We take your safety seriously. Wet weather makes our roads less predictable. 2013 YEAR OF THE

Water Snake

Never a dull moment!

2013 is going to be a time of major progress, great upheavals and inevitable change. The Snake is ‘yin’ and water is ‘yang’. They are both actually complementary forces; interacting together to form a dynamic system.

The Snake symbolizes intelligence, wisdom, gracefulness and beauty. Snake years are renowned for: dramatic events that can alter world history; major breakthroughs in science; and a focus on the arts and humanities. The year of the Black Snake or Water Snake, will be a good one for business if you are able to read a situation quickly and act in a controlled manner. Snake years are times to take considered measures in your business; and as this year is the element of ‘water’ it is wise to remember to act, not delay in implementing those measures. Below are some portents of this Chinese New Year could work for you and your business from an HR perspective: Snake years are times for innovation: • Develop a Continuous Improvement Policy with your team if you don’t already have one • Revisit your business, is there a better way for all? • Reward those who bring new solutions to existing problems. • Snake years are times for being able to face challenges: • Ensure all your policies and procedures are in order

Alison Hucks FRCSA, CAHRI Principal, Avant

• Review your risk register and if you don’t have one – develop one • Know that you are able to remain calm in a crisis; have plans to lead your team through effectively • Snake years are times for professional development: • Consult with your team regarding career planning and pathways • Revisit or create a professional development program for your team • Don’t neglect your own knowledge development • Consider coach/mentor programs for your team 2013 will be anything but boring! There will be highs and lows; opportunities and challenges. Just as in 2012 – those opportunities need to be taken as they arise, being mindful of taking unnecessary risks. It will be a time of strong undercurrents and the events of 2013 will have far reaching effects. The Year of the Water Snake will be a time of major progress, just remember to readjust your compass regularly so you know which way you want to head!

“Navigating Social Networks – is your business a slave, a slacker or somewhere in between?” Two of my favourite apps that I’d like to share with you this month have made my life so much easier, it wouldn’t be fair to keep them to myself.

Bronwyn Clee

Mind mapping is a very simple tool to manage your thoughts so that in amongst many things, those creative bursts of genius don’t get lost. Being a rather curious and visual thinker I am loving SimpleMinds+ app, mostly because of the

function to dump down the info, and then get creative about categorising it later.

Bronwyn Clee is an innovative Imagineer who is nuts about caring for community, empowering women, growing stunning orchids and smashing tiles to create liveable art. She’s also a loud and proud nerd who weaves social media into almost everything she does. Volunteering at a community based Op shop keeps her feet planted firmly on the ground, even when the spirit of writing almost knocks her over and gives her wings to fly. Find out more about Bronwyn at www.bronwynclee.com

Available on android and apple mobile devices, as well as desktops the best part is that I sync across all of my devices through my second fave app this month, Dropbox. Just like a filing system in the “cloud” Dropbox offer 5gig of free storage space and the option to upgrade. I also love their incentive to invite friends and earn free storage. FYI If you don’t have a Dropbox account you won’t be able to access SimpleMind+ files across devices. I sometimes mind map conversations with clients, sync it to my drop box account and then email them a PDF copy on the spot. This gives them a great reminder of what we covered and agreed on, and acts as a piece of data for future conversations. It’s also proving to be useful in team meetings.

Email info@bronwynclee.com to find our more about how I can help you navigate your social networks and how your business can harness and handle the power of going social!

The ladies and gentleman, kids and infants, teens and guests are dressed to impress the lord in their finest suits and dresses on the fine Sunday morning at the makeshift chapel at the Darwin Community Arts, Chambers Crescent hall. The African style worshipping is an array colour, Christianity and celebration. For many months I have mentioned to friends about the gospel church gathering and for months we always have the intent of getting there. Though no-matter when you turn up and who you are, as you walk towards the main door and through to the

hall, the gospel harmony grabs your heart and hands you a dated bible to take your place and smile to the pleasant on-lookers. Gazing around the room we notice that the bible has up-graded to an app. Coordinator George Jerue passion for bringing people together is infectious and healthy. Family togetherness is the churches key to happy life and the prevalent message recited. The African and Australian Christian Fellowship commenced in 2007, from the Salvation Army recognition of a community in need of a religious outlet. Appreciation and support still hold these two groups strongly together. As the jiggling ceases and the sermon concludes traditional African food is handed around and new friends are made.

Rachel Cotton

Pastor Stephen’s steam-train approach starts off slow, but typically by the time the relevant gospel message has hit the high notes and the effective gestures, the jiggling congregation are blessing the lord, blessing the world and blessing each other in a display of vocal confidence and soul‌.Amen!

It is hard to reconcile the simple elegance of Cecily Willis’s studio ceramics with the origins of her passion for clay. ‘When I was about six or seven, Mum and Dad had friends with a farm, and one of my favourite pastimes was running down to their fields and standing barefoot in the cow pats – such a great, oozy feeling.’ From there, her love of the ‘tactile’ combined with culinary interests: she went on to produce a carefully decorative plate of rum balls: mud, convincingly rolled in a coating of crumbed chook food. ‘My little brother ate most of them – I got into terrible trouble.’

Such humble – you could hazard quintessentially Australian – beginnings evolved into a fascination with Japanese culture and design, particularly tableware and functional ceramics, which informs her studio practice to this day. ‘There’s a simplicity of form and style in Japanese design that I just love. It applies to so much of Japanese culture – the way food is presented, the thought that goes into the balance, the form, the colour. I take a more contemporary approach to this simplicity.’ After initially starting pottery classes in Sydney and discovering the work of Bernard Leach and Shoji Hamada in the early 80s, Cecily reconnected with ceramics when she returned to Darwin after 14 years teaching in Maningrida. A 2003 Residency at tactileARTS culminated in her first solo exhibition, ‘Turning Japanese’, a display of functional ceramic vessels heavily influenced by traditional and contemporary Japanese pottery, which she developed into a highly personal and distinctive style. She has participated in a number of shows since then, and her last exhibition, ‘Dwellings’ at the Cross Cultural Art Exchange, was an exquisite collection of delicate handbuilt houses. ‘I’m fascinated by the structures of old English barns and the early Australian houses – again that simplicity of form.’ The ‘Dwellings’ combine elegance of form and her dominant decorative style of tissue transfers, with one of her over-

