Ante nosotros una sencilla fachada de grandes puertas de hierro y cristal, sin placas, rótulos ni ninguna otra señal que indique que estamos ante el restaurante de moda en España. Y es que, en DSTAgE todo se rige por la norma de la no ostentación: comenzando por el espacio, de una estética industrial deliberadamente informal; las mesas sin mantel, atendidas por jóvenes armados de Vans y delantales negros, y la música de ambiente a cargo de los Rolling y Bruce Springsteen. Adiós ideas preconcebidas: aquí, el protagonismo es para el cliente, que se ve involucrado en la preparación y presentación de los platos en una

No plaques, signs or any indication that we are at the trendiest restaurant in Spain. That’s because at DSTAgE everything is run under a ‘no ostentation’ rule: starting by the space, with a deliberately informal industrial look. The tables have no cloths and are served by young people armed with ‘Vans’ and black aprons. The music is in the background: Rolling Stones and Bruce Springsteen. suerte de espectáculo culinario. Pero todo show necesita un director, y en este escenario lleva el nombre de Diego Guerrero. El chef vitoriano abandonó hace ya dos años El Club Allard en la cúspide del éxito y del reconocimiento para emprender un camino propio. Hoy, su modelo experiencial de alta cocina está rompiendo moldes y ya se estudia incluso en las escuelas de negocio. ¿Cuál es la clave del éxito de DSTAgE? La autenticidad. Esta aventura es el fruto de buscar un lenguaje propio y una manera exclusiva de contar las cosas. En mi etapa anterior, cada año nos planteábamos cómo mejorar, hasta que un día nos dimos cuenta de que era imposible hacerlo sin empezar de cero. En ese sentido, DSTAgE llegó de forma natural, por eso funciona, porque no ha sido algo forzado. ¿Qué encontrará aquí un amante de la buena cocina? Más bien qué NO va a encontrar: cuando probamos algo siempre tendemos a buscar referencias conocidas para comparar, y aquí no las va a tener. Por ejemplo, fuimos los primeros en combinar en un plato elementos de la cocina japonesa y la mexicana. Eso no es cocina fusión, es cocina DSTAgE. ¿Cuál fue tu inspiración a la hora de crear este espacio? Apenas esbocé una idea, y lo demás vino de forma natural. Lo único que tenía claro es que quería integrar la cocina dentro del restaurante. No tuvimos decorador, acabamos por ejemplo manteniendo el ladrillo visto del edificio original, e incluso las bombillas que usaban los obreros. Al final, como

Today, his experiential model of high cuisine is breaking barriers and is even a case study in business schools .
NO PUEDES VENIR AQUÍ Y SENTIRTE COMO EN UN BURGUER. SI DSTAGE FUNCIONA ES PORQUE HABLA Y SE ENTIENDE POR SÍ SOLO THIS IS NOT A BURGER PLACE. DSTAGE ONLY WORKS BECAUSE IT SPEAKS FOR ITSELF AND IS UNDERSTOOD FOR WHAT IT IS What is the key to the success of DSTAgE? Authenticity. This adventure is the result of looking for your own language and an exclusive way to tell things. At my previous stage, every year we would ask ourselves how to improve, until one day we realised that it was impossible to do it without starting from scratch. In that sense, DSTAgE arrived naturally, and that’s why it works, because it wasn’t forced. What will a good food lover find here? What will they not find! When we try something new we always look for references with which to compare, but you won’t find that here. For instance, we were the first to combine in a single dish elements from Japanese and Mexican cuisines. And this is not fusion cuisine, it’s DSTAgE cuisine. ROOM MATE • 11
NO DIGO QUE HAYA DADO CON LA CLAVE DEL ÉXITO, SINO CON “MI” CLAVE, LA QUE A MÍ ME FUNCIONA I DON’T CLAIM TO HAVE FOUND THE KEY TO SUCCESS, ONLY “MY” KEY, THE ONE THAT WORKS FOR ME decidimos todo trabajamos muy a gusto. Todo es mucho más verdad, más auténtico, más nuestro, y eso la gente lo percibe. Hablas en todo momento en plural... ¿Qué representa para ti tu equipo? Todo. Estamos hablando de un grupo de 22 a 25 personas, en su mayoría exalumnos de prácticas. Retener el talento me parece algo prioritario. Además, verles crecer genera un vínculo, una lealtad y una involucración muy fuerte conmigo y el proyecto. Ese aspecto formativo está muy presente en vuestros talleres de cocina... Sí, porque el objetivo al final es aspirar a ser algo más que un restaurante. De ahí nace DSTAgE Concept, que engloba la edición de un libro (el próximo #BookinProgress de Montagud Editores) y talleres de cocina, coctelería, para niños... En el País Vasco comenzaste tu andadura profesional, pero Madrid te ha encumbrado. ¿Cuál es tu relación con esta ciudad? La primera vez que vine a Madrid tenía 20 años y la experiencia
What was your inspiration in creating this space? I just sketched an idea, and the rest came naturally. The only thing that was clear in my mind was that I wanted the kitchen to be integrated into the restaurant. We didn’t have a designer, we decided to keep the original bricks in sight, and even the lightbulb that workers used. Eventually we had great fun working, as we got to decide everything. Everything’s a lot more real, truthful, authentic, more our own, and people get that. You keep talking in the plural... What does your team represent to you? Everything. We are talking about a group of 22 to 25 people, most of them ex-interns. I see retaining talent as a priority. Besides, watching them grow creates a bond, a kind of loyalty and a strong involvement with myself and the project. That training aspect is very present in your cooking workshops... Yes, because our objective is ultimately to aspire to be something more than a restaurant. That’s where DSTAgE concept comes from, which encompasses publishing a book (the next #bookinprogress by Montagud Editores) and workshops of cooking, cocktails, for kids... You started your trajectory in the Basque Country, but Madrid sings your praises. What’s your relationship with the city like? The first

