The AQUA Wetland System

“A

constructed wetland for treatment of high strength winery waste water”

The AQUA Wetland System or AWS was approved in 2012 by the Region of Niagara where the flow rates are less than 10,000 L/ day. Approval is for pre treatment of high strength winery wash water prior to discharge into a Class 4 septic system. In Ontario properties on which the daily sewage flows exceeds 10,000 L/day must receive approval through the Ministry of Environment. The AWS has also received approvals through this ministry for use at wineries.

This proprietary sub-surface, vertical flow constructed wetland consists of sand & gravel beds planted with moisture tolerant plant species. Water is pumped vertically from cell to cell. There is no open or standing water and the system is designed to operate winter and summer. Treatment of wastewater occurs through physical filtration & biological degradation. Plants shade & insulate the cells, preventing algae growth.

Ontario’s Beamsville Region: A must for wine lovers

IT IS LITTLE SURPRISE to wine enthusiasts that the Ontario wine industry is poised for exciting growth in the coming years. As demand for locally produced high-quality wines rises, and the province’s beverage alcohol landscape evolves, there is significant potential for expansion both within the domestic market and internationally.

With the industry’s emphasis on sustainability and innovation, the industry has faced several challenges in recent years, including climate change, market competition, and evolving consumer preferences. At the same time, wineries are embracing new trends and

diversifying their offerings to appeal to a broader audience.

For example, the Beamsville Bench — part of the broader Niagara Benchlands — is home to more than 50 wineries, ranging from boutique vineyards to established estates.

“Over the past few years, the industry has shown resilience and innovation, with wineries enhancing their visitor experiences, direct-toconsumer sales, and sustainability efforts,” says Britnie Bazylewski, Niagara Benchlands Tourism Development Officer.

The Niagara Benchlands is known for its cool-climate varietals,

particularly Chardonnay, Riesling, and Pinot Noir, which thrive in the region’s limestone-rich soils. Cabernet Franc and Gamay are also growing in popularity, along with traditional method sparkling wines, which highlight the area’s winemaking expertise.

Bazylewski says most visitors come from Ontario’s major urban centres — including Toronto and the Greater Toronto Area — but there is a growing number from other provinces such as Quebec, and U.S. border states like New York and Michigan.

seeing increased interest from outof-province and international wine tourists, further strengthening its profile as a premier wine destination. The region continues to attract wine enthusiasts, reinforcing its reputation as a top-tier cool-climate wine destination.”

Andrea Peters is Senior Public Relations Manager at the Wine Marketing Association of Ontario. She says the number of wineries in the Beamsville region can vary depending on how one defines the area.

“While the Beamsville Bench is a recognized sub-appellation, some wineries in the Beamsville area are part of the nearby Twenty Mile Bench sub-appellation. For clarity, the Niagara Escarpment appellation includes wineries in Jordan, Vineland, and Winona. There are more than 55 Vintners Quality Alliance (VQA) wineries in this region.”

Grape Growers of Ontario CEO Debbie Zimmerman agrees. “We have three wine regions in Ontario: Niagara, Prince Edward County, and Lake Erie North Shore and emerging areas throughout the province. Most varieties are grown in all three regions, but Niagara has — by far — a mix of all the varieties with the larger acreage.”

She says the Ontario wine industry is heavily invested in growing grapes in Ontario, and with the right support can increase it production.

government in 2024 is a game changer for our Ontario grown and produced wines. Grocery, convenience stores, and big box stores can now carry Ontario wine, and this expanded access offers consumers more opportunities to buy local. Consumers have more opportunity to buy local than ever before. We are encouraged these retail market changes along with other regulatory changes in the future, will unleash our potential.”

Industry challenges

Like every industry, there are challenges, and the wine industry is no different. When asked about roadblocks Zimmerman says that, over the years, growers owning their own market in Ontario has been a challenge.

“Our market share of VQA wine is 10 per cent of the overall wine sold through the Liquor Control Board of Ontario (LCBO). We can move more grapes into a bottle of wine, but some lingering legacy regulations are restricting our growth. We are committed to fixing these policies with the Ontario government to ensure 100 per cent VQA Ontario grown is first on the label.”

