hen it comes to having fun during the beautiful fall months in Wisconsin, there is plenty to do—even in the middle of a pandemic. Sure, life is different these days, and not every option for fun which was available prior to COVID-19 is still there. But people are finding new things to do and taking advantage of those venues which are open— perhaps trying something they never would have thought of trying in the past. Venues are taking heightened precautions to keep their visitors safe, and those visitors are doing the same. From checking out museums to motorcycling past the fall colors to trying out new dining options, there is still plenty of fun to be had in fall 2020—just go do it!

Sheboygan County Historical Society The Sheboygan County Historical Society (SCHS) has been in existence since 1923, serving all of Sheboygan County in collecting, preserving, and educating people about local history. “We share our local history to all and we use our artifacts in programs and exhibits to educate,” said Travis Gross, executive director of the SCHS. “We serve over 15,000 visitors annually including approximately 3,000 area elementary students. We assist with research projects highlighting our history and offer public programs throughout the year.” The SCHS has over 35,000 artifacts in its collection, having a large amount on display at any one time in its main

museum and four history buildings. Gross said, “The staff is committed to progressing the organization by relating our history to state, national, and world events.” Gross said when he is not leading the society he enjoys the outdoors, canoeing, camping, and hiking. “I enjoy vintage Volkswagens (1973 convertible Beetle and 1984 Vanagon Westfalia), spending time with family and friends, and constantly learning history.” One of the activities currently under way (through Aug. 31) at the SCHS is the City of 4C’s Scavenger Hunt featuring cheese wedges. The four C’s for which the area is known are cheese, chairs, churches, and children. Cheese wedges are hidden throughout the museum and historical buildings,

History comes alive at the Sheboygan County Historical Society’s Taylor House. and children and adults have enjoyed finding these wedges as part of the scavenger hunt. Also taking place are Children’s Fireside Storytime Chats, with the next one scheduled for Friday, Aug. 28 from 3 to 3:30 p.m. Once a month, Education Program Developer Angie Hullin has been reading history stories directed for young audiences. Tune into the Sheboygan County Historical Museum’s Facebook page on the fourth Friday of each month at 3 p.m. to watch the premiere video. The chats are recorded and can be watched at any time on the SCHS Facebook page or its YouTube channel.

Jolly outlook on life New Holstein woman shares recipes, humor in her book

STRONG WOMEN | Keeping a jolly outlook

T

o borrow one of her married names, Laurie Jolly Killey is indeed a jolly person—even in the face of some traumatic events in her life. After all, how many people have experienced having the restaurant they own get burned to the ground during a race riot, or having their husband/ business partner die of an unexpected, massive heart attack? But upon meeting Laurie a person would have little clue that those things lie in her past. She is outgoing, funny, complimentary, and perhaps a bit zany—and all that is captured in a book authored by Laurie and her first husband Allan titled “From Soup to Nuts Cookbook and Hysterical Tales.” The book actually was first published in 1990 with 3,000 copies printed. Now Christian Faith Publishing

of Pennsylvania has helped Laurie publish an updated version, and just this month she received the first 50 copies of the book. In 1991 The Bloomsbury Review provided this intriguing summary of the book: “The recipes are interesting, but the story of how two bright misfits end up running a hybrid Cajun restaurant on Milwaukee’s workingclass south side is outrageously funny. If you love beer parties where the guests strip down to skinny dip by the fire hydrants near the police station while everyone eats killer chili, this one’s for you.” Born and raised in Milwaukee—with summers spent near Rhinelander— Laurie met Canadian Allan Jolly and the two became partners—both in marriage and the restaurant business. The latter was unusual in itself as—despite a love of food and

cooking—neither had prior restaurant experience; in fact, Laurie went to college to become an aquatic biologist. While living in Canada, they received a phone call one day about a restaurant for sale in Milwaukee. They flew back to Laurie’s hometown and—according to her book—Al was immediately sold on the idea of buying the restaurant called Ray Vnuk’s on 22nd and National. Laurie indicates in “Soup to Nuts” that she was not so sure about the acquisition, but soon she found herself the hands-on co-owner of a restaurant which they renamed Jolly Vnuk’s. Even more unlikely is the fact that this couple from Milwaukee and Canada decided to largely feature Cajun cooking in a Milwaukee neighborhood which was largely Hispanic.

