What started out as an after-school job at a pizza shop became a management role in the company’s national headquarters – within just 18 months. Less than a year later, Sally Illingworth became the Northern Territory franchisee of Crust Gourmet Pizza Bar and just six months into trading, the 19-year-old has her eyes firmly set on her next goal. For Sally, age is just a number. She says her achievements are the result of hard work, not chance. And she’s encouraging everyone, young and old, to put their age aside and reach for the stars…
Sally Illingworth left Darwin for Sydney in 2011 to complete her highschool education. Not four years later she returned home with her highschool diploma, her own business, and three years’ experience in franchising and brand management. After rising through the ranks of the Crust Gourmet Pizza brand in Sydney and the Gold Coast, she was offered an opportunity to drive the franchise’s entry into the Northern Territory. And while others might, Sally never considered her age to be a barrier. “I chose to take on the opportunity for selfmotivation, to prove to myself I can achieve whatever I set my mind to. In addition to this, the opportunity provided me with the privilege of being able to take the lifestyle I have grown to love, home to my family. “If you know you are capable, and you have dedicated three years of your teenage life to learning and understanding how to conduct that operation, why would you not take the opportunity to back yourself and take on the risk?” Born in Western Australia, Sally moved to Darwin with her family in 2003 and completed most of her schooling in the Territory before her move to Sydney. It was there she applied for an after-school job with Crust in March of 2012, and just four months later also took on a management position with one of the brand’s corporate sites. In September 2013, four days after completing her highschool certificate, Sally relocated to the Gold Coast to accept the role of Corporate Area Manager at Crust’s Head Office. She maintained the position when she returned to Sydney to become a multisite manager in February 2014, and in August made the move back to Darwin ahead of opening the Territory’s first Crust store in November. After extensive training at a franchisee, corporate and franchisor level over three years, Sally developed a comprehensive understanding of the brand’s vision and principles. “I was privileged to have worked alongside key personnel whom enabled me to further my knowledge of not only the Crust Brand System but franchising, the quick service restaurant industry and hospitality.
“Through my extensive research and applying methods and procedures taught by representatives from within the brand, I developed a comprehensive understanding of business practices and the key factors to operating a successful business.” Despite her obvious success, Sally has been challenged by perceptions of her ability based on her age. But it’s a challenge that makes her work smarter and harder, proving to herself, and her naysayers, she’s capable of achieving anything she sets her mind to. “I used degrading remarks about my age to motivate me to prove to everyone that age is quite frankly, just a number and you should not allow your age, or what others may stereotypically assume about your age, to deter you from conquering your goals.” And while achieving all of this before the age of 20 might be rare, Sally urges it’s far from impossible. And her advice isn’t limited to the young. “Opportunities are provided to people every minute of every day, whether they're 19 or 51, but in order to be successful it is up to you to create an opportunity for yourself from that opportunity. “When I decide I want to achieve something or explore an idea, I do it even if the odds are against me. Of course, I analyse each and every situation and determine a projected return on investment, but I always find a way. I always tell myself that ‘failing is never an option’. \ “To be successful, whether it be emotionally or financially, you must be confident and trust yourself.” Above all, Sally believes success goes beyond profits. She says waking up and looking forward to your day is a good sign you’re on the right track. And she’s grateful to be doing that back at home in Darwin. “I enjoy enjoying myself with everything I do. Whether it be studying the launch of Crust's new menu, reading about a new cafe in Sydney, buying a coffee from the corner shop or even paying invoices; I enjoy myself. “Darwin is a great place. There are so many opportunities available here and so many untapped markets it is crazily incredible. It's an exciting city and people like myself are privileged to be able to assist in the development and growth of Darwin as a capital city.” DarwinLife Magazine

Karlene and Hector met while representing Australia at the World National Bodybuilding Federation World Championships in New York in 2009 – the year Hector took out WNBF Mr Australia for the second time running. Oka Teppanyaki combines the skills of Japanese cuisine chef William Young, Jose Jap and their talented team and creative architecture and design by Hodgkison to provide a feast for the senses. Serving up a mix of traditional Japanese cuisine coupled with fun and theatrics, Oka Teppanyaki provides both an authentic and entertaining experience. “Our chefs cook your meal right in front of you, with a focus on quality ingredients, and a bit of fun thrown in too,” says William. Mastering his skills in sushi, Teppanyaki and Japanese cuisine in Melbourne, William left the industry to pursue accounting and real estate in Japan, during which time he picked up more food inspiration for his own ventures. Late last year he decided to leave the corporate world to return to his passion of cooking, opening a sushi and sake bar in Singapore three months ago, followed by Oka Teppanyaki at Parap in April. The name Oka, pronounced ‘ocka’, translates to ‘Peak or Hill’. The nature theme has transpired into both the menu and the