riding passions – Raku pottery. ‘I love Raku firing. There’s a spontaneity about it, it’s unpredictable, uncontrollable – exciting. And it takes me away from the functional into the more aesthetic field.’ The Dwellings exhibition was so wellreceived that it sold out within four days. Teapots are another favourite that feed Cecily’s passion for the fusion of aesthetics and functionality; they are a ‘huge challenge’ and one of her most popular signature works. Her tea-sets and other tableware are highly sought-after, and can be found at a number of Darwin galleries, including her studio space at tactileARTS, and at the tactileARTS’ craft shop at Parliament House. But for all her creative success (the Journal of Australian Ceramics will run a feature on her Dwellings in their April 2013 edition), she is loath to transform her ‘passionate hobby’ into a commercial venture. ‘I don’t want to be compelled to create, or driven by money’. For now, she’s happy potting and tutoring at the tactileARTS pottery studio, where she teaches the popular Throwing on the Wheel workshops, inspiring new generations of potential potters to appreciate the aesthetics of handmade pottery: the fusion of the excitement of fire with the oozy delights of mud. The next Throwing on the Wheel workshop will commence in March. Please visit www.territorycraft.org.au for details of upcoming workshops, or contact tactileARTS on 8981 6616 or tcdarwin@bigpond.com.

Darwin Entertainment Centre The Darwin Entertainment Centre has officially launched its Territory Support Fund! This is an initiative supported directly by The City of Darwin and the NT Government and will see greater levels of assistance for local producers who want to present local acts at The Darwin Entertainment Centre. General Manager, Richard Fitzgerald said that despite rising costs that all Top End businesses are facing, he hopes this announcement will see more local groups, wanting to put on professional and high-end pro-am shows, being able to afford to hire The Centre. “Already, we offer locals cheaper hire fees than national promoters, who interestingly think we are well priced. This new move will now make The Centre even more affordable.” Formerly the Centre offered a local hirers subsidy, which has been re-worked with the assistance of The Council and the NTG. The new Territory Support Fund will see some qualifying productions receive as much as 50% off a single hire. “It has been rewarding to work hand in hand with The Council and the NTG on this, both want more locals on our stage and both are pitching in to help us make it happen.” Mr Fitzgerald said. “Some people think The Centre should be free or a low cost option or we should pay to support their production. The fact is Darwin deserves a

high quality venue but it comes at a cost.” “If we could be all things to all potential hirers then that would literally cost millions of dollars of taxpayer funds, it’s just not going to happen.” “We have a world class venue that needs to run as a viable business. The generous support we get from The Council and the NTG covers around 30% of our operation, the rest we have to earn.” The move is aimed at giving a kick-start to emerging professional artists and producers, to help get locals performing in front of locals, in a professional venue and professional standard. It’s hoped this plan then sees those artists develop to tour nationally and have strong careers, showing the rest of the country the talent from the Top End. “We have a set amount of money to spend on the Territory Support Fund in 2013 and so it will be a case of first in best dressed.” “There are set terms and conditions to prevent abuse of the system but we believe this will be a big boost for the local scene.” Artists booked in 2013 utilising the Territory Support Fund include The Darwin Blues and Roots Club, Worldfly and The Darwin Symphony Orchestra. For information on The Territory Support Fund you can contact The Centre on 8980 3366.

Volunteers bring hope in times of disaster

After earthquakes, cyclones, floods, bushfires or tragic accidents, it is the rapid deployment of volunteers that can bring hope to those affected.

Evelyn O’Loughlin Chief Executive Officer, VSA&NT Volunteers play a crucial and immediate role in the rescue of survivors and in bringing emergency relief and medical aid to them. Then, as relief and aid arrives, volunteers become involved in all aspects of supporting the communities and in the ongoing recovery and rehabilitation processes. A volunteer’s responsibilities, according to training and experience, can be extended to sorting and distributing clothes; preparing and serving meals; logging survivors’ names and of those injured or feared missing; organising, packing and distributing relief kits; supporting the medical and animal rescue teams; counselling and even keeping children occupied while parents try to organise their immediate future and cope with the aftermath of the disaster. 34

February 2013 | DarwinLife Magazine

Along side of these functions, the coordination and sharing of information between governments and relief agencies, mobilizing resources and supporting the rehabilitation of the devastated communities all involve volunteers to varying degree. It is with great pride that Volunteering SA&NT is associated with these selfless people, who give readily to help others in times of great challenge. A Volunteer’s gift to the community is extraordinary and their contribution to our society should never be taken for granted. Without their invaluable support, just where would we be? Valentine’s Day Special | DarwinLife

Valentines Day

Mr. Romantic is back! There’s a rumour going around that romance is back. We hear Mr Romantic is making a return to Darwin, and the ladies are ready. Are you listening boys?

There is no such thing as too much romance. Women have spent the past few decades asserting their authority, and fighting for equality. But don’t be fooled. We still want to be carried away on a cloud of hearts and flowers and – to use the old cliché – be well and truly swept off our feet. There is nothing sexier than a tough burly Territory bloke, overcoming awkwardness, ignoring the crap from his mates and turning up the romance for the woman in his life, or the girl he covets from afar. We know you can do it – your very own Mr Romantic is in there somewhere, so dust him off and bring him out to play this Valentines Day! Amidst the commercial flurry of cards, hearts, flowers and chocolates, there is actually some meaning behind Valentines Day. It’s just that all the fun presents and treats distract us and now we can’t really remember why we celebrate it at all. As millennia pass, its inevitable stories get lost, and there is more than one story to choose from in this case. There was definitely a Saint, many of them actually – in fact the day is called St Valentine’s Day – and the names of all those saints was Valentine. Of course. Many of them were martyrs and there are relics and remains of them scattered through Basilicas all over Europe. Different religions recognize different Saint Valentines on various dates throughout the year. However the most popular story features the Roman Saint in 3rd century AD. At a time when marriage was banned because it was thought to make men bad soldiers, Valentine snuck around marrying couples in secret. Once he was discovered, Valentine was thrown in jail, something happened between