But the gambles paid off as Jolly Vnuk’s built a strong following and received great reviews from Milwaukee restaurant critics. The majority of the stories in “From Soup to Nuts” focus around things which happened at Jolly Vnuk’s—or at least allegedly happened. Laurie admits that some of the stories might be a bit embellished. It might be most interesting to read the book and then ask Laurie, “Now, did that really happen that way?” Not to be forgotten is that “From Soup to Nuts” contains dozens of their favorite recipes, all home-tested and reduced from restaurant size to fit a meal at home.

Everything was going great at Jolly Vnuk’s—until that day in 1992 when something happened thousands of miles away which would change the lives of Al and Laurie. A trial jury in Los Angeles acquitted four police officers in the beating of Rodney King. While Americans watched TV coverage of riots breaking out in Los Angeles, less media attention was given to similar incidents of violence in large cities throughout the country—including Milwaukee. Laurie said there were 17 arson fires in the city in the wake of the King verdict. Arsonists would start fires in garbage dumpsters and then wheel them into

buildings. One of those buildings was Jolly Vnuk’s. Three tenants in upstairs apartments had to be rescued by firefighters. It took five years for Al and Laurie to get back on their feet after Jolly Vnuk’s was burned down, but their new place was no longer on the south side. In 1997 they opened Jolly’s on Harwood in Wauwatosa. Laurie said, “We had a great following but we never made any money.” In 2001 they opened Brew City Barbecue on Water Street in downtown Milwaukee—perhaps the most “happening” dining and entertainment area in the city.


STRONG WOMEN | Keeping a jolly outlook And then Al died of a massive heart attack. Laurie said her faith and her attitude toward life helped get her through those difficult times. While mourning the loss of Al, she also tried to retain her sense of humor. “I think laughter is a form of prayer,” she said. Al and Laurie used to sell food during Milwaukee’s Summerfest, and in 1997 they met Mike Killey and his wife who went on to work for them at Summerfest for four years. Mike was widowed in 2013. He and Laurie rekindled their friendship and it grew into something more, and the two of them were married in 2015.

done by “a crazy customer,” Laurie said. Based on many of the stories in “From Soup to Nuts,” it sounds like that customer fit right in to the life Laurie Jolly Killey has lived. 

Mike’s daughter and son-in-law live in Howards Grove and Mike and Laurie wanted to be closer to them, so in 2017 they moved to New Holstein. “New Holstein has treated us very well,” Laurie said. “We love New Holstein—the people, the integrity.” Mike shares a love of food and cooking as well, and for a while the couple ran Buckaroo Barbecue Catering. They catered a couple functions in New Holstein, although the coronavirus shutdown put at least a temporary end to the business. Their love of food has not come to an end, however, and Laurie is already working on her second book which she is writing with Mike. The planned title for the book will be “Nuts on Barbecue.” As a matter of fact, a third book—“Nuts on Life”—also is in the works. Laurie said she went to Alverno College in Milwaukee and joined a writing group to improve her writing skills, although she admitted to being a one-finger typist who is not very computer savvy. She added, “I’m very new at being published.” Laurie does have some book signings scheduled in New Holstein. On Saturday, Sept. 19 she will be at MT Glass, 2122 Wisconsin Ave., from 1 to 4 p.m.; and on Sunday, Sept. 20 she is planning to be at the Altona Supper Club, 2306 Calumet Dr., from 1 to 4 p.m. Signed books also are available for sale at New Holstein True Value,

Victorian Chocolate Shoppe Victorian Chocolate Shoppe opened in October 1996 and had three previous owners prior to Peggy Tauschek purchasing it in October 2005. “It’s strictly a family business,” Peggy said. “My daughters and son-in-laws help during busy holidays, otherwise it’s just my husband and I the majority of the time. A few friends help package also.” Victorian Chocolate Shoppe offers 27 varieties of truffles and a wide variety of

other chocolates made inhouse. Packaged gift boxes of chocolates are always available, as are chocolatecovered raspberries—the shop’s biggest seller. Strawberries are made May through October and, of course, on Valentine’s Day.