restaurant design with timber flooring and natural timber chairs and tables. Hodgkison architect Robert Schmucker says the aim for the design of Oka Teppanyaki was to create a contemporary restaurant, drawing inspiration from a traditional Japanese palette and emphasis on nature. “Clean white ceilings are contrasted by the darker, environmentally-friendly Jarrah timber flooring, while the 3D contoured feature wall gives a sense of life and is an important backdrop in front of which the Teppanyaki chefs can put on their show.” The key to making the small space feel larger and more airy was maximising the ceiling heights and converting the shopfront to full glass. “We commend Oka Teppanyaki in providing Parap with a unique dining experience.” As well as architecture, Hodgkison provides dynamic and professional project management and interior design. It’s an achievement many told them couldn’t happen, and it makes the success all the more rewarding. “We had a mortgage and a young family so it took him some time, but he eventually convinced me to have a go. As Darwin Dietitians founder Richard Sager explains, once the chemistry of the body is imbalanced it can be difficult to correct without proper diagnosis and treatment. THERE Where are you now? Well here we are its June already. I don’t know about you but the year has been flying through for us like a blur. We now have cool mornings, hot showers, shorter daylight hours and some preparations underway for family activities. Be it preparation for visiting relatives or what can we do with the kids during the coming school break. This year holds great potential which we talked about some time back. This year is your year, that’s right; it’s your time to excel in your passion. What’s that you say…you’re not sure what or if you can achieve this? Back at the start of this year you would have thought…”what can I achieve this year?” Well we are here in June; are you “Half way there” yet. Or should I ask “Where are you now?” You see we start out with great intentions and life comes along with ups and downs and we get distracted, digressed and sometimes just plain stopped in our tracks. Don’t give up yet. It’s now time to reflect on your progress to date, all activity that you have done is leading you along your path. All progress is measured by your standards not by others. All outcomes to date are to be accepted as “feedback”. Remember “there is no failure…only feedback”. You see in June now is a great time to ask yourself what have you achieved, what changes and improvements can you make and to re-affirm where you are going. We started this year with a plan; so far we saw some wins and missed others. We are
looking at where we have come from and directing adjustments to our plan for the second half of this year. Our work with our clients is the most rewarding part of our journey. Our greatest buzz working with others is to see their success in attaining their goals and knowing that we have been a part of their journey. Creating Amazing Change is all about knowing and wanting your goals more than anything else. It may not be Melbourne yet, but in the 5 short years we have been here, the coffee culture certainly has come a long way. It’s almost easier to get a good coffee than a bad one now. •HUMIDITY. So maybe not something I love all the time, but you have to admit it’s great for your skin. Our damp air keeps those crows feet plumped making it the best most natural and cost effective anti-aging treatment ever. Travelling does broaden the mind and feed the soul, but it is always good to come home. I will be sipping my cold drip listening to the birds, sunning myself with wrinkle free eyes in no time.

Milly Molly Mandy Darwin is a children’s clothing boutique that has taken Darwin by storm. Since opening her doors in December 2014, owner and operator Sally Ross says that she has worked hard to create a shop that is totally different from anything else in Darwin. 42

‘I have nine grandchildren with number ten on the way,’ laughs Sally. ‘Opening Milly Molly Mandy Darwin was a dream I had for a number of years. Knowing that there is a really limited range on offer for babies and children in the NT, I wanted to have beautiful stock that was totally unique. After selling my other business, I decided the time was right.’ Located in the hub of Cullen Bay, Sally set about building her stock with what she describes as the youngest stock buyer in the history of the world, her five year old granddaughter Nevaeh. Bringing together an English style with practical and versatile clothing, Milly Molly Mandy Darwin is a special venture for Sally. ‘I grew up reading the Milly Molly Mandy Darwin books with my Mum. She was English and a huge supporter in what I wanted to create in Darwin. We carry a lot of styles that Mum used to like and for me, the shop is a tribute to her and has a strong connection to family.’ Sourcing brands from all over the world, Milly Molly Mandy Darwin are stockist
for boutique lines such as Jellycats from London, Mini Empire from Scandinavia, Australia’s own Lacey Lane and the hipster brand Rock Your Baby. For Sally, understanding trends and buying specifically for the NT has helped her create a very distinct point of difference. ‘Opening up in Cullen Bay I knew straight away it would be a destination shop. I go to a lot of industry fairs and am always scouting for new brands that I think will work really well in the Top End. Obviously there is a degree of flexibility required to ensure I am stocking what people want but so far we have had such a great response. Mums love the beautiful but quirky style
of Lacey Lane; it is so very pretty with matching accessories. Again it is getting things that are a little different that works for this market. ’ Supporting small businesses is a real inspiration for Sally, which has reinforced her commitment to diversity. Stocking new products just starting out in the market has
allowed Sally to build Milly Molly Mandy Darwin with clear goals and objectives. ‘I have had people approach me to become a stockist for brand new lines which I love to support. Whether it be local, interstate or overseas, giving great products a go helps these people who really believe in what they have created,’ says Sally.

