Char Restaurant at Old Admiralty House in Darwin, has been established for almost 10 years and speaking out on its success and development is Business Development Manager Chris Higgins, the man put in charge of driving the business forward and maintaining its success. Chris, was relocated from Brisbane to Darwin in March 2014 by owner and mentor John Kilroy, who has mentored Chris since 1997, and the result was instantaneous, reinvigorate its reputation as Darwin’s place to be seen. Char, modelled on Brisbane multi award winning sister restaurants, Cha Cha Char and Jellyfish, which all form collectively as Boutique Venues group, where Chris spent 5 years based in Brisbane as a group GM. Whilst chatting to Chris, we are briefly interrupted by friendly banter from local guests dining in the restaurant, which demonstrates how much the locals have embraced Chris and his development of the business and his engagement with those within it. But the real change was the result of time spent with the most important assets, our people and changing the way they looked at themselves and their role. A shift

Crab Claw Island is the perfect place for family getaway… the beaches are pristine, white quartz sand – perfect for sandcastles, the harbour is calm and full of fish – making first time fishing experiences full of all the right kinds of memories, the swimming pools are fenced with child proof gates and both pools have safe access, the restaurant has a special kids menu with health options as well as the ‘traditional’ holiday fare, high-chairs and knives and forks just the right size for little hands. We have two accommodation options to suit families who need a bit more space. Our Family Cabins are set on the rear of the main walkway, approximately 15m from the beach. They are twice the size

of our standard cabins and fitted with a double and four single beds, a dining table and chairs, large refrigerator, and en-suite bathroom facilities. Alternatively ‘The house’ is at ground level with absolute beach frontage. It has two bedrooms, each with a double and two single beds; a large balcony with a gate, dining table and chairs and BBQ.

One school embracing STEM in its curriculum, and the first school in Australia to embrace it from Year 1 to 12, is The Essington School Darwin. Assistant Principal for Curriculum, Siobhan Nox, is from the UK and familiar with the STEM program. She said: “These subjects are increasingly needed in the workplace; in fact the day is coming when the lack of them will make life at work a real struggle”. The Essington School Darwin leading Science education programs has seen the School develop hands-on Science programs for its own students, and students from leading international schools in Asia. The program has involved Year 11 students from Tokyo and Jakarta, along with Essington Year 11 students, working with scientists on tropical environmental Science issues. The success of the program in the last two years has seen an increasing number of international schools in Jakarta, Kuala Lumpur, Singapore and Tokyo wanting to be involved in the 2016 program. Students spend a week working each day with a different Scientist replicating an aspect of their research in the field. Animals studied include saltwater crocodiles, the prolific bird life of the wetlands, pythons at Fogg Dam, and nesting

flatback turtles on Bare Sand Island. Principal, David Cannon, said: “This year we have been able to work with turtle researchers to track two flatback turtles from Bare Sand Island with satellite trackers. Students involved in this international Science program are able to see where turtles they have studied on Bare Sand Island go. They are able to develop theories as to why they have travelled where they have based on tides, currents, and food sources”. The Essington School Darwin’s STEM Program comprises a number of strategies and actions designed to ensure that the School remains at the fore-front of STEM education, not only in the Northern Territory but in Australia and the world.

The Withnalls Lawyers managing partner and principal also understands the importance of providing a safe and secure home environment, driving her passion to help clients achieve that balance for their own children. Vanessa began her law career in general and personal injuries litigation, and soon after starting her own family, found herself working almost exclusively in family law. She says the migration was never a conscious decision, “it just happened”. “One of the lawyers in the firm left my employment and she had part of a practice in family law. I wrote to the clients and informed them where she had secured alternative employment in the event they sought to continue to instruct her or I could take over their cases. Some chose to stay, and I found myself working in this area more and more. “After the birth of my first child in 2006, it was a challenge to keep abreast of all of the legislatives changes across the various jurisdictions, my time was more limited professionally and my interests were changing, so I decided to focus primarily in one area and completed updated intensive training in family law.” Becoming a lawyer however was always on the cards for Vanessa who sat in on court cases as a child, watching her mother’s partner who was a judge in the Supreme

