FROM THE PUBLISHER The theme of this issue – and most likely the next few at least – is Let’s Make RIDING Great Again! No political connotations meant. Just having some fun and looking to suggest that WE need to just get out and RIDE! We need to get out and SUPPORT the events and businesses that have made our Riding Community what it is! That favorite annual ride that you have so much fun on every year.. except for last year, since it was forced to cancel – well, they may need your help this year. That little bar that always made such a great RIDE STOP, but was pretty quiet otherwise – they may need your help this year. And as usual in our little corner of the world, how can we help? Well, we can RIDE! We can get out and SUPPORT those local businesses and maybe ATTEND those events that you’ve always wanted to. Of course this is February and other than SWAP MEETS and a few MeetUp’s, there’s not a lot going on. Not yet, and maybe not ever if WE DON’T LET THEM KNOW that we want to come out and support their businesses and events! Don’t just follow them online – leave some comments and let them know you can’t wait to get back out and see them! Attend the events you can – such as SWAP MEETS, and then take the time to stop at the booths and let them know you appreciate their efforts and them coming out. Maybe spend a few bucks with the folks you really like – JUST BECAUSE. Planning is underway for the 2021 Riding Season – and the $1 Million Dollar Questions are WHAT IS THE GOVERNOR GOING TO ALLOW and WHAT ARE THE RIDERS GOING TO DO? The first one, well – nobody really knows. For the second one – that should be obvious… We are GOING TO RIDE whenever we can! Even though it’s winter and the snow is blowing as I write this, there are still plenty of opportunities to get out and hang with other riders and maybe even prepare your bike for warmer weather. South East Harley-Davidson is holding their Annual Chili Bash and Salvage Sale on Saturday Feb 13th. South East is a family-owned shop that’s been in business since 1948 – and yeah, they have some vintage bikes and parts! You never know what you’ll see when they open the doors on their Salvage Sale. Of course, it’s the season for Swap Meets – and thankfully we have a number coming up. On Sunday February 14th it’s the LIMA SWAP MEET. This one’s been going on for over 40 years and is always a great chance to break out from the cabin fever doldrums. The following weekend, it’s the AKRON SWAP MEET at the Summit County Fairgrounds. Both draw folks from throughout the Midwest – shops, craft vendors, dealers, and local folks that just have too much “stuff”. Our friends from Hudson Leather usually join us at a few of them as well – offering RALLY pricing a little closer to home and “pre-season”. Speaking of RALLIES - next month we’ve got DAYTONA BIKE WEEK, and It’s a GO! If you’re heading south, don’t miss the information on a SPECIAL DAYTONA Edition of the THUNDER RUN presented by our friends at ReasonsToRide.com. It’s featured on page 20. And folks – don’t forget Valentine’s Day is February 14th. Don’t forget to get some flowers.. or bike stuff… for that special someone in your life. Looking forward to seeing ya out on the road! D.A. H-D 2021 UNVEIL Harley tells us to GO RIDE and shares some upgrades. Harley-Davidson hosted a virtual launch of their 2021 motorcycles on January 19th that they had built up over the last several months. Lasting about 40 minutes the presentation walked us through the lineup and some of the upgrades and updates made to the H-D family of motorcycles. If you missed the video – you can find it on our Facebook page www.facebook. com/ThunderRoadsOhio. One of the most immediate take aways from the online event was that Jason Mamoa (Aqua Man and Kal Drago from Game of Thrones) apparently still has his Christmas tree up. Don’t want to disappoint the ladies though, as I believe that was actually a jacket and not a bathrobe that he’s wearing in the video. Well, at least I think it was? Beyond that, the main highlights seemed to be: • H-D is introducing a new Street Bob 114, the lightest Softail to get the Milwaukee-Eight 114. • The Fat Boy has been restyled. • New styling options are now available on the Street Glide Special, Road Glide Special, and Road King Special. • NEW 2021 CVO Touring models include Road Glide, Street Glide, and Tri-Glide Options. These all include the Milwaukee-Eight 117 as standard equipment. The program wound down with Jochen Zeitz, the new CEO of Harley-Davidson, saying that he just got back from Kenya where he was test riding the new Pan America. He didn’t give any further details on the bike, but invited everyone to yet another virtual launch – on February 22nd. 2021 CVO Road Glide I was a little disappointed that there weren’t any real surprises – like a few new models; but I appreciated the upbeat tone and message of the video. Clearly an effort was made to show H-D as the global entity that they are with a slew of heavy accented presenters and truly diverse mix of team members presenting. They shared a message that we as riders all know, but may have lost sight of over the past year. The opening video montage seemed to charge us to “Go – GO RIDE!” “Go – Just Go and leave no mile unturned and leave a trail of stories in your wake… Ride Forth!” Sounds good to me, and certainly a lot of those miles will be on Harleys. And I’m looking forward to getting out on the Street Bob 114. A big 114 power plant on the “new” super responsive Softail frame? And of course the factory dealerships have a slew of additional power options – including a M8 Screamin’ Eagle Stage III kit… yeah, that sounds like a blast.

