r. Appliance of Mid America is a residential appliance company dedicated to helping customers with all of their appliance needs. Located in Fairview Heights, the company services much of the Metro East and the Greater St. Louis areas. Owners Julie and Chad Grubofski are both Air Force veterans who worked in operations management for the military. When it was time to leave the service they decided to stay in the Metro East with their young children. "The four seasons here in Illinois is appealing to us as is the more rural side of the metropolitan area, yet we can get to the 'big city' easily," Chad Grubofski said. Regarding their business, he said that "having an operations background, we decided to research the possibilities of owning a franchise. We concluded that there is a great need in this area for appliance repair." Just this month, the two celebrated three years in their Illinois location and one year in St. Louis. Mr. Appliance's services include residential appliance repair for nearly every major brand in the kitchen and laundry room.

How To Infuse Universal Design Into Any Home By David Padgett, HBR Remodelers Council Chair
L
ike it or not, our physical abilities change as we age. Vision begins to blur and joints begin to ache. Once-simple tasks like taking out the garbage, emptying the dishwasher or even taking a shower can become increasingly arduous.
However, not everyone living in the same home is likely to have the same needs, especially those in multi-generational households. These are the homes that can benefit the most from “universal design.” It doesn't matter the age, tall or short, healthy or hindered with a disability. Universal design can enhance comfort and convenience, enabling everyone to enjoy the same home even if - and when - their needs change. Luckily, there are many aspects of universal design that are relatively simple to implement. Here are four areas in which this design concept can benefit virtually any home:
Bathrooms. Because a large portion of in-home accidents occur here, universal design can be critical. • Adding non-slip flooring and a grab bar in the shower can dramatically lower the risk of falls. • Elevating soap holders and shower ledges will reduce the need to constantly bend over. • Creating a barrier-free entry into the shower can make a world of difference for anyone with mobility concerns. Kitchens. The general concept of universal design in the kitchen is to improve visibility and access. • Under-cabinet lights can add both functionality and beauty to a kitchen. • Lever-style cabinet handles are easier to grasp than knobs, especially for those who have arthritis. • Sliding shelves within deep floor-level cabinets significantly improve access to hard-toreach areas, plus, they allow for a more efficient use of space. • Elevated, neutral-colored countertops make items easier to see, as opposed to countertops with busier patterns that can sometimes camouflage items.
Doors. For those who aren’t physically challenged, doors and doorways are not typically a concern. But for those who have mobility issues, many types of doors can be difficult - and dangerous - to navigate. • Pocket doors and barn doors are among the hottest design trends, and they are also much easier to open than traditional hinged doors. • Wider doorways and hallways can better accommodate large strollers or wheelchairs, allowing everyone to move more easily from room to room, and in and out of the house. Experts recommend 36-inch wide doors and 42-inch wide halls and stairways. Smart Technology. Home automation is becoming a must-have feature for all new-home buyers. But it is especially advantageous for those with physical limitations. • Automated window blinds that can open and close with the push of a button (on the wall or from a phone) are particularly convenient for homes with hard-to-reach windows. • Smart appliances can be operated remotely or by voice command, providing further ease of use. • Motion-sensing lights can help reduce the risk of falling or tripping in a dark room while searching for a light switch, and they also help conserve electricity. • Remotely controlled security systems and door locks provide added levels of safety, convenience and peace of mind. • Smart thermostats can adjust to the home owner’s specific schedule, giving them a more convenient way of heating and cooling the home while saving on utilities. Eye Doctor Helps Legally Blind To See

High Technology For Low Vision Patients Helps Many To Drive Again
or many patients with macular degeneration and other vision-related conditions, the loss of central visual detail also signals the end to one of the last bastion of independence: driving. A Mascoutah optometrist, Dr. Marianne McDaniel, is using miniaturized telescopes that are mounted in glasses to help people who have lost vision from macular degeneration and other eye conditions.
Nine out of 10 people who have macular degeneration have the dry form. New research suggests vitamins can help. The British medical journal BMC Ophthalmology recently reported that 50 percent of patients treated with a high-dose combination of vitamins experienced improved vision after six months. While age is the most significant risk factor for developing the disease, heredity, smoking, cardiovascular disease and high blood pressure have also been identified as risk factors.
