was created to benefit housing-related causes throughout San Mateo County. The SAMCAR Foundation is a separate 501(c)3 Public Benefit Corporation, funded through the generous contributions of its REALTOR® and Affiliate members, and friends. Since its inception, the SAMCAR Foundation has focused its charitable efforts towards benefiting organizations and programs that strive to make San Mateo County a more livable, affordable and thriving community. Through its work, the SAMCAR Foundation has made significant financial contributions that have enabled many of our San Mateo County citizens to finance a down payment on their first home, make their mortgage payments, and receive the education needed to make a sound investment in their financial stability and future through homeownership. Homeownership is said to bring about substantial social benefits for families and communities as a whole. Thus, the SAMCAR Foundation’s primary goal is to help ensure that everyone in San Mateo County is able to achieve the American Dream of owning a home. Seafood Pasta Marinara Ingredients 1 lb prawns, cleaned, cut up if large 8 oz. scallops, cut in half (depending on size) 8 oysters 1 can anchovy fillet, drained and chopped 5 large tomatoes, peeled and chopped 1/2 cup dry white wine 1/2 cup water
2 tablespoons olive oil 3 cloves garlic, crushed 1 tablespoon tomato paste 1 tablespoon parsley, chopped 1 tablespoon mint, chopped salt and pepper pasta
Directions Cook and prepare enough pasta, for 4 people, your choice of pasta. Put wine and water in a skillet, heat to simmer point. Add scallops and cook 1 minute, remove and drain. Heat oil in the skillet. Add tomatoes, garlic and tomato paste, stir until combined, cook 2 minutes. Add all the seafood to the pan and cook 1-2 minutes. Add parsley, mint and season with salt and pepper.

Shrimp Linguine Ingredients 1 lb of fresh Tiger shrimp ½ cup dry white wine 6 cloves garlic, finely chopped sea salt and freshly ground pepper ½ cup extra-virgin olive oil 1 lb of linguine 6 tbsp chopped fresh flat-leaf (Italian) parsley 1 ½ cups canned diced tomatoes
Directions Remove shells from shrimp and rinse thoroughly in cold water. Combine the oil, garlic and half of the parsley in a deep skillet. Turn the heat to medium-low and sauté gently until the garlic is soft but not colored. Add the diced tomatoes to the pan. Let simmer over medium-low heat, uncovered, until they form a fairly thick sauce (about 10 minutes). Pour in the wine and continue to sauté until the alcohol is evaporated (3 minutes). Add 1/2 teaspoon of salt and the shrimp. Stir and cover the shrimp until they begin to curl and turn a pinkish/red color (3 minutes). Meanwhile, bring a large pot of water to a boil. Add the linguine and a teaspoon of salt and stir at once. Cook over high heat and stir occasionally with a wooden spoon until the pasta is al dente (about 7 minutes). Drain the pasta and add it to the pan with the shrimp sauce. Toss the pasta and sauce together. Serve immediately, sprinkled with the rest of the parsley and some ground pepper.

Lobster Risotto Ingredients 1 oz. extra virgin olive oil 2 lobster thorax, split ½ bulb fennel, chopped into 5 pieces 2 cloves of garlic, crushed ½ c. white wine 1 bay leaf 1 sprig of thyme 1 tsp. black pepper 1 white leek 8 c. water
1 tomato, cut into quarters ½ lemon for Lobster Risotto 1 Tbsp. extra virgin olive oil 1 Tbsp. butter 1 lb. Imported Italian rice (example: Arborio) 1 tsp. salt 8 oz. white wine 4 c. lobster stock
Directions Preparation of Stock Sauté and brown the olive oil, lobster thorax, fennel and garlic together in a 2 qt. sauce pot for 5-8 minutes. Moderate heat on all sides. Add the bay leaf, thyme, black pepper and leek as well as the white wine (to de-glaze the pan). Add the water, tomato, lemon and bring to a boil. Lower the heat and simmer for 1/2 hour. Cool and reserve for later use. Chef’s Notes: Cook claws and head for 10 minutes in the stock. Remove and shell for later use in the recipe. Preparation for Lobster Risotto Melt the extra virgin olive oil and butter together until frothy. Stir in the Italian rice and salt until glossy and heated throughout. Add the white wine and reduce heat. Add the 4 cups of lobster stock 1 cup at a time, with 3-4 minutes between each addition – stirring continuously. Use Lobster Fra Diavolo sauce from above recipe for final addition. Combine and plate together tastefully. 2008 Platinum Sponsor

Ingredients Meat Layer 1 T. olive oil 1 large onion, chopped 2 lbs. ground beef 1 (6 oz.) can tomato paste 1 ½ tsp. salt ¼ tsp. pepper 1 tsp. cinnamon 1 ½ tsp. sugar 1 tsp. nutmeg ½-3/4 c. water
Macaroni Layer 1 lb. tubular macaroni (ziti or perciatelli) 1 egg, well beaten ½ c. milk Béchamel Sauce 8 T. margarine 4 c. milk 8 T. flour 4 eggs, well beaten
Directions Heat 1 tablespoon olive oil, sauté meat and onions till meat is no longer pink. Stir in tomato paste, salt, pepper, cinnamon, nutmeg and sugar. Add ½-3/4 cup water. Simmer for 5 minutes or until liquid has evaporated. Cook pasta, al dente style, drain well and put half in 9 x 13-inch pan. Mix 1 egg and ½ cup milk and add to pasta. Sprinkle with grated cheese (optional). Layer meat and remaining pasta then put a few holes with the handle of a wooden spoon in the layers for the Béchamel Sauce to seep into. Melt 8 tablespoons margarine, add flour and cook a little. Add 4 cups milk and stir on medium to medium-high heat till mixture thickens and comes to a slight boil. Beat eggs. Add hot milk mixture to eggs then egg mixture back into milk sauce to equalize heat. Stir a few minutes on low heat. Then spoon or drizzle béchamel sauce on top of layered pasta, sprinkle parmesan cheese and a little cinnamon on top. Cover and bake at 350° for 15 minutes, uncover and bake for 45 more minutes. Freezes well, defrost and reheat at 400° oven 30-40 minutes.

