barefoot skier. “The girls were little,” Tiffany said. “It’s fun to think of where they’ve come in such a short amount of time.”
The Dombeck sisters used a training boom and skied along the boat to learn the sport. This allowed them to practice their balance and understand the feel of moving atop the water. “I like watching (my sisters) and seeing them get better at skiing,” Morgan said. “It’s pretty cool to see how far they’ve come since we’ve first started doing it.” After the Dombecks learned to ski that summer, they have readily jumped at the opportunity to be on the water as soon as the weather allows. This year, the family was water skiing in mid-May; the girls wore wetsuits. “If the weather allows, we’ll go,” Bob said. “Tiffany will take them in the fall because I’ll be harvesting. We raise edible beans, so we’ll be doing that soon.” Tiffany agreed. “We’ll be out here all day,
every single weekend,” she said. “They would literally ski and ski. They’ll ski until their bodies are numb.” Morgan added that sometimes the sisters ski into the setting sun. “That’s pretty cool when we ski with the sunset,” she said. This summer, Taylor joined the area ski team where they practice a few times a week. During practice, she is learning to ski on a swivel ski at 13 mph. On the weekends, she is water skiing on her normal skis at 27 mph, practicing the moves she will use for shows on the

Her latest endeavor is learning to swivel. “That’s where you’re on a wide ski and you can turn around,” said Taylor, who also does ballet skiing. The team recently accomplished their most difficult stunt, a six-person pyramid with Taylor on the top tier. “There are a few teammates with no experience but others grew up with it,” Tiffany said.
“It’s a fun group.” Morgan wants to learn how to barefoot ski. “Our friend who taught us how to ski barefoot skis,” Morgan said. “It looks like so much fun for a new challenge.” And for Karlie, she is also looking to improve her talents on the water. “My biggest wipeout was when I forgot to let go of the rope,” she said. “I’m learning. It’s so fun.” If by chance the Dombecks
are not skiing, they are simply enjoying the water and being together as a family. For Bob and Tiffany, that is all they could ask for with this engaging activity. “I didn’t think they’d take it on like this, but it’s a fulltime sport now,” Bob said. “Life’s good, and this is a stress reliever. You get to forget about other things for a few hours and relax a bit with your family.”

National Mastitis Council seeks milk quality nominations It’s time to nominate outstanding dairy farms for National Mastitis Council’s (NMC) National Dairy Quality Awards (NDQA) program. This program recognizes dairies that excel in producing high-quality milk. Nominations are due Aug. 31. Coordinated by NMC, the NDQA program recognizes U.S. dairy producers who market milk with a low somatic cell count (SCC) and low standard plate count (SPC). Additionally, judges evaluate dairy producers’ systems of monitoring udder health, milking routine, protocols for detection and treatment of clinical and subclinical cases of mastitis, and strategies for overall herd health and welfare. Dairy industry professionals – including veterinarians, extension agents, dairy processor field staff and consultants – are encouraged to nominate dairy herds that exemplify milk quality excellence. To nominate a dairy farm, go to: https://www. nmconline.org/ndqa and complete the online nomination form. Dairy producers cannot nominate themselves or their peers. The nomination form asks for: herd size, rolling herd average (pounds of milk, fat and protein), DHI testing, SCC and SPC averages, SCC and SPC high monthly averages, bulk tank SCC and SPC testing frequency, clinical mastitis incidence, culling data and cow deaths. Milk quality numbers are based on the 12-month period June 1, 2020-May 31, 2021. Judges will select approximately 50 finalists from the NDQA nominations. Finalists, along with their nominators, will complete a more detailed final application. From the finalists, judges will rank dairy operations as Platinum, Gold or Silver. The Platinum winners receive national recognition and complimentary lodging and registration to attend the National Mastitis Council 61st Annual Meeting, Feb. 1-3, 2022, at the Town and Country Resort, San Diego. This year’s NDQA sponsors include Boehringer Ingelheim, GEA, Ecolab, IBA Inc., Conewango, Cargill, Hoard’s Dairyman and National Mastitis Council.

