FROM THE PUBLISHER And just like that – BAAAM! We’re back open again – ready or not! That seems to be the story across the Midwest – across the Nation. One way or another, we are opening back up – whether we are ready or not. Unfortunately, everyone seems to still be processing what we all went through this past year. Most businesses are still short staffed because so many are either still sitting on the couch collecting, hiding in the basement, or they’ve realized that life is a lot better with a lot more riding and less 9 to 5. So either out of an effort to maintain “social distancing” (not usually the case) or simply because they can’t staff (more often) – most businesses and events are limiting services or their programming. As you scroll through our pages – you’ll find hundreds of bike nights, rides, swap meets, bike shows, and other destinations for you to ride to. You’ll notice some new ones – but chances are you’ll also notice that a lot of your favorite events and destinations haven’t returned yet. The reasons vary widely, but the end conclusion is all the same – it’s a whole new world out there. With so many changes, it’s important that some things don’t, And as it’s surprisingly often the case, it’s up to us bikers to tow the line and remind everyone what’s important. We are still ALL AMERICANS. We are still ALL IN THIS TOGETHER. And it’s all still a lot easier to make this ride – with BROTHERS and SISTERS at our side. This isn’t about political parties or candidates – it’s far bigger than that. This is about us maintaining our culture and core values. It’s about us celebrating FREEDOM and standing as ONE. So we need to be more patient while we are out. We need to be more understanding when standing in line. And we CAN’T become cynical and start hating the folks we don’t know. That’s NOT what we do – and it accomplishes nothing. We’re BIKERS – and one of the reasons we love this life and our community, is that WE KNOW THE SECRET. We’re ALL IN THIS TOGETHER! We’re all BROTHERS and SISTERS on the OPEN ROAD. And we need have each other’s BACK! The Bike Nights, Rallies, and Bike Shows are all returning… in most cases.

2nd Annual Ride for First Responders

ONLINE PRE-REGISTRATION FOR RIDES – Easier than Ever!

Join Thunder Roads Ohio on Saturday August 7, 2021 for the 2nd Annual Ride for First Responders Motorcycle Ride, Car Show and NEW for 2021, Rib Burn Off at the Geauga County Fairgrounds. This event is hosted by BLUE LINE UNLIMITED – a grass roots non-profit organization providing assistance to first responders and their families in the way of benefits, education, and equipment. Since 2016 – Blue Line Unlimited has distributed more than $150,000 to support First Responders and their families! This year, motorcycles will be starting from locations across Northeast Ohio and then heading to the Geauga County Fairgrounds where the main event is being held. Starting points for each county are: Ashtabula: Nassief Honda in Austinburg Geauga: Thompson Circle Lake: Western Reserve Harley-Davidson in Mentor

This new system allows hosts to quickly and easily scan in riders using scanners provided by RtR or simply their own phones or ipads. Hundreds and even thousands of riders can quickly and easily be scanned in by just a few people using this system.

In 2020, RTR introduced a new system that allowed riders to simply and easily sign up for events without ever leaving the event website – and without having to register on another service. Pre-registration allows organizers to more accurately plan and prepare for the event by having a listing of participants already committed to it. And in return, many organizers offered discounts and extra incentives – such as FREE T-shirts – to riders making the early pledge. Many ride organizers reported that their 2020 rides went easier and had better attendance than ever using the RtR system – and RtR has kicked things up even more for 2021 with DIGITAL CHECK-IN and TICKET SCANNING!

It was obvious right from the start it was a wellplanned ride. My hat is off to all the volunteers and the CBC who spent countless hours working on this. I do not want to forget the police officers that made this event possible. Thank you! I got to Grindstone tap House about 10:45, just enough to find a place to park in a full parking lot. Got off my Harley and walked around checking out all the fine-looking bikes. After registering for the event, I still had time to grab breakfast they were serving outside. For only $6.50 you ate like a king! It was getting close to 11:30 time to mount up and get ready to ride with the other 300 plus riders. We all started up are bike, it was pure music listening to hundreds of bikes revving their engines all at once! Show time! The bikes started to pull out of the parking lot one by one. First thing you noticed was the huge American flag you drove under, then the police officers stopping traffic. As I pulled out on to the main road, I was one of many that revved my engine slowly releasing my clutch as I blasted down the road!! Once all the riders were on the road we all bonded instantly and road together like we have done this 100 times. We got on 71 north. It felt great. No cars to be seen…..None! The police officers were blocking all entrance ramps entering 71. How freaking cool…..I saw nothing but bikes riding 2 by 2 in front of me and as I looked in my mirror it was the same…… we owned 71 We were led off 71 and road through downtown Cleveland and did not stop for 1 freaking red light, again thanks to the Cleveland police. When we arrived at our destination, we all parked in the street that was closed just for us. Everyone then walked over to the park for the ceremony at the peace officer memorial. The weather was hot, I found a tree for shade as I listened to the speakers speak. When the speakers were done, 100s of of all walk back to our bikes.

