This can be done up to 3 days in advance. Prepare the Speedy Crème according to manufacturer directions. Pipe prepared cream into tart shells, taking care not to pipe above top of tart wall. Divide tarts into 3 groups. Place Velvetop into piping bag fitted with a closed star tip and pipe star designs on 1/3 of the prepared tarts. Place glaze in pan and warm through. Top a third of the tarts with blueberries, the last third with strawberries. Brush warm glaze on top of the berries and let set completely before serving. Baker’s tip: While coating the tart shells with chocolate before filling with custard is optional, it will create a barrier between the custard and shell, keeping the tart shell crispy for longer in your bakery case!

Mix in 2 oz icing fruits and 4.25 oz buttercreme. Mix until very well combined, kneading as needed. Lightly spray a cake popsicle mold with pan spray, using the gray scoop (1/2 cup), scoop prepared filling into molds, scrape the tops and insert a popsicle stick. Freeze overnight. For sprinkle pops: Melt Van Leer shine, color with Chefmaster colors. Unmold frozen pops, dip in prepared chocolate, sprinkle with sprinkles before chocolate sets. For melting pops: Melt Van Leer shine, color with Chefmaster colors. Unmold frozen pops, dip in prepared chocolate, let set up completely. Melt additional Van Leer Shine (do not color this batch), pour into piping bag. Holding cake popsicle upright, pipe white chocolate on top, allowing it to run down the popsicle. Set back down when chocolate has stopped running on its own.

Measure 4 pounds batter, deposit 1 pound into a sprayed and papered 8-inch cake pan. Place 2 pounds of batter in a bowl, the remaining batter in a different bowl. Color the 2 pounds of batter with pink food coloring then deposit 1 pound each into sprayed and papered 8-inch cake pans. Color the remaining 1 pound of batter with green food coloring and deposit into a papered 8-inch cake pan. Bake at 350° F until cake springs back lightly when touched. Let cool completely. Once cooled, trim the bellies of each cake, saving them for other uses. Then split the white layer in half, reserving one half for another use. Place buttercreme into 4 bowls, flavor each with watermelon flavoring. Color one bowl pink, leave one white, color another neon green, and the last bowl leaf green. Place the dark green cake layer on a cake board, top with green buttercreme, spread to edges. Place a white layer on top and top with pink buttercreme, spread to edges, top with a pink cake layer followed by pink buttercreme, then another pink layer. To crumb coat the cake, place each color of buttercreme into a piping bag and pipe corresponding colors around the cake in circles. Scrape off excess buttercreme. Place internal supports/dowels into the cake. To smooth ice the cake, pipe corresponding colors around the cake in circles and smooth ice using a heated spatula if needed. Decorate with candy watermelon seeds. *Search online for product

Baker’s Tip: If ruby chocolate is unavailable in your area, substitute using a combination of white and dark chocolates with the Chefmaster Princess Pink food coloring. For the ganache, substitute 25.6 ounces white chocolate and 6.4 ounces dark chocolate for the ruby chocolate and follow the directions above being sure to use a good amount of the food coloring.
