In addition to being a successful model, this beauty’s got brains too, studying her final year of a Communications degree at Charles Darwin University. Cassie balances all this, on top of motherhood, raising daughters Akaila, 6, and Scarlett, 2. “People often ask how I manage work, study and family,” says Cassie. “I owe my success to my family. Especially my mum, she is amazing. Without their love and support, I couldn’t manage as much as I do.” Cassie proves that with determination and strong family values, women can achieve success and balance. “I try to maintain a good routine, and I do my best to ensure I spend as much time as possible with my girls, when I’m not working.” She’s not always perfect; “I find it extremely hard to keep the house clean.” But that’s ok; we’ll forgive her for it. “My mum always says it’s not the end of the world.” Cassie began modelling four years ago when she was crowned RALPH Australian Swimwear Model of the Year 2010, in her first ever modelling competition. Cassie went on to model interstate for calendars and magazines such as RALPH and ZOO Weekly. She also won ‘Who looks best in their little black dress’ 2011 and ‘Miss Monsoons’ 2012, then decided she wanted to focus on her career rather than modelling competitions. Cassie has worked locally, modelling for publications including Resident and Darwin Life Magazine, as well as appearing on the catwalk and in several print and television advertisements.

Passionate for the outdoors, the glamour of a four-year modelling career hasn’t spoiled this “born and bred territory girl.” “I grew up rurally at Humpty Doo, and absolutely love the farm life. My favourite thing about being raised in the bush was the lifestyle. I love animals, riding horses, quad bike riding, fishing and hunting.” Ambitious and gorgeous, Cassie is driven in the pursuit of a career in the media industry. “I have recently started television presenting alongside Rick Knight, the Darwin Gig Guide is a guide to what’s on at local venues such as: The Deck Bar, Shenanigans, Discovery Darwin, The Precinct and The Pickled Parrot Bar and Lounge. Viewers will catch us on channel 9, GO and GEM, every Tuesday, Wednesday and Thursday night.” Cassie is proud to be appointed Ambassador of the Darwin Turf Club. “Fulfilling the role of 2014 Carlton Mid Darwin Cup Carnival Ambassador is the perfect opportunity for me to build a profile for myself, whilst promoting one the territories largest social and sporting events. This is the perfect platform for me to get my name and face recognised,” she said. “As a born and bred Territorian I have grown up with horses. My family has always been involved with the racing industry and my Pop has part ownership in several racehorses, so it’s an extremely exciting opportunity for my entire family.” We can expect much more to come from this notable young woman. “You can never be sure what the future holds, but I think people will see a lot more of me from now on.”

“I resigned from my job as a flight attendant in 2010 and have worked within the fashion, marketing and media industries since,” says Cassie. “I have even worked behind the scenes on Darwin Life Magazine and NT Life Hotel Book.”

Alana Brown looks just like any other typical 20-year old but you won’t see her donning a fascinator or frock during the 2014 Carlton Mid Darwin Cup Carnival, she prefers dressing up in jockey silks. It’s lucky really, because between working full time as an insurance broker assistant, studying, early morning rides, stable work and racing weekends she would never find the time to shop! The 6th-generation Darwin-born youngster will instead be at the centre of attention on the track, skilfully steering a muscle-bound racehorse beneath her slight frame across the iconic Darwin Turf Club dirt track. The promising apprentice recently claimed her biggest win to date when she rode her Grandfather’s horse Cheville to victory with a skilful surge to the finish line in the $20,000 QBE Cup on Saturday 14th June. “It’s a feeling I can’t really describe, it was a very emotional win and I haven’t had a smile on my face like that in a very long time. It’s a rush of adrenalin, pride and just general happiness all in one,” said Alana of the victory. But she’s the first to admit it’s a tough industry, having suffered countless injuries along the ride. On back-toback Saturdays during last year’s Carlton Mid Darwin Cup Carnival her horses flipped in or near the barriers - the second landing directly on top of her. “I stupidly didn’t go to hospital straight away and waited a couple of days. It turned out I had sprained my ankle, fractured my nose, torn some muscles in my lower back, crushed a vertebrae and suffered a slight slipped disc.” “I had to re-strengthen my back, just trying to lift something was difficult, it was very frustrating but I had a lot of support. It took almost five months to fully recover, with plenty of physiotherapy.” There is no hesitation when asked where her inspiration comes from - her father -former jockey and now trainer Stephen Brown. “He’s very, very knowledgeable both with riding and training. He’s always supported me, given me pointers and let me keep racing even though I probably rode a few terribly,” said Alana of her number one role model. “I may not be as physically strong a rider as he was, but he’s always said it’s not about how hard you can hit them, it’s about keeping them balanced and thinking well throughout the race.” Now firmly back in the saddle and in great form coming into the 2014 Carlton Mid Darwin Cup Carnival she says she would be ecstatic if she could manage to claim victory in a feature race. “I have always ridden horses, I can’t say there was one real deciding factor that made me want to do it, I’ve always wanted to. It is hard work and is definitely something that you have to love,” she said.

