President’s Column: What’s on Our Plate?
T
he newly voted all resident board held their first Brio Board Meeting Friday, 22 September at 6pm. This is an exciting time for Brio as we are taking control of our community. The board had ten days to get this first meeting accomplished and we worked hard to address as much as we could in a very short timeframe. So, what was accomplished? The board elected not to sign the Cole West transition document. Instead, we chose to hire out for a Slope Engineer’s report and a building envelope inspection. Our attorney, Jenkins Bagley Sperry, PLLC advised us of the best direction to take. This doesn’t mean we won’t still transition; it just means we didn’t sign and release any claim. The two reports we are asking for are so that we can ensure the slope is properly inspected before repair and to ensure our club house doesn’t have any unforeseen repairs that may need attention. The Brio board also approved the offer to sell the property titled UDOT P15680 Parcel 200 R00. This property is on the corner of Main Street and Buena Vista. The board agreed after counsel to approve and accept the $190,000 counteroffer from the state. This corner is needed for intersection 11, that is currently under construction. The proceeds less attorney fees will go to the Brio HOA Reserve fund. The board took time in executive session to discuss these two topics at length and I am really excited with the outcome of these two monumental decisions on behalf of our community. These decisions and actions are aimed at improving and shaping the Brio community’s future. Committees are going to be one of the board’s best resources to use. Three were deemed most important to get started as a new board. The first is the financial advisory committee. We would like to review our budget, adjust and make needed updates and submit the budget to the community by 1 December. The second is the Design Review Committee, this is essential to getting residence landscaping or design request moving again. Finally, the third is the Community Center Slope Committee. This will be a short-term committee needed to update the slope after receiving the slope engineer report. How can you help? Volunteer and be an active participant in one or more of the committees and help shape your community. We look forward to volunteers joining us and getting to work on these important topics. More committees will be approved as we continue to work through the topics needing attention. If you have any questions or would like to send feedback to the board, use your PMP Gateway Homeowners portal and submit a general request to send in feedback or questions. It’s great to see proactive steps being taken for the community’s betterment. Lynett Rodgers, President, Brio HOA

Mr. Foodie:
SW Utah Restaurant Reviews “All the news that’s fit to eat” By Andy Margles
Mr. Foodie Goes “Bowling”
As the saying goes, “There are those who eat to live and those who live to eat”. I think you readers can all guess in which camp Mr. Foodie resides. Therefore, a place such as Aubergine Kitchen which promotes itself as “healthy eating”, didn’t really arouse my interest much. To me, healthy cooking usually means bland food and Mr. Foodie hates bland! However, when I kept hearing good things from friends about this place, I thought I’d give it a try. Aubergine, 613 S Mall Dr. SG, 435-414-9851 is open M-Sat. 11-9. Service is fast casual, so there are no reservations. The word “aubergine” translates to “eggplant”, in Italian and there are seven of these restaurants, all in Utah. When I first walked into the restaurant on a Saturday evening, I felt like the one fat guy who accidently wandered onto Muscle Beach! Fit, trim folks, from kids to geezers (like me), were everywhere. Where did all these toned, thin bodies come from? The Huntsman Games? Military boot camp?? Prison??? I hoped that even if I didn’t like the food, maybe eating it would make me look more like the rest of the patrons. “Fat chance”, I know...). Like many places these days, Aubergine has lots of bowls on their menu. Their popularity makes sense, both from a restaurant and patron point of view. Bowls are easy to prepare, especially since most of them are deconstructed. Since there is not much cooking involved, no relatively high-priced chef is needed. From the customer’s perspective, the bowls are reasonably priced at around $15, low calorie, healthful and usually served very quickly. Aubergine actually has eighteen bowls to choose from! The proteins include chicken, wild salmon, tri-tip beef, tofu and falafel. Accompanying sauces were far from ordinary and included curry, tahini, peppercorn-madeira, cilantro jalapeno and more! I ordered a tri-tip beef bowl, which included mushrooms, Brussels sprouts, sweet potatoes and turmeric rice, along with a peppercorn-madeira sauce. My wife got one with chicken, chickpeas, cauliflower and more, in a coconut-curry sauce. In addition, there are nine different salads on the menu, some of which have similar ingredients to the bowls. The salad dressings also sounded imaginative and included sweet and spicy mango, spicy cashew and many more. Add to that, a few pitas and wraps, along with some healthy appetizers, smoothies, fruited lemonades and a couple of desserts and you have the entire menu.
Verdict: These were definitely Not Your Grandparents bowls! (Sincere apologies to all foodie grandparents). The ones we had were zesty and even a tad spicy. Each dish was flavorful, healthful, low calorie, reasonably priced and actually filling. Service was almost instantaneous. We both enjoyed our meals and even if Aubergine won’t be the first place I think of when dining out, we will certainly return. If nothing else, it will enable me to have my cherished nightly ice cream (see July reviews), relatively guilt-free.
Restaurant News: Cubby’s, a burger/sandwich shop from Northern Utah, will be moving into the space
that housed Appollo Burger. Sunday’s Best, an interesting sounding brunch restaurant, will be going into Sakura’s old location. Stay tuned for more…

