Sailing the high SEAS

OK, it’s Lake Michigan, but Sheboygan organization shows this activity is inclusive  by Mark Sherry

S

heboygan is one of the world’s best venues for sailing.

Anyone who might be a bit incredulous about that statement should consider the credentials of the source from which it came—Juliana “Juju” Senfft. Senfft has been sailing since she was 3 years old and competed in her first sailing competition at the age of 5. Her parents were very much into sailing in her native country of Brazil and, oh, by the way, her father won a silver medal in the 1984 Olympics— held in Los Angeles—in the sport of sailing. Juju made her own run at the

Olympics, competing to try to be part of the games held in London. While she did not reach that goal, her bid took her to Sheboygan for the first time at the age of 20 for a race. From 2008 to 2011 she came to Sheboygan every year for a race, sometimes twice per year. The infrastructure for sailboat racing was good in Sheboygan, she observed, but she also liked everything about the city, area and state. In 2012, an organization was formed to promote sailing in Sheboygan—aptly named the Sailing Education Association of Sheboygan (SEAS). Businessman and sailing enthusiast Terry Kohler spearheaded the creation of SEAS. Four years later the organization had a full-

time opening for an adaptive sailing coach, and Juju said she was more than happy to take the job and make Sheboygan her home. Now she is one of six full-time staff members (plus part-timers in the summer) who continue to work to grow SEAS, a nonprofit organization dedicated to creating affordable pathways for the community to safely enjoy boating on Lake Michigan. SEAS has worked to develop an international reach into the boating community which allows them to bring quality programs, boats, people and knowledge to the Sheboygan lakefront. They provide educational programming and access to boats while removing barriers to participation created by


WOMEN WHO INSPIRE | Sailing off Sheboygan financial, physical, or cognitive needs. Education is the foundation of the organization. Classes teach safe handling of power and sail boats utilizing U.S. Sailing’s national standards. The organization operates out of its facility at 1837 Superior Ave. which was designed three years ago specifically for SEAS. Boats are stored there during the off-season and there is a wash bay and two shops. “We’re very fortunate to have it,” Juju said of the facility which is located about eight minutes inland from the lake. SEAS is a year-round organization, even if sailing is not happening on the lake. In the cold winter months, SEAS members present on topics such as local maritime history, water safety, the marine industry and marine

preservation, and they teach traditional maritime skills. They partner with other lakefront organizations to build a community passionate about Lake Michigan. Juju said the sailing season in Sheboygan is generally from late May through late October. “If it’s a nice fall, we try to keep the boats out as long a we can,” she said. By the way, Juju said she loves winters in Wisconsin even though she had never seen snow falling from the sky until she moved here. “You have the best of both worlds right here,” she said. SEAS tries to offer the best of the sailing world to all people—even those who have never tried it before and those who might think they would never be able to do it.

Juju specializes in adaptive sailing, providing sailing and racing opportunities for those in Sheboygan and the surrounding communities who have a wide variety of physical or cognitive impairments. Their goal is to assist disabled sailors in growing confidence and a sense of freedom through empowering experiences on the water, enabling a strong sense of self that they can carry with them to their daily lives. This is a unique opportunity for the sailors who come through the program to take charge of a boat on their own or in a group of friends and family. Juju said safety is of the utmost concern for all sailors but especially in the Adaptive Sailing program. SEAS evaluates prospective students on an individual basis to determine their

People with ALS also are frequent users of the program as the specially equipped boats can be fully controlled with the use of just four buttons, including via use of the mouth. A lift is available which takes people from their wheelchair directly into a chair on the boat. “It’s totally safe to do it,” Juju said.

If they are accepted into the Adaptive Sailing program, there is no additional fee for instruction once the person become a SEAS member. Most of the adaptive sailing lessons are conducted on Sonar sailboats, which have become a popular adaptive sailing class worldwide. A 23-foot long keelboat, Sonars are known for their spacious, open cockpit. Designed by Bruce Kirby— who also designed the extremely popular Laser dinghy—these boats are recognized for being stable and durable. In addition to being suitable for beginners, the Sonars are also raced competitively in both open and disabled championships, including fleet and match racing. SEAS offers instruction on both an individual basis and to groups both small and large. Instructors have

a wide range of experience with disabled sailors and are U.S. Sailing certified instructors. Boats can be adapted to accommodate a variety of physical impairments.