Peters agrees and says that over the past three to five years, the Ontario wine industry has shown impressive adaptability despite challenges such as the pandemic and evolving consumer behaviours.

sales, enhancing visitor experiences, and exploring new marketing strategies to maintain a strong market presence. And the region’s reputation for high-quality terroir driven wines continues to grow, elevating its profile both locally and internationally.”

She says challenges in recent years — climate change, market competition, and evolving consumer preferences — has been met by responses that include innovation and determination.

“Wineries are addressing climate fluctuations through sustainable vineyard practices and investments in technology to support vine health and adaptation,” says Peters. “At the same time, the industry continues to focus on crafting exceptional, terroir driven wines that showcase Ontario’s unique qualities. As consumer preferences shift, wineries are embracing new trends and diversifying their offerings to appeal to a broader audience.”

Bazylewski adds that evolving consumer trends and economic pressures have prompted wineries to adopt sustainable vineyard practices, diversify their offerings, and enhance on-site experiences. “Collaboration between wineries and tourism partners has strengthened industry resilience, ensuring continued growth and visitor engagement.”

As for the forecast for the Ontario winery industry over the next few years, Bazylewski is confident in its success.

“Ontario’s wine industry is set

IN TODAY’S HYPER-COMPETITIVE wine and beverage landscape, innovation isn’t just an advantage — it’s essential for survival. The wine and beverage industries face significant challenges: climate volatility, shifting consumer preferences, and intensifying global competition. Fortunately, in British Columbia, there is an organization whose mission it is to help growers, producers, and related businesses navigate some of these challenges.

Nestled on the Penticton Campus of Okanagan College, BC BTAC (British Columbia Beverage Technology Access Centre) is part research facility, part problem-solving workshop, and part innovation incubator for the beverage industry. It is a hub that works to help guarantee outstanding, unique, and consistently exceptional beverages that highlight the culture, background, and soil of the Okanagan Valley.

A broad and unique scientific perspective

The BC BTAC recently welcomed Dr. Karin GrosstessnerHain as its new manager. With a PhD in Technical Sciences from Vienna and a background in Molecular Proteomics, Grosstessner-Hain brings a well-rounded and scientific perspective to the role. After working as a regulatory manager for the Austrian FDA, she made Canada her home and developed her winemaking expertise, including overseas harvests in wineries across Europe, Australia, and New Zealand.

With over 11 years in B.C.’s wine industry, GrosstessnerHain has developed a deep understanding of the region’s particular needs. “My background gives me the ability to look at every new project from multiple angles and transform roadblocks into opportunities for innovation,” she says.

Grosstessner-Hain has an ambitious vision for BC BTAC. “I see BC BTAC as the information centre for the industry,

collaborating and helping our industry partners create new products with reduced environmental impact.”

BC BTAC: a team of world-class experts

BC BTAC is home to a diverse team of experts hailing from multiple continents with experience in wine regions worldwide. This collective expertise — spanning analytical chemistry, microbiology, and production processes — creates a powerful knowledge base for tackling industry challenges.

The team excels at dissecting problems across production, sales, or marketing sides of the wine industry, then finding the most direct and cost-efficient pathway to overcome them. By building connections and partnerships with other businesses and institutions, BC BTAC helps industry partners address challenges faster and more efficiently.

BC BTAC is also expanding its role as a training leader for the beverage industry. The Centre recently co-hosted a beverage conference and is planning a series of webinars focused on quality production. Next, BC BTAC will collaborate with Okanagan College’s Continuing Studies Department to develop follow up short courses and workshops in relevant quality production topics for professionals, as well as workforce fundamentals for new businesses and professionals in the sector. These courses will cover winery maintenance, vineyard management, health and safety protocols, and social media strategies for beverage businesses.

Addressing industry challenges

“The wine industry is navigating several challenges triggered by climate change,” says Grosstessner-Hain.

“One of our research priorities at BC BTAC is to explore climate change adaptation research and solutions.”

The centre also supports business diversification through non-alcoholic or low-alcoholic beverage development, including shelf life and stability testing. Soon, BC BTAC will be able to can carbonated spritzers using their new canning line followed by testing their shelf life.