Keith and Mick Welcome Aboard We would like to introduce our Night-staff that closes the building and helps each day with tables, chairs, and maintenance at the clubhouse. They are the men that set straight the lounges, pick up your lost and found and help every day to make your life a little easier. We recently took staff pictures (thank you, Will Andrea) so you can better recognize our staff and board with a hearty hello! First, we have keith Curtis, he is a recent addition to Brio and took Cameron’s place and they are residents in Cameron’s home! He grew up in the small town of Fairview in Central Utah and they raised their family in Bountiful. His favorite part of his position is meeting the residents of Brio and their families. Keith can be easy-going and flexible; he is always willing to do whatever needs to be done. His interests include golf, fishing, and spending time with family. He loves the beautiful facilities Brio has to offer and the good people he has met, you will see him closing the pool or the building and he has been a PMP (Property Management Professionals) employee doing seven days a week for several months, welcome aboard! We have just recently hired Mick Floquet to share the night load with Keith. Mick grew up in San Diego and moved from Temecula, California to the perfect fit in Brio in 2020. He loves meeting and interacting with people and has an awesome willingness to help wherever he is needed. His interests and hobbies include pickleball and golf, He likes most the people of Brio and likes least the crowdedness of the growing St. George. Good thing, he calls Brio his home. Welcome Mick. We are glad to have you!

The Hiking Club Pioneer Rim Trail Some hikes promise grandeur and live up to that promise. Some appear rather mundane and are mildly surprising. Pioneer Rim Trail falls in the latter category. While researching the hike (something I do for every hike), Pioneer Rim Trail looked decent and worth the effort—close to home and only four miles round trip. While it is not a spectacular hike, it does feature some interesting red rock formations and great views of St. George.

Holidays are Coming! The holidays are coming and that means we regularly break normal habits. Sometimes this is good: you eject a bad habit of starting a new habit (the cup is half full). Sometimes it means we stop doing normal activities: you sit around and eat too much (cup half empty). Other times we find a way to do good things differently: you go for a walk with visiting company (cup is completely full – half with walking and half with company).
Keith Benson
Personal accountability and planning tend to solve a lot of problems. Personal health is no different. Staying healthy requires effort and usually, support from family and friends … and those shoes are not walking themselves you know! In my house we have discussions about exercise and nutrition all the time (too often I’m on the “yes dear” side of the discussion). We hold ourselves and each other accountable for our health. “People nowadays blame everything on their parents - add that to the differences - but Pop lived in an era when character alone was expected to accomplish miracles, and so many times did.” - W.D. Wetherell, North of Now, A Celebration of Country and The Soon To Be Gone Looking forward to the holidays, you must plan to maintain your health amid the enjoyment of eating and sitting, visiting with friends and relatives. First, plan to enjoy family and friends. Second, do it while in motion.
Go for a hike. Ride a bike. Be active. Enjoy life!