A legendary AFL player, Dipper forged a name as one of the toughest men in the game during his career with the Hawks. He now has a new passion – horseracing – with a particular focus on the Darwin Cup. A1. I host a tour with Melbourne Cup winning jockey Michael Rodd and my great mate Shauny Wallis from Group 1 Racing & Events each year bringing 30 racing enthusiasts to the Carnival. Playing for Hawthorn and winning premierships was amazing though I have a new goal and that is to win the Darwin Cup. Hopefully we can do it this year with Agrippa. A2. I attend at least 50 events every year but the Gala Ball is the one I look most forward to. I don’t think there is another place in the world that serves up a party of over 3000 people fully under the stars. The entertainment and hospitality is truly world class. A3. Back with bells on! This year our tour is titled “unfinished business”. Many of last year’s tour members are coming back due to the very sad circumstances of Simone Montgomerie’s passing. Hopefully 2014 can be a wonderful celebration of racing.

A trip to the ‘horse dentist’ sounds even more frightening than the human kind - forget fillings; horses have their teeth manually filed down with a mega-sized device resembling a nail file! Many young horses need their teeth pulled out…and clearly have little access to teeth whitening facilities.

Fast Footwork

Like a lady’s killer heals, a racehorse’s footwear is critical to their raceday attire. Thoroughbreds get new shoes around every three to four weeks. Their feet grow like human toe nails and need to be trimmed and filed. Their shoes don’t just slip on though…they’re nailed on!

Their shining coats and long-flowing tails don’t all come naturally a racehorse’s handler is also their hairdresser. They get a wake-up hair brush in the morning and Darwin racers have a tough time ridding themselves of the dirt from the dirt track after training every day. On race days they get the deluxe treatment with a full body shampoo and a tail condition.

Carrying Weight

For a thoroughbred a single race can yield the weight loss of a 12-week boot camp. A horse can loose 5 - 10 kgs over one race. But like most fad diets they do tend to quickly put it back on within two – three days.

Someone who says it like it is, knows her stuff, gives a damn about you and what you want an, who once upon a time, couldn’t look at herself in the mirror without shrieking. Meet Holly Copping. Holly was a 12-­ year old like any other; vibrant, managing hormones and absorbing the world. She was also accompanied by the endless embarrassment that dogs those covered with chronic acne. Despite battling the anguish Holly was determined to “save her own skin.” It was costly in many ways, but from the barrage of teasing and torment came a personal interest in skin care. Holly’s Diploma of Beauty Therapy fuelled her ambition to some extent but becoming a fully qualified Dermal Therapist satisfied her soul. She completed a two-­year Advanced Diploma of Cosmetic Dermal Science and also became an IPL (Intense Pulsed Light)/Laser Safety Officer, courses delivered by the Australasian Academy of Cosmetic Dermal Science (AACDS). Holly became the first in the Northern Territory to achieve this level of training allowing her to perform laser therapy, chemical peels, skin needling, microdermabrasion and other advanced beauty/cosmetic procedures. Qualifying with these skills has not only provided Holly with a vital platform for professional longevity but her own enterprise that specialises in laser and skin treatments, Territory Laser Clinic. And occasionally in this industry, it’s good to wear your heart on your sleeve. “I hear many personal stories in my consultancy room and do my best to hide the tears behind my laser goggles,” confesses Holly. “People open up to me and their hardships are unfathomable at times from deep depression, the loss of a loved one, divorce, trauma or miscarriage.” Holly’s clients also come from all backgrounds and ages, from those batting acne at 11 to senior people wanting to feel better about themselves. “We even have teenage boys come in with their parents and I can comprehend how this feels,” assures Holly. “It’s embarrassing, you’re unsure of what’s going to happen and feel so insecure. But I build a strong rapport with these kids and from then they want to come in on their own. You morph yourself into becoming someone clients can trust and you follow their lead.” For many looking for a solution to a problem, visiting Territory Laser Clinic is often the “last port of call and most are jaded or skeptical,” says the woman who goes above