A state-of-the-art sensory lab housed within BC BTAC is used regularly to conduct tastings for research and the public. “We can tackle projects around different packaging materials for wine, waste stream mapping, and water reduction research in production facilities,” says Grosstessner-Hain.

Okanagan College as a leader in food, beverage, and tourism

Over the past 20 years, Okanagan College has steadily increased its leadership in food, wine, beverage, and tourism through quality training and educational opportunities. In 2027, the Kelowna campus will open the doors to the Centre for Food, Beverage, and Tourism. In preparation for this, new and updated programming is under development.

By focusing on current, relevant, flexible hands-on

learning opportunities, Okanagan College combines its reputation for quality education with innovation sparked by applied research. “BC BTAC’s focus on innovation and development is a critical support to the industry,” says Grosstessner-Hain. “We also want to increase awareness of the diversity of education and training available to support business success — it’s all right here at Okanagan College!”

Okanagan Valley’s wine industry

The wine industry contributes nearly $4 billion to British Columbia’s economy and welcomes more than one million visitors annually

LOCATED IN BRITISH COLUMBIA’S

interior, the Okanagan wine region is the province’s premiere grape growing region and Canada’s second largest wine producing area.

Jenna Labossiere is the Marketing, Media and Communications Manager at the Thompson Okanagan Tourism Association (TOTA), a not-for-profit society that represents a geographic area nestled in the southern interior of British Columbia.

“TOTA plays a support, leadership, and growth role in the tourism industry as a regional destination management organization. It aims

to stimulate ongoing sustainable growth by embracing the value of tourism through community engagement, innovative leadership in promoting authentic experiences, and inspiring creative collaboration.”

The Thompson Okanagan Region consists of four wine regions:

• Okanagan Valley with 210 wineries and 10,920 acres of planted vineyards

• Similkameen Valley with 17 wineries and 768 acres of planted vineyards

• Thompson Valley with three wineries and 93 acres of planted vineyards; and

• Shuswap with six wineries and 107 acres of planted vineyards.

“The wine industry in the Thompson Okanagan is home to world class wines of multiple varietals,” says Labossiere. “Along with the incredible wines, the wineries offer a variety of elevated cuisine options and have given the opportunity for skilled chefs to create farm to table menus inspired by cultures from around the world and the local produce in season.”

She says that wineries are hard at work to encourage visitation yearround by offering events, special offers, markets, and more to attract

visitors and locals to come and enjoy. “As a result, wineries create job opportunities of all kinds for those living in the region and offer a unique experience for visitors encouraging more visitation to the region year-round.”

In British Columbia, there are 1,234 vineyards with more than 12,681 acres (5,132 hectares) of planted land (wineries and independent growers) and more than 80 grape varietals grown.

“The wine industry contributes $3.75 billion annually to British Columbia’s economy and welcomes more than one million visitors generating more than $600 million in associated revenue for the provincial economy,” says Labossiere.

With approximately 5.8 million visitors per year to the Thompson Okanagan region, the majority of the visitors are from Canada. But there are also many visitors from the U.S., as well as from Australia and Europe.

As for what is predicted for the wine industry this year and beyond in terms economic impact to the area, Labossiere says, “We anticipate the wine industry will continue to attract visitors and contribute to the economy this year and for years to come. The industry continues to showcase resilience and innovation in their efforts to incorporate sustainability into their businesses and production practices, in the way they produce their wines, and how they cater to the variety of visitors they welcome each year.”

Designing safer winery tanks: Prevention through design

LET’S TALK ABOUT SOMETHING that might not be top of mind but should be: the design of your storage and fermentation tanks. While we won’t dive too deeply into this intricate topic, it’s worth shining a light on the potential safety risks these tanks can pose during maintenance, cleaning, or inspection. Here’s where I’m a big believer in Prevention Through Design — or PtD for short. As a guide, the American Industrial Hygiene Association (AIHA) recommend a portal to be no smaller than 24 in/60 cm across or round. This dimension will easily accommodate the majority of persons.

Simply put, PtD integrates safety right into the design phase of these tanks. It’s a win-win, reducing hazards while boosting operational efficiency. Think about it this way, just as you pour thought and creativity into the architecture of your winery, the same level of care should go into designing your tanks. Why? Because their design directly impacts both safety and functionality.