could hear was motorcycle engines. Damn did it sound good. We were led off to a side road and again thanks to the hard work of the police officers blocking all 300 plus bikes did not stop for red lights or stop signs. It was a wonderful ride to Geneva. Once we got to downtown Geneva it was every man for himself for parking. I parked my #$% and walked to the first bar I came to and who did I see? The couple that I rode next to for hours. I bought them a beer and we talk about rides though out the country we have both been on. They were a great couple. After talking for a while, it was time to eat and I was hungry. I walked over to Ed’s for a cheeseburger and a shake. After downing 2 shakes it was time to walk around and check things out. Well, it became obvious to me as I looked at the gray clouds rolling in I could get wet. Then suddenly - bam! It started to rain. Oh no, I just waxed my bike. I found a place with a roof and waited it out. Once it started to clear up it was time to roll. Wiped the seat down jumped on and road down the wet street. About a mile or so out of town the street was dry and I saw blue skies. Ok, I’m a hap camper now. Jumped on 90 now that I’m by myself I can ride my way…… HARD! As I was riding 85 - 90 mph. gray clouds started to roll in. Crap. Now it’s raining. No problem we all have ridden in the rain. As I passed a underpass there were 5 or 6 bike sitting there. I kept riding but my Visibility was getting poor. A few miles down the road again I saw bikes under the underpass, again I kept going but staring I stopped. My visibility was almost zero now. It was raining hard. On the third over pass I gave up and parked under it. About 30 minutes later it was good enough for me to ride. Back on the road. Wet and cold, but that’s part of riding and I love it!!!!!!!! Ride safe

Like a fine oiled mechanism, we all pulled out Road through Cleveland to 90. Again no cars on 90…..none! We rode on 90 for a while, all I THUNDER ROADS® OHIO MAGAZINE