Court. “I was only nine or ten, but I sat in the court room and watched some court cases and I knew I wanted to be a lawyer.” After completing highschool in Adelaide, Vanessa commenced a degree in Commerce, majoring in Accounting, followed by a post-graduate degree in Law with NT University, graduating in 1996. She spent a year as a judge’s associate before taking her first job in a local law firm, working closely with John Neil, who is now a magistrate. “John is an incredibly intelligent man and was a brilliant lawyer before being appointed to the Bench. He and the then Partners of Ward Keller gave me the skills I use daily and I continue to be incredibly grateful for their time and guidance.” Vanessa joined Withnalls Lawyers in 1999, became a principal in 2001 and has led the firm through growth and transition to the current practice in various areas of law. It’s a challenging, exciting and rewarding work environment where no two days are the same and every day is unpredictable. Vanessa says the juggling act with motherhood is made easier with the support of her husband John. And at the end of a long day, she is always grateful to go home to her young family. “Just not so much the children’s homework.”

OPPORTUNITY IS KNOCKING Hear that sound? It is opportunity knocking on your door – in fact it is opportunity near kicking down the door. A little economics lesson. The housing market is a commodity based marketplace and like every other commodity based market it will go through cycles with upward and downward trends. And like every other commodity based market it will present both buying and selling opportunities. The housing market cannot be taken in isolation to the greater economic environment in any jurisdiction as the economic climate tends to dictate the trading activities of a city, which includes real estate. In Darwin over the past 6 to 8 months we have seen a softening in the overall economic activity and a similar correction in the real estate market. Now, while that will mean that people looking to sell properties (called vendors) may, in many instances, need to readjust their expectations of what the return on their property will be, it opens up great opportunities for people looking to get into, or invest in the real estate market. Couple this with all-time low interest rates and increased stock levels and you have the perfect opportunity to be seeking out that first home or 34

investment property. And a little reality check for potential first home buyers. Have a good hard look at the ‘pre-loved’ houses in the market place. Most are better priced, come ready to move into and already have things like landscaping, swimming pools and fencing as part of the purchase. “But at the moment I can’t get a First Home Owner Grant on existing property”, I hear you say? Instead of thinking along those lines, try thinking about how much you save by entering the existing home market, both in purchase price and on stamp duty, and how much more negotiable you can be in the purchase. These savings alone may well outweigh any benefits from a grant after purchase. The property market in Darwin will bounce back. It always does. When is something I cannot predict, but I can say with surety that it will bounce back. Real opportunities don’t come around every day so you need to be ready to act when they present themselves. When you hear opportunity knocking….open the door and have the conversation you need to have.

So what is Tarot Reading and why would anyone want a tarot card reading? Gardens are of course, beautiful in themselves and while they don’t require any extra adornments to make them wonderful, allowing your child to turn their little garden into a garden gallery just adds to the appeal and is sure to help maintain their interest in gardening for the long term! I fully encourage hanging pictures in trees. This is a really fun way to bring art into the outdoors. I wouldn’t recommend you hang anything too valuable or precious for obvious reasons but I would advise you to take a trip to the op shop to buy up some old, existing pictures and frames and let your child paint their own pictures over the top of them. When dry, hang on a handy tree branch for a bit of ‘gallery with a difference’. Making garden sculptures is also easy and fun. A weekend trip to the tip shop will most likely give you all the materials your child needs to throw together a fun scarecrow or even an abstract sculpture of their own design. All that’s required is some imagination, a coil of wire and maybe a set of adult hands to help with joining pieces together. And finally, we’ve talked recycled so now let’s talk retro. I’m talking Pet Rock. Everybody needs a friend right? Luckily, most kids are

very social little creatures and make friends fairly effortlessly but there is nothing like having an inanimate little friend that you can tell all your secrets to and know they’re loyalty to you is rock solid, pardon the pun. When I think of pet rocks, I like to think of all the different shapes and sizes you can use that give your pet rock a really individual look. Lumpy rocks seem to beg for a fake moustache and perhaps a mountain of woolly hair while smooth, large pebbles have a decidedly feminine air. Ergonomics Last month I was part of a rehabilitation panel at the Safety institute of Australia conference in Darwin. Whenever I’m involved in a return to work case one of the major aspects of the patients care that I tend to focus on is ergonomics. Ergonomics is a very important aspect of a patients return to work program particularly when that patient’s condition is caused by sedentary posture, as with office workers.