Is there a problem at your house with your child sleeping? There are a range of common problems for parents with children and their sleeping patterns.
Unfortunately babies and young children have a very different sleeping pattern to adults. Long term lack of sleep for parents, especially those having to go to work too, can impact negatively on the whole family. Concerns are varied, it might be getting to sleep, it might be staying in bed, it might be where to sleep, should the child co sleep or be sleeping independently in their own room. Parents also ask, how long should they sleep, when do naps stop, how do I get rid of the pacifier of bottle or dummy? I run a couple of workshops a year on this topic and parent concerns are calmed just hearing that others have the same or similar problems. One thing is for certain you do not go to sleep
easily if you are agitated. Also children do not go to sleep or stay a sleep to satisfy their parents. So getting angry or frustrated only makes the problem worse. What does work is regular calm and relaxed routines, keeping to a fairly consistent time while recognising that gradually in the first five years of life children’s sleep pattern changes naturally. Sleep times get shorter and nap times gradually are no longer required. Having a consistent place to sleep, NO not on the lounge room floor) and make sure that you train the child to gradually be more independent getting to sleep, self- soothing, sleeping without masses of milk and dummies. you can keep on doing that if you want to. Or you can take charge and train the child that they are perfectly fine to go to sleep without you in the bed with them. The longer you let that go on, the harder it will be to change the behaviour. So you if you are still getting up repeatedly during the night there are things that you can do about it. I found the book “No-cry sleep solution: gentle way to help your baby sleep through the night” by Elisabeth Pantley offers sensible solutions to these problems for babies over about 6 months old. It is available on line and hard copy. She also offers ways to get rid of the bottle, that makes children waking in the night a habit and impacts on their daily eating pattern and how to get rid of those dummies.

Recently, while going through some old boxes during a renovation, my mother came across a pile of letters and drawings she had collected from my childhood. They reminded me of how, as a child, I used to love to write letters, and although every significant person in my life was merely a short car ride or phone call away, I still experienced a wonderful sense of joy and anticipation by keeping in touch with them through the long lost art of letter writing (although back then, it hadn’t yet been lost). I mostly wrote letters to my grandparents and my favourite cousin, both of whom lived a mere ten minutes away by car and who I saw at least once a fortnight or so. The letters were mostly just a simple synopsis of my day to day life; what I was learning about at school, who my friends were, what our pets were up to…but looking at those words committed to paper all these years later, I see that those letters paint a picture of who I was as a child,
what was important to me and how I saw my place in the world. I feel sad when I see kids today, particularly teenagers, who perform the vast majority of their communication through technology. How will they ever learn to really engage with others if their conversations with friends take place through a series of ten word texts? How will they ever learn the difference between their, there and they’re if the words they speak are forever being chopped away at and converted into a new micro language where the priority is to be short, sharp and efficient? I would love to see our kids rediscover the lost art of letter writing. The written word can be a beautiful thing and the joy experienced by the receiver of such correspondence is genuine. Nothing tells someone they are cared for and thought about more than being written a letter, on paper, by hand and sent with a stamp and love. I now have a new recipient for my ramblings
on paper. My daughter has recently moved to a boarding school interstate and even though we talk on the phone and text each other every day, I still write and send her a postcard every single day. The joy for me is imagining her being called to the office to receive her mail each day and being handed that simple rectangle of cardboard that tells her that she is loved and she is missed.
I would like to dedicate this article to my daughter Perri; my beautiful, brave, smart girl.