En DSTAgE no hay secretos: ni en la cocina, a la vista de los comensales, ni en la apabullante sencillez de Guerrero (en la imagen, con jersey de Guess). At DSTAgE there are no secrets: not in the kitchen, in sight of everyone, nor in Guerrero’s overwhelming simplicity (in the image, with a Guess pullover).

no funcionó. ¡Sentía que me devoraba! Me fui con una cuenta pendiente. Hoy, me siento querido y muy agradecido con esta ciudad. Vivo en Malasaña, me gusta mucho su rollo bohemio y además me permite hacer vida de barrio. Una estrella Michelin, #1 en las recomendaciones de Tryp Advisor... ¿Te obsesiona ser el mejor? No creo en el 10/10. No quiero ser el número uno de nada, porque eso significa que ya solo puedes bajar. Gestionar la expectativa es muy duro: nuestros clientes esperan hasta seis meses para venir a esta casa (¡siempre espero que traigan hambre!). Al final no lo disfrutas del todo, porque el éxito solo pide más éxito. ¿Cuál es tu próximo plan? Mi plan es simplemente... ¡disfrutar del plan! Sé que los sacrificios y malos ratos se compensarán con talento suficiente para que el balance sea positivo. Mi único proyecto es crecer con mi equipo, dejar un legado y hacer cosas que, a su vez, generen otras que permitan que la gente se sienta mejor.
time I came to Madrid I was 20 years old and the experience didn’t work. I felt it engulfed me! I left with a pending matter behind. Today, I feel loved and very grateful to this city. I live in Malasaña, I love its bohemian touch and it allows me to enjoy life in the neighbourhood. A Michelin star, #1 on Tryp Advisor recommendations... Do you obsess about being the best? I don’t believe in 10/10. I don’t want to be the first at anything, because that means the only way is down. Managing expectations is very hard: our customers wait up to 6 months to come to this house (I always expect they’ll be hungry!). So you don’t enjoy it totally, because success demands more success. What’s your next plan? My plan is simply... To enjoy the plan! I know sacrifices and bad moments will be compensated with enough talent so that the outcome is positive. My only project is to grow with my team, leave a legacy and do things that may generate other things allowing people to feel better.

