We finished with the wines and started writing about the cheeses. On my recent trip to the parts of Atotonilco del Alto in the state of Jalisco, land of our beloved tequila, and thanks to the usual knowledge of friends who work in the gastronomic sector, I met a talented character, the “Chava,” a very popular merchant throughout the region, who is dedicated to producing cheeses. And here I will tell his career with cheese, he began to work in various companies producing this delicious food, which took him to Italy, France, Switzerland, Spain, Portugal and from there back to his beloved Mexico in 1990 he made the decision to produce European cheeses, and there began QuesArt. Chava has participated in several events and has also been a judge in the village of St. Maure (France) in the ‘Fromagora’ of the year 2000. He has participated in two ‘Cheese Olympics’, in 2005 in Verona, Italy, and in 2007 in Oberndorf, Germany.As well as in 2004 he obtained in the ‘Goat Cheese Fair’ in Celaya, Guanajuato, the first place as the best goat cheese in Mexico. For several years he has participated in the ‘Gourmet Festival’ in Puerto Vallarta, Jalisco.

We were fortunate to be invited to a tasting with part of his production ranging from Camembert, Brie, Morbier, Crottin Smoked Manchego and wine, Appenzeller, Grana, Neuchatel, Raclette, Reblochon and with great surprise the Tete de Moine to name some of the other 21 that complete the list

Not bad, right?, because the truth is that all the cheeses turned out to be above our expectations, in the presentation we were only Europeans already very Mexicanized, but modestly good connoisseurs.

In 2004 it obtained in the ‘Goat Cheese Fair’ in Celaya, Guanajuato, the first place as the best goat cheese in Mexico. For several years he has participated in the ‘Gourmet Festival’ in Puerto Vallarta, Jalisco.

Now we leave Chava in his beautiful ranch with his sheep, cows and goats to go to the state of Querétaro.

Although, Querétaro has become a popular destination for its wines and vineyards, the offer does not stop there, as it is also home to multiple cheese factories that are the perfect pairing.

Currently in the state there are 10 producers and about 86 varieties of cheese, in the municipalities of Querétaro, El Marqués, Colón, Tequisquiapan, Huimilpan, San Juan del Río and Ezequiel Montes.

From route to route I learned that the Cheese Lower Club is about to open in the Cancun area that will satisfy Club lovers with biweekly deliveries of their favorite cheeses. And for the new Marcelino Pan y Vino and...... cheese.