You, as the customer, hold the reins. You decide on the portal size that ensures safe access and egress for your employees. And if access isn’t necessary? Go one step further — design it to make entry impossible altogether. After all, prevention is always better than the cure, especially when it comes to safety.

Leveraging technology for safety

It is worth considering the benefits of exploring the latest technologies for wineries. With advancements in equipment and systems, there are now solutions

designed to completely eliminate the need for confined space entry. These innovative systems not only enhance safety for workers but also streamline operations, making tasks like cleaning and maintenance more efficient and less risky. By adopting such technologies, wineries can reduce potential hazards while improving productivity and overall workplace safety. It is a win-win for everyone involved!

Some of the technology available includes:

• Cleaning-in-Place (CIP) Systems: Automate cleaning with spray nozzles, reducing chemical exposure and improving consistency.

• Automated capping systems: Allows for remote cap removal, minimizing fall risks and manual handling.

• Advanced tank design: Sloped floors assists in removal of capping.

Benefits of PtD

Integrating PtD into winery tank design enhances worker safety, streamlines operations, and ensures compliance with safety regulations. Investing in features such as larger portals and advanced cleaning systems creates a safer and more efficient production environment.

The initial investment may be more, but it will recoup overtime with less equipment, manpower, and time loss. By adopting these measures, wineries can prioritize safety while maintaining high-quality wine and production. s

How CGCN-RCCV research can guide growers to a more resilient, sustainable and competitive future

CANADA’S GRAPE AND WINE industry contributes $11.6 billion to the economy through highquality wine production, tourism,

and globally recognized exports. Canadian grape growers — growing premium grapes that make Canadian wines — face evolving challenges such as climate change, emerging diseases, and shifting market demands. To address these issues, the Canadian Grapevine Certification Network (CGCN-RCCV) has been collaborating with researchers nationwide since 2018 through Agriculture and Agri-Food Canada’s (AAFC) AgriScience Program. This article features brief insights from these experts and highlights

key research advancements in cold hardiness, virus and disease management, and winemaking innovations, with the goal of sharing practical knowledge to enhance industry resilience and competitiveness.

This research was funded in part by the Government of Canada under the previous framework, the Canadian Agricultural Partnership (CAP), as well as by provincial grapegrowers’ associations across the country and other industry partners.

These images showcase geotextiles. The research in CAP Activity 5 demonstrated how the snow and geotextile act synergistically to protect the vines against Quebec’s cold winter temperatures, often dropping below -30OC.

Cold hardiness is a critical issue for growers nationally, as extreme winter events threaten vineyards despite overall warming trends. Sudden temperature drops and prolonged freezes can cause significant damage, making it essential for growers to adopt strategies that improve vine resilience. Cluster researchers Dr. Harrison Wright (AAFC Kentville), Dr. Jim Willwerth (Brock University; both CAP Activity 7), and Dr. Andréanne Hébert-Haché (Centre de recherche agroalimentaire de Mirabel, a.k.a. CRAM, CAP Activity 5) worked to assess and improve cold hardiness. Understanding how

vines respond to winter conditions is essential for reducing losses. Wright explains that “[the] goal is to help growers recognize the risks, monitor hardiness levels, and adapt to climate variability.” One promising advancement is the use of Abscisic Acid (ABA) Analogs, a plant hormone that enhances cold tolerance. temperatures and delay bud break by up to 15 days. Willwerth says that synthetic ABA analogs, which metabolize slower than natural ABA, show promise for extending hardiness duration.

In Québec, geotextiles and rootstock selections are improving vine survival. Activity 2) determined that, when it comes to Leafroll, British Columbia’s short, dry growing season worsens the virus’ impacts. In Nova Scotia, Wright (with Dr. Debra Moreau; AAFC Kentville, CAP Activity 4) found high virus prevalence in some hybrid varieties, likely due to infected propagative material and virus latency. Úrbez-Torres echoes these concerns, adding that B.C.’s virus issue can be traced to historical importing practices; prior to 2005, vines were mainly sourced from western Europe, with a shift toward the western US around 2008. ÚrbezTorres and Wright offer this advice for effective virus management: plant certified clean vines, conduct routine virus testing on suspected plants, and be vigilant about vector control. Úrbez-Torres stresses that “[once] a plant is infected by a virus it can’t be cured, and this is why CGCN’s certification programs are important. The key is to start with clean plants and keep them clean as long as possible.”

