These are exciting times for Dundee. The opening of the V&A has helped to put the city on the world tourism map. Rolling back the years at DunDee 80s DunDee 80s is an extravagant new event to join the city’s bustling summer music calendar. Featuring iconic figures from the 80s music scene such as the debonair English pop group ABC, former Ultravox singer Midge Ure, and Scots duo Hue and Cry, the outdoor concert promises a retro revival at its finest. So, get set to dance and sing along to the best tunes of the decade at Dundee’s favourite outdoor green space.

Slessor Gardens has hosted the likes of Little Mix, Olly Murs and Rita Ora – and now it’s welcoming an extensive line-up of 80s legends. ABC, led by singer and performer Martin Fry, paved the way for a musical revolution in the 80s by fusing disco funk with a romantic, post-funk vision. Hue & Cry’s debut single Labour Of Love was fundamental in the growing dance-pop scene of the era, and Midge Ure has received Ivor Novello and Grammy Awards alongside an array of platinum records over the years. Sangria with a gin and ruminfused twist

• 25ml of Cointreau • 250ml of El Tinto De Lela (red wine) • 5 grams of sugar • 400ml of lemonade • 200ml orange juice METHOD • Slice all of the fresh fruit and add the sugar to a clean jug. • Add the Beefeater gin, Bacardi Carta Blanca and Cointreau. • Stir the mixture together and add ice. • Add 250ml of El Tinto De Lela or another red wine. • Add 400ml of lemonade and top up with orange juice. • Stir and chill sharing glasses. wine; 3 cups of vegetable stock; chopped parsley; 1 finely diced red onion; 2 cloves of diced garlic; 2 cups of panko breadcrumbs; 1 large egg; 1 cup of milk; 1 duck egg; Hollandaise sauce.

Method risotto 1. Sauté onions and garlic with olive oil and butter on a medium heat for 15 mins. Use a heavy-based, medium frying pan. 2. Add risotto and coat well. Cook for 2 mins, turning mixture continuously. 3. Add white wine until it evaporates. 4. Add vegetable stock until it evaporates. 5. Remove from heat and fold in the cheese. Add some parsley and half of the mushrooms. The heat from the risotto will cook the mushrooms. 6. Season well with salt and pepper. Spread the mixture out on a tray to stop the rice from overcooking and allow to cool. Once cool, form the risotto into disks/cake shapes.

Form and bread the cakes 1. To breadcrumb the cakes, in separate bowls you will need flour in one, whisk eggs and milk in another and in the third add your panko breadcrumbs.