“We carry a large selection of packaged candy (pre-bagged) and nostalgic candy,” Peggy said. “Every holiday we carry a large selection of seasonal candies.” Peggy explained how she got into the candy business. She said, “After previously working in manufacturing I decided I needed a change. The business was for sale and we jumped in with very little knowledge of running a business, but soon figured things out.” Peggy said the business has grown steadily each year. “We would be happy to see it stay at that level,” she said. Asked what customers say about Victorian Chocolate Shoppe, Peggy said, “I think they like the small mom and pop business. They love the raspberries. Red Wing Shoes of Sheboygan Kelly Church and her husband John moved to Sheboygan in October 2016 from across the state in Ellsworth, and they opened Red Wing Shoes of Sheboygan in November of that year. The sole proprietors of Red Wing Shoes of Sheboygan employ one fulltime employee and three part-time employees beside themselves. “Red Wing Shoes and boots is a family-owned company that started

making boots in 1905,” she said. “We are proud to sell Red Wing work boots and the three other lines owned by Red Wing—Irish Setter, Vasque, and WORX. Red Wing boots are known for their superior craftsmanship and durability.” Kelly runs the operations of the business and John focuses on setting up local boot programs with manufacturing companies in the area. “Both of us have worked for Red Wing Shoe Company in the past,” she said. “I worked in the corporate office in the National Accounts Division and John was the assistant operations manager for the tannery owned by Red Wing. We had toyed with the idea of opening a Red Wing Shoe store if we could find the right location. Our daughter took a job in Sheboygan after she graduated from college and it was during our many visits to Sheboygan that we started to feel like we had found the perfect location for a shoe store. It took about a year and a half of planning along with the help from the Sheboygan County Economic Development Corporation.” Asked about what she sees ahead for Red Wing

Shoes of Sheboygan, Kelly said, “We are encouraged by the reception of the local community. We are excited to have won The Retailer of the Year Award for 2018 through the Sheboygan County Chamber of Commerce. So, as you can see, these four issues can be closely related, but they’re not necessarily connected in the same way in every case. What is clear, though, is that inactivity, obesity, and poor physical conditioning all present real risks for the musculoskeletal system which can, in turn, limit mobility, increase depression and anxiety, weaken your immune system, and reduce quality of life overall.

Close-Up on the Inactivity-Obesity Connection

Many researchers have come to view persistent inactivity as a root cause of obesity. Analysis of National Health and Nutrition Examination Surveys from 1988 through 2010 found that 52% of women reported a sedentary lifestyle in 2010 compared to 19% in 1988. There was a similar jump in men: in 2010, 43% reported no physical activity compared to 11% in 1988. These findings coincide with an obesity rate that doubled between 1980 and 2010. However, a study published in the journal Mayo Clinic Proceedings also demonstrated that obesity can be a cause as well as a result of inactivity. On average, people who become obese engage in less than one minute of vigorous activity per day. Read that statement one more time: Less than 1 minute per day! So it becomes a sort of feedback loop—inactivity leads to obesity, which leads to more inactivity. As noted, that study concluded in 2010, and in the last decade these statistics have changed exponentially as well.

