A deliciously quick and easy treat for Valentine’s and any other special or not-so-special occasion! 3 tbsp Hot Water 3 Frozen Raspberries, plus additional to serve. have a very large mug - as the cake will rise and could easily end up overflowing!!!
Make it once, then adjust sugar/ fruit to your taste.
You will need: 2 tbsp Plain Flour 1 tbsp Cocoa Powder 1 tbsp Sugar ½ tsp Baking Powder 2 tbsp Vegetable Oil 2 tbsp Milk ¼ tsp Vanilla Extract
Plus: 1 tbsp Brown Sugar 1 tsp Cocoa Powder What to do: Put the flour, sugar, cocoa powder, baking powder, oil, milk and vanilla in a large mug and mix until you get a nice, smooth batter.
Sprinkle over the additional brown sugar, cocoa powder and raspberries. Pour the hot water on the top – but do not stir.
Pop the mug into the microwave for 1 - 1½ minutes. Important – check every few seconds after a minute has passed. Especially if you don’t Serve with a few more raspberries or berries of your choice.