and beyond her nine to five. “But I constantly reiterate to clients they’re more in control than they think they are. Ashok, a computer science engineer who completed a Masters of IT Management had operated a successful computer service business in Sydney from 1999, but he and wife Neethi were destined to make a greater mark in IT, and they are. “We wanted to grow and try more options so we travelled Australia to see the country and researched different businesses and locations. Christos Panas, co-owner of Cafe Del’ Art, is a famous Darwin barista and veteran of the hospitality industry. For almost two decades he has tasted and created the very best in coffee and even claimed an illustrious title at the National Café’ Biz Pura/Dairy Farmers Latte Art Championship in 2013. Basically, the man’s a genius when it comes to turning the top layer of your coffee into an artist’s canvas. “I started doing latte art in 2005 and experimented with different pours and technique as it was no longer just about flavor and taste”, reflects Christos. And it is mesmerizing, to say the least, to watch Christos and his top Barista, Julian Mou at work. Christos is now filtering his knowledge, skills and experience into the Café and together with longtime friend Maria Simeon the pair is offering Darwin something different topped with good service. And, Maria believes it’s the best decision she has ever made. “I absolutely love it here alongside the breezeway”. hen clients open the door to Kerry’s Massage they know one thing for certain, they will be treated by one of the best, an expert. Pei Zhao (Kerry) is approaching her second decade in remedial massage and gained every ounce of knowledge and skill in her craft from one of the most revered men in China. Sun Mao Cai’s skills remain at the highest echelon of traditional Chinese medicine. His gifted student, Kerry, trained with the highly respected physiotherapist for many years, became a qualified remedial massage therapist and acupuncturist through the Qingdao College of Chinese Medicine and 15 years later created Kerry’s Massage; four well patronised, massage centres from Humpty Doo to Millner. Eradicating people’s pain is what fuels Kerry’s thriving business and she accomplishes this on an hourly basis with the help of 15 staff every single day, except December 25. Remedial massage is her speciality and she thoroughly understands the human body intricately and has mastered the acute ability to access the body’s pressure points. The most common complaints and frustrations that Kerry hears from a number of her clients is the dreaded back, shoulder and neck pain; a condition many of us suffer but tend to ignore, endure and accept as a normal part of our lives. Others of us have tried and tested remedies that have hit the hip pocket hard or have been costly, mentally. When there is pain there is not only physical discomfort, the emotional wear and tear can

erode the most robust of mindsets. Some people who decided to seek Kerry’s help are walking examples of why Sun Mao Cai’s teachings have given Kerry the vehicle to change lives. “A woman in her late 40s who worked as a receptionist and sat at a computer all day had three car accidents here in Darwin”, shares Kerry. “It was just astonishing to hear this but she came to me when I first started the centre in Palmerston in 2012 and saw me every week. She was tired and wasn’t walking properly and hunched over. Now she visits the centre once every two weeks and is much better and often says she ‘feels like a new woman’ because her pain is significantly less”. One of the most heart breaking stories Kerry has even encountered was of a 55-year old man who came to see her “almost in tears” and with the fear of being crippled. “He was at work one day and lifted some heavy timber and pinched a nerve and was incapacitated for three days”, remembers Kerry. “He was so worried he was going to become physically handicapped and was, naturally, extremely distressed. I made a special Chinese medicine paste and applied it to his back and after a few days he was walking around just as he did before the incident and as you can imagine was overwhelmingly relieved”. Even helping youngsters (aged 10 and older) with sports injuries has allowed Kerry to share her expertise further. “One girl who is about 15 and plays soccer regularly comes to our centre every two weeks with her sore and tight legs and at the end of every appointment she turns to me and thanks

me for my magic hands”, says Kerry, who is constantly furthering her own skills and training every couple of months at the Australian Traditional Medicine Society. It’s very rewarding to help children too and teach them about looking after their bodies”, she adds. Kerry’s advice is given generously to all her clients, no matter what age or ailment. “I share with people how they can relieve their pain themselves with special exercises and some I also give Chinese herbal creams and oils to assist their recovery and rehabilitation”, adds the woman who is booked out almost every hour across Darwin. And for those of us who have tried everything but still suffer in silence Kerry has this message for you all. “Come and see me. I can assess your pain and see what I can do for you. Some people want magical cures but I will give you all I know to find you an answer”.