Breaking the Cycle

If you are physically inactive and overweight but otherwise healthy, you can break the cycle by changing your day-to-day exercise and nutritional habits. I can help you do this in a way that’s safe and effective by setting up a steady but sustainable program. But what if acute or chronic pain is preventing you from getting the exercise your body needs? Kiel restaurateurs open new venue

T

he area’s newest pizzeria plans to make a splash on the Eastern Wisconsin scene this September. Located on Park Avenue in Kiel, the Stone Dagger Pizzeria plans to make a splashy entrance in a location that lies close to the Manitowoc-Calumet County line. The anticipation for the opening of the new pizzeria stems from the announcement of the project by successful Kiel restaurateurs Nate and Dee Dee Paulish, who also run the Fork

and Dagger restaurant on Kiel’s west side. Crews have been busily renovating both the interior and exterior of the location that formerly housed the Eggers Eye Clinic, and the Kiel Vet Clinic years before. The Paulish’s envision that Stone Dagger Pizzeria fit the bill as a neighborhood pizzeria, with an ample outdoor patio to accommodate open air dining and relaxation. “We aim to be your neighborhood

pizzeria and restaurant serving freshly prepared dishes, using quality ingredients,” Nate Paulish said. “Our mission is to give very customer a fantastic dining experience whether they dine in, take out, or have us deliver to their doorstep.” In addition to all those serving options, Stone Dagger Pizzeria will also offer a full-service bar featuring crafted cocktails, craft beers and specialty wines.

Menu options The Stone Dagger Pizzeria will feature both thin and rustic crust pizzas, made fresh in the new brick oven. In addition, the menu will include panini sandwiches, salads, desserts and appetizers. Appetizers on the menu include garlic cheese bread, crispy fresh mozzarella planks, spicy sriracha cauliflower, antipasto, breaded avocado, baked artichoke spinach, sriracha chicken flatbread and wild mushroom goat cheese flatbread. Pizzas will be served on 12” of 16” crust options. A 10” gluten free crust with either a cauliflower or broccoli cheddar base will also be available. Although the crusts are gluten free, Stone Dagger Pizzeria cautions that it does not guarantee a 100 percent gluten free environment. A dozen standard pizza options will be offered on the menu, including the Raider Pizza, which will feature a combination of pepperoni and Italian Sausage. Other house recipes will be the 707 (a margherita style pizza), General Tso’s chicken, Smoke House Brisket, Lobster and Roasted Mushroom, Spinach and Artichoke, Capicola and Pineapple, Southwest, Chicken Pesto, Loaded Italian, Sunday Brunch and Prosciutto. Pizza lovers will also have the opportunity to create their own pizzas and Stone Dagger Pizzeria, with

a roster that includes more than 30 different ingredient options. Dessert choices will include Cannolis, brownie sundaes, the gelato of the day, a strawberry Nutella flatbread and a chocolate chip cookie ice cream sandwich. Hours for the new pizzeria will be Sunday through Thursday from 11 a.m. to 9 p.m. and Fridays/ Saturdays until 10. Stone Dagger Pizzeria plans to be closed on Tuesdays. Recipes, Recollections & Reminiscings from Marge By Marge Petts Indian Summer is a period of unseasonably warm, dry weather that sometimes occurs in Autumn in Northern America and other temperate regions of the world. It occurs between September through November, and usually occurs after a killing frost. In the late 18th Century, the term Indian Summer began to be used to describe this time as warm, quiet,

Holiday Orange Nut Bread Bread: 1-1/2 cups sugar 1 cup butter (2 sticks), softened 4 eggs 1 cup sour cream ½ cup orange juice 2 tablespoons grated orange peel 3-1/2 cups allpurpose flour 1-1/2 teaspoons baking powder 1 teaspoon baking soda 2 cups chopped walnuts ORANGE MARMALADE BUTTER: ½ cup butter, softened 1 tablespoon powdered sugar 3 tablespoons orange marmalade

Heat oven to 350 degrees. Grease bottom only of five mini-pans or

two 9x5 inch loaf pans. Set aside. Combine sugar and 1 cup butter in large mixing bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add eggs; continue beating until well mixed (1 minute). Add sour cream, orange juice and peel; continue beating until well mixed (1 to 2 minutes). Add flour, baking powder and baking soda; reduce speed to low. Beat until well mixed (1 to 2 minutes). Gently stir in nuts by hand. Divide batter evenly among prepared pans. Bake for 35-45 minutes for mini loaf pans, 45-55 minutes for large loaf pans or until toothpick inserted in center comes out clean. Let stand 10 minutes; remove from pans. Cool completely. Tip: For easier slicing, wrap breads tightly in foil or plastic wrap and store overnight.