In the last twenty years of training I have come across many different arts and various methods of dealing with weapons. I have seen and heard of many mistakes people make in real life when dealing with an attacker that is armed. I have comprised some of the biggest mistakes martial artist make in training for weapons. I have studied many arts from traditional ones to modern and have found I feel comfortable with my Krav Maga training in preparation for any attacks. 1. Under estimate the danger- When you train against a weapon you need to respect the damage the weapon may do to your body, essentially it may be fatal and most people don’t have much experience in dealing with weapons. 2. Become complacent with their training- There is a difference between training with a rubber knife and a real knife. Most people get to relaxed with their training and become complacent. Instructors often lack the knowledge to create drills that replicate a real attack. 3. Mental Preparation and Body Scans- As one becomes complacent they lose grip of reality with their mental state of mind. We become lazy when training which affects our mental state hence in reality a higher chance of freezing. As a part of mental training you should visual effective defences and practice what to do after an attack. Basic body scans are essential in defending weapons. 4. Don’t train and replicate proper attacks- Attackers in training have never used the weapons and often are taught how to replicate an attack. Hence a poor attack giving the defender a false sense of reality. One of the most common is a knife attack, in some
martial arts they do the one attack and hold that position allowing the defender to do a defence. In reality attackers recoil and attack 4-5 times in a matter of seconds. 5. Don’t control the weapon.-It is not always possible to control the weapon if the attack is fast and a single defence may be sufficient. Often in close quarters it may involve double control of the weapon, or of course dealing with a gun threat control is a must. 6. Understanding Distance- Often we mistaken how close the attacker is and the time we have. This results in being attacked before we get our first defence in, creating more distance gives more time to avoid attacks or use of our longest weapon our kicks. The opposite of course against a blunt edged weapon such as a stick you need to bridge the distance to avoid the length and power of the stick. 7. Don’t understand the attackers true responseOften we need to train for what will the attacker will do if plan A is not pulled off. The attacker will always fight for control over the weapon or attack again. This needs to be trained for a return attacker. 8. Lack education on the weapon- Most Martial Artist lack basic knowledge on the weapons or
how they can be used. It is advised to have a basic understanding of how a weapon functions. 9. Don’t practice complying with the attacking in training- This is one of the most important steps and it is rarely practiced. Often Martial Arts start with the attack but what about the pre attack stage, avoiding, talking or complying. This is the best defence, no defence! It needs to be practiced so your body and brain develops neuropathways to recognize the situation and under stress will be your first response and the safest! 10. Don’t train often enough- Its simple how often do your train twice a week? You always need to set high standards and train hard. Then the defence will become a natural. Helping pave the way for a number of new start ups is Asset Construction and Maintenance, a proven performer in commercial and residential building throughout the Territory. They admit the style of buildings changed quite a bit from a metropolitan city in a southern state to the tropical surrounds of Darwin. “The weather’s certainly different,” Daniel laughs. “But we love it up here, couldn’t be happier. People are really easy to get along with, it’s a laid back lifestyle and there’s plenty of opportunity.” Jeremy agrees. “We’ve worked together for a long time and we’re especially excited about the new developments and opportunities opening up in Darwin,” he says. “There is a lot of retail and commercial activity underway and we’re really keen to get our name out there and show Darwin what our team can do.” Asset Construction and Maintenance works in partnership with architects and other contractors and can also be engaged individually. TRADIE Tradie observes that Darwin is the only place in the world where if you are hitch hiking and you get into a blokes Ute and you see he has ropes and rolls of duct tape on the seat, you ask “how is the Croc catching going?” Rather than assuming you are about to be kidnapped. It is the only place in the world that the locals prefer the time of year when the humidity is unbearable, the roads are impassable due to flooding and cyclones smash us, simply because the fishing is better and the tourists have gone home. That’s not to say that we stay in the NT all year round. At times we Darwinians like to travel. The fact that Darwin is closer to Jakarta than it is to Sydney and closer to Singapore than it is to Melbourne, often means we lean toward visiting our Asian neighbours to see what they are up to. It’s much more personable to go there, rather than just listen to the Indo Presidents wife’s cell phone conversations from our ASIO office. Tradie often flies off to get his street stall satay fix further north over the Timor Sea and Indian Ocean. If he wants to catch up with most of his mates from ‘Straya’ he only has to walk down the street in Seminyak and there they all are. He sometimes thinks there are more Aussies in Bali than there are Indonesians. A veritable army of mother England’s colonial Antipodeans uniformed in Bintang singlets and pluggers, watching the AFL and spilling into the streets out of every bar in Poppys Lane. We have evolved beautifully.