The Machine Gun Preacher Comes to Cleveland

Thunder Roads Ohio Launches Mission 2021 with Sam Childers in Rocky River. On Sunday, August 25th; Thunder Roads Ohio had the opportunity to join with Armored Disciples Motorcycle Ministry and other riding ministries to welcome Sam Childers – The Machine Gun Preacher – to Cleveland for an afternoon. If you’re not familiar with Sam Childers and the work he’s done – it’s a story that you need to hear. In the simplest of terms, he is a biker from Pennsylvania that traveled to Africa back in 1998 and witnessed atrocities that ended turning his world upside down. He has since literally saved the lives of THOUSANDS of children that in many cases had been simply left to die. That’s not dramatics or an overstatement. These were orphans that had lost their parents to the violence that has ravaged Sudan, Uganda, and the region for more than 50 years. In this part of Africa, there were no governmental social services for children. And the violence and horrors were simply so overwhelming that many traditional missionary and aid organizations simply withdrew from the region. It was a situation so bad that news organizations and even the worlds governments simply looked the otherway. But along comes Sam Childers, a BIKER from Pennsylvania, and he took it upon himself to make a difference. One man on a mission to save the lives of children. Instead of being overwhelmed by the challenge – he SIMPLY DID IT. He did what nobody else seemed capable of doing – and he’s been saving the lives of children ever since. Back when we started Thunder Roads Ohio in 2011, we first crossed paths with Sam and learned of his work. I was already aware of the atrocities in Sudan after meeting a war refugee from the region while I was in school years before – so I felt a calling to help however I could. We supported a few appearances and helped share his story. But as happens in life, we became distracted with the realities of our own lives and we lost touch. Then it just “so happened” that Sam would be in Florida this Spring while we were in Daytona for Bike Week. And then “coincidentally” it turned out that Sam would be in Ohio this Spring for a Bike Blessing with the Kingdom Knights Motorcycle Ministry in Akron. I had the opportunity to catch up with Sam and do an interview – which you can find on our facebook page and website. In doing so, we had a simple question – “What’s going on with the Machine Gun Preacher – ten years later, what’s happened with your mission?” To which his reply was even simpler – “I never stopped.” We will share more of his story and work over the coming months and you can find more online, but the simple truth of his life and all that he’s accomplished was exactly what we needed to hear after all we’ve been through over the past year. MISSION 2021: And the Machine Gun Preacher Bike Mission 2021 for us is all about launching a new initiative that is focused purely on making a difference. It’s not about politics, race, past history, or any other drama or excuses that might overwhelm or distract us. This isn’t JUST about saving the LIVES of children in Africa – it’s about waking us up and inspiring us to make more of our own lives. Sure there’s A LOT of craziness going on in the world – but we CAN NO LONGER simply leave it to others to fix. We all can’t travel to Africa, nor should we. We have plenty that we can do in our own corner of the world – or even just here in the United States. But in supporting SAM’S WORK – we can help energize change in our own communities. Our belief is that MISSION WORK and helping others is inspiring and can fuel change in our own lives. We’ve partnered with Sam’s organization – Angels of East Africa, LLC (a 501c3 organization) and Western Reserve Charities, Inc, to launch a campaign to not only support their work in Africa and organizations working to make a difference in our own communities right here in Ohio and the US. A central piece of this effort is a campaign to raffle off Sam’s own personal bike – a Harley-Davidson Street Glide that he had customized in his Pennsylvania shop. It’s one of the original MACHINE GUN PREACHER motorcycles and really a cool bike with a unique look and history. We are now helping to collect donations which give you the chance to win this motorcycle – while helping to both support the work of SAM and his organization AND local charities right here in Ohio. Over the next several months we are going to share more and more about both Sam Childers and his work – as well as local individuals and organizations that are working in our own communities. Through the Bike Raffle and other initiatives you can help support these efforts and be a part of the change we need. MOTORCYCLE MINISTRIES What’s it like? What is it like to be a Christian? Aren’t there a lot of rules to follow? Like, you can’t wear certain clothes or go certain places? Aren’t there commands you have to follow like a bunch of do’s and don’ts? I mean really, what’s it like? Aren’t you missing out? Do you ever have any fun? Can you laugh? Don’t you have to pray like twenty hours a day? What happens if you do something wrong? How do you know it’s real? Isn’t it considered a sin to ride a motorcycle?

These are questions we get all the time about Christianity. The truth is, Christianity is much like motorcycling…if I have to explain, you won’t understand. It has to be experienced before you really get it and it’s more about relationship than rules. Relationship that begins with the reality of who Jesus is and why would He die for you and me? The answer to that is simple….He loves. He doesn’t condemn, judge or evaluate us to see if we are good enough, He doesn’t cause trouble or sickness or accidents so He can test us or teach us stuff. No…He simply loves. I would love to tell you that being a believer, (that’s the term I use more often now as Christian, although it means Christlike, has taken on a whole new meaning in this world today), is a piece of cake. Believe and be on easy street with no problems, issues, or troubles, but I can’t because Jesus Himself said that this life would not be lived without persecution or troubles. However, He added that if we choose to follow Him, He will be with us through them all and carry more of the weight than we ourselves need to bear. Knowing that is what brings peace to every situation and freedom from the burdens that life throws at you. When I ride, He is with me. When I laugh, He laughs too. When I am sad, He lifts me up. When I am angry, He soothes my soul. I have no fear for He is with me. I have no concern for what tomorrow brings, because I know He holds my future. What is it like to be a Christian? Believing in what you cannot see, holding on to what you cannot feel, and finding freedom that is truly real.