Celebrating the 2014 NT Volunteer of the Year Awards

The Top End’s hardworking volunteers were recognised for their service at a special celebration at Parliament House in Darwin, and at Lasseters Hotel Casino in Alice Springs during National Volunteer Week. More than 120 people were nominated for this year’s NT Volunteer of the Year Awards. Chief Minister Adam Giles, who presented the Awards in Darwin said on the night, “it is fantastic to see so many Territorians giving up their time to help others and contribute to the community. I don’t know where we would be without you. In fact, I am proud to say that Darwin has the highest proportion of people who volunteer out of all Australian capital cities.” The Awards recognise the tireless work done by organisations and individuals across the Territory. “What better way to kick off Volunteer Week than by offering our thanks to those who put their hands up and get involved in their community.”

This issue of DarwinLife, we farewell a close friend who has made a lasting impression on the Northern Territory. As we wish photographer Mark Hamilton all the very best for his future endeavours in Queensland, we take the opportunity to elaborate on the work, community contribution and talent of one of Darwin’s most reputable photographers. Originally a Sydneysider, Hamilton has spent the greater part of the last 25 years in Darwin, working as both a helicopter pilot and photographer. What had started as an interest and hobby quickly escalated to a successful and envied career. On first impression it is easy to assume Mark Hamilton’s average day is spent lounging with beautiful people in idyllic locations– and in today’s digital age, under those seemingly perfect conditions – aren’t those pictures essentially taking themselves!? Surprisingly, a beautiful focal object and appropriate setting are only a fraction of the ingredients required for the perfect shot - unsurprisingly, ‘auto’ is not an option. Reputably one of the easiest and most pleasant photographers to work with, it makes sense that Mark has been trusted to photograph everything

from blushing brides and happy families to top models, bodybuilders and every event in between. His photographs have regularly graced the covers and pages of DarwinLife and we thank him for introducing us to some of Darwin’s most beautiful women, photographing our Model of the Month each issue. Mark has worked with many a famous face and his portfolio work has helped launch the careers of local TV personalities Cassie Valestro and Amanda Pernechelle as well as the likes of international sports model Amber Walker and the current Mrs Australia, Kate Johnson, to name just a few. Mark’s dominance in glam photography (his favourite style) is well deserved beyond his talent. Hamilton Photography NT has selflessly provided countless hours

(often pro bono) helping aspiring models, actors and athletes build their portfolios while happily sharing expert advice and equipment with other photographers. Then there’s the Candy Jam Colour Run for Leukaemia and a Bikini Babes Calendar to fundraise for Type-2 Diabetes, just a sample of his talent giving back to the community. Perusing his reel of flawless faces, sculpted bodies and amazing backdrops only reinforces the idea Mark has won the job lottery - but it’s how easy Mark makes it look, that reveals he has truly mastered his art form. His sense of light, intuitive sense of composition and knack with exposure paired with his good nature, professionalism and credibility have made him one of the most talented and renowned photographers and faces in the NT.

Local First National Agents Shine at National Awards Night Jeremy O’Donoghue from local Larrakeyah agency, O’Donghues First National Real Estate, received several national General Excellence and Marketing (GEM) Awards at a black tie dinner, attended by more than 380 agents from across Australasia and the South Pacific, during the network’s Annual National Convention that occurred in Darwin recently. If I claim helping businesses cut through overwhelm and get back to the basics you would expect my office to be organised. Do an environmental stock take on your workplace and kick start your move to ‘walking your talk’. Some questions to think about are; • Are there smiles on people’s faces? • Is the furniture dated, comfortable or welcoming? • Do the lights set a relaxing tone or blind you with sterility? • Do the pictures invite people into your world and inspire?

• Does the information available show your connectedness to other services? Note: please remove all outdated magazines; no matter your message! • Does the staff uniform or clothing say professional, fun, practical or plain daggy? • Is your waiting room ‘vibe’ depressing or energizing? • Do you play music that invites people to stay or make people cringe? • Is your reception layout showing you as welcoming or unreceptive? • Are your meeting rooms bare and lifeless or do they create an environment that encourages open communication and trust? • Lastly and importantly, do you fit your message?

I want a

…focus and not be “all over the place” We have just spent two weeks in Alice Springs working with some very wonderful and courageous people. We heard the same thing, that they wanted to calm down their mind, to stop the chit chat that goes on and on especially at night. They want to control their thinking so that they could get the results that they wanted, so that they could focus and not be “all over the place”. You know what they wanted was to make changes and they wanted results! It’s always fascinating when we work with a business that is making changes. Most of the staff prefer to be looking in the rearvision mirror and resist the changes and yet when it comes to their own life, its change yes… I want it now! Here is the deal though, as long as the individual is in control of the change it’s all OK. That is the difference that makes the difference. There are times when we are not in control of our lives, such as when changes are made in the workplace and we have no control, no input and often it comes suddenly as a surprise. Well the same thing can happen in life; take Marlene middle aged working hard preparing to move to another state with her husband, she is exhausted getting her young family prepared arranging schools in another state the list goes on. In the car loaded up for the airport run with the family Marlene asks her husband, have you arranged it so that we all sit together? His reply is like a knife going into her heart and she holds her breath in stunned silence…”I am going alone you and the kids stay here, I have someone else meeting me at the destination and I am