him and the jailer’s daughter – love, spiritual connection, who knows - and one of them was marched off to be executed for reasons that are mixed and largely unclear. Just before this happened though, Valentine wrote her a letter to her, signing off with ‘from your Valentine’. So that explains the Saint but not the date. One theory comes from the Roman festival of Lupercalia (it’s always the Romans isn’t it). Held in the middle of February each year to mark the start of springtime, girls names were put into a box and boys drew them out, to then be boyfriend and girlfriend for the duration of the festival. Ah the good old days. This was such a successful event that the church wanted to make it a Christian celebration and give a nod to all the Saint Valentines at the same time. There’s another story too – that Lupercalia was a pagan fertility festival where men would get naked and whip the backsides of the women to improve their fertility. Really? I mean REALLY. Over time romantic connections to this day grew, as poets of the middle ages began to spout their declarations of love, and gradually symbolism crept in. Hand written letters, adorned with flowers and hearts were lovingly toiled upon, and of course that chubby little cherub Cupid was ever present, flinging arrows and perpetuating the joy of romantic love. These symbols now have come to represent romance, and whatever the story is, on February 14 all over the world, someone somewhere is being loved, giving love or getting loving – if you know what I mean. So don’t miss out – love gets us out of bed every day and gives us purpose. Come on fellas - get your Mr Romantic out this Valentines Day and give us everything you’ve got.

THE COVE A menu of excellence in creativity, presentation and flavour

BY JACK STEPHANE

The Cove, the latest restaurant at Sky City Casino is stylish, elegant; yet a relaxed atmosphere with both spacious dining settings, together with outdoor dining settings overlooking the luxurious Resort lagoon and beach area. Starters: Warm SA fresh oysters wrapped in Wagyu bresaola, thin slices of cured Wagyu beef and topped with a miso hollandaise ($3.00 each). The flavours and textures were just sensational. Creamy hollandaise followed by a hint of salty wagyu; finished with the juicy texture of oyster. The entrée of Roasted Vanilla Scallops ($20.00) was another creative dish. The scallops had just a hint of vanilla - an exciting flavour; cooked to perfection and served on a superb celeriac cream with pieces of salt baked celeriac; together with tempura enoki mushrooms. The entire dish was delicate in flavours; yet each complimenting each other. So innovative; so satisfying. Superb. While The Cove is primarily a seafood restaurant, with a wide selection of local seafood dishes, including ‘Cove Seafood Platter for 2’ ($110.00). It also has a variety of meat dishes, including Beef Wagyu 9+ ($58.00). The Beef Wagyu was served on fried soy citrus udon noodles with a thin slice of daikon, a Japanese radish; together with miso foam. After pouring the miso foam over the beef and slicing through the tender wagyu to the noodles;

again you experience the most exciting flavour combinations; together with the slight bite of the radish. Another superbly constructed dish of flavours and textures. The desserts were just as exciting as the other courses: classics; however each with a touch of perfection. ‘The dark chocolate mud cake solo’ ($16.00) is a chocolate lover’s heaven. The mud cake was topped with a white chocolate parfait and served with chocolate macaroons and Tia Maria jelly; a treat in themselves. Again as the white chocolate parfait melted in your mouth, you tasted the next layer, then the next; each increasing in depth and texture. You have to share this dessert; as you can’t help smiling and saying out loud, “Yum”. Congratulations to Sky City’s Executive Chef Karl Ewald and o The Cove’s Head Chef Gary Rogers for giving Darwin such an innovative and creative dining experience. 5 STARS. Wet Season Specials DON’T PUT IT ON YOUR PLATE

unless it’s labelled or ‘ask if it’s local’

The Northern Territory was the first and is still the only State or Territory to introduce seafood labelling laws; visitors to the Territory and most importantly Territorians can make informed choices when buying their local seafood, as all imported seafood is to be labelled as such.

Monday Pizza and a Coopers Tuesday Curry Night Wednesday Chicken Parmy Thursday Steak and Chips

Labelling seafood in the Territory is required along the entire supply chain; all the way though to those outlets that sells your families fish and chips. Not surprisingly seafood consumers and commercial fishers are demanding the same choice in their home States. Great to see the NT leading the way!! The public is frustrated and so they should be. Many consumers around Australia are simply not aware of the scale of imported seafood - who would ever imagined imported Barramundi, Flathead or Whiting? You as the consumer have the right to know exactly where your seafood is being caught. With many of the worlds fisheries under stress from overfishing or other factors Australia’s well managed and sustainable fisheries should be celebrated and supported. Importing fish from poorly managed fisheries just makes no sense at all. Late last year it was great to see the release of the sustainable status report on Australian wild caught seafood. A simple tool that is available for everybody; with this we can be more confident to ask if it’s local, be more confident that you are purchasing seafood from sustainable waters and be more confident that you are supporting Australian businesses. The report can be found on www.fish.gov.au For seafood consumers in the Territory informed choices can be easily made and I can assure you that purchasing seafood that displays “Support NT Caught” has been caught from territory waters. Check out www.supportntcaught to find your local seafood supplier, you can also find us on Facebook www.facebook.com/supportntcaught.

RESTAURANT

Looking for something new and interesting for lunch? Why not stop in at Bellakay Indonesian Restaurant for some tasty Indonesian food, served hot and fresh away from the bustle of the mall in Centre Point Arcade. Faizal Poulter has been around food all of his life thanks to the delicious cooking fed to him as a child by his mum - Mama Sania – now his head cook At Bellakay. “I’ve always wanted to have a food business. Mum is such a good cook and her food inspired me to open the restaurant. We use only fresh ingredients and everything is made from scratch. I just wanted everyone to taste my mum’s delicious home cooking”. Born in West Timor, Indonesia, Faizal moved to Darwin with his family when he was 10 years old. “The name Bellakay is a blend of my two daughters names - Anabella and Kayra. Hopefully one day they will learn cooking from me as I did from my mother. Cooking is an important part of our family and we are now thrilled to be able to share our food and culture with the people of Darwin”. There are a wide variety of dishes on the menu to suit all tastes. The classics feature of course. Steaming bowls of fragrant Laksa and your choice of beef, chicken or prawn Satay – served traditionally with peanut sauce, cucumber, fried onion and lontong (sticky

jasmine rice). There is a delicious selection of Indonesian specialties on the menu such as Bakso (meatball soup), Prawn Balado, Lamb Gulai and Ikan Pangang – fish cooked on charcoal. “Growing up I always loved mum’s Beef Rendang, Curried Chicken and stir fried Kangkung. Those tastes of home can’t be matched”. Of course like much of Asian cuisine, Indonesian food does not forget the vegetarians. Bellakay has a range of choices, with favourites such as Gado-Gado and spicy eggplant, as well as steamed vegetables, curried beans, tofu, vegetarian noodles and vegetarian fried rice, plus a selection of salad dishes. We can’t forget dessert with frosty Chendol and the delicious icy Es-buah – a traditional Indonesian dessert made with fresh whole fruits such as rambutan and lychees mixed with agar agar jelly, milk and syrup. With two daughters of his own to feed, Faizal