Some patients consider Dr. Marianne McDaniel the last stop for people who have vision loss, one of only a few doctors in the world who specialize in fitting bioptic telescopes to help those who have lost vision due to macular degeneration, diabetic retinopathy, and other debilitating eye diseases.
Macular degeneration accounts for 90 percent of new legal blindness in the U.S. While there is currently no cure, promising research is being done on many fronts. "My job is to figure out everything and anything possible to keep a person functioning especially driving," said Dr. McDaniel.
Imagine a pair of glasses that can improve vision enough to actually change one's life. Low vision patients have probably not only imagined them, but have been searching for them. Bioptic telescopes may be the breakthrough in optical technology that will return the independence to whom once had it. Patients with vision in the 20/200 range can many times be improved to 20/50 or better. Macular degeneration is the leading cause of blindness and vision loss in people over 50. Despite this, most adults are not familiar with the condition. As many as 25 percent of those over the age of 50 have some degree of macular degeneration. The macula is only one small part of the retina; however, it is the most sensitive and gives us sharp central vision. When it degenerates, macular degeneration leaves a blind spot right in the center of vision, making it difficult or impossible to recognize faces, read a book, or pass the driver's vision test.
"Bioptic telescopes can cost over $2,000," she said, "especially if we build them with an automatic sunglass. The major benefit of the bioptic telescope is that the lens automatically focuses on whatever you're looking at. It's like a self-focusing camera, but more precise." any of our readers know Danielle DeFranco Davis - daughter of Kathy and Jim DeFranco - who attended St. Teresa's in Belleville and O'Fallon High School before going on to the University of Illinois, and finally to the Southern Illinois School of Law in Carbondale. While practicing law at a small firm in Chicago she was offered the opportunity to work as the Director of Legal Education for BARBRI, a company whose primary product is a bar review preparation course. "BARBRI combines my love of writing and teaching with my knowledge of the law," Danielle said. "It's a privilege to help students pass the bar exam." Now married and living in Bloomington with her husband, Dean, and almost 1-yearold son, Grayson, she began writing her "Danilicious" blog at the encouragement of friends and family. Healthy Peanut Butter Banana Chocolate Chip Waffles 3/4 cup oat flour 1/4 cup peanut butter powder 1 cup whole wheat pastry flour or reg. whole wheat flour 1 teaspoon baking powder 1 teaspoon cinnamon 1/2 teaspoon salt
2 eggs room temperature 2 overripe bananas 2 tablespoons coconut sugar 1/4 cup coconut oil melted 1 1/4 cup almond milk or milk of choice room temperature 1/2 cup chocolate chips Maple syrup and peanut butter for topping Instructions In a large bowl, whisk together all of the dry ingredients, including coconut sugar. In a separate bowl, mash the ripe bananas. Add in remaining wet ingredients and mix until well incorporated. Pour the wet ingredients Into the dry ingredients and whisk until blended. Gently fold in the chocolate chips. Allow the batter to rest for 10 minutes then ladle the batter into a preheated waffle iron and cook until golden brown, about 3-5 minutes. Top waffles with creamy peanut butter and syrup. Recipe Notes These waffles freeze great. Put them on a baking sheet spread out and freeze for at least four hours. Then transfer to ziplock bag and store in freezer. When ready to eat, pop them in the toaster or 350 degree oven for 3-5 minutes.
