Litchfield National Park is just an hour-and-ahalf drive from Darwin and features a myriad of diverse environments including rugged sandstone escarpments, perennial spring-fed streams, monsoon rainforest, magnetic termite mounds, waterfalls and historic ruins. Litchfield National Park is an aesthetically stunning landscape, shaped by water and time, culturally rich and steeped in history. This 1,500 square kilometre park was the original home of the Wagait Aboriginal people. The Finniss exploration was the first European connection to the area and the Park was named after Frederick Henry Litchfield, a member of the expedition. For 75 years until 1955, the area was the centre for tin and copper mining. It then fell under a pastoral lease until it was designated a national park in 1986. You can spend as little as one day in the park, taking a quick dip in each of the plunge pools and rock holes on the drive through, but to really experience the true beauty of Litchfield it’s best to stay at least two days. How to Ge t T he r e Via Batchelor, 100 km south-west of Darwin, the Park is generally accessible all year (sealed roads) via Batchelor. In the dry season it is also possible to get to the Park via Litchfield Park Road off Cox Peninsula Road (unsealed road 40km) a 4WD is recommended. • Do canoeing at lake Bennett • Stay the night at Dundee Beach and go fishing Take the S tu art Hi g hway and; • Stop at Adelaide River township and see the war cemetery, the railway museum or visit the inn and have a photo taken with the buffalo that featured in the Crocodile Dundee movie • Take the Batchelor road to Batchelor Township and do the heritage walk, visit the cultural centre, the miniature castle and the Butterfly farm. At L i tc hfi el d Nati onal Park; • Jump in a four-wheel drive and discover the dramatic splendour of Tjaynera (Sandy Creek) Falls, Blythe Homestead Ruins and the weathered sandstone columns of the Lost City. • Discover two metre high magnetic termite mounds built by intriguing insects. • View the spectacular double waterfall of Florence Falls set amid the monsoon forest - 160 steps lead down to the plunge pool or take the leisurely 1km ‘Shady Creek Walk’. • Cool off at Buley Rockhole, a series of cascading waterfalls and rock holes located just 80 metres from the car park. • Visit Wangi Falls, one of the park's best swimming and picnicking spots. • View Tolmer Falls from the platform at the top where the falls cascade over high escarpments into a deep plunge pool. BANANA BREAD • Melted low-fat dairy spread, to grease • 265g (1 3/4 cups) self-raising flour • 40g (1/4 cup) plain flour • 1 teaspoon ground cinnamon • 140g (2/3 cup, firmly packed) brown sugar • 125ml (1/2 cup) skim milk • 2 eggs, lightly whisked • 50g butter, melted, cooled • 2 overripe medium bananas, mashed

RECIPE

Preheat oven to 180°C. Brush an 11 x 21cm (base measurement) loaf pan with melted dairy spread to lightly grease. Line the base and 2 opposite sides with non-stick baking paper, allowing it to overhang.

Sift the combined flours and cinnamon into a large bowl. Stir in the sugar and make a well in the centre. Place the milk, eggs, melted butter and banana in a medium bowl, and stir until well combined. Add the banana mixture to the flour mixture and stir until just combined. Spoon the mixture into the prepared pan and smooth the surface.

Bake in preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside in the pan for 5 minutes. Turn onto a wire rack to cool completely. Cut into slices to serve.