and his wife Laura of course have a kids menu. Bellakay is a family friendly restaurant, with high chairs available for the babies and a selection of kid sized meals including Mee Goreng, fried noodles, chicken wings and fish and chips. Bellakay Restaurant opens Monday to Saturday from 11am, and starting February will be opening 6pm – 9pm Thursday, Friday and Saturday nights. There is a karaoke machine available for some light after dinner entertainment. Catering packages are available. Bellakay can create a range of dishes for your special function, catering to up to 200 people. A variety of menus are available and prices vary depending on package For bookings and more information call Faizal on 0401 187 944. Bellakay Indonesian Restaurant. EPIC STEAK

at The Cav Hotel I have not had a good relationship when dining out, so it was with much trepidation and only after lots of internal debate, that I headed to The Cav to chow down on a big chunk of cow for dinner. Fingers crossed.

For $42 I went the Rib on the Bone, 500 grams, “Nolans Private Selection grain fed European breed composite, South East QLD”. For that much money and for such a long description it had better be good. So it is without hesitation I use the words “epically awesome”, “orgasmic” and “holy cow” to describe my steak. After so many misses, The Cav hits the nail on the head. Tender, juicy, medium-rare, smokey grilled and bursting with flavour. The steak-whispering guy tending the grill has worked this chunk of beef to perfection. Equally cooked from all angles, I don’t know how he did it, surely there must be some sort of black magic spell cast on the grill as it looks like any other of its kind. Even the meat near the bone was cooked medium-rare when it usually ends up rare or under. For once I support the dark arts and so should you. Everything else on the plate is only there to fill the gaps in your stomach, the steak is the main attraction here, although the home cut chips are fantastic. Head on over to The Cav and try out the steak. I hope you’ll be as impressed as I was.

Did your holiday fail to deliver the glow? The weather is steamy and hot, we are in and out of air conditioning; just returning from holidays and preparing to return to work or school. While having a break and going away can work wonders for your complexion, the travelling to and fro can wreck havoc on your skin. There are many ways you can ensure your skin returns home as rejuvenated as your inner spirit. During air flights it is commonly advised to mist your face in an attempt to replenish lost moisture. DO NOT DO THIS! When the water droplets evaporate from your skin, it actually takes moisture from your skin along with it. The best way to maintain the level of hydration in the skin during your flight is to protect and seal the skin with a rich, water-in-oil cream. All Dr Spiller creams (with the exception of the “light” creams) are water-in-oil based and feature our non-occlusive, patented HYDRATAIN emulsion system to protect the skins natural lipid barrier. On the morning of your departure before you go on your trip it is a good idea to very gently exfoliate your face to remove excess dry, dead skin and allow your moisturiser to absorb more deeply. Although it can be hard to remember to be aware of it, try not to touch your face when travelling and wash your hands at every opportunity. If you must reapply cream or makeup before your arrival use a hand sanitiser first to avoid contaminating your creams and causing repeat infections long after the holiday is over. When you reach your destination, freshen up tired, dehydrated skin with a

light cleansing and an antioxidant serum, followed up once again with a moisturising cream to seal and protect the skin. Don’t forget to plan ahead and pack a cream that works with the climate of your destination - if your destination is to a colder climate your regular cream may be too light causing dry flaky skin and vice versa when you are travelling to a hotter destination your regular cream may be too rich, causing oiliness and congestion. Speaking of planning ahead, be sure to discontinue the use of harsher products such as Alpha Hydroxy Acids and Retinols at lease one to two weeks before you leave! These ingredients can leave your skin more sensitive to sunburn as well as sun damage, and their irritating side effects may be intensified by the stress of travel and climate change. Skin disturbances while travelling can also occur for less obvious reasons. Jet lag, stress, lack of sleep and change in diet can all cause hormonal changes, which can disrupt normal skin functions, and disturb the protective mechanisms of the skin. While your skin’s defences are down, it is essential that you take extra care to protect your skin from bacteria that can cause breakouts or other rashes and irritation. The main aim is to protect so it goes without saying to make sure you use a broad spectrum SPF protection product every day whether you plan to be out in the sun directly or not, including airplanes where you are even closer to the sun’s rays and sometimes vehicle windows as not all glass will offer protection.

Don’t let the hot, sticky wet season trip up your skin Professional skin care and products is about customizing your skin’s needs with specialized care products to meet the needs of your individual skin. An experienced skin care professional, can mix and match different types of products and customize your treatment program and home care products for optimal results! Professional advise and prescriptions just for you.

Smooch Time

Lips don’t have oil glands and that’s why they dry out more than the rest of your face. Keep them lathered up with a nice nourishing lip balm which will not only protect your lips but also make them softer and ready to smooch! If you have lines or wrinkles around the lip area then avoid using too much lip gloss as this can accentuate the lines – opt for matte or velvety finishes instead and only use a dab of lip gloss in the centre of your lips. Try applying your lip liner after your lip colour is on, it will give your lips some definition and help prevent lipstick ‘bleeding’ without leaving a definitive lip line after your lip colour wears off. Applying a little bit of translucent powder around the lip area will also help prevent lipstick bleeding. I got this great tip from legendary Aussie makeup artist Rae Morris: Test lipstick on your fingertip not the back of

your hand. Your fingertip has the same texture and colour as your lips (blue-red tone) whereas the back of your hand is a neutral tone so the lipstick appears brighter and richer than it will on your lips. Here are some colour tips to work harmoniously with different skin tones: fair skin - baby pink, bright pink and coral medium skin - pinky reds, fuschia and tangerine olive skin - tawny rose and warm pink shades dark skin - blood red, magenta and plum shades Pucker up ladies and gentlemen it’s smooching season! Happy Valentines Day xx

Vegetarian Eating Vegetarianism, or vegetarian eating is choosing foods of plant origin as the exclusive or predominant source of sustenance. There are concerns that vegetarian diets may lack several important vitamins and minerals that are found mainly in animal foods. However, by including suitable alternatives, vegetarian diets can be nutritionally adequate.