But SEAS is open to anyone and everyone who has any interest in sailing, including simply trying it for the first time. The organization has grown steadily, including having its best year ever last year during the pandemic because sailing is outdoors, of course, and can be done alone or in small groups. Anyone can become

a member of SEAS with a variety of dues levels available. Another service provided by SEAS is captained evening charters of its 40foot Tartan “Northstar.” New this year, the chartered trips are available Wednesdays to Sundays from 2 to 5 p.m. or from 6 to 9 p.m. Up to six people can go on the trips and they can bring their own food and beverages. A variety of classes are offered by SEAS including: n Basic Keelboat (Beginner Course)—This curriculum was created by U.S. Sailing. Those who take this course will learn how to properly prepare a boat to sail, leave the dock/ mooring, control a boat in confined waters, navigation rules and tips, control a

Those who pass this class will receive a Basic Keelboat Certificate from U.S. Sailing. (SEAS has changed from pre-set group courses to ondemand lessons that fit into busy schedules. To schedule lessons and start learning contact SEAS Program Director Matt Wierzbach at mwierzbach@seasheboygan. org.) n First Sail—The First Sail Experience is a twohour lesson offered to anyone through a growing list of First Sail Locations, comprised of community sailing centers, sailing schools and yacht clubs around the country. This unique opportunity offers beginners an introduction to sailing in a casual setting and is designed to provide a memorable experience that will motivate newcomers to continue sailing. The First Sail Experience features basic sailing hands-on learning that will cover topics such as how a sail works, parts of a sailboat, points of sail, and important safety guidelines. First Sails can be scheduled at the person’s convenience. n Private lessons Power boating classes also are offered including Safe Power Boating, Accelerated Safe Power Boating, Safety & Rescue, and Markset, the latter of which is for anyone who will be operating a markset boat for a race, regatta or event—something with which SEAS also assists.

Going back to Juju’s statement at the start of this story about Sheboygan being one of the world’s best venues for sailing, she explained that it is because the lake offers a little bit of everything for sailors. Sometimes conditions are windy without waves, and sometimes it is windy with waves. Then there are times when there is hardly any wind, something sailors have to learn to deal with as well. “You get to be a well-rounded sailor,” she said by experiencing varied conditions. Juju said she still competes in sailing races, including being part of a crew which raced from Chicago to Mackinac Island, Michigan earlier this year. Her boat did not win but she said she had fun—and showing people the fun of sailing is what SEAS is all about.

FUN to be had...

...no matter what your definition of that is! It is easy to connect the words “fun” and “fall” because of the alliteration—not to mention the fact there are just a lot of cool things going on during this great season of the year. From football to frolicking in leaves to finding new food options, the fun— and apparently words that start with “f”—just keep on coming. But that silliness aside, fun is really in the eyes of the participant. Sheboygan County Historical Society Museum The Sheboygan County Historical Society was formed in 1923 and holds over 35,000 artifacts in its collection. The museum campus at 3110 Erie Ave. in Sheboygan has the main museum building as well as four historic sructures, all dating from the mid- to late-1800s. The campus hosts programs on Sheboygan County history as well as seasonal traveling exhibits. Executive Director Travis Gross said, “We host over 3,000 elementary aged students through the school year as well as our History Hill Music Festival the second Saturday in September. Longhouse Axe Bar Longhouse Axe Bar, located at the corner of 12th Street and Indiana Avenue in Sheboygan, opened in October 2020 at the height of the COVID-19 pandemic. Support children as they head back to school Over a year and a half of coping with the pandemic is taking a toll on everyone’s emotional and mental health—and may be affecting children and teens even more than adults. According to recent research from the Kaiser Family Foundation, over 25 percent of high school students have experienced a decline in emotional and cognitive health since March 2020, and over 20 percent of parents with children ages 5 to 12 reported similar worsening conditions for their children. And as kids everywhere are now getting back into classrooms, their feelings of stress and anxiety may also be hard for them.