making new start with her not you”! So imagine how Marlene felt, a change was forced upon her that she did not ask for , was not in control and could not stop her mind from spinning from one question to another. As the plane took off Marlene sat in the car park in her car loaded up with her life as it was only one hour ago. Six months on she joined our NLP Practitioner Certification course and now she has gained control of her mind, she feels calm and she is creating her new life and she is happy. So happy in fact that she is grateful that he took off on that big silver bird, her life has never been so good, she has regained her purpose. Night of Nights Over 480 people attended the Australian Hotels Association (NT Branch) premier event, the Aristocrat Technologies Awards for Excellence, at SKYCITY Darwin on 22 May. These prestigious Awards recognise pubs, hotels, clubs, restaurants and employees that exemplify excellence within the hospitality industry. Over 150 nominations were received and judged by a panel of industry experts. The top honours of the evening went to Nightcliff Sports Club, winner of the ‘Best Overall Small Club’, Gapview Hotel who won the ‘Best Overall Regional Hotel’, Cazalys Palmerston Club who won the ‘Best Overall Large Club’ and The Parap Tavern who took out ‘Best Overall Metropolitan Hotel’. “All of the award categories were extremely competitive and it is exciting to see the Territory’s hospitality industry continuing year on year to ‘raise the bar’ across all facets of their businesses,” said AHA (NT) Chief Executive Officer, Amy Corcoran. The generosity of the Territory’s hospitality industry was also acknowledged, with Noonamah Tavern and Nightcliff Sports Club awarded for their ‘Outstanding C o m m u n i t y Service’. Both venues are pillars of their community, continually running and organising fundraising events for community organisations, sporting teams and charities. Also recognised for her outstanding fundraising efforts was Belinda Marshall from Emerald Springs Roadhouse. For 3 consecutive years Belinda has raised the most money, not just in the NT but across Australia, in the Leukemia Foundation’s U.G.L.Y bartender fundraising campaign, raising more than $150,000. Belinda received a standing ovation from the audience for her inspirational fundraising efforts. Well known Territory icons’ the late Timothy and Catherine O’Shea were inducted into the Mayse Young Hall of

Fame, which recognises individuals who have significantly contributed to the NT’s hospitality industry. Importantly, staff were also recognised, with Louise Brennan from the Cavenagh Hotel winning the Service Excellence (Front of House) Award and the Service Excellence (Back of House) Award was won by Tess Spedding from SKYCITY Darwin. “As a service industry, hospitality employers rely heavily on their staff to ensure locals and visitors alike receive outstanding customer service,” said Mrs Corcoran. “The employee awards are a great way for our industry to recognise those individuals who excel at their jobs and provide excellent hospitality.”

MEET JANET HAMILTON GENERAL MANAGER, DARWIN CONVENTION CENTRE manage the Ranger Mine. This was a great experience and exposed me not only to the mining industry in the Territory, but the incredibly beautiful West Arnhem region. There is something about the Territory, which has drawn my family to this part of Australia since the 1940s. My Dad was stationed at Batchelor in the Air Force in World War II. My eldest brother, Tony was the crane driver on the Casuarina Hospital build back in the 70s and came home for Christmas on the eve of Cyclone Tracy. My brother Bruce returned with Tony, who both worked for John Holland as part of the rebuild. My uncle was one of the engineers who built the Darwin Entertainment Centre and I now have two nieces who live here who work in the health field. It’s only been eight months since Janet Hamilton was appointed the new General Manager of the Darwin Convention Centre. Let’s find out more about her background, her commitment to the Centre and the events industry, and her vision for the future. Can you tell us a bit about Janet Hamilton, pre-Darwin Convention Centre? I grew up on a farm in North West Tasmania and as a lot of Tasmanians do, I headed to the “mainland” and never really went back. I lived in Perth, Sydney and Melbourne before moving to the Territory five years ago. I’ve been incredibly lucky to be involved in the events industry since the 1990s, holding some really amazing roles from being the Sales Manager for Opera Australia, then on to being the Special Event Manager for the Sydney Olympic Games where we delivered over 300 events, hosting everyone from rock and film stars, to sporting heroes and royalty. I then became the Major Events and Sponsorship Manager for the Sydney Harbour Foreshore Authority looking after the busy Darling Harbour and Rocks precincts events. In 2003, I moved to Melbourne and took up the role as Place Management Director for VicUrban, where I oversaw the precinct operations for Melbourne Docklands as well as the event planning for the 2006 Volvo Ocean Race and Commonwealth events which were held in the Docklands precinct. This led to a contract to prepare the operational and marketing plans for the Galway and Singapore Stopovers for the 2009 Volvo Ocean Race. In 2008, my husband Mike took a two-week contract in Darwin, which turned into a longer-term contract and then a permanent move to the Territory. For twelve months we commuted and then we made the decision to make Darwin our home. At this stage, I took a completely different career move by taking up the role of External Relations Manager at ERA, who