Protein Protein is required for many functions including growth and repair and keeping our immune system healthy. In a vegetarian diet, protein can be obtained from dairy foods, soy products, eggs, nuts, seeds, legumes, wholegrains and quinoa. In the past, protein combining was thought to be important to ensure adequate protein intake. However, more recent research has shown that it is not necessary and you simply need to consume a variety of protein foods over the day. Iron Iron is vital to transport oxygen around the body. Include plenty of iron-fortified cereals, green leafy vegetables, wholegrains, legumes, eggs, nuts and seeds to ensure adequate iron intake. To improve absorption, consume iron-

containing foods with foods rich in Vitamin C. Avoiding drinking tea and coffee, and taking calcium supplements with meals will also help improve iron absorption. Calcium Apart from building strong bones and teeth, calcium is also needed for muscle and nerve function. Excellent calcium sources on a vegetarian diet include calciumfortified soy milk, tofu and tempeh. Sesame seeds, green leafy vegetables and nuts also provide calcium in smaller amounts. Whilst calcium is important, adequate vitamin D is also crucial as it promotes calcium absorption. Excess salt and caffeine can negatively affect calcium absorption, so be sure to limit them.

Vitamin B12 Vitamin B12 is important for keeping our nervous system working well and for the formation of red blood cells. In a vegetarian diet, vitamin B12 can be obtained from dairy products, eggs and vitamin B-12 enriched products such as So Good Soy Milk. Zinc Zinc is required for healthy growth and keeping our immune system strong. Include plenty of dairy foods, soy products, eggs, legumes, grains, nuts and seeds to ensure adequate zinc intake. With careful planning and by choosing the right balance of foods, vegetarian diets can be healthy and nutritious.

Women’s

In 2013, I’m proud to be the Northern Territory Ambassador for Ovarian Cancer Australia.

Being a martial arts and Krav Maga instructor, I am often asked what is the best way for women to defend themselves.

Ovarian Cancer

February is Ovarian Cancer Awareness Month. During this time, Ovarian Cancer Australia informs women of the risks and symptoms of ovarian cancer. In Australia, more than 1300 women are diagnosed with ovarian cancer each year and 800 women will die from the disease. It could be you, your friend, your partner, your sister, your mum, your gran or your daughter. Did you know there is no early detection test for ovarian cancer? The pap smear tests for cervical cancer only. Do you think your family and friends know this and the risks and symptoms of ovarian cancer? Through hosting an Afternoon Teal or Cockteal Party at your home or workplace you can help raise awareness of ovarian cancer and raise vital funds for Ovarian Cancer Australia’s support

and research programs. Simply register your event with Ovarian Cancer Australia, invite your friends, family and colleagues, bake or buy some healthy treats, ask for donations and raise awareness of the signs and symptoms. All funds raised will go towards Ovarian Cancer Australia’s support and research programs to help women with ovarian cancer. You can also show your support on Teal Ribbon Day on Wednesday 27 February 2013. Teal is the international colour for ovarian cancer and ribbons will be available at various stores across the Northern Territory. Please purchase a teal ribbon and wear it with pride. For more information and to register your Afternoon Teal or Cockteal Party visit www.ovariancancer.net.au I look forward to your support.

Self Defence

Women’s self-defence really should be no different to any other self-defence situation, although women do need to be more strategic as often an attacker is physically bigger and stronger. I believe a lot of self-defence situations can be prevented and I suggest the following for women particularly if they are heading for a night out: • Ensure you go out in a group or with at least one other person • Have the presence of males around such as partners / friends / family • Organise how you are going to get home prior to going out • Keep an eye on your drink at all times, and be careful when accepting drinks from strangers • Limit your alcohol consumption and don’t get out of control • Keep your phone with you • Ensure someone knows where you are going and can be in contact with you • Be aware of your surroundings - if

you are walking cross the road or enter a public place if you think you are being followed. If you do end up needing to defend yourself, using weapons and vulnerable points is very effective. Things such as your handbag, keys or a deodorant spray can all be used as a weapon. Use these things forcefully - if you are forceful, loud and confident it can deter people from attacking you. If an attacker does follow through you need to appear confident and definitely strike vulnerable points such as the groin and eyes and leave the situation immediately. Above all I always highly recommend learning some basic self-defence skills and practice implementing them so that you can use them if the need arises. Krav Maga is a modern day realitybased self-defence system. Adam is the founder of Krav Maga Darwin. For more information, visit www.kravmagadarwin.com.au.

The Longevity, Food and Lifestyle

Secrets of Centenarians

As a health expert I am always curious about how people in other countries eat and live and what we in Australia could do differently. In 2010, Japan had the highest percentage of centenarians (34.85 per 100,000 people) and almost double that of Australia (18.75 per 100,000 people). Here’s what I recently observed about the Japanese lifestyle; • Food is treated as an art form. It is beautifully presented and full of good “zen” energy; • Eating is a conscious activity. There is no eating on the street. If you want to eat, you need to sit down and relax; • Fresh, whole foods with high nutritional value, is key. You can’t escape the fish, seaweed, beans, rice and hot soy beans served with beer; • Abundance does not equal gluttony. Japanese shops are full of cakes and confectionaries. These are beautifully presented and wrapped like precious gifts to be treasured on special occasions, but not eaten on a daily basis; • Servings are “down sized”. Drinks from the vending machines are 100mls not 375mls and offer healthy alternatives to soft drinks such as green tea and hot coffee; • Pickled cucumber, ginger, seaweed and all sorts of other pickled goodies are served with most meals. These are fabulous for a healthy digestion; • Fast food, is abundant in 711’s and other supermarkets but not as we know it. The shelves are full of fresh salads, sushi and bento style meals, all with the calories written on the box; • Exercise and adequate rest is part of the lifestyle. Most people walk or cycle to the train station and either sleep or meditate while they travel. Embrace some of these simple habits and who knows, you too could live to be a centenarian.