Harbor Lights Bar Krisi Kaiser has been coowner of Harbor Lights Bar in Sheboygan since 2015. “It was my dream to own a bar since I was a young girl,” Kaiser said. “I grew up in the bar called the Question Mark in Adell that my aunt owned. I would always go behind the bar and wash the glasses and help flip burgers when it wasn’t busy. I knew I wanted to own a bar since a young age, and I made it happen.” She added, “I co-own the bar and would not be where

A few years ago, Rich Sachse became part of the family to help it grow as Chuck Miesfeld transitions into retirement. Miesfeld’s has grown a lot over the years and now has about 80 employees. “We provide a great quality product to our community through our retail store, to many local restaurants and stores— even outside of Wisconsin,” said Hollie Kroll, retail store manager. “I have been here for 11 years. I started as a meat cutter and have worked my way up to leadership.” She added, “We are

currently working on doubling the size of our retail store, which is very exciting. I believe all of our plans and new products are going to be such a great addition. We take a lot of pride in showcasing many local vendors. Recipes, Recollections & Reminiscings from Marge By Marge Petts I look forward to Indian Summer every year, which arrives after the first frost. It will be warm, dry and calm weather, followed by the beginning of colder temperatures. Indian Summer is more evident in the Eastern and Central States where the weather pattern, temperatures, and wind fluctuate more. It is also the time of year that many years ago found us on small lakes in Northern Wisconsin harvesting wild rice. My husband, Stan, is a member of an Indian tribe in Michigan. His mother was a full-blooded Ottawa Indian. The Ottawas are a FrenchCanadian tribe. We have the Native Americans to thank for many of the fruits and vegetables that are an important part of our diet today.

Cranberries were an important food source for many American tribes. Cranberries are one of the three native fruits in North America. The other two are blueberries and Concord Grapes. Cranberries are a superfood with disease fighting antioxidants and boost immunity. They were a source of food and medicine for North American Indians. The berries juice was used in a poultice (a soft, moist heated mass made from plants or herbs and spread on a cloth) to extract poison from arrow wounds. In Three Lakes in Northern Wisconsin, there were three cranberry bogs. They harvested cranberries in the Fall of the Year. Cranberries were grown in a swamp in bog beds about 40 feet wide by 160 feet long. The bogs were surrounded by a trench that could be flooded. When the cranberries were ready to be harvested, the water

These cranberries were also harvested by American Indians, such as the Ottawa Tribe. Hunting and gathering means living on what nature provides. The Ottawa’s were also gardening people. They do not wander around looking for a stray berry or wild plum. They know when things are going to be ready in a territory they know well. If it weren’t for the Native Americans bringing corn to the new world, we wouldn’t be able to enjoy it today. The Legend of Corn: Many years ago, the great Kahkawkonty told how the Great Spirit told him to preserve two ears on the plant until the next Spring, and then to plant the kernals from the ears of corn. He was told to preserve the whole crop and send two ears to each of the surrounding Indian Nations, with the order they were not to eat any of it until their third crop. By this means the corn was distributed among all the American Indians. We would also do well to follow the American Indians beliefs as we strive to preserve the way of life we enjoy today. Cranberry Bars Cream together: 2 eggs, beaten 1-1/2 cups sugar 1 cup butter, softened Add: 1-1/2 cups flour 1 tsp. baking powder 1 heaping tsp. salt

1 teaspoon vanilla 2 cups halved cranberries 1 cup nuts, chopped Bake in a 9x13 inch pan at 325 degrees for 35 or 40 minutes.

Cranberry-Apple-Nut Pie Makes 1 pie 2 cups fresh cranberries, chopped 2 cups peeled apple, chopped 1 to 1-1/2 cups sugar ½ cup chopped nuts 2 tablespoons quickcooking tapioca ¼ teaspoon cinnamon Pastry for 9-inch doublecrust pie (or purchase 2 refrigerated pie crusts) In a large mixing bowl, combine cranberries, apple, sugar, nuts, tapioca, and

cinnamon. Let stand 20 minutes. Turn cranberry mixture into a 9-inch pastry-lined pie plate. Adjust top crust; seal and flute edges. For a fancy finish, flute edge loosely. Using a fork, press fork prints in each rounded flute. Cut vents in top crust. Brush top crust with milk and sprinkle with additional sugar, if desired. Cover edge of pie with foil to prevent overbrowning. Bake in a 375- degree oven for 25 minutes. Remove foil. Bake for 20 to 30 minutes more or until golden.