Over the last several years, Thunder Roads Ohio has worked to develop the TRO Championship Bike Show Series as a means of showcasing both the rides that our readers have and the amazing works of rolling art that local shops and builders have been producing in an informal, fun format. Along the way, we discovered that many local riders had never participated in a Bike Show – never considering that their bikes were “show worthy”. It turns out though, that most riders have an appreciation – even a love of motorcycles that goes beyond the amount of chrome on a bike or if there are water spots and dust on them. We’ve hosted Bike Shows at indoor venues showcasing bikes with less than a dozen miles on them – and we’ve hosted Bike Shows at outdoor venues ranging from dealership parking lots to grass fields with countless entries still hot from riding in from across the state! Throughout, we’ve discovered that it’s not always the most polished that gets the attention, but it’s the love and work that goes into the bike that everyone appreciates. Even if you’ve never participated in a Bike Show before, we encourage everyone to participate and have fun with the shows! Chances are that you’ll discover a greater appreciation for what makes your bike unique and meet some other folks with a similar passion. And we’re certain you’ll have a blast! The TRO Bike Show Series features local, regional, and nationally recognized shows that all builders and bike owners are welcome to participate in. Vintage, metric, v-twin, customs, restored antiques, “resto-mods”, trikes, and radicals are all welcome to the show. These shows are RIDE-IN shows, meaning the bikes are expected to be ridden and a little bit of road dust is fine. We don’t split hairs over trailering in bikes, but we do require that all bikes must be functioning. They must start and be able to be safely ridden on the road. Most of the shows include voting by event attendees and weighted judges scores. We use this approach to make certain we include both the “popular opinion” and an objective review of the bikes.

2108-01.jpg The Big Lynn Lodge is located on a mountain ridge next to the Blue Ridge Parkway, a few miles south of Spruce Pine, North Carolina. It's one of the most beautiful settings you'll find for a motorcycle rally, and there are fantastic roads in every direction from the doorstep of the lodge. I attend the MSTA rally there every July, riding down through the back roads of Kentucky and Tennessee on Thursday, riding rally routes on Friday and Saturday and returning home on Sunday.

This year my friend Dan Steinberg, who recently moved to the area from Chicago, led the Friday ride. Dan's friends from Chicago, some locals and I made up a group of ten for the day's ride. 2108-02.jpg That's a larger group than I would normally like, but they are all expert riders and Dan is an exceptional ride leader. He took us on many of his favorite back roads few people know about. Dan likes regular breaks, and one of them included the unique Mast Store near Boone, NC. 2108-03.jpg 2108-04. jpg 2108-05.jpg 2108-06.jpg Lunch was at the Farmers Barbecue and Grill in Mountain City, TN. After lunch we continued Northwest and rode through Shady Valley on US421, also known as The Snake. Near South Houston Lake, we turned around, rode back down US421 toward Boone. then US19E to Spruce Pine. I got back in time to get a quick shower and help attendees load routes into their GPS. 30

The lodge has a nice dining room, with breakfast and dinner included in your stay. 2108-07.jpg After dinner I had booked an appointment with expert masseuse Anne-Marie LaFrance, who comes to the lodge each year to work out the aches and pains of event attendees. Anne-Marie also attends and works my FlyBy Week rally in Marietta, Ohio, the last week of August and loves to work with our riders. She says, "Everyone has a problem they can use help with- it's a target rich environment!" After the massage, I was able to enjoy some adult beverages and listen to Almost Vintage, a rock and blues band that performed a couple sets out on the back porch.

My friend Jonathan Rader had arrived about noon on Friday, after getting a nail in his tire on the way down Thursday, forcing him to spend the night in Kingsport, TN. He missed the Friday ride, so he was 100% ready to go for a full day on Saturday, when we were joined by MSTA STAReview magazine layout guru Chris Parker from South Carolina. Thunderstorms were predicted for the afternoon, which is typical for Summer mountain weather. Looking at radar and get-there-dry.com, we chose the 200 mile Southwest loop to avoid them. The morning leg took us on lots of back roads and mountainous terrain, including the steep climb on Green River Cove road, which has fifteen switchbacks in one and a half miles. This was very challenging, as there was oncoming traffic that made the blind corners very difficult. 2108-08. jpg

The lunch stop was at Green River Barbecue in Saluda, NC, where I enjoyed a tasty pulled pork sandwich. After lunch we caught up with a thunderstorm just East of Hendersonville. Looking on the Garmin GPS weather radar display, I thought we could get around it by detouring Northwest, which we did for about eight miles, then turning Northeast to get back on our route. I should not have turned quite so soon, but we lucked out and just got sprinkled on. Eventually our route took us North of I40 and onto NC80, where we had a fun run up to the Blue Ridge Parkway. From there it was about twelve miles on the parkway back to the lodge. It clouded up and sprinkled on us a few times on the parkway, which was not a problem. Rather than get off and go straight to the lodge, we decided to go to the next exit and down the hill to Walmart to get gas so we could start home Sunday with a full tank. Jonathan and I got hit with a strong thunderstorm while in the gas station. It lasted about ten minutes and we left for the lodge when it let up. By the time we got most of the way back up the hill to the parkway the pavement was dry and the sun was out. It was that kind of a day! Saturday evening was dinner, social time and a good night's sleep to get ready for Sunday's ride home. Jonathan and I took back roads to I26 and got through Johnson City and Kingsport, TN, taking US and state routes through Virginia and into Kentucky. Virginia dumped a few brief showers on us but the roads dried out by the time we hit Kentucky. There our route passed through Pikeville and Prestonsburg, where Jonathan split off onto US119, THUNDER ROADS® OHIO MAGAZINE