Spending pocket money on cooking magazines and new ingredients to experiment with in the kitchen might seem unusual to some. Yet for David Griffin, head Chef at il lido italian restaurant at Darwin’s Waterfront Precinct, this is how his love and keen interest in food all began. Dave started his career washing dishes at Crowne Plaza in the Hunter Valley, before progressing through other establishments, including French cuisine at Bistro Molinez, gaining experience and building his repertoire of delicious dishes. A move to the Northern Territory coincided with his final apprenticeship year and the position of head chef at Pee Wees restaurant, Darwin. In taking on a new challenge and an opportunity to allow Dave’s creative mind and ideas to fly, il lido is in store for something truly special. A chef with a genuine passion for food, and with mates both interstate and overseas in the same industry, ideas are shared and evolving. When approached by DonateLife NT to help raise awareness for organ and tissue donation, Dave’s creative idea of sharing platters between friends and family to encourage donation discussion, perfectly complimented the theme – ‘Darwin Dines for Life’. Dave has produced a 3 course meal, available at il lido during DonateLife Week (24th February – 3rd March). The meal is bursting with flavour, variety and local produce, exactly what Dave’s meals are renowned for. Guests who experience

the ‘Dine for Life’ menu are encouraged to discuss their donation wishes with their friends and family, as are all Territorians during this week. DonateLife Week is a national awareness week to promote organ and tissue donation. There were 8 organ donors in the Northern Territory in 2012, giving 29 transplant recipients the gift of life. A trip to Italy is on the agenda for Dave, with the experience planned to shape new dishes at il lido in the future. Cooking is more than just a job; it’s something Dave has fallen in love with. So, this February (24th February – 3rd March) visit il lido and discuss organ and tissue donation with your friends and family whilst experiencing the taste sensation of Dave’s ‘Dine for Life’ menu, because organ and tissue donors save lives, so make your wish count.

The wrong pillow could be causing

Territorians a painful nights sleep Thousands of Territorians could be needlessly suffering from disrupted sleep due to bad pillow choices at bedtime. It is our experience that using the wrong pillow is a common cause of neck and back pain and can have a significant impact on both the quality and duration of sleep. People rarely give much thought to the pillows that they use, focusing almost entirely on the bed. However, if the neck is not supported properly when sleeping it can cause a whole range of problems from neck pain to upper and lower back discomfort, headaches, shoulder and arm pain and restlessness. It is important to choose a pillow that is of a shape and material that suits your sleeping position. A contour pillow, which most Chiropractors advise, has a contour shape which allows the neck and head to be supported, whether the patient is sleeping on their side or their back. This encourages the natural alignment of the spine by providing even support. These pillows are commonly made of foam or latex which shapes to your head and neck and gives your spine support. One of the other mistakes people make is that they keep the same old pillow for years. Pillows do wear out and need to be replaced eventually, just like your bed. As a general rule a quality pillow should last about 2-3 years before it starts to lose its supportive properties. Each week approximately 200,000 Australians utilise Chiropractic care. Many of these patients advise their Chiropractors that they sleep much better after receiving proper spinal care. So if you are searching for a good night’s sleep, discover for yourself why there’s so much more to chiropractic, see a CAA NT Chiropractor today.

Styling Your

Workout PART 3

This month, we are going to explore the wonderful world of complexes. A complex is a series of moves, each one for a set amount of reps, done in succession. So there is no rest until all the prescribed reps and exercises are done. The progression on this exercise is by sets. Each week we will add in an extra set, therefore increasing the volume of each workout. Workout 3- Complexes Barbell complex A1) Deadlift A2) Push Press A3) Back Squat - then rack the bar at waist height A4) Supine Row A great mix of compound lifts and body weight at the end. Complete 5 reps of each without putting the bar down. Total of 20 reps, which should be a challenge! Dumbbell complex A1) Bicep Curl A2) Shoulder Press

A3) Lunges A4) Push up - on dumbbells A5) Prone Row Same story as before, complete 5 reps of each, 10 for lunges, without putting weights down. Yes it will burn a little! Start off a 3 sets week 1, ending at 6 sets week 4. So the moral of these articles is that any good exercises, regardless of the style or type, should have a clearly outlined progression. Otherwise, what’s the point? So go now, explore what the NT trainers have to offer, forget the Internet and learn from a real person!.... Stay Strong, Wes

“It’s just a sprained ankle”

...THINK AGAIN

Taking the necessary steps to treat a sprained ankle is so important in avoiding ongoing issues. On the whole, sprained ankles are not treated well. If you play a sport that has a high level of ankle injury, you can reduce the chances of spraining your ankle through strength and balance training and using braces or taping. Many people believe that bracing and taping weakens the ankle – this is not the case. If you do sustain an ankle injury, you must administer immediate first aid and present for assessment and professional care. 1. Application of the RICER concept • Rest • Ice • Compression • Elevation • Referral to a Physiotherapist 2. Assessment will involve diagnosis of the structures injured. This can be a simple strain through to ligament rupture or even fractures.

3. Early treatment of a minor injury will see you back playing sport almost immediately. The time out of sport is dependent on the seriousness of the injury. 4. Untreated ankle sprains can go on giving problems for months and even years. The normal mobility and strength are usually not regained. 5. If the ligaments are severely injured the ankle will always require ongoing taping, bracing or even reconstruction. So if you hear anyone suggest “It is just a sprained ankle” encourage them to seek physiotherapy assessment and treatment ASAP.

WHY AM I AGEING?? While we can’t stop the clock completely, there are a number of things we can do to slow down the process of aging and keep us looking younger and feeling better for longer.

Dr Ash Sankarayya 1/53 Ross Smith Avenue Parap Ph: 8981 5227 www.thecosmeticstudio.com.au doctor.ash@bigpond.com

1)Smoking The health effects of smoking are well known but what effect does smoking have on your skin? The chemicals in tobacco smoke destroy collagen and elastin, the protein fibers that keep skin looking youthful and tight. Without this, skin is more susceptible to wrinkles, particularly those lines around the mouth that are commonly referred to as ‘lipstick lines’ or ‘smoker lines’. Smoking also deprives the skin of oxygen and vital nutrients essential for repair and rejuvenation. It’s no news that smoking is detrimental to your health, so do yourself a favour and quit. Your skin will love you for it. 2)Excess alcohol We know alcohol is acceptable in moderation however, most of us rarely stick to one or two standard drinks per week. So exactly how does alcohol accelerate aging? When we consume excessive amounts of alcohol we produce free radicals that weaken our cells, causing damage and malfunction. This can affect blood flow to the skin as well as the absorption of vitamins and minerals. Additionally, alcohol induced dehydration makes the skin more susceptible to fine lines and premature wrinkles. Earlier this year an app was released called ‘Drinking Mirror’