Hearty End of Summer Vegetable Soup Makes 10 Main-Dish Servings 1-1/4 cups chopped carrots 1 cup diced potatoes 1-1/2 cups cut green beans 1 cup chopped onions 2 cups fresh corn kernels 2 cups diced zucchini 6 cups chicken stock or water Salt and pepper to taste 4 large very ripe tomatoes, peeled and coarsely chopped 4 tablespoons catsup or to taste

1 tablespoon dried dillweed or 2 tablespoons fresh dill Place all ingredients in large soup kettle, seasoning well. Stir. Cover. Bring to a boil over high heat. Reduce heat to medium to medium-low and simmer until vegetables are tender, about 1 hour. (The vegetables will be somewhat soft, especially the zucchini. If you prefer crisper vegetables, wait and add the zucchini halfway through the cooking time). Taste and adjust seasonings for this recipe.

The Original Classic Margarita Makes 1 Drink – Double the Recipe for 2 Drinks Run a wedge of lime around one side of the rim of a chilled rocks glass. Dip rim in a coarsely ground sea salt. Partially fill glass with ice. Fill a cocktail shaker halfway with ice. Add 2 ounces Blanco (or other high-quality tequila) and 1 ounce each orange liqueur and fresh lime juice. Shake vigorously until outside of shaker is cold and frosty, about 10 seconds. Strain into prepared glass. Garnish with a lime wheel and serve immediately.

Note: You can make a batch of the tequila, orange liqueur, and lime juice mixture up to a day ahead. Refrigerate it in an airtight container until you’re ready to shake with ice and serve.

Vegetarian Fajitas Makes 8 Fajitas 2 tablespoons oil 1 green bell pepper, sliced 1 yellow Bell pepper, sliced 1 medium onion, sliced 1 can whole kernel corn, drained 1 large tomato, chopped ¼ teaspoon salt 1/8 teaspoon pepper 8 (8-inch) tortillas, heated Guacamole, sour cream and/or salsa, if desired. Heat oil in large skillet or wok over medium-high heat,

until hot. Add bell peppers and onion, cook and stir 2 to 3 minutes or until vegetables are crisp-tender. Add corn, tomato, salt and pepper. Cook until thoroughly heated. To serve, place ½ cup vegetable mixture in center of each warm tortilla. Top with desired toppings roll up.

ay by day, week by week, burrito by fajita, Pacifico Mexican Bar & Grill of Plymouth is gaining recognition as the best Mexican restaurant in Sheboygan County. ”The restaurant is becoming more and more recognized in Sheboygan County and more local people join our clients,” said Jose O. Guzman of Pacifico, located at 506 E. Mill St. in downtown Plymouth. Pacifico has been in business for five years but Jose and Pedro Guzman did not get their start in Sheboygan County. Their first location was in Viroqua, southeast of La Crosse.

The menu for Pacifico Mexican Bar & Grill is inviting. Since opening restauants in Plymouth and Sheboygan, their name recognition has steadily grown throughout the county. “Our authentic Mexican food is the best in Sheboygan County,” Jose said with pride. “We have a great menu and the best service.” The Guzman families and their employees said they follow a basic plan in serving their customers. “The key to our success is simple—providing quality, consistent food that tastes great every single time. We pride ourselves on serving our customers delicious, genuine dishes,” they state on their website. Consistently high quality is not as easy as it sounds in the restaurant business or in any business for that matter,

How about starting with an appetizer? Of course a person would expect the usual dips— guacamole, cheese and bean—and Pacifico has tasty versions of all those. The same goes for the Nachos Supreme—served with either shredded chicken or ground beef. For something a little different, try the mouth watering Choricheese—Mexican chorizo sausage topped with melted Chihuahua cheese. Among the approximately 18 choices on the lunch menu are Zarape (grilled strips of sirloin steak or grilled chicken, mixed with chorizo, roasted poblano peppers, onions and roasted corn and topped with cheese sauce); the Speedy Gonzalez (one enchilada and one taco served with rice and beans); and the Burrito Jalisco (flour chipotle tortilla filled with grilled chicken, pastor or sirloin steak, black beans and lettuce, topped with bacon, cheese sauce and avocado sauce, all served on a bed of rice.) The “Pacifico Specials” continues the restaurant’s lengthy menu of traditional Mexican favorites combined with unusal twists. In that latter category is the Volcano Special—grilled sirloin steak, chicken breast, shrimp, chorizo, fried jalapenos, green onions and grilled cactus with a choice of red or green sauce. It is served in a volcano rock and smothered with Chihuahua cheese, served with tortillas and all the usual Mexican plate goodies. There are daily price specials as well, such as Taco Tuesdays, $1 off burritos on Fridays, and $1 off a Kid’s Plate