From a spinal perspective when an office worker is sitting for an extended period of time it does place a great deal of stress on the patient’s spine. So much, that after many hours a day this can produce stiffness and pain in the patient’s upper back and neck. If left untreated this can also lead to headache, arm or chest pain. For many years there has been a focus on providing a worker with the best chair possible in order to support the patient’s spine. However gradually I believe we are learning that no matter how ergonomic the chair is, when we sit down for many hours a day, it still leads to spinal complaints and other health problems. As a result there have been multiple studies that are looking at the benefit of how we can reduce the length of time office workers are sitting and how much energy they are expending. There have been different attempts over the last few years but the solution that seems to be

most effective is a standing desk. Meaning that a worker can choose throughout the day whether to sit or stand depending on how they are feeling or what task they are performing. This ergonomic flexibility is a very effective way of assisting a worker manage their work and ergonomic demands. We as practitioners realise that all workers have repetitive strains placed upon their bodies and a lot of the time it’s just part of the job. However there may be simple ways to minimise these strains to help the worker function more effectively. Even though we need to make sure the patient is not sent back to work too early, improving patient ergonomics can mean a patient can return to work more quickly. In addition by improving ergonomics, it should make a permanent benefit so that the worker can continue to work effectively and minimise the chance of down time in the future.

Life is busy, make sure your fitness is scheduled and meals prepared. If you don't, you may fail. Diarise gym classes and do not miss them at all cost! Prep food on Sundays or organise meal prep companies to make life easier. 4. Avoid the nasties.

Such as alcohol, junk food, soft drinks and sugary foods. I hear this all to often, “but I still want a life”. I thought you wanted to lose weight?? If the answer is yes, then don't eat nasties, end of story. Remove the food from your fridge and pantry that are not good for you and your family. 5. Self image is self respect. This one is so controversial in our society. It's now ok to be over-weight and we even applaud those that are bigger and are proud of it. Bottom line is, the bigger you are the higher risk of disease and metabolic syndromes. Have respect for your body. It's not okay to take drugs, smoke etc so it's not okay to feed your body to an early death either. Obesity and related conditions are a bigger epidemic than smoking in our country. And I know you might be thinking that I’m a kill-joy by taking away all the gluten, dairy, grains and refined sugar from a celebration treat, but believe me, it’s not a treat when you’re eating your weight in cake for 4 months straight. Plus my cakes are so delicious that you wont miss the bad stuff, I promise.

Paleo Double Layer Chocolate Cake Ingredients

6 eggs • 1 cup coconut oil 1 ripe banana • 1/3 cup coconut sugar 1/2 raw cacao • 1/2 cup coconut flour 3/4 cup tapioca starch 1 teaspoon bi carb soda • pinch of salt

Make Me Up

1. Pre-heat your oven to 180deg C. Meanwhile, in the bowl of your thermomix

or blender, place your 6 eggs and 1 cup coconut oil. Blitz together on high until pale, thick and creamy. Then add your very ripe banana and blitz again until the banana is well incorporated. 2. Now add all your dry ingredients, coconut flour, tapioca starch, cacao, coconut sugar, bi carb and mix on medium speed until all the dry ingredients are incorporated into the wet. 3. Divide the mixture equally between two lined 15cm cake tins. Bake in your 180degC pre-heated oven for 20-35min, or until the cake has risen and a skewer inserted in the centre comes out clean. Turn your cakes out onto wire racks to cool completely. For those looking for some more finesse try giving the cutlets a light season with salt and pepper, heat a little oil in the pan or barbecue and

cook for about 5 minutes each side then remove. In a pan add some garlic cloves, parsley, little more salt & pepper, paprika and red wine vinegar heat for about 30 seconds then poor over your cutlets. How quick and easy is that and during the Northern Territory build-up it’s just perfect. Now you've got the good oil head out and get the family some mackerel cutlets for the weekend. Today, things are looking up for seafood lovers in search of “responsibly sourced” seafood.
