2018 St Lou Fringe Festival The St Lou Fringe Festival is a massive event involving a couple thousand people at multiple venues throughout Grand Center. The 2018 Fringe Festival opening Night Party kicks off on August 15 under the Big Top in The Grand Center Arts District featuring a concert from Same Difference. The Big Top tent may look familiar to St Louis natives as it is the tent formerly used by Circus Flora. The Festival continues through August 26. With over 28 acts this year St Lou Fringe is giving voice to more artists than ever. The St Lou Fringe Festival strives to build our community by connecting uncensored, unjuried performing arts with accessible and affordable performances for everyone. There is something for everyone including the Family Series featuring improv classes for kids, shows and more. What is a fringe festival? It all started in 1947 in Edinburgh, Scotland, as an alternative festival that played concurrently with the Edinburgh International Festival. In 1948, Robert Kemp, a local journalist, gave it the name Fringe. In his reporting he made note the “Round the fringe of the official Festival” there seemed to be more private and original enterprise from family friendly to bawdy and burlesque as the fringe entertainment is not curated or constrained. Come join us for the city’s best and original new works! The multiple venues include: • The Big Top at 3401 Washington Ave. • Grandel Theatre at 3610 Grandel Square • Kranzberg Center’s BlackBox Theatre, Studio Theatre, and Visual Arts Incubator at 501 N. Grand Blvd. • Duet Gallery 3526 Washington Ave. • .Zack 3224 Locust Street For complete information about this year’s St Louis Fringe Festival please visit the web at stlouisfringe.com

Salt Don't be bashful: If you don't know the difference between kosher, table and sea salt, you're not alone. But salt is probably the most important weapon in a chef's arsenal after a good knife, so it's worth setting the record straight.

Check out our Facebook page www.southtownpub.net

Premium Sandwiches • Great Beer Selection

Though the chemical makeup of these three commonly used salts is the same, the texture and density differs. Here's what you need to know.

Table Salt

What it is: Table salt consists of fine, evenly shaped crystals, which makes it denser than other salts. It's typically mined from salt deposits underground and may also contain anti-clumping agents, such as calcium silicate. When to use it: As the name implies, it's good for keeping out on the table for last-minute seasoning. It's also good for salting pasta water or seasoning soups.

“St. louis’ best steaks” - rft readers poll 1999-2017

Kosher Salt

What it is: Kosher salt is less refined than table salt. Its larger flakes don't compact together as neatly, so a pinch is a little coarser and not as dense. When to use it: Kosher salt is the most versatile. It's great for seasoning before, during and after cooking. It's especially good for seasoning meat before cooking.

Sea Salt

What it is: Sea salt undergoes the least processing. Flakes are collected from evaporated seawater and may contain residual minerals that could alter the color. The unevenly shaped flakes don't stack up evenly and create a less dense pinch. When to use it: Sea salt is typically more expensive, which means you'll want to use it with caution. It's best for finishing. If you're wondering how important all this is when you're cooking, the short answer is somewhat. The longer answer? You can use these salts interchangeably if you have to, but it's really worth using the proper kind for the right occasion.
