KRUG CLOS D’AMBONNAY 2000
Krug Clos D’Ambonnay celebrates, with the rarest of Champagnes, the unique character of a particlar pinot noir grape. They are harvested in a tiny walled 0.68-Hectare plot in the heart of Ambonnay, one of the most distinguished villages for this grape variety in Champagne, and one that had played a very special role in the life of the House of Krug.
Krug Clos d´Ambonnay 2000 is the expression of a unique walled plot of Pinot Noir harvested in 2000. 2000 was once hot, rainy and stormy. The harvest at Krug’s Clos d’Ambonnay took place in one day on September 29th; it was superbly bountiful with astoundingly rich Pinot Noir grapes. The House of Krug chose to reveal Krug Clos d’Ambonnay 2000 because, from the very first tastings, the Pinot Noir grapes harvested glowed with a rare generosity and beauty; they revealed a delightful, balanced character without any excess aromatic intensity. The year 2000 thus succeeded in expressing the full potential of this walled plot with true beauty and poise. www.krug.com

HIDEAWAY...
THE VILLA STEPHANIE FOCUSES ON A HEALTHY NIGHT’S SLEEP WITH DIGITAL DETOX “Sleep is to a person what winding up is to a clock.” Contributions like this one from Arthur Schopenhauer or any of the other surly looking philosophers are now being highlighted by contemporary studies and their healthy recommendations for a minimum amount of nightly rest. For this reason, all good hotels are attempting at best to create an undisturbed environment for their guests. The Villa Stéphanie, the newly opened luxury spa at Brenners Park-Hotel & Spa in Baden-Baden, has gone one step further and offers with its rooms and suites the innovative possibility of ‘switching off’ from a technical viewpoint, too. Firstly, it’s possible to turn the room’s personal internet connection on or off at any time. Sufficient screening from the neighbouring rooms is also guaranteed as all walls are equipped with metal shields and a special coating that blocks all highfrequency signals. Special shielded cables have also been used throughout the entire building significantly reducing electro-magnetic fields (so-called ‘electrosmog’). Besides this, an additional switch located in the bedside table allows the entire room to be disconnected from the electricity supply. During the daytime, therefore, guests do not have to forgo any comforts while in the evening they can retire for the night with total peace of mind. ‘Digital Detox’ is the name of this cleansing process which is growing in public awareness by the day. The major difference to other hotels is that guests at the Villa Stéphanie can decide at the flick of a switch whether they want the service or not. The greater the spread of wireless internet, the greater the wish to occasionally break away from being permanently available. “In a world where people are connected practically around the clock, there is a need for places of retreat where it is possible to relax and focus on yourself. It is for these reasons that the Villa Stéphanie has been created,” stated Frank Marrenbach, Managing Director of Brenners Park-Hotel & Spa.

For Brenners, the flagship property of the Oetker Collection, the concept is enjoying success on other levels too: the Villa Stéphanie has just been awarded one of the prestigious Tatler Awards for its revolutionary Digital Detox offer – an important signal at exactly the right time in this age of digitisation.