which displays the long-term effects of alcohol by showing drinkers what they will look like in 10 years relative to their alcohol intake. The results speak for themselves. 3)Inadequate Sleep We know the recommended amount of sleep is roughly 7-8 hours per night. While the quantity is important, the quality of sleep is even more crucial. Sleep is a very important time for bodies to regenerate cells and repair damaged tissue. Prolonged fatigue has also been strongly linked to dehydration, both of which have an enormous effect on aging. If you struggle to get a good nights sleep try ensuring you are well hydrated throughout the day and practice some deep breathing exercises to put your mind at rest before you go to bed. 4)Sun exposure Excess sun exposure is one of the leading causes of premature aging or ‘photoaging’. Repeated sun exposure breaks down collagen and elastin. The result is rough, leathery skin, broken capillaries, freckles, pigmentation and in some cases skin cancer. We know that the best form of Vitamin D comes from sunlight; however most people obtain adequate Vitamin D from incidental exposure so deliberate UV exposure becomes counterproductive. Sun

damage is literally irreversible, so to ensure maximum protection from the sun make sure you use a SPF 55 sunblock everyday. Remember, prevention is better than cure. 5)Stress We all encounter stress in our everyday lives, however when does stress start to impact our health? Stress causes release of cortisol, a chemical that can become toxic when present for an extended period of time. Cortisol attacks our immune system, decreases muscle mass and accelerates aging. People who suffer from high stress and anxiety are also more likely to frown, tense and tighten their facial muscles more frequently, leading to premature aging. If you suffer from stress try engaging in light/moderate exercise every day and practice relaxation techniques to keep you calm. Remember that with everything moderation and consistency is key. Reap the benefits of a healthy lifestyle so you can look and feel younger for longer. This month’s contribution has been provided in conjunction with Kristina Kyriacou who is a Health and Beauty columnist with her own popular blog. http://kkristinak.blogspot.com. au/ . Get Amongst It

Anytime Fitness What better way to start the year than a trip to the gym! Given that none of us had managed to drag ourselves there yet, this month’s Get Amongst It at Anytime Fitness provided the ideal opportunity to launch into exercise for 2013. We were hoping we would be getting a simple tour of the gym but that’s not what ‘Get Amongst It’ is about is it…

After completing our guest information forms, and giving the staff a run down on our injuries, each of us were allocated our very own personal trainer and led into the expansive surrounds of Anytime Fitness in Stuart Park. Though it may look inconspicuous from the highway, the gym is deceptively large, offering a light filled spacious workout room with an extensive range of equipment. Staff are friendly and engaging and the facilities are clean and modern. Each of us had different fitness requirements so were able to discuss one on one our needs with our trainers. We all received very different workouts, but we certainly all felt results the next day! Shaaron has had a number of injuries in the past so her workout was customized to be low impact but strengthening. “Having not been a regular gym goer for many years, it was great to have such a friendly and personal staff take us through the work-out and not feel intimidated by our lack of expertise and co-ordination in using the machines or equipment. They quickly made a judgement on the type of workout I should be doing, and we worked on rehabilitation rather than pumping my heart-rate, which was a welcome relief to me, and clearly showed their personalised instruction and care factor. Blair had a tough workout but managed to push through it under Amy’s guidance. “She knew anything and everything there was to know about nutrition and training and was very encouraging and supportive throughout my seriously hard ordeal. Lara (the manager) was easy to get along with and has a real passion for fitness. With a shiny pair of new sneakers to break in, Melinda was keen for the workout, and Gosia didn’t disappoint. “We went through a good range of exercises – working on a variety of muscle groups. I prefer low impact high intensity training and Gosia provided me with just the right exercises to focus on specific muscle groups, to build core strength and tone. Anytime Fitness offers a friendly and well-balanced environment for both genders. All members are there for the same reason – to get fit and stay healthy. With it’s 24 hour access, you can pop in anytime it suits – after work, after a movie or before the kids wake up! There are security cameras on site and personal alert lanyards for those working out late at night, so you can feel secure and safe whilst enjoying your workout anytime. Anytime Fitness has almost 300 clubs throughout Australia and is an international brand with 2000 clubs world wide. The best part – membership at one gives you access to all of their gyms worldwide, 24 hours a day. There really are no excuses left.

THE SAILOR

Well known local yachting couple Roger (Ollie) and Claude Collins have just returned home after their 2nd cruise which lasted 1 ½ year. They have now been cruising for 4 years incorporating (1st cruise) the offshore Australian Indian Ocean territories of Ashmore Reef (3 weeks), Christmas Island (6 weeks)and Cocos Keeling (8 months), the Bay of Bengal/Andaman Islands, offshore northernmost islands of Sumatra, Thailand, Malaysia (Langkawi, Penang), Malacca Strait, Singapore, South China Sea, Sarawak and Sabah in Borneo, Indonesia and home to Darwin, family and friends.

After completing repairs and alterations to their yacht L’attitude, they set off again for their 2nd cruise, this time spending many months in Indonesia exploring the remote and very beautiful West Papua region including Raja Ampat (Four Kings) laying just north and south of the Equator. They then headed north with the idea

of sailing through Micronesia in the North Pacific. On the way to Palau, they spent three incredible weeks on a small atoll called Helen Reef (part of Palau); on the following north-east passage from Helen Reef to Palau, having had L’attitude airborne twice, they decided to abandon their cruising through Micronesia. The Micronesian archipelagos are wet and windy places and after spending three wonderful months in Palau and hearing the locals declare:”If we have 3 days without rain, it’s Dry Season!”. So on leaving Palau, they turned west for the Philippines, that was the best option. So they spent another 3 months cruising the Philippines, then headed back to Borneo, hauled the yacht out, antifoul and repairs before sailing back to Darwin via the West Papua region of Indonesia again. Now safely moored in Cullen Bay, you could catch up with them for a yarn at the Darwin Sailing Club, where you too could learn to sail and fulfil your cruising dreams! With the majority of the building leased to long term Blue - Chip Oil and Gas Industry clients, these apartments offer 4 and a half years continuous guaranteed rent (leased until April 2017) with returns on investment of between 6.4% and 7.4%.

