Moo House offers on-site dairy experience Borsts create event to welcome consumers to the farm By Krista Kuzma

ROCHESTER, Minn. – Lindsey Borst knows there is a large disconnect between the people who eat dairy products and the farm those products come from. So Borst created a way to bring the two a little closer together – an event called Moo House. “Moo House is a place you can come and experience a real farm while enjoying dairy products such as ice cream,” Borst said. For the rst three Saturdays in August, the Borst family hosted Moo House events,
welcoming visitors to their 230cow dairy near Rochester. The four-hour evening events offered tours of the dairy, a visit to a modern dairy farm, opportunity to purchase home-grown produce and meat along with ice cream sundaes. Hour-long farm tours were offered for a fee to people who signed up ahead of time. The rst two Saturdays each had one tour with maximum capacity of 20 people. The nal Saturday, the Borsts offered two tours because of the high demand. “The tours have gone over amazingly well,” said Borst, who gives the tours herself along with the help of another person. “People want to see a farm so

We had to turn away people because we didn’t have enough spots.” During the tours, attendees asked genuine and thoughtful questions; however, Borst said most just liked taking in the sites of a dairy. “They like seeing the cows,” she said. “And I think people could stand in the parlor a really long time. Many are so far removed (from agriculture), and I don’t think they had any idea that’s what a day in the life on a dairy farm is like and that’s how
milk is taken from a cow.” If people were not on a tour, they could still come to the farm for ice cream or to purchase produce or meat. Each weekend offered soft serve vanilla or chocolate ice cream along with one specialty avor topping – double chocolate brownie, summer peach crisp and blondie bit crumble. Sundae avors were created in partnership with the local restaurant, Cameo. “It’s always been our favorite restaurant in Rochester so I just thought I would email them
to see if they would be interested in partnering with us,” Borst said. “There was no hesitation. They helped us come up with some fun, unique sundae avors. They made all the toppings which is nice because then we know they will be good-tasting and high-quality toppings.” Borst described the restaurant as a higher-end establishment that uses quality ingredients while also being a comfortable environment.

Kevin and Heather Borst take ice cream orders Aug. 14 during the Moo House event on their family’s dairy near Rochester, Minnesota. “They have a rotating menu and use a lot of local ingredients,” she said. “Plus, they’re very involved in the local community and that’s what stood out to me to reach out to see if they would help us.” Within the last year, the Borsts also started selling direct-to-consumer beef from their farm. People who attended Moo House could buy several cuts of the Borsts’ beef or the produce, such as corn, tomato and zucchini along with other items. This event has been a couple years in the making and has evolved along the way. “I’ve been trying to think of creative ideas of what we can do with what we have now to get another revenue stream for the farm,” Borst said. “With us being so close to Rochester I gured there was opportunity there.” The Borst thought about their options and in the meantime created social media channels for Borst Family Dairy. “People are very interested in the farm, especially people who are not from the farm,” Borst said. “I wanted to show people what a dairy farm is like and try to reach everyday consumers who have no idea what goes on, on a dairy farm.” After seeing an East Coast dairy farm on social media that has an on-farm ice cream truck, Borst thought the same idea could work for her family’s farm. Her husband, Kevin, was onboard right away. The couple put together a plan and presented it to the rest of the family – Kevin’s parents, Matt and Julie, his uncle and aunt, Larry and Luann, and his brother and sister-in-law, Kyle and Heather. “We had to sell it to the rest of the family,” Borst said. “It’s not like we can do all the clean up and everything with just two people. It takes more than that. And Kyle and Heather live on the farm so they had to be OK with tour groups walking in front of their house. Everybody had to be onboard and comfortable with it.” When everyone agreed on the plan, the family got to work. “We thought about getting our own trailer, but it worked out to just rent Fillmore County American Dairy Association’s trailer because they were looking
to get it out and about a bit more,” Borst said. “It’s worked out really well to at least experiment with it.” This has kept the nancial investment for the event fairly low, Borst said; however, the investment of time has been far greater. Borst said she started planning over the winter. At the beginning of summer, the family started deep cleaning the farm. “The whole clean-up process was something that needed to happen anyways,” Borst said. “If anything else, this was a good excuse to get the farm really cleaned up.” About four weeks before the rst event, Borst started a social media campaign to promote Moo House online. Then she organized which family members would work in different areas of the event, while lining up other friends to help direct people. While the rst event started with slow attendance, which might have been partly due to rain right before the start time, the number of people who showed up for the following events increased exponentially. “It has been really fun,” Borst said. “The reaction from people attending has been the most gratifying. We’ve had so many good positive reviews, whether they tell us at the event or make comments on social media or on the Square app where they make their payments. That’s been really rewarding.” Now that this year’s events are over, Borst said the family needs to regroup to decide what they would like to do going forward. “If everyone’s onboard, it’s something I hope to do regularly next summer,” Borst said. “I would think about adding a few food trucks too.” Most importantly, Borst likes connecting people with the farms that makes their food, especially knowing people from as far away as the Twin Cities attended the events. “That really excites me – that we’ll be able to have that big of a reach and there’s a potential to reach an even bigger population than Rochester,” she said. “People just want to see a farm.”

We enjoy watching his positive attitude no matter what challenge farming may bring. What qualities does Matthew have that benet the farm? He can ll in where ever he is needed. He can do anything. He’s patient, hard working and learns new things quickly. What are your responsibilities on the farm? Some of everything. Helping with feeding, milking, setting up and moving fence for grazing, eldwork, etc. When did you begin helping on the farm? When I was a kid. I began with small chores. How do you balance school, extracurricular activities and farm chores? I don’t have any extracurricular activities. So, usually I’ll help out with morning chores, then I’ll get my school work done and go about my day. After that, I help with evening chores. How has working on the farm shaped your character? It has helped me learn responsibility and hard work. What do you love most about farm life? I like farming during the fall when the weather starts cooling off and the cows start calving. What is one thing you have learned from working alongside your parents? I’ve learned that I’m kind of able to learn from their experiences. What are your future plans? I’ll continue to help on the farm and eventually I’ll take over the operation.

When do you help with chores? I start at 6:30 a.m. with switching cows and bedding cows, and again at 5 p.m. where needed. What are your favorite and least favorite chores? I enjoy bedding cows so that is my favorite. My least favorite is bringing in the switch cows.
What is your favorite animal on the farm? My favorite animal is our cows as they are really chill and calm.