He will Rock you !
In this period of stifling summer heat and intense dehydration, it would appear there is a much more enjoyable alternative to a freezing shower to teleport yourself to ice-cold peaks... beer! Any self-respecting Belgian is religious about it. A king among drinks in Belgium, it has a special place in the hearts of the masses and has become a firm fixture at every terrace. Today it doesn't have as noble a reputation as wine, considered as more sophisticated, but this hasn't always been the case. In the olden days beer was a royal drink, a potion of immortality for the warring class. Its symbolism of fermentation associated it with wise elders and responsible initiates, in contrast with milk, the drink of childhood and innocence. And who better to tell us about this golden nectar than a man who, like Obelix, almost fell into it when he was a boy. Jean-Marie Rock is the son of a farmer. At the age of 12, when his father asked him if he intended to take over the family business, he announced, with confidence: "no, I want to become a brewer!" Although his father didn't look kindly upon this decision at this early age, Jean-Marie didn't care, and he began his studies in biochemistry, later specialising in brewing. Since then he learnt the ropes at Palm brewery and Lamot brewery in the early 1970s and he managed the production of Orval's breweries for almost 28 years. However for a long time in his head – as the world of brewing also has its share of avid and dishonest copiers – he has had a recipe which, due to its unique production process, would be the only beer of its type in the world. Meeting his future associate Jean-Didier Buisset sealed the deal and the eponymous beer ‘Mr Rock’ was born in August 2014. They temporarily set up their brewery in England in order to allow them complete independence in the choice of their raw ingredients to create their elixir. They will move to their own brewery in Noirefontaine at the heart of the Belgian Ardennes during the course of 2016.
www.greenbrew.be
In a country with a long brewing tradition and over 1,000 different types of beer, it seems appropriate to ask Mr Rock, the brewer, what's so special about 'Mr Rock', the beer. "The production process of this beer is unique. To my knowledge, it's the first low fermentation (between 4 and 12°C) beer in the world to undergo cold hopping then fermentation in the bottle. No brewer has ever considered producing a beer according to this method before." In order to understand the process without writing a whole thesis, it's important to distinguish between pils-type low fermentation beers and special beers fermented at a high temperature like Orval at 15°C or Chimay at 30°C. High fermentation is currently increasingly favoured, even with so-called low fermentation yeast, in order to save time. So as you've understood by now, brewing a beer at this temperature is rare but the result on the palate definitely lives up to expectations: a highly refined and delicate taste thanks to all the flavours that can develop in the yeast. The icing on the cake, low fermentation makes it a light and very refreshing beer particularly appreciated by women, explains Jean-Didier (editor's note: we can confirm this, for the purposes of the investigation ;-)). The beer's label is also daringly different. It is adhesive and runs all the way around the bottle, a first in Belgium. Mr Rock explains that there is an ideal way to savour this ambrosia. Firstly it must be served very cold with the right glass to show off the beer's elegance. Next, there are two options for serving it. Either pour the whole beer into the glass and when you reach the end, turn it a little in order to stir up the yeast. Or, as Mr Rock does himself, you can start by serving the beer as a clear drink, leaving 5 or 6 cm of beer in the bottle. Once the contents of the glass have been drunk, the rest is poured and you obtain a cloudy beer. "This way you get two beers in one" he explains. 'Mr Rock' beer is subtle, and it can be paired with even the most delicate dishes and accompany the most gourmet cuisines. Its flavours complement both a lobster salad and scallops, a spaghetti Bolognese or a Croque-Monsieur. As a general rule, more and more restaurant owners are re-appropriating beer and putting it on the menu. Pierre Résimont at the restaurant L'Eau Vive took the plunge by creating a trilogy of pears with a 'Mr Rock' yoghurt sorbet which delighted all his diners. Before we part, I ask Mr Rock what he thinks about Philippe Delerme's text on the first sip of beer, which he describes as being the only one that counts because after that "you drink more and more beer, with less and less joy. It's a bittersweet happiness: you drink to forget the first sip." Mr Rock doesn't see it that way at all: "If the first sip were the only one that counted, life would be unbearably sad." Sorry Mr Rock, for a moment there I forgot that beer is much more than just a small pleasure to you.

The new Portugieser Annual Calendar brings together two firsts for IWC and three masterstrokes of haute horlogerie in a single case: the newly developed annual calendar closes the gap between the perpetual calendar and the simple date display. The new IWCmanufactured 52850 calibre has two barrels that keep the new function supplied with ample energy and still has enough left for a 7-day power reserve.

Since last year, Zenith has been the oďŹƒcial timekeeper for 5 prestigious races organised by Peter Auto: the Vallelunga-Classic in Italy, The Spa-Classic in Belgium, the Grand Prix de l'Age d'Or in France, the Monza Historic also in Italy and the Dix Mille Tours in Castellet on the Paul Ricard Circuit. Now, the brand with the star is joining the vintage car track by becoming oďŹƒcial partner of the Tour Auto Optic 2000, a high quality race recognized for the authenticity and variety of the classic cars taking part. It was during a visit to Locle in the Swiss watchmaking area where the Zenith factory is located, that I had the opportunity to discover the Zenith El Primero Chronomaster 1969 Tour Auto Edition model launched at Baselworld this year.
El Primero Chronomaster 1969 Tour Auto is an “open” watch. In 2003, Zenith decided to make visible the beating heart - the timekeeping organ of the watch. This thinking marks the start of the development of a new concept known as “open”. After several months of research, the pendulum and the spiral are shifted around and will be visible through an opening in the watch face at 11 o’clock that will become one of the signature features of the El Primero range reminiscent of the Zenith El Primero Chronomaster 1969 Tour Auto Edition. The El Primero Chronomaster 1969 Tour Auto Edition is fitted with the El Primero 4061 automatic watch mouvement with a pallet and an escape wheel made from cutting edge material which eliminates problems associated with lubrication. Zenith El Primero Chronomaster 1969 Tour Auto Edition: a sporting hommage to the model which revolutionised watchmaking more than 40 years ago, the Zenith Chronomaster 1969 Tour Auto Edition of course is based on that very model while adding in a sporty touch. The Zenith El Primero Chronomaster 1969 Tour Auto Edition is of course a special limited edition of 500 units. The steel case back has 2 inscriptions: the Tour Auto logo (on the crystal) and the number of the watch within the series. The special presentation box has a cover with the Tour Auto logo and a blue interior matching the watch’s dominant colour.