What to Look for When Buying a Used Dirt Bike By John Baker, Amsoil.com

Whether you’re new to dirt bikes or a seasoned veteran, you don’t want to waste money on someone else’s junk. Here, our resident two-wheeled experts offer tips on what to look for when buying a used dirt bike.

Check the hours on the bike Some bikes come from the factory with an hour meter installed. Sometimes, enthusiasts install an aftermarket hour meter. If the bike is equipped with an hour meter, check the amount of time on the bike. On a two-stroke bike, higher hours come with less risk. Twostrokes can often last two or three times longer than four-strokes. And, while they may lose some power over time, they’re less likely to suffer significant engine damage that requires expensive repairs. Things are different when buying a used four-stroke dirt bike, however. They typically require a top-end rebuild about every 50 hours. Otherwise, the piston can wear out and cause expensive engine damage. Ask the owner if the bike has been rebuilt. Search online for recommended rebuild intervals. If you consider buying a high-hour four-stroke dirt bike that hasn’t been rebuilt, the price should reflect that; use it as a negotiating tool.

Check the engine oil Ask the owner about his or her maintenance practices. How has the bike been maintained? On four-strokes, how often did they change oil? Since dirt bikes only hold about one quart of oil, most riders change oil frequently. Pull the dipstick and look at the oil, if possible. Look for shiny particles in the oil, which indicate the presence of metal and excessive wear. Particles can indicate a bearing, transmission gear or other component is failing.

Inspect the rear shock for oil leaks by looking for oil and dirt buildup at its base. If oil leaks and collects on the shock, dirt will stick to it. A rear-shock rebuild costs at least $100, so keep that it mind if you notice problems. Riders normally can’t rebuild a rear shock themselves because they don’t have access to pressurized nitrogen or the special tools required. Check the swing arm for excessive play, which holds the rear wheel to the frame. Also inspect the linkage to which the shock connects. Have someone lift the rear of the bike an inch or two off the ground. Try to pull the back tire from side to side to check for lateral movement. Any movement indicates bad bearings or bushings.

Examine the rear suspension, swing arm and linkage This is an important step when buying a used dirt bike. Push down hard on the seat. The bike should rebound in a controlled manner, not like a pogo stick. Climb aboard the bike and bounce on the seat to ensure it offers controlled dampening.

Check the front suspension This is one of the most abused parts of the bike, meaning it’s something to pay close attention to when buying a used dirt bike.

The front suspension absorbs the punishment of mile after mile of non-paved surfaces and catching big air. As such, they require periodic maintenance, which some owners overlook. As with the rear shock, check for oil leaks. Run your hand over the tubes to check for oil. Look for dirt buildup where oil may be leaking. Examine fork condition, too. The front suspension requires new oil and possibly seals every 50-100 hours, which may run you up to $200 for a rebuild.

Examine the tires and wheels While you’re looking at the suspension, check tire and wheel condition. Dirt bikes go through tires rather quickly, so worn tires can influence your negotiation when buying a used dirt bike. Look for cracks or checking, which indicate the bike isn’t used much or the owner isn’t changing tires often. Run your fingers over the spokes. They should all be tight and in good shape. Loose spokes indicate the rim is out of true, which could mean the owner hit one too many rocks or other obstacles. New rims are expensive and a possible reason to walk away if you’re not willing to spend the money to replace them.

Listen to the engine & shift through the gears No inspection of a used dirt bike is complete without starting the engine. It should start readily and run smoothly. Watch for excessive smoke from a twostroke, which might take a few seconds to even out after it’s started cold. Listen for any abnormal sounds or loud noises that might indicate piston knock. Rev the engine; it should sound smooth. Continued next page

What to Look for When Buying a Used Dirt Bike (Continued from p.37) By John Baker, Amsoil.com

Take a ride if you can. This is your chance to ensure the bike pulls well through the gears and shifts smoothly. Ensure the clutch doesn’t slip or grab. You should be able to progressively shift through the gears with no issues and easily find neutral.