STATEN ISLAND La isla olvidada. The forgotten island. Con 192 metros de altura, capacidad para 1440 personas y un recorrido de 38 minutos, la noria de Nueva York promete ser la más espectacular del mundo por sus vistas y poner por fin en el mapa a Staten Island. Situada al sur, los turistas solo se acercan a ella porque el ferry que la une con Manhattan es gratuito y permite ver de cerca la estatua de la Libertad y el skyline de la ciudad. ¿Qué se pierden quienes no pasan una tarde en ella? Historic Richmond Town, un pueblo-museo compuesto por edificios del siglo XVII y XVIII cuyos interiores están perfectamente conservados, y un cementerio de barcos conocido como Arthur Kill Boat Yard. 192 metres tall and able to take 1440 people on a 38 minute ride, the New York wheel sets out to be the most spectacular one in the world for the views on offer, as well as putting Staten Island back on the map. Located south and within easy reach by ferry (for free), tourists coming from Manhattan get to see the skyline and be closer to the Statue of Liberty. What do you miss if you don’t spend at least an afternoon there? Historic Richmond Town, a village-museum of 17th and 18th centuries buildings, the interiors of which are finely preserved, and a boat cemetery known as Arthur Kill Boat Yard. En Nueva York está Brooklyn, y en Brooklyn, Williamsburg. Un barrio dentro de otro, con personalidad propia y definida. Creció al calor de los astilleros y fábricas de cerveza, y en la década de los 80 era una de las zonas más peligrosas de la Gran Manzana. Pero todo cambió cuando los artistas y bohemios echaron a los mafiosos y sus calles se llenaron de galerías de arte, librerías, cafés, bicicletas… A este lado de Manhattan reina la tranquilidad y es un placer ver la vida pasar en el East River State Park o cotillear cada sábado en el mercadillo vintage Artists&Fleas. Brooklyn is part of New York, and Williamsburg part of Brooklyn. A neighbourhood inside another, with its own unique character. It grew in the heat of shipyards and bear factories, in what was in the eighties one of the most dangerous areas in the Big Apple. But everything changed when artists and bohemian types pushed the Mafiosi away, and the streets started to boast art galleries, bookshops, cafes, bicycles... You breathe an air of tranquility here as you watch the world go by in the East River State Park or snoop around the vintage Artists&Fleas market on a Saturday. NO TE PIERDAS El Winter Flea Market. Aunque muchas de ellas se han rodado en platós ubicados en California, el ambiente y el espíritu de la ciudad inunda cada capítulo y son muchas las rutas que permiten descubrir sus rincones. La de Mad Men arranca en el 405 de Madison Avenue, donde se situaba la primera oficina de Sterling Cooper, y pasa por PJ Clarke’s, donde Peggy celebró su ascenso. La de Friends hace parada en la esquina entre Bedford St y Grove St, donde está el apartamento de Mónica, y la de Sexo en Nueva York, en Magnolia Bakery, cuyos cupcakes se han hecho mundialmente famosos. What would have happened to Mad Men, Friends, Sex and the City or Girls without New York? Though it’s true that many of them have been filmed on sets in California, the atmosphere and spirit of the city permeates every chapter, and there are many routes to find their spots. The Mad Men route starts out on 405 Madison Avenue, where the first office of Sterling Cooper was located, and goes past PJ Clarke’s, where Peggy’s rise took place. The Friends route stops over on the corner of Bedford St and Grove St, where Monica’s apartment is. And the Sex and the City one goes to Magnolia Bakery, whose cupcakes became world famous. SPORTS Para fans del béisbol y el basket. For fans of baseball and basket. Vivir desde las gradas un partido de los Nicks puede ser un buen plan para sentirse new yorker por un rato. Su estadio, el Madison Square Garden, está entre la séptima y la octava avenida y en él se celebran también conciertos y combates de boxeo. Otra opción es viajar a Brooklyn para animar a los Nets en el Barclays Center, un superestadio inaugurado en 2012. Y si prefieres el béisbol, es visita obligada el Yankee Stadium, situado en el Bronx. Se estrenó en 2009 y cuenta con un museo dedicado a la historia de los Yankees y diversas tiendas y restaurantes. Experiencing a Nicks game from the grandstands can be a great plan to feel like a real New Yorker for a little while. The Madison Square Garden stadium is between the seventh and eighth avenues. It also hosts concerts and boxing matches. Another option is to travel to Brooklyn to root for the Nets at the Barclays Center, a super stadium inaugurated in 2012. And if you’re more into baseball, you must visit the Yankee Stadium in the Bronx. It opened in 2009 and also has a museum dedicated to the Yankees history, as well as a number of shops and restaurants. On the west side of Manhattan, between Gansevoort Street - Meatpacking District - and 34th Street, you will find the High Line Elevated Park, an original urban park built on an old railway abandoned in 1980. The first phase was inaugurated in 2009 and the third and last one in 2014. Y es que, aunque el ciclismo en este país sea un sector potente con muchos aficionados –según el Cycling Industry Club, la bici en España genera 1620 millones de euros al año y unos 30 000 empleos–, “la verdad es que lo que ha tirado siempre aquí ha sido la bicicleta de montaña. En bici urbana, la que está ahora tan de moda, vamos muy por detrás de Alemania, Reino Unido o incluso Italia”, señala Jaime Díaz, director de Slowroom, el templo de la bici urbana en Madrid. Químico de formación, hizo de un hobby su profesión, y aunque técnicamente ‘colgó’ sus estudios universitarios, en la práctica les sigue sacando partido: “La soldadura es un proceso químico, y diseñar en laboratorio me ha servido para mucho en este trabajo”. ¿La mejor bici? La que se adapta como un guante a la persona y, sobre todo, al uso que esta va a hacer de ella. ¿Fibra de carbono, bambú, escandio, acero...? Ningún material se resiste a este diseñador que tiene bien claro que las buenas bicis “no son moda prêt-àporter, sino un traje a medida de quien lo encarga”.