National DHIA offers $1,000 scholarships National Dairy Herd Information Association (DHIA) is now accepting applications for its $1,000 scholarships. Applicants must be full-time, incoming or continuing students at technical and two-year and four-year colleges/universities. To be eligible for a National DHIA scholarship, the applicant must be a family member or employee of a herd on DHI test, family member of a DHI employee, or employee of a DHI affiliate. The DHI affiliate for the herd or affiliate employee must be a member of National DHIA. Arizona DHIA, Central Counties DHIA, CentralStar Cooperative Inc.-DHI Services, Dairy Lab Services, Dairy One Cooperative Inc., DHI Cooperative Inc., Idaho DHIA, Indiana State Dairy Association, Lancaster DHIA, Minnesota DHIA, Rocky Mountain DHIA, Tennessee DHIA, United Federation of DHIAs, VAS/AgSource Dairy and Washington State DHIA are National DHIA members. FARM Excellence Awards to Recognize Farms and Evaluators The National Dairy Farmers Assuring Responsible Management Program today launched a new awards program to recognize farms and FARM evaluators who demonstrate excellence in their engagement with the FARM Program. “We want to identify and congratulate those who go above and beyond with implementing FARM Program principles and values in their businesses,” said Emily Yeiser Stepp, Vice President of the FARM Program. “The awards will allow us to highlight the best dairies and evaluators who uphold on-farm social responsibility principles every day on their farms and in their daily work.” Award categories include Animal Care & Antibiotic Stewardship, Environmental Stewardship, Workforce Development, and FARM Evaluators. Nominations are open from July 1 – Sept. 1. Farms or evaluators can be nominated by fellow dairy farmers; members of their communities; extension, cooperative or processor staff; veterinarians; themselves or others. Nominated farms must have a current FARM Program evaluation in the respective category area and must be in good standing with the program. Evaluators who are nominated must be FARM Program certified in any of the program areas as of Aug. 31. Winners in each category will receive a hotel room and travel for two individuals to attend the Dairy Joint Annual Meeting in Las Vegas, Nov. 15 –17. Free agricultural health, safety trainings in Spanish for dairy workers in Minnesota The Upper Midwest Agricultural Safety and Health Center (UMASH) seguridad training is an OSHA approved program to train Immigrant Dairy Workers. The trainings focus on a range of topics including hazards on the farm, cow handling, safe use of machinery, workers’ rights and responsibilities, and chemicals. UMASH trainers can come to your farm to offer free one-hour trainings for up to five lessons. It’s always fun having her milking in the parlor with us. She likes to remind us of the pedigrees of each animal as we milk. It makes the time pass quicker. It is fun just to chat while we work. She also helps us fix things when needed. What qualities does Katie have that benefit the farm? She’s a young person who is enthusiastic about dairy so that renews our interest in the dairy. Sometimes we take things for granted. She has a drive to breed good animals, helping us pick out bulls for matings. She wants to make sure animals are healthy so she helps with vet checks. Plus, she shows the animals and is involved in FFA. Her involvement helps get our farm name out there. What are your responsibilities on the farm? On the farm, I help keep calves healthy, milk cows, clean out the free stalls, help with vet checks and vaccinations, and fill out registrations.
When did you begin helping on the farm? I started helping on our family farm consistently when I was around 12 or 13. I did it because I liked helping and thought it was fun to do. It was also a good learning experience. How do you balance school, extracurricular activities and farm chores? I play volleyball and softball, and I am the manager of the girls varsity basketball team. I am also involved with FFA at both the chapter and regional levels. I also participate in student council, National Honor Society and 4-H. The way I find it easiest to balance everything is to do as much of my extracurriculars in school when I have time, and if the extracurricular goes outside of school, I make plans to do them outside of chore time. How has working on the farm shaped your character? Working on the farm has taught me to be persistent, persevere, adaptable to change and have patience. Without any of these things not much can be accomplished both on the farm and off the farm. What do you love most about farm life? I love seeing the process from a calf being born to a cow producing milk and having her own offspring. I also love being able to take my experiences I’ve had and share them with others who are not as fortunate as me to have grown up with a farm. I also teach others things I know from those experiences.