If you’re new or you’re smaller in stature, lean toward a 125 or 150. A dirt bike of this size is easier to handle, less expensive to purchase and maintain, and often delivers excellent power, particularly modern bikes.

A slipping or grabbing clutch is a great diagnostic tool; it can point to worn oil, low-quality oil, worn clutch plates or even a faulty transmission.

If you’re an intermediate rider or larger in stature, a 250 will provide a frame about the same size as a 150, but with more power.

Use a good dirt bike motor oil After you buy your bike, make sure to use a good motor oil to get the most years and best performance from your ride. Give it a general visual inspection Walk around the bike and look it over closely. Is the plastic destroyed? That’s an indication the bike was ridden hard and spent too much time on its side. Look at the side cases of the motor where the rider’s boots rub. A lot of wear means the bike has accumulated a lot of miles. On a two-stroke, look for dents in the expansion chamber, which often bears the brunt of falls. Look for scratches and general wear-and-tear that indicate the bike has been abused. Are the ends of the handles beat up? Again, that indicates the bike has spent too much time on its side.

It’s important to understand what size bike you need when buying a used dirt bike. Size your bike based on your skill level. If you’re new to the sport, be honest about your abilities and choose accordingly. Don’t buy a powerful 450 assuming you can “ride your way into it.” Too much power and too much bike increase your chances of having an accident and ruining what can be a great hobby.

M nshiners and Motorcycles On the Master Distiller show, I was called a Motorcycling Moonshiner. This has been a busy month and I feel like I am earning that title with trying to promote Thunder Roads Ohio Motorcycle Magazine and promoting, myself as Doug Taylor, Master Distiller. Whenever possible we combine the two. We have been set up at Bike Nights and local events around Cincinnati including Queen City Harley Davidson, Quaker Steak and Lube in Milford and Colerain, and BAABS Bike Night in Middletown. We were invited to participate in the first Bourbon and Moonshine Festival in Beattyville, Ky. Beattyville is just past Natural Bridge and Red River Gorge area. This small town became the host to what turned into a large event that covered the Main Street and the side street with Distilleries, vendor and of course, Moonshiners. Moonshiners and Master Distillers from The Discovery Channel were present for the event. Donnie and Theresa,” The Beattyville Moonshiners” were instrumental in inviting a varied group from the show, along with vendors and other special celebrities. . The First Annual Resurrection Island Tattoo Convention (RITC) has been in the works for several years now, having originally been planned for 2020. RECIPES

Spinach, Mushroom and Cheese Hot n Cheesy Taco Dip

Serve 6, 2 cups each

Serves 6 (or 3 hungry bikers)

219 cals, 7g fat – 2 cups

½ pound ground beef

1-20 ounce package pre-shredded hash brown-style potatoes 2 Egg whites 4 tablespoons flour 1 small sweet onion, coarsely chopped 2 cups raw spinach, cooked and chopped 1 cup mushrooms, chopped 1 cup fat free mozzarella cheese 4whole eggs 8 egg whites Salt and pepper to taste Chives for garnish

½ tbsp Taco Seasoning 2 tbsp water 4 ounces cream cheese, room temperature ½ cup sour cream ¼ cup mayonnaise 1 cup salsa ½ cup jack cheese, shredded ½ cup cheddar cheese, shredded 1 cup lettuce, finely shredded (optional) 1 tomato, finely diced (optional) 1 avocado, finely diced (optional) 2 tbsp sliced black olives (optional) 1 handful cilantro (optional)

Preheat the oven to 400 degrees F., and lightly spray a 12-cup muffin tin with non-stick cooking spray. Mix the first three ingredients together in a large bowl, add salt and pepper Spoon potato mixture into each prepared muffin cup until about 1/3 full.

Brown the ground beef in a pan, drain the grease add the taco seasoning and water, mix and simmer until the water evaporates.

Gently press the potato mixture down in the middle and up the sides of each cup.

Mix the beef, cream cheese, sour cream, mayonnaise, salsa and cheeses in a large bowl, reserving some of the cheese.

Bake until golden brown, about 25-30 minutes.

Pour the mixture into a baking dish and top with the reserved cheese. Bake in a preheated 350F oven until it is bubbling on the sides and golden brown on top, about 20-30 minutes. Optionally serve topped with fresh shredded lettuce, tomato, avocado, olives and cilantro