The one that fits you like a glove and is, above all, fit for purpose. Carbon fibre, bamboo, scandium, steel...? This designer is not afraid of any. He knows full well that good bikes “are not like prêt-à-porter fashion, but rather like tailor made suits”.

A bordo de ella navegó por el río Rin y llegó hasta Basilea. Allí la transformó en un cobertizo y la expuso en el Kunstmuseum Basel. Arte en un objeto cotidiano. At times a shed, at times a boat. Simon Starling, Turner Prize 2005, specialises in creating installations with recycled objects. On this occasion, he converted a cabin into a boat, then sailed along the Rhine river and arrived in Basel. There he turned it into a shed to exhibit at the Basel Kunstmuseum. A unos dos metros del suelo fijaron la estructura a los árboles y colocaron bancos en su interior. Un hogar para Peter Pan. Corrugated metal sheets in different sizes were used by London couple Amir Sanei and Abigail Hopkins to create what they define as a ‘house’ of games for their children, a Neverland made to measure. The structure hangs from the trees a couple of metres from the ground and has some benches inside. A home for Peter Pan.

This unusual construction appears on the extensive beach of Blackpool in the UK like a powerful whale tail. In a landscape where the wind is constantly blowing, architect Ian McChesney put up a revolving structure that always turns its back on the wind. Harina, asegura que “hay mucho lastre con el tema de la alimentación. Ahora se dice que es mala la leche de vaca, la carne roja y los embutidos… Cuando yo era pequeña, se decía lo mismo del aceite de oliva y el pescado azul. El pan arrastra la mala fama desde hace años, lo llevamos metido dentro, hay niños que dicen que no comen pan porque engorda. Y la moda de las dietas sin gluten también afecta”. Afortunadamente, como apunta Xavier Barriga, “el discurso está cambiando y se recomienda tomar alrededor de 150 gramos al día”. Una ración de felicidad que puede llegar a perdurar en el recuerdo. “Me vienen a la cabeza los panes de centeno, ácidos y perfumados, de Suiza y Alemania. Para mí, descubrir el centeno supuso ver que hay vida después del trigo”, afirma Xavier. Beatriz evoca “el pan de Sullivan Street Bakery en Nueva York” y Carmen aún se emociona “con el aroma del Museo del Pan Gallego”.

En Málaga, Room Mate Valeria se convierte en el tercer establecimiento de la cadena en esta localidad y también en el más grande gracias a sus 61 habitaciones, decoradas por las hermanas Melián. The Milan one is called Room Mate Giulia and is the first hotel of the chain in the Italian city. It is located right in the centre, next to the Galerias Vittorio Emanuele. It has 84 rooms, designed by prestigious architect Patricia Urquiola. Room Mate Valeria is the third hotel of the chain in Malaga. It is also the biggest one due to its 61 rooms, designed by the Melián sisters. Whilst the third one in Barcelona is Room Mate Carla, located in the city centre, on the corner of Paseo de Gracia with Aragon. All of them will open in the first quarter of 2016.
