THE CANTUCCIO The Cantuccio by historical definition (taken from a 17th century cookbook) “Cantuccini, or cantucci, are dry almond biscuits made by cutting slices of the freshly baked dough. They have an elongated form and golden color and are prepared with honey, 20% almonds, flour, sugar, butter, fresh milk, and eggs...and they are the most famous Tuscan biscuits in the world! They can be eaten alone and are delicious with Vin Santo, as is the tradition.�
DOGLIANI CANTUCCINI Flavor , fragrance , and friability are the top characteristics of Dogliani’s cantuccini, which are variations of the almond-based recipe cantuccio . Dogliani was inspired to create other variations on the classic recipe by replacing the almonds with chocolate drops, figs, lemons, aniseed and hazelnuts, thereby obtaining delicious specialty biscuits.
For this new line of products, we chose a packaging that features images of Tuscan churches characterized by textures that recall the different geometrical shapes of these famous architectural structures.
EXPRESSING OUR CULTURE THROUGH PACKAGING We wanted to use packaging of our cantucci to pay homage to some of the most famous historical masterpieces in Tuscany. We chose this theme because the shape and texture of our cantucci resemble the bricks and stones used to construct these structures and also because we want to give our clients a chance to take home a piece of Tuscany, both to eat and to enjoy.
The floors of the three aisles of the Duomo of Prato is made up of hexagonal bricks and at the end of the left is the pulpit of Tommaso di Bartolomeo.
The main portal, the Duomo di Carrara , is framed by a decorated archway with an elegant rosette floral Gothic style consisting of radial columns
The horizontal stripes that decorate the lateral facades of the Duomo of Siena and its belltower are its characteristic main color. The two-tone stripe theme is continued within.
The graphical representation of the coffered wooden ceiling of the Duomo of Pisa is a unique characteristic among the Romanesque-style churches in Tuscany.
The original Romanesque facade of the Duomo of Lucca, made entirely of marble of different colors, is unfinished because it’s missing a final line of loggias, giving the structure a sense of movement in time.

L’AZIENDA DOGLIANI, since 1948 The Dogliani business has been operating in the bakery sector since 1948. Angelo and Bartolomeo Dogliani open a tiny bakery laboratory in Carrara at the feet of the Apuan Alps. Angelo and his brother Bartolomeo left his hometown and his job as a production manager at a prestigious firm in Piemonete, taking with him a piece of “mother yeast” and the secrets to continue to use it in time, given to him by his adoring boss and teacher. Today, the company’s developments are thanks to hard work, Angelo’s passion and the ability of his son Franco for having inherited the secrets of the ancient process of daily renewing the “mother yeast”. Dogliani can confidently state that their recipes come from ancient recipes and their natural yeast guarantee genuine fragrant products, just as the daily production guarantees freshness.
A FACTORY THAT PRODUCES SWEETS AND NEW WAYS OF THINKING In 2005, Margherita Dogliana, convinced that culture represents the means by which both men and women live their dignity, opened the company doors to culture by using it as her philosophy. Simon Weil says: “there should be a university next to each assembly line”. The idea and desire to try and change the job space by creating a cultural space where each employee can learn about art, access information, learn about science; in other words, to give the necessary instruments to each person to form independent thought, free from conditioning. Simonetta, the company accountant was the first to follow Margherita. The summer program “Woman Soul and Body” was
launched enthusiastically. The stage was constructed with wooden pallets and red carpeting and chairs were rented to watch a program with a theme to be addressed with historians and philosophers. The parking lot was transformed into a space of exchange. Today, this program has become a fixed yearly appointment and we are firmly convinced that it is exactly on this basis that authentic and long-term human relations are constructed. “A FACTORY THAT PRODUCES SWEETS AND NEW WAYS OF THINKING” is the slogan that expresses and represents our reality and is renewed yearly despite all the difficulties and hardships.