Grapevine Trunk Diseases (GTDs) are a growing threat to vineyards, progressively weakening vines, reducing yields, and often causing premature vine death. Úrbez-Torres (CAP Activity 21) explains that fungal pathogens enter through pruning wounds, making early detection difficult. Preventive measures such

as pruning in dry conditions and using wound protectants can reduce infections. The 2023 and 2024 B.C. winter freezes forced widespread vineyard replanting, allowing growers to remove infected vines and replant with clean material. “Economically, this was a disaster, but from a sanitary perspective, it gave us a rare opportunity to eliminate many infected vines and start new with cleaner plant material,” notes Úrbez-Torres. By integrating scientific research into vineyard management, growers can improve vineyard sustainability and protect against both viruses and GTDs.

On the winemaking side, tannins

are essential for wine structure and ageability. Skin tannins enhance colour stability, and too much seed tannin can lead to bitterness; managing this balance is key to producing high-quality wine. Dr. Debbie Inglis (Brock University, CAP Activity 12) developed TanninAlert to help winemakers measure skin and seed tannin profiles in grapes and optimize extraction. Inglis explains that the tool works by “analyzing skin and seed tannin distribution individually across different grape varieties, which allows winemakers to identify potential imbalances and adjust their processes accordingly.”

For example, Pinot Noir grapes at harvest in Niagara have lower

skin tannin but higher seed tannin compared to other red varieties. TanninAlert offers new possibilities for winemakers looking to optimize tannin management, and 2025 will be a key year for workshops and database expansion.

FORMED IN 2017, ABAZYNE is a Saskatchewan-based agricultural bioscience company with research focused on developing analogs based on the natural plant hormone Abscisic Acid (ABA).

Through this research, the team has developed ABA Boost, its patented solution designed to provide wine grape growers with a scientific means to fight climate extremes.

ABAzyne CEO Jerome Konecsni co-founded the company with CSO Dr. Sue Abrams. As colleagues at the National Research Council’s Plant Biotechnology

Institute, they both had extensive experience in scientific research and development — Konecsni in management, and Abrams in synthesis of biologically active analogs of the plant hormone abscisic acid (ABA). They formed the company to take promising lead compounds to develop products that enable plants to withstand climate and other environmental stresses.

What is the ABA Boost?

In understandable terms, ABA is a naturally occurring plant hormone that triggers a plant’s environmental stress response. The company’s patented ABA analog

lasts longer in plants and prolongs plant stress responses by several months.

When vines are sprayed with ABA Boost after harvest, the plants have increased resistance to mid-winter cold events and the buds break up to 15 days later protecting them from late spring frosts.

“Sue’s group at the National Research Council had synthesized the active ingredient (ai) of ABA Boost around 2005 and the compound was patented but the synthesis process was not economically viable for practical applications” explains Konecsni.

“The compound had shown promising results regarding delaying bud break in wine grapes to avoid spring frost events. In 2023, a new synthesis was developed, and a patent was filed on a practical, economical method to convert natural ABA to ABA Boost. (Diddi et al).”

As for how ABA Boost works, after the crop has been harvested, a water-based soapy solution is sprayed on leaves of the grape vines and the compound is transported throughout the plant. Compared to ABA, treatment with ABA Boost triggers earlier and deeper dormancy and improved hardiness in the buds.

“It augments the effects of the plant’s natural ABA to enter and maintain dormancy in midwinter and into the spring,” explains Konecsni.

As for how successful ABA Boost has been with wine growers to date, he says, “The success of our research has been reported at conferences, meetings, and in the media. As a result, we have had calls from several producers of wine grapes, cherries, blueberries, and other tree fruits asking when and how they might try the product.”

Dirty Laundry Vineyard in Summerland, B.C. is certainly a fan.