Thai Turkey Burgers with Superfood Slaw Burger Patties 1 1/2 pounds 90% lean turkey 1 egg 1/2 cup panko bread crumbs 2 teaspoons soy sauce 1 teaspoon salt Pinch pepper 1/2 teaspoon red pepper flakes 1/4 cup chopped green onion 2 tablespoons store-bought peanut sauce (I used Sky Valley Organics)
Having a passion for cooking was instilled by her parents - both terrific chefs - and she firmly believes that healthy eating "doesn’t have to be complicated - if you use the right ingredients you can still eat all your favorite foods," she said. "My recipes make your favorite dishes healthier and more nutrient-dense, but just as delicious. It's pretty simple." Inspiration for her recipes comes from "every where, but my Mom has always been creative using the ingredients already in the pantry," Danielle said. "I also like to find other recipes and make them my own or I find new ideas when we go out to eat for a good meal." Followers of "Danilicious" will drool over the photographs she takes as well. "At first I was just using my phone, but quickly realized what an art it is to photograph food! So 1/4 cup cilantro 1 1/2 teaspoons fresh minced ginger 1 1/2 teaspoon fresh minced garlic Superfood Slaw 2 cups superfood slaw or broccoli slaw 2 green onions diced 2 tablespoons chopped cilantro 2 tablespoons rice wine vinegar 1 tablespoon lime juice 2 tablespoons olive oil 1/2 tablespoon soy sauce 1 teaspoon agave or cane sugar Dash salt to taste Peanut Sauce Aioli 4 tablespoons store-bought peanut sauce (I used Sky Valley Organics) 1/2 cup mayo (I use organic Sir Kensington’s) Squeeze of lime juice Assembling Burgers 6 whole wheat buns Pinch of salt 1 jalapeño thinly sliced Extra cilantro Instructions Heat oven to 375 degrees. In a large bowl, add all of the burger patty ingredients. With your hands or a spoon, gently mix all of the ingredients until wellincorporated. Be careful not to over-mix. Divide mixture into 4-5 burger patties.* Heat about 2 tablespoons of oil in cast iron skillet. Add burgers to the hot pan. Cook for 3-4 mins on each side, or until they form a golden brown crust (do not flip or disturb while they are cooking on each side or they will not form a crust). Add burgers to a sheet pan. Finish cooking in oven for 8-10 minutes or until internal temperature reads 165 degrees. Sprinkle a little salt on each burger when done cooking. Allow to rest for 5 minutes. While the burgers cook in the oven, wipe out the cast iron skillet and add a little more oil. Toast the buns (two to three minutes a side) until golden brown. Sprinkle with salt. Combine all the peanut aioli ingredients. Set aside. In a small bowl, whisk together all of the slaw dressing ingredients. Add in the slaw, green onions, and cilantro, and toss until coated in the dressing. Assemble the burgers by first adding the sauce to tops and bottoms of each bun. Top the bottom bun with the burger patty and add desired amount of slaw. Top with the bun. Recipe Notes *Burgers hold together best if you place burger patties in the fridge for 4 hours to overnight (tip: make burger patties in the morning and place in fridge and take them out 15 minutes before cooking).

The Ultimate Almond Butter Cookies A soft and chewy, super delicious almond butter cookie filled with dark chocolate chunks, cinnamon chips, and pretzels. 3/4 cup whole wheat pastry flour 1/2 cup oat flour 1/2 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon baking soda 1/2 cup creamy almond butter 1/2 cup unsalted butter room temperature 3/4 cup packed dark brown sugar 1/4 cup organic cane sugar 1 large egg and 1 egg yolk room temperature 1 tablespoon greek yogurt room temperature 1 teaspoon vanilla extract 3/4 cup dark chocolate chips + more for topping 3/4 cup crushed pretzels 1/2 cup cinnamon chips flaky sea salt optional for topping Instructions Whisk together all of the dry ingredients. Set aside. In a separate bowl (or stand mixer bowl) whisk together the sugar, butter and almond butter until light fluffy, and well incorporated. Add in egg and egg yolk and mix until well-combined. Finally, blend in the greek yogurt and vanilla. In batches, combine the wet and dry ingredients until you have a thick, sticky batter. Fold in the dark chocolate chunks, pretzels and cinnamon chips. Place in fridge for at least four hours but preferably overnight. Once chilled, scoop out cookie dough with small ice cream scoop or spoon to make 24 cookie dough balls. Place on a large parchment lined baking sheet, at least 2 inches apart. Bake at 350 degrees for 10-12 minutes or until golden brown. They may look slightly soft when you take them out of the oven, but they will continue to cook and set as they cool. Once cooled, add flaky sea salt if using. Recipe Notes -The almond butter creates a sticky dough so I highly recommend chilling the batter overnight to allow it to set up. -To get the beautiful pool of dark chocolate, I add a few more chocolate chunks to the cookies once they’ve baked and swirl chunks with a knife or my fingertip while the chocolate is hot to create the pools. -Also, to get even-sized flatter cookies, I slightly press the cookies with the bottom of a measuring cup when they come out of the oven. This can be sort of messy because the chocolate will stick to the measuring cup. Just wipe the cup clean after each press. This is not necessary, only for aesthetics.