What convinced you take on the role of General Manager? What are your key tasks as DCC’s new head honcho? In July last year, Mike and I were going on holidays to Italy and on the Singapore route, I sat beside Malu Barrios, then the GM of the Centre. Malu told me she was moving back to Sydney and her role was being advertised. I jumped at the opportunity to get back into the events industry and was lucky enough to secure the position last October. My key focus has been in setting the strategy for the next few years and overseeing the operational and sales direction of the Centre. Before DCC’s opening in 2008, it was almost unimaginable that Darwin would have an international standard convention centre. What impact has the Centre had to our city or the Territory over the years? I think the timing was right for such a world class Convention Centre to be built in Darwin, considering the development that we are now seeing in the Territory. Since opening the Centre the economic return from delegate spend is $230 million and we hope to see this continue to grow as we attract more business events to Darwin. We are the closest Convention Centre to South East Asia and we are seeing a trend with national associations selecting Darwin as a convention destination to attract Asian delegates to their conventions. This also aligns with the Northern Australian Development strategy to establish the Northern Territory as the gateway to Asia. What’s in store for the DCC In the next year or so, what do you hope to achieve? Sixty five per cent of our revenue comes from conventions, mainly those organised by national

associations. We will continue to focus on winning business events from this important segment of the market. We have also started to focus our sales initiatives on Singapore and Kuala Lumpur now that we have direct flight access to Darwin to and from those cities. We are also keen to work with Government and our Northern Territory Ambassadors to attract business events which will promote the Territory, create business opportunities and provide strong economic return. We are working hard to increase our business in the exhibition, special event, banqueting and concert markets, so we have a well-rounded variety of events at the Centre. How would you describe yourself in one word? Passionate – about my family, my job and Darwin. How do you start your ordinary day? How does it end? And just for fun – when you’re not at the Convention Centre, what are you doing? I like to walk around the Centre and say hello to everyone, review what is happening that day and get a feel for how activities are coming together. I really love talking to the team and finding out how their particular department is doing. It’s important to be engaged and experience what is happening in the Centre and to ensure we keep our standards high. I end my day at the Centre by ensuring that we have responded to everything from that day and we are set up for the next day. I really encourage the teams to plan well in advance. I am a great believer in forward planning, so you can identify opportunities and cut off any emerging issues early. For fun – Mike and I really love cooking and catching up with friends. I’m also an avid reader and I’m on the Board of Brown’s Mart Theatre, so we go to as many shows as we can. We love the relaxed Territory lifestyle and enjoy all that Darwin has to offer. What are some valuable lessons you have learned as a female business executive in the NT that you can share with our readers? I don’t really worry about the whole male/female angle too much. Sure, I understand the issues and have faced the dynamics of gender issues from time to time over my career, but I firmly believe that if you have strong objectives and set out to be the very best you can be every day, and then you will be okay. I try to be consistent, calm and I strive to see situations through different “lenses”. Truly believing in what you do every day and being passionate is also very important.

Michael states that “being understanding to an individual’s needs and being available to clients 24/7 is really the hallmark of my practice.” “He’s great with clients, and people love him. He genuinely cares. When he says he’s going to do something, he

does it,” says Tippett. “One thing that’s particularly important in criminal law, he gives realistic, accurate, and immediate information, so that people are in a position to make decisions early. It can make the difference between a person having a life, and not having one. It can be that critical from time to time.” Michael was destined to become a lawyer from a young age. “My family would say I’ve always loved to argue,” says Michael. Combined with a heavily analytical mind, Michael thrived in his law studies at Bond University, Gold Coast. Michael shows continued growth, honing his skills in the courtroom. “I love the courtroom and the law. Law is forever changing and evolving and you need to adapt with it. The law is like a living, breathing creature. There is always something new to learn and new skills to develop.”

