ABOUT SALAMI VENTRICINA
Our Salami Ventricina is made from coarsely chopped pork and spiced with garlic, bell pepper, paprika, rosemary, chili, ginger and whole black pepper. It has a matured and delicate taste and look. Great on a pizza but also as a tapas cold cut.

With many years of experience in producing pepperoni, we invite you to have a deeper look into a modern, high quality pepperoni facility.
Making pepperoni All of our pepperoni variants are fi lled in fi brous casings, allowing smoke to permiate through the casing permitting moisture to be lost during drying. Every variant features a unique recipe that we are constantly improving to deliver even better taste and texture. The art of smoking After the casings have been fi lled, the pepperonis are hung on racks and transferred to the smoker. Here, the temperature is slowly raised to around 26°C, with an air humidity around 95%. The aroma develops during this stage, as well as the characteristic red colour we all know so well. The pepperoni is then cold-smoked over beechwood chips in the smoker. Making pepperoni is a craft, so every product is carefully monitored to ensure the right amount of time in the smoker. Each type of pepperoni has a unique program of smoking and drying. It is during this time that the fl avours and texture develop.
Maturation takes time After the cold-smoking, the pepperoni is transferred to our climate room, where it hangs for two to three weeks at a temperature around 16°C and humidity around 74-78%. The products are inspected everyday to check for the right consistency before they are fi nally sliced, cubed or packed as sticks.