on Thursdays. Continuing along the seemingly endless menu, one finds combo platters, a selection of fajitas, steaks including ribeye, more than a dozen seafood dishes, 10 different burrito choices, enchiladas, chicken, quesadillas, and even hamburgers, salads and vegetarian dishes. A kid’s menu includes choices such as macaroni and cheese and chicken tenders but also children’s portions of Mexican favorites, of course. Top it all off with a little dessert including churros or sopapilla—both with ice cream, of course. I

t’s not easy these days to be a kid. I was thinking about this as my son’s baseball season came to a close a couple weeks ago. Eddy loves sports, loves those activities…but man sometimes it’s a lot of activity! He played in almost 20 games this year, and had just as many practices. That’s a lot of time…and it’s also a lot of ORGANIZED time and activity. You know…there’s a score being kept. There are people watching. It isn’t just ‘free play.’

year, last Sunday. This time it was his mom who wrapped him up. And I was the one to capture the moment in a photo this time. The moment made me want to remind the moms out there that their job seems endless. Laundry. Dishes. Taxi Service. You get the idea. But when a moment like that happens for Ellie and Eddy, I’m glad she didn’t flinch and she absorbed it and didn’t let it end.

After one particular game that involved a couple strikeouts, it got to him. Rather than tell him to forget about it, or suck it up, or try to ‘fix’ it in any other way, I just went in for a bear hug and decided he was going to have to let go of me first. A friend captured the moment, and it’s one of my favorite moments.

So much of life is “go go go” and often it’s on to the next destination or project, yet life will give opportunities like the one I captured, and I’m thankful for it. Sometimes it’s just two things that are needed. 1) Mom. 2) Time. So take that time.

need to. Eddy didn’t either. It was just time. She’s an incredible mom and that was an incredible moment. I’m gonna hug my mom that way next time I see her too. I’m never too old to not be her son, and to not hug her like that. As I mentioned, baseball has ended. Soon enough, it’ll be soccer, then school. More organized activity when maybe our kids just need to play. I am as guilty as anyone of looking to always be working on something with them, or organizing an activity. I’ve stated in the past that it’s a practice for me to do nothing, and those moments of hugs reminded me of that.

Soon enough those organized activities will start stacking up the calendar again. But I’m going to remind myself to not let go when those hugs occur, and just be present when they happen. And even though I’m 40 now, I look forward to hugging my mom next time I see her. And to all you moms out there…hug those kids as tight as Ellie hugged Eddy in that parking lot.

Couples enjoying Cedar Community living

A

fter meeting in a Florida retirement community and becoming the best of friends, three couples all decided to make the move to Cedar Community at the same time. Tom and Carol Hanson and Dick and Rean Seekins, all Wisconsinites, decided to move back home to Wisconsin and settled at Cedar Community’s independent living apartments in West Bend. Frank and Jean Roberts came for a visit and while they were not fond of the apartment lifestyle at Cedar Ridge, they were introduced to Cedar Community’s Elkhart Lake Campus where they fell in love with their new independent living home. They customized the space with the addition of an enclosed porch and now have plenty of room to host their three sons and their families—including four grandsons and one great-grandson. The Robertses became actively involved in the Cedar Community lifestyle, participating in many local activities— including a “dine around” which introduced them to many restaurants and the Elkhart Lake community. “Since we weren’t from here, it was great for us to be introduced to

the many wonderful restaurants in the area,” Jean said. Frank, having an interest in photography, thought it would be a wonderful idea to add a camera club for residents and the greater community. He put an ad in the local paper and today the club has about a dozen members. Wanting to learn more, Frank found Mike McGill, a self-taught photographer who shares his expertise with the club. Mike also sends out a monthly newsletter with a picture offering photography tips and tricks. The Elkhart Lake Camera Club has enjoyed outings to the Mitchell Park Domes in Milwaukee, Lambeau Field, fireworks displays and hiking trails. These outings all help club members learn how to photograph in a variety of settings. The club is open to everyone of every level. Some have point and shoot cameras while others have high-tech equipment, and some simply even shoot with their cell phones. “It’s a very supportive group. If there is something you want to learn, all you have to do is ask,” Frank said with Mike concurring.