Dapinder Gill, Vice President of Finance and Administration says, “ABA Boost is a great product as presented in providing the grape plants with earlier hibernation going into the winter season and delaying the plants into coming out of the hibernation stage and in turn protecting from spring frost. And, in seasons where we have seen that the plants have been hit with extreme weather, they have not been able to go into the hibernation stage properly.”

As for how successful the product is in deferring bud break when trying to avoid spring frost, he says, “Given that this spray promises to delay the hibernation stage and the subsequent bud break, it would help the grape growing industry in dealing with damage and providing assurance that the damage would be subsequently a lot less.” s

IN THE PURSUIT OF healthy vines and premium grapes, vineyard operators often over-irrigate, assuming more water ensures better growth. But excess irrigation harms crops, increases costs, and reduces wine quality.

Overwatering suffocates roots by displacing oxygen, creating ideal conditions for root rot and disease. Compromised roots struggle with nutrient uptake, weakening vines, and reducing resilience. Reducing trade barriers between provinces could greatly help the wine industry

Ziraldo Winery owner Donald Ziraldo has been in the wine industry for decades and is a strong proponent of a national Vintners Quality Alliance standard.

DONALD ZIRALDO IS A wine lover. Not only did he cofound Inniskillin Winery in Niagara-on-the-Lake with Kari Kaiser in 1975 (and recently celebrated its 50th anniversary), he also started Ziraldo Estate Wines in 2007.

And in 1991, he received the Grand Prix at VinExpo in Bordeaux, France for the 1989 Vidal Icewine.

“The secret to great icewine is the ideal balance between the intense sweetness and the inherent high acidity from the cool climate region of Niagara,” Ziraldo says.

“The Niagara Peninsula’s unique climate provides the ideal conditions to ripen the fruit. The cold winters naturally freeze the water in the berries to yield an exquisite balance of fruit, acid, and an extraordinary array of flavours, which results in this fine wine, often called liquid gold.”

Vintners Quality Alliance

What is also extremely important to Ziraldo is a national standard for Canadian wines — VQA Canada — which emulates established wine appellations such as the AOC in France and the DOC in Italy, plus many more.

As founding chairman of Vintners Quality Alliance, he says the VQA initiative was established in Ontario in 1988, and British Columba in 1990, and eventually — after a decade — the VQA was legislated in each province.

“However, it has not yet achieved nationwide status. The Grape Growers of Ontario reached out to me over a board of directors lunch meeting and asked if I might be able to assist in creating the VQA Canada to mitigate the economic effects of a disastrous frost that occurred in B.C. in January 2024.”

Not only did this devastating event damage crops, but destroyed vines that will take three to five years to replant.

“I was prompted to look beyond helping B.C. and to actually resurrect the VQA Canada initiative. I created a retail planogram which clearly creates the opportunity to expand awareness of VQA Canada across all retail outlets and liquor boards (including SAQ) nationwide.”

Ziraldo says inter-provincial trade barriers are the elephant in the room. “And with the threat of Trump tariffs,

this is a great opportunity to eliminate interprovincial trade barriers, which has become a very hot issue and would generate billions of dollars of economic activity. The wine industry could become the poster child for provincial trade.”

In an article published in January in Niagara-on-the-Lake Advance, Ziraldo said having national standards would allow Canadian growers to supply their grape juice and wine to winemakers in other wine regions allowing the eventual wine to be identified as VQA. The standard would also help address multiyear grape and wine shortages, provide a market for surplus VQA quality wine, and protect the future of the VQA brands. VQA standards would also be able to help winemakers across the countries in times of extreme weather.

“VQA Canada could initially become voluntary rules just as we had begun with B.C. and Ontario VQA in the 1980s.” he says. “The rules would be — for the time being — 100 per cent Canadian grapes. And Quebec and Nova Scotia would join the VQA Quebec and Nova Scotia. Quebec already has a IGP (l’Indication Géographique Protégée (IGP) Vin du Québec) that could fold into the VQA for Quebec. I understand there is now a joint federal and provincial joint wine committee.”

Ziraldo captures the essence of progress with his words, “We need to look to the future — not only for consumers in Canada — but to strengthen the Vintners of Canada’s position in the global market.” s