An investment like this also offers excellent depreciation benefits. LOVE YOUR Power-Water Bill It’s February! The month usually symbolizing love. This year most of us might turn a bright red-yet not due to the loving thoughts of a beloved person in our life but instead from seething anger & resentment towards a huge power-water bill! Times are a changing and a way to reduce our outgoings is to ultimately change our own behavior and habits. To some of us, changing our daily habits & routines can seem like a huge pain and really not worth the effort. If a complete overhaul of lifestyle is just too overwhelming, then a step by step approach would be fairly easy to implement within your household and/or workplace. Surprisingly massive changes could be made possible without really realizing it. It often comes down to what it considered usual & ‘normal’ within our community. While living in Melbourne about 6 years ago when water restrictions were increasing at a seemingly exponential rate, people were dramatically changing their habits. Continuous education and new water efficient products were popping up on the market all the time making conversion easier. People seemed to be inventing new innovative ways to save water all the time. Some immediately installed efficiency devices so could use far less water yet with having a similar lifestyle with lush gardens, etc. It was common for almost everyone to use a bucket in the shower to catch the excess water while waiting for the water to heat up on a chilly winter morning. The bucket water was considered gold to be reused often on the garden, handwashing, etc. Jokes abounded that if the water restrictions stages continued to increase everyone would have to be using ‘eau de toilet’ to brush their teeth. Thankfully it didn’t get to that point as most were contributing their part. We then came

up to visit Darwin and almost had heart attacks at the sight of seeing the Parliament buildings being pressure washed for hours. With our then ‘water restricted eyesight’ that occurrence had the feeling somewhat equivalent to watching a horrific car crash-alarming & distressing! With now ‘welladjusted Territorian eyesight‘ watching people use enormous amounts of ‘unrestricted’ water on a daily basis seems, well, pretty normal. One’s adherence of what is considered ‘normal’ certainly can shift. It can shift towards sustainability particularly when made easy with an abundance of knowledge, financially viable and easily attainable alternatives. Whoever is in the water & energy efficiency business could be tipped to do well in this upcoming year. Keep an eye out however for ‘Greenwashing’ as unfortunately there can often be unscrupulous people & businesses out there jumping on the bandwagon trying to cash in and make a quick buck by slapping words such as ‘eco’, ‘sustainable’ & ‘environmentally friendly’ on products and services that are not at all up to par. Get your facts from reputable places, ask questions & ask for referrals. We certainly do have a completely different & unique lifestyle up here in Darwin which most people cherish and would love to maintain. Other places in Australia and the world have been forced to deal with sustainability issues years ago due to the reality of genuine shortages. This hasn’t particularly been the case up here in Darwin

(especially during the Wet season) and plenty of long term & newer Territorians probably wouldn’t like to have restrictions placed upon them in order to reduce power and water consumption. A few innate Territorian values appear to be those consisting of freedom, pioneering & inventive attitudes. To produce a unique Territorian sustainable wisdom, it could be considered clever to borrow sustainable ideas from other cities and use that pioneering and innovative Territorian spirit to create unique tropical products, buildings & systems that have that an attractive and irresistible point of difference.

R E N O V A T I O N F O R R E S A L E Today’s hot property market has spurred a dramatic increase in the number of Territory investors buying homes, improving them and selling them or renting them for a profit.

Robert Harding Northern Territory HIA Executive Director

It’s a business, and it can be a financially rewarding business indeed. But how can you be sure that you are making a sound investment? And how can you make sure you don’t over capitalise the home? There are many factors to consider when evaluating whether a property you have purchased with the intention of updating is going to provide a good return. Of course, if you were to watch the numerous home improvement programs on television that flirt with the idea of making a 100 per cent profit simply by slapping paint on the walls and updating the garden and fence, then you could easily be fooled. In reality, there are no guarantees that a new pergola will boost a home’s overall value – even in a hot seller’s market. It takes plenty of clever planning and research to ensure you are not misreading what the marketplace is demanding – and at what price. Cosmetic touches certainly go a long way. Of course the most affordable is a new coat of paint which can instantly change the appearance of the home. Different colours can be used to create a certain mood. Other changes include new flooring, updated fixtures, windows, doors and a landscaped garden. Beyond the affordable cosmetic touches but well short of embarking on major renovations are the home improvements that net full market value including a new roof, kitchen and bathroom. Enlist the professional services of the HIA National Kitchen and Bathrooms member - a group of qualified designers who will help you create the kitchen or bathroom of your dreams.

It’s important to note that updating one bathroom and not the other, or landscaping the front yard and not the back will only alert buyers to what is left to be done instead of appreciating what has been done. Visit open house inspections in the neighbourhood and keep a tab on the sale price so you get a good understanding of what people are expecting to pay. When looking at a home to update for profit, you’ll need to consider its location and the surrounding homes. If you are extending the home, it’s important it blends with the home’s existing features and that of the other homes in the street. Renovating for the purpose of reselling for a profit can be good business, but only if you’re willing to do your research and carefully evaluate the marketplace. Speak to a HIA builder to advise you as to what can be done to improve the value of your home. And remember, if you’re contemplating structural changes to make a home more saleable, be aware that poor workmanship will not add value to your home and may in fact reduce the price you achieve! Avoid tackling jobs yourself that are best left to the professionals. To be guaranteed of quality results, use a qualified HIA member who will ensure your job is carried out in a timely and professional manner. assistance leads to progress “My name is John-Paul Thorbjornsen, and I live with my family on our block in Berry Springs. I have a passion for nature and it’s beauty, but as well for order, and it has been the combination of these two that has fostered a distaste for weeds, which are the product of disorderly human activities. Ever since a young age, I was endowed with the task to manage and eradicate the weeds on our property, as slowly and steadily, gamba grass and mission grass were taking over the native grasslands on our block.

PL ANT S

WE

LOVE A selection of plants to fall in love with from members of the Nursery and Garden Industry NT.

Fragrant Pandan, (Pandanus amaryllifolius, Pandanus odorus) is a great plant for Darwin landscapes according to Scott from Charles Darwin University. The foliage produces an aroma throughout the garden that will remind you of those romantic holidays in Bali and elsewhere in Indonesia. With dark green strappy leaves without the prickles of our native pandanus, it grows in clumps approx 1 to 1.5m high. Self generating from the base Pandan is excellent as a border plant, feature plant, mid level fill plant, or even a pot plant. It likes full sun to semi shade. The foliage is used for flavouring for cooking rice, poultry and fish, and the colouring from the foliage is used for Indonesian desserts. Hardy at Ironstone Lagoon Nursery loves Allosyncarpia ternata, a beautiful native tree, endemic to the sandstone country of Arnhemland and Kakadu National Park.