Grandkids say the darndest things!  by Darlene Buechel

R

emember the TV show House Party?

If you’re old enough to be a grandma (like me) you’ll recall Art Linkletter ended every show by chatting with several school-age kids. During the course of the popular show (1952 to 1970) Linkletter asked kids a smorgasbord of questions. For example: “What does your mommy do?” Answer: “She does a little housework then sits around all day reading the racing forms.” Or, “What’s the hardest thing about school for you?” Answer: “Buttoning my pants!” Linkletter questioned over 20,000 kids over the course of the House Party show. He said he liked interviewing women over 80 or young children since they would give the most honest answers and didn’t have filters. In 1957 Linkletter wrote a bestselling book, “Kids Say the Darndest Things” based on the wisdom and wit from the House Party interviews. My oldest grandsons were born in 2010 and 2013 and I’ve often told my daughter Danielle she should write a book about all of their goofy jokes and comments. The boys have said many wise and wonderful things to me over the years, but I haven’t been diligent in writing them down. I did come across an old journal entry I wrote regarding Maverick (now age 11) who was 4 on Mother’s Day in 2014. “Who are you going to marry when you’re grown up?” I asked him. “I’ll marry Caydence. It will be fall when the leaves come down. I’ll wear an orange tie.” Mav also planned the menu, “We’ll have muffins—no cake. Also, rootbeer, salad and chicken.” Pretty specific for a 4-year-old! I guess Caydence’s

eating pretzels and dip with little brother Axel. “No double dipping!” Mav scolded, “You can lose a finger that way!” Back when Mav was 4 he made “All about Papa” and “All about Grandma” pages that are laminated and hang in our toy room. These pages also include Mav’s paintdipped handprints. So cute! Comments about Papa included: “He eats potato chips.” “He gives me ranger rides.” “He lets me help spread cow poop in the field.” Mav’s comments about Grandma were also sweet: “She makes brownies for me.” “She watches ‘grandma shows’ on TV.” “I love her all the days!”

parents, Ryan and Tara, might want to start saving for muffins and root beer someday. Danielle has been pretty good about sharing some of the boys’ gems on Facebook over the years. This dandy was from Feb. 12, 2014 when Mav was almost 4: “I told the boys I needed them to come with me into the next room. Mav stood over his 5-month-old brother who was playing on the floor and said, ‘God gave you two legs to stand on, now use ‘em!’” Once Axel started talking he added many kooky comments to the collection. When Axel was 6 his sage advice included, “Don’t smell permanent markers for too long or they’ll make you dizzy.” He also quipped, “If you kick people in the face, that is called being the worstest friend ever. Don’t do it!” Finally, Axel included some common courtesy counsel when he said, “If a friend stinks like poop, you shouldn’t tell them because that’s rude.” Some of the crazy comments have been based on family stories. The boys’ Grandpa Buechel lost part of a finger in a farm accident long before the grandkids came along. Over the years he teased them about made-up incidents that caused it. Back in 2017 Mav (then 7) was

That cute little project is something all young kids should do for a parent or grandparent. It takes a few minutes but will be cherished for many years to come. I also think all grandparents should keep a notebook handy when grandkids call, FaceTime, or spend time in person. You never know what words of wisdom will come out of their gap-toothed grins. My youngest grandson Arlo (age 1) has shared many giggles and babbles but hasn’t imparted too many words of wisdom yet. I hope I’ve learned my lesson and will keep a pen handy when he’s 3 or 4. As any grandma knows it’s important to spend quality time with their grandkids. It’s also important to keep your ears open for wacky comments. Most grandparents can relate to this famous quote (author unknown): “If I had known grandkids were so much fun, I would have had them first.” I agree grandkids can be a hoot and help us feel young at heart, but I’m also reminded of an important question Axel asked his mom at age 6: “Was Grandma alive back in the olden days? Like when Jesus was walking on water?” Thankfully Danielle held back a chuckle and just said, “No.” 