Among his peers, Michael shows exemplary skills as an outstanding legal practitioner in the Northern Territory. “As time goes on, he will by far be the most recognised lawyer in the Northern Territory,” says Tippett. So, do try it when you walk in and Kosta Roditis, brother Vangeli, mum Michele and dad, Bill, will turn their heads in utter delight. The Roditis family thrives on its homemade philosophy and has done since owning and operating Sorriento for seven years in town. Kaffeine, Koffee & Grill owner Kosta, an “all rounder who knows 90% of everything”, according to his mum, did his homework finding the family’s new location in Casuarina Shopping Village with its massive car park. The Roditis’ café concept is a one-off in the area and with their unique attitude and cuisine the four are capitalising on their merits. “Having a full time barista is key and Vangeli’s eight years of skill are a blessing

for Kaffeine, Koffee & Grill”, prides Kosta. “He has programmed the machine himself, has the coffee just right so you get quality every time and even our former customers from the city come out for a cuppa made only by Vangeli”, who has been trained by, Brian Raslan, one of the best baristas in Australia, and believes “coffee is not about designs, it’s about flavour”. However, “mum is the secret ingredient to all our food”, insists Vangeli. Even her traditional homemade fruit salad is made fresh every morning with quality goods. “Everything’s made the way I make it at home”, delights Michele, “and this makes all the difference with my pastries, spinach and/or fetta pies, honey puffs, bakalava, ekmiak, milfae and triffles and the bouatsas, which each have a special essence to them”. “Dad’s in charge of the preparation of our home-style marinade for the charcoal chickens, which are prepared on charcoal daily, and the stacking of the yiros lamb, pork or chicken meats”, adds Kosta. “He

always does our Easter, Christmas and special occasion lambs and brings all his knowledge and commitment to the café”, which was once four bland walls of an office block transformed into an absolute masterpiece. And, the wow factors don’t stop there with Kaffeine, Koffee & Grill also offering catering, all-trading hours access (with two entrances to the café) and new lunch menu additions from home-cooked pasta, lasagna, parmigiana, hot roast roll with mash and gravy. Moist, tender, succulent scallops. A perfect starter. The Basket Combo ($22.00) was our second choice; a great entrée to share with friends. Beautifully presented, on a bed of vermicelli noodles and an accompaniment of delicious pickles vegetables, plum and pineapple and chilli dipping sauces was char grilled beef in betel leaf ’, tasty parcels of spicy beef; prawn sugar cane, minced prawn wrapped around juicy stems of sugar cane; together with pork balls. Equipment Essentials Blender or thermomix 20cm round spring form cake tin lined with baking paper Ingredients BASE 1 ½ cups almonds ¼ cup shredded coconut ¼ cup rice syrup 2 tablespoons coconut oil ¼ cup vanilla pea protein FILLING zest and juice of one organic lemon 2 cups soaked macadamia nuts or cashews 1/3 cup rice syrup 1/3 cup coconut oil

water. Blitz the living day lights out of the ingredients until they are smooth and creamy (you may need to add a little extra water to it, if it’s not blending smooth enough). Pour the filling on top of the base. Place into the freezer for 4-6hrs or overnight till the whole thing is set. To serve, place the cheesecake in the fridge to defrost for ½ hour and slice with a bread knife.

Make Me Up For the base Place your almonds in your blender or thermomix and blitz till you get a fine crumb. Then add your rice syrup, coconut and pea protein and process until the whole mixture comes together in a ball. Tip the base into your lined tin and press the mixture down with damp hands to form a 1cm thick layer. Place the base in the freezer while you make your filling. For the filling Wipe out your blender/thermomix. Drain your cashews and place them along with all your other filling ingredients into your processor with ½ cup fresh filtered

WHY CAN’T WE BUY LOCAL SEAFOOD?

Well I’m saying you can

I have to say; supermarkets will provide whatever products we as consumers demand. But the thing is, while as a community we SAY we value local seafood, most Australians ACTUALLY tend to make most of their choices based on the hip pocket. But cheaper doesn’t often mean better when it comes to food choices. Here in the Territory, consumers prefer local NT seafood and we are prepared to pay a premium for that product. It is not to the nation’s credit that Australians import 70% of our seafood from countries with less sustainable credentials than our own. In Australia we know the health of our marine environment and the strict work health and safety, environmental management and food safety regulations our industry must comply with. So why would you not make that decision to purchase local, knowing the strong credentials of our local industry and the quality of the product? If you are looking at keeping costs down, try exploring some of our lesser known species and how to best utilize the whole fish, not just the fish fillet. Consumers in the Northern Territory can readily purchase such species from the local fishmonger, including Sardines, Queenfish, Trevally, Spanish Mackerel; along with fish frames for stock or soup or wings for the