Polenta Ingredients Trader Joe’s Organic Polenta (18 oz.) Trader Joe’s Organic Marinara Sauce (25 oz. jar) Trader Joe’s fresh Crimini Mushrooms (8oz.) (washed and sliced) Trader Joe’s LITE Shredded 3 Cheese Blend (12oz) 2 cloves of fresh garlic (Minced) ¼ of a medium sized red onion (Minced) 3 tablespoons of olive oil
Directions Sauté mushrooms, onion and garlic in olive oil until lightly browned. Cut Polenta in ½ inch thick rounds and then quarter each round (4 bite size pieces per round). Add Marinara sauce and quartered Polenta to mushroom mixture. Low heat for 5 minutes or until thoroughly heated. After dishing up– sprinkle thin layer of 3 Blend Cheese. Nonno’s Chicken Cacciatore Ingredients 8 Chicken Breasts 3 lbs Italian Sausage 2 onions, cut up 16 oz mushrooms, halved 1 cup red or white wine 3 - 14.5 oz cans of diced tomatoes 2 - 12oz cans of tomato paste
Directions Brown sausage until cooked halfway thru, set aside. Cook chicken in sausage grease (If you need more grease add olive oil). Approximately ¾ of the way thru, remove chicken and drain grease. Sauté onions and mushrooms in drippings and then add any type of wine. Return chicken and sausage to the onion and mushroom mixture. Salt to season and add tomatoes and tomato paste. Simmer all together for approximately 45 minutes. (If too thick add a little more wine…). Buon Appetito!

Spaghetti Carbonara Ingredients ¼ lb thick-cut pancetta or lightly smoked bacon slices 1 tablespoon olive oil 3 large eggs ½ teaspoon salt ¼ teaspoon pepper 1 lb Spaghetti 3 oz plus Romano
Directions Prepare pancetta Cut it into ¼ inch pieces and saute it in olive oil about 10 minutes. Remove from heat but leave the fat. Beat the eggs in another bowl with salt and pepper. Cook the spaghetti with some olive oil. Cook about 10 minutes. While spaghetti is cooking, warm up the pancetta. Drain the pasta and add it to the pancetta pan. Toss it until it is evenly distributed. Add the eggs and toss until it looks creamy. Be sure to toss steadily and quickly so that the eggs form a creamy sauce (not a scramble). It takes about 30 seconds. Remove pan from heat and sprinkle with cheese. Delicious!

with leeks, peas, and Pecorino Ingredients 1 pound dry orecchietta or some other short pasta 2 Tablespoons olive oil 4 leeks (white and light green parts only), thinly sliced ½ teaspoon kosher salt ½ teaspoon black pepper 2 cloves garlic, finely chopped 1 - 10 oz. package frozen peas, thawed ¼ cup heavy cream 1 cup (4 ounces) grated Pecorino 2 teaspoons lemon zest ¼ cup fresh mint leaves, torn
Directions Cook the pasta according to the package directions. Meanwhile, heat the oil in a large saucepan over medium heat. Add the leeks, season with the salt and ¼ teaspoon of the pepper, and cook, stirring occasionally, until soft, about 7 minutes. Add the garlic and peas and cook for 2 minutes more. Stir in the cream and ¾ cup of the Pecorino. Simmer until the sauce has thickened slightly, about 4 minutes. Drain the pasta and return it to pot. Add the sauce, lemon zest, and mint and toss. Divide the pasta among shallow bowls and sprinkle with the remaining Pecorino and pepper.

Chicken in Wine Sauce Ingredients 6 large boneless chicken breasts White wine (save a glass for you) 1 lb. of sliced mushrooms 1 cube of butter 1 lb. of sour cream 3 packages of green onion dip mix. 1 package of twisty noodles
Directions Mix sour cream and green onion mix together and set aside in refrigerator for later. Brown chicken breasts in one third of the butter, after chicken is browned then add the sliced mushrooms, rest of butter and cook slow for 4 minutes. Cover chickens with the white wine and cook slowly on low heat for about 35 minutes or until chicken is done. After the chicken is cooked add the sour cream and dip mix cook 3 to 4 minutes or until sauce is thick. Then serve over cooked noodles. Serves 6

Angel Hair Pasta with Asparagus Sauce Ingredients 1 lb. Capelli d’ Angelo 1 lb. fresh asparagus trimmed, peeled and cut into bite size pieces ½ pound of baby portobello mushrooms, sliced 1 bunch of long green onions, chopped 3 cloves of crushed garlic
1 cup of chicken broth 3 Tbls of butter 3 Tbls of extra virgin olive oil ½ cup of white wine ½ cup of heavy whipping cream 2 slices of Prosciutto De Parma freshly grated parmesan cheese
Directions Steam asparagus pieces until almost tender. Saute onions, garlic, prosciutto and mushrooms in oil for about 5 minutes. Add chicken broth and white wine. Toss in asparagus and reduce for 10 minutes. Add butter, melt and stir. Add cream at the end until bubbly. Boil 6 quarts of water and add pasta for about 30 seconds to a minute. Drain and top with asparagus sauce and enjoy. Serve with fresh grated parmesan.