hazy weather. The haziness associated with Indian Summer was caused by prairie fires set by the Native American tribes. Fall is my second favorite season, after Summer. It is when we begin to harvest and gather acorn squash, my favorite vegetable, which has twice the amount of potassium as bananas. My next favorite vegetable is sweet corn. Although it may not have as much nutritional value, its taste is unequaled. Because of my love of the American Indian culture, I share with you these words of wisdom. If corn shucks are thick and tougher than usual, there’s a hard winter ahead. In the Fall of the year we often see ground fog in the early morning or evening. When you see fog in the fields while driving, that is said to be the Indians returning to reclaim the land. I like that saying and have repeated it to my children and grandchildren many times. My mother and grandmother also said those words to me. It is a good reminder that the land is only on loan to us as long as we live, and it is our responsibility to preserve it for future generations.

Autumn Venison Stew Makes 4 to 6 servings 2 slices bacon 1- pound venison or beef stew meat, cut into ¾ inch pieces 1 medium onion, chopped 1-1/2 cups beef broth ¾ cup apple cider or juice ¼ teaspoon dried thyme, crushed 1 cup peeled winter squash, cut into ½ inch cubes 1 cup sliced parsnip 1 apple, peeled, cored, and sliced ¼ cup raisins 2 tablespoons cold water

4 teaspoons allpurpose flour

In a Dutch oven (or casserole), cook bacon until crisp. Remove bacon; drain, crumble, and set aside. Reserve drippings. Brown meat and onion in drippings. Drain off fat. Add broth, cider, thyme and dash pepper. Cover and simmer 1 hour or until meat is almost tender. Add squash, parsnip, apple, raisins, and bacon. Cover and simmer 10 minutes or until vegetables are tender. Blend cold water into flour and add to stew. Cook and stir until bubbly. Cook 1 minute more.

Zucchini with Fettuccine

Combine the sugar, salt, and spices. Add raisins, nuts, peels, lemon juice, cranberry sauce, and apple; mix well. Pour into a 9-inch pastry-lined pie plate. Top with lattice crust. Bake in 400- degree oven for 35 minutes. Cut in plump wedges and serve warm.

Makes 6 servings 1- pound fettuccine noodles ½ pound fresh mushrooms, sliced ½ cup butter (1 stick), divided 1-1/4 pounds zucchini cut julienne (thin strips or match-like pieces) 1 cup heavy cream ½ teaspoon salt ¾ cup grated Parmesan cheese ½ cup chopped parsley

Cook fettuccine according to package directions. Drain. Set aside. In large deep skillet saute mushrooms in ¼ cup butter for 2 minutes on high heat. Add zucchini, cream, remaining butter and salt. Simmer three minutes, being careful not to let mixture boil. Add fettuccine and stir gently to mix. Serve with cheese and garnish with parsley. Note: Excellent with salad and any meat or poultry that does not have gravy.

A

pproximately 83,000 people die from Alzheimer’s disease every year.

On Oct. 19, 2018 my dad, Gene Totzke, became a part of that horrible statistic when he passed away at age 85. According to the 2019 Alzheimer’s Association fact sheet, one in three senior citizens dies with Alzheimer’s Disease (AD) or another form of dementia. I was shocked to learn that AD kills more than prostate and breast cancer combined. We often hear people say, “Just a minute,” when we want their attention, but have you ever thought of what can be accomplished in a mere minute? I found an internet site which lists 40 things you can do in a minute including make your bed, trim your toe nails, and floss your teeth. Sadly, the Alzheimer’s Association lists something else that happens in just over a minute. Every 65 seconds someone in the U.S. develops AD! To say that Alzheimer’s is becoming an epidemic is no exaggeration. Between 2000 and 2017 deaths from heart disease have decreased 9 percent, but deaths from AD have increased 145 percent. These days AD is the sixth leading cause of death in the U.S. and 5.8 million Americans are living with the disease. Put in prospective, that 5.8 million is more than the population of Chicago and Houston combined! According to the Alzheimer’s Association, by 2050 the number of Americans living with AD is projected to rise to nearly 14 million. If you don’t have AD or dementia yourself, chances are you know a family member, friend, or neighbor who is living or dying with the disease.