BBQ. So think beyond the most popular fish fillets and grill some wings or curry Mackerel cutlets. I say you CAN buy local seafood here in the Territory, caught in territory waters by local businesses. I personally put my money where my mouth is and buy my family local seafood because a) it’s fresher, b) it’s healthy, c) it’s good for the local economy and d) it supports good practices at the global level (by not rewarding the bad ones with our business). Our profession is always on the lookout for quality evidence based research to help explain how Chiropractic helps people with a variety of symptoms. This month I found an informative article about how spinal manipulation can help to increase the quality and quantity of spinal movement. In essence Chiropractors focus on how we can increase movement in the spine and how this increased mobility helps patients move and feel better. Normally a joint that moves well is a joint that feels good and a joint that seizes over time is usually sore. This not only affects the specific area that has become injured but also tends to affect more distant parts of the body. In Denmark researchers grouped 199 people with low back pain of more than six weeks duration and placed them into 3 groups, one that received spinal manipulation, the second received supervised back exercises and the third was given take home exercises and advice. The researchers found that after 12 weeks of care, when they compared the results of all 3 groups, the group that received spinal manipulation improved significantly in all 6 different types of movement where the exercise groups improved in only 3 of the different movements tested. In addition the spinal manipulation group had a smoother motion pattern than the exercises groups, meaning they were less jerky when they moved into these different directions. These kinds of results help to demonstrate the significant improvements in mobility that can be achieved with spinal manipulation, which is the mainstay of Chiropractic practice. Chiropractors

are far more than just good spinal manipulators, however important research such as this helps explain why Chiropractic can help increase the mobility of the general population. The plan for this season is to focus on one exercise per workout day, do it and do it well. Since you are going to be outside, you will need to be a little more creative with the exercises you select. Taking the ‘one day on, one day off ’ approach is a great way to accelerate your strength and fitness gains ensuring that you will have reached new fitness levels by the wet seasons beginning. An example of a two week schedule in this style of program would look like;

Join a tour led by an indigenous guide to Injalak Hill to see ancient rock art and hear Dreamtime stories. Join a bush tucker tour and learn how the indigenous people live from the land. There are several famous indigenous arts centres in Arnhem Land, including the community of Maningrida and Yirrkala, just outside the coastal town of Nhulunbuy on the Gove Peninsula. There are also many significant historical sites in Arnhem Land, including the ruins of an early European settlement in Garig Gunak Barlu National Park on the remote Cobourg Peninsula. The surrounding Cobourg Marine Park provides an ideal habitat for many thousands of bird species. Throughout the year, Arnhem Land’s landscapes undergo spectacular changes. The most popular time to visit is in the dry season (April to September). The wet season sees extremely dramatic weather conditions and some parts of the park are closed. Helicopter tours and light aircraft flights are another way to take in the vast expanse. Accommodation in Arnhem Land is limited, but there are some excellent wilderness lodges throughout the region. You can also sleep under the stars at one of Arnhem Land’s many secluded camp spots. To visit Arnhem Land you will need a permit from the Northern Land Council. It is well and truly the Dry Season now and the perfect time for gardening in Darwin. Community gardening is a worldwide trend that has certainly caught on and is here to stay, thanks to a number of passionate and dedicated people.

As our city grows and develops making land even more scarce and valuable, enabling residents in higher density areas access to gardens can be an integral part to the community’s healthy social fabric. With some creative thought developers and body corporates of unit blocks or townhouse complexes can easily integrate a little space for veggies, herbs, & flowers within a sunny common area. Possibly near a pool, car park, along the side of a hot concrete walkway, perhaps even on the rooftop of a development. If in doubt of the health of the soil, tests can determine possible soil contamination. Raised planting beds can also facilitate in providing healthy soil. Academic studies have demonstrated the many health benefits of community gardening including: improved nutrition and better access to fresh wholesome food, increased physical activity, and enhanced metal health. Benefits are seen in people from all parts of the socio-economic spectrum, yet particularly those with lower incomes.

When populations rise especially in transient cities, people can lose the ability and inclination to positively relate. Local community gardens can sometimes be a simple avenue to helping people that might otherwise feel isolated...feel connected. Neighbours might begin to communicate when they perhaps previously haven’t simply by commenting that the bananas are ripe or that they recently made a great pesto with some of the fresh basil. Social engagement can naturally occur even between neighbours who may have barriers to communication such as speaking different languages, disabilities, or simply feeling insecure or timid by using gestures and/or sharing food and recipes.