Grayson Schiller, 11 Fifth grade When do you do chores? I do chores from 10 a.m. to noon and from 4-6 p.m. What is your favorite chore and least favorite chore? My favorite chore is throwing hay down from the hay loft. I like it because it’s my own job. I also like riding on the side-by-side. My least favorite chore is spreading the hay out after I throw it down because it gets in my boots and is itchy. I also don’t like castrating calves and pigs. What is your favorite animal on your farm? My favorites are the ducks and chickens. I like that we can find eggs in random spots from the chickens, and I like chasing the ducks. I hope we can bring a few chickens to our farm (since we don’t live on the dairy) and make a chicken coop so I can sell eggs. We have about 50 ducks and six chickens. What is your favorite subject in school? I like science because I like doing experiments. What do you want to be when you grow up? I would like to be a game warden. I like hunting, and I have seen it on a show called, “North Woods Law.” If you had a farm, describe what it would look like. It would be this

I would have 100 cows, 60 pigs, ducks, chickens, cats, our dog, Annie, and another dog that is a golden retriever. I would have a big cultivator with a challenger track tractor. I would also have an automatic rock picker because I hate rock picking. What is your favorite dairy treat? Vanilla ice cream. What is your favorite game to play at home or on the farm? I like playing Farming Simulator on the computer. What do you like to do on the farm during the summer? I like baling straw because it is easier to lift than hay. I also like playing with my cousins when they are here.

If you had a farm, describe what it would look like. The layout would be like ours, but I would turn our hay field close to the farm into a pasture for horses. I would have a few of each of these animals: cows, horses, ducks, chickens, cats, dogs, mini goats and rabbits. I would not have milking cows. They would only be pets. I would keep all our equipment and trucks so I could make my own feed for the animals because feed is expensive. I would also give horse lessons like the horse farm down the road I go to during the summer for camp. What is your favorite dairy treat? Chocolate ice cream. What is your favorite game to play at home or on the farm? I like having sword fights with sticks. What do you like to do on the farm during the summer? I like playing with my cousins when they come to the farm, and I like going to our annual Fourth of July party.

95 Head of Very Good, Registered and High Grade Holsteins Sell Under Cover NOTE: The Andersons have been involved in the dairy industry and farmed on this farm since 1959. Gerald began farming with his parents Ralph and Arleen and eventually took over the farming operation managing the farm the past 45 years. If you are a regular subscriber to the Hoard’s Dairyman, you may have read one of many business articles Gerald has contributed to that publication over the years. The foundation of this herd began when the Andersons purchased the Alfred Olson grade herd and later purchased select registered additions from the Meister Bros. herd of Hamel, MN which began the Daggett Farms prefix. Approximately 40% of the herd is registered, with the balance being home-bred high grade Holsteins. Selling will be several descendants of Allis, an excellent 90 pt. MN State Fair champion; and Eddie, daughter with records over 28,000 milk and 1100 fat. Another highlight selling will be a fancy VG 87 pt. Observer daughter milking 97 pounds. This herd has been on a grazing program for many years and receives rations pertaining of mostly home-grown feeds. No TMR, this herd has been on test since the early 1970’s with current official DHIA testing indicating a herd average of 2X 19,200 milk, 4.1% fat and 3.2% protein. Approx. 65 pound tank average with individuals up to 134 pounds per day on a grazing program. Several recently fresh or due after sale time. This herd has been exclusively artificially bred using leading sires and service sires, including but not limited to: Doc, Helix, Deano, Observer and Dragon Heart with the influence of Ford, Durham and Montross, among others. Cows receive Master Guard, Vision 8, Bangs vaccinations. Dry cows are dry treated, all are wormed and poured regularly. Gerald participated in the Johnes testing program reaching level II with this being a closed herd for many years. Cows are milked in a tie-stall facility and are on pasture throughout the summer months.