The “Totzke Trotters” walked to raise money for the fight against Alzheimer’s Disease. President Ronald Reagan’s daughter, Patti Davis, wrote a book about losing her father to Alzheimer’s. In “The Long Goodbye” Davis describes saying goodbye in stages. “Alzheimer’s,” she wrote, “snips away at the threads, a slow unraveling, a steady retreat; as a witness all you can do is watch, cry, and whisper a soft stream of goodbyes.” Everyone has a different journey, but I found that the truly heartbreaking thing about loving a person with memory loss is that you lose them long before they take their last breath. After Dad’s death, my sister Diane and I had many conversations about grief and the grieving process. Most people are familiar with the seven stages of grief defined by Dr. Kubler-Ross: shock, denial, anger, bargaining, depression, testing, and acceptance. Some say the process of grief can take anywhere from six months

to four years, but Diane and I both felt we went through most of the stages before Dad died—during the more than four years he suffered with Alzheimer’s. I grieved when Dad stopped greeting me by name. I grieved during our Monday Skipbo games at the assisted living center when Dad no longer knew the rules of a game he’d played with Mom for over 40 years. I grieved when Dad spoke of long dead friends as if they were still with us. I also grieved when Dad’s temperament changed and he didn’t love music anymore. The summer before Dad died a poem “wrote itself” during one of my walks down our quiet, country road. I wanted it read at Dad’s memorial service but I knew I wouldn’t be able to choke my way through it. Thankfully, daughter Danielle did the honors for me. My poem, “I Remember,” talked about my memories with Dad and music, Dad and camping, FALL 2020|

YOUR VOICE | an essay scouting, and weddings. I was fine until Danielle read the last stanza of the poem: “I smiled when God took your hand. To soar above the trees. He’ll say, ‘Welcome, son. Job well done,’ and return your memories.” I wasn’t the only one reaching for Kleenex at the end of the poem. Alzheimer’s is a sad, scary disease. Out of the top 10 causes of death in the U.S., Alzheimer’s Disease is the only one without any methods for preventing, curing, or slowing it down. The Alzheimer’s Association says research into a vaccine continues, but so far there are no ways to prevent the disease from developing. The Alzheimer’s Association sums up their goal with the slogan, “Lead the Way to Alzheimer’s first survivor.” I hope and pray their goal is realized soon. Previous studies have found that people who have a close relative with Alzheimer’s are 4 to 10 times more likely to develop the disease themselves. The road to a cure seems long and twisted, but money toward research

can go a long way to help. My family heard about the Alzheimer’s Association Walk to End Alzheimer’s and wanted to do our part when we learned this event is the world’s largest fundraiser for support, care, and research for AD. On Oct. 5, 2019 I, along with seven family members and over 300 other folks, joined the Fond du Lac 2019 Walk to End Alzheimer’s. My daughter Danielle designed T-shirts for our “Totzke Trotters” team. The shirts for greatgrandkids say, “I walk… because memories should last a lifetime,” while the adult shirts say, “Memories Matter.” All are purple or white with purple design since that is the official color of the Alzheimer’s movement. We raised money for AD research and completed the two-mile trek on that cloudy, windy, October Saturday in honor of my dad, Gene Totzke, and all of the other Americans living and dying with Alzheimer’s. I felt Dad’s presence every step of the way and am confident God did return his memories. Youngsters on our