Tradie has noticed that we holiday makers tend to do things we wouldn’t normally do at home. He doesn’t mean things like filling your boogie board bag with organic Mullumbimby heads, no, he means just the devil-may-care attitude that overtakes the ‘Oi Oi Oi’ masses after four hours spent on the beach getting sand massaged across our sunburn, three layers of skin taken off. The idea that drinking 12 Jungle juice tiki cocktails and then riding your scooter, sans helmet, through the streets of Kuta which are filled with unlicensed drivers in mini vans, is somehow the most brilliant plan ever. If Tradie hears one more annoying moped horn, beeping out the “I’m young, drunk and on holidays” message in some inebriated form of Aussie Morse code, he’ll lose it! Yes, spending hours at Potato Head or Rock Bar or Ku De Ta competing with hundreds of other tourists from places like Warrnambool and Geelong and Reykjavik to see who can get to their next hangover the quickest. We increase the following morning’s pain by including sun stroke on top of the alcohol poisoning because all the good chairs in the shade were taken. Remembering the afternoon’s frivolities by way of regrettable selfies that have been on
Facebook for 13 hours while we slept and Mum’s not happy. Yes, Tradie has done it to death. Cheap watches that tell the time for 45 minutes then the chrome plating and the second hand fall off before the hour is up. Purchasing wooden salad tongs that always get taken away from you at Darwin Airport Customs. Sharing a villa with 10 of your closest mates and finding out you really never liked them that much because they leave their crap all over the bathroom and snore like a Harley Davidson night after night. It seemed like such a good idea at 1am in Monsoons when Lynchy and his Missus came up with the itinerary. Where is that same laid back attitude now that there are damp mouldy beach towels slumped all over the couches and 18 half used, rolled up tubes of Savlon Antiseptic cream which have been liberally applied to the various gravel rash injuries sustained by the group? It’s not the pristine resort we all had in mind now is it? Tradie sits reflectively in the non-reclining, medieval torture chamber Jetstar seat all the way home in silence as the entire bunch realises how nice it is to be heading south east. Darwin. Home. Have a list of ‘must haves’ and ‘wants’ and be clear on which factors are important to you before you start Personally I think good storage and quality fittings and fixtures are where you want to put your money. Start with a good layout and utilize clever storage ideas such as cabinets with built in racks and bins designed to store toiletries or appliances out of sight. Adding recessed wall niches is another way to maximize your space. White or neutral colour schemes will always give the illusion of more space and you can add colour when you are finished with accessories. Don’t overlook 2 of the most important features in a bathroomthe drain and the exhaust fan. Drains are available in many styles and shapes and these days and they are
key to having a luxury floor space. Ventilation is equally important so invest in a quality fan and be mindful of where your windows are positioned for cross ventilation. THE REFINANCING PROCESS
With record-low rates lingering, now may be the time to refinance to a better deal so here’s an overview of what’s involved to get you started. With the RBA keeping the official cash rate at its record low of just 2.25 per cent, lenders are competing to win your business and borrowers are in a strong position. While refinancing might sound daunting it doesn’t have to be, so here are some key things to know.
What is refinancing? Refinancing involves replacing your home loan with a new mortgage that (ideally!) gives you a better deal, whether through a lower interest rate or different loan features that you want. Your original loan is paid out by your new one, and the balance transferred.
What’s involved in refinancing? When you refinance you’re applying for a new loan, so you need to go through a similar process to when you got your first mortgage. Application, approval and settlement are all involved in refinancing.
What do I need to do before refinancing? • Know what you’re getting: Make sure you know your current interest rate, what you still owe on your loan, your property’s value, what loan features you need, and any fees such as mortgage discharge or exit fees (if they apply). • Prepare for valuation: Your new lender will want to value your property so ensure it is as well presented as it can be. • Paperwork: You’ll need to have ready proof of income, outgoings, etc so gather up your pay statements, bank statements, credit card statements, tax certificates, proof of ID etc as these will all be needed if you go ahead. • It takes time: While every lender is different, it can take some time to discharge a mortgage. Just make sure you allow ample time for the process to be completed by both your current and new lender.
While refinancing is intended to save you money, there can be some costs to refinancing so make sure you do your sums to work out whether you’ll be better off in the long term. The best part about refinancing is that you don’t have to do it alone. A mortgage broker can manage the process for you, from comparing other lenders and loans to explaining the costs and completing all the paperwork.