Daytona Bike Week gets a GREEN LIGHT for 2021 “The 80th anniversary of Bike Week will go on in the City of Daytona Beach this March 5-14 with plans in place to help prevent the spread of #COVID19.” The City of Daytona Beach announced on Jan 20th. This ended speculation and agonizing over the Rally possibly being “officially cancelled” – and the implication that might have for other rallies and events across the country. However, the city responded and recognized the overwhelming demand from local businesses and riders alike. As part of their COVID plan, the city placed an emphasis on outside vendors and businesses on Main Street would have to limit capacity to 60% to help promote social distancing. THUNDERROADSOHIO.COM

As challenging as this year was – there’s every reason to believe that 2021 will be a blockbuster year for regional and local motorcycle events! Bikers and motorcycle enthusiasts experienced a year like no other – a year without many of the bike nights, rallies, and riding events that they have taken for granted for years. And for the few events that were able to be held, event organizers were blown away by the response. Despite all the dire warnings, concerns, and protocols over COVID – event organizers have been reporting record years as riders want to get out! Increased demand and interest in riding and powersports in general is also substantiated by record sales of used bikes, parts, and accessories. Of course riding is the perfect social distancing activity, but other factors include less professional sports and more “personal time”. It all means that more folks are hitting the road and there’s no reason to think that next year will be even better as we move past the COVID crisis and surrounding hysteria of 2020. So, we are encouraging event organizers to lock down dates and plans for 2021. It’s especially critical as many late season 2020 events have opted to re-schedule for Spring 2021 dates. Many of these event organizers are hoping to pull off an early season version to replace their cancelled 2020 event – and still be able to host their regularly scheduled Late Summer / Fall event. We would encourage everyone to email us with their event information and dates as soon as possible, especially if you’d like us there. We are excited to announce a RE-VAMPED Bike Show program w/ new SPONSORS and even MORE PRIZES / TROPHIES! We are also doing more HOT ROD / CUSTOM CAR / BIKE SHOWS as well – with new partners on board! We are looking to host more of these shows in combination with RACING events and RALLIES all across the MIDWEST. MOTORCYCLE MINISTRIES Lessons in Love… Hello February! In the past couple of years when I have written an article in February, it’s been about love, because after all, it is considered the month of love. Most of us focus on the loves of our lives, or the lovelessness of our lives. Either way, love is the focus. This time I want to bring about a different focus. What if we looked at love the way it is supposed to be with all people? What if we looked at the definitions of the four types of love and broke it down to where we are at right here, right now. The first love that everyone is familiar with is Eros love. This is the physical touch love between husband and wife and confirms the marital union. ‘Nuff said. The second is Philia (sometimes referred to as Phileo) often translated "brotherly love", philia is usually translated as "friendship" or affection. The kind of love we have amongst our brothers and sisters from other mothers and misters. It is the bonding love between friends that remains tight until the end. A love that gives you the sense of belonging and a surety that someone will always have your back and you theirs. The kind of friendship that even though you may be separated by years, you can call them or see them and pick up right where you left off. This kind of friendship can even be found in marriages. You have heard a spouse call their husband or wife their best friend, that is because they have forged a relational bond that no one can break, a trust that

will stand the test of time. Highly unusual, but very wonderful! (Here is a fun fact for you: the opposite of philia is called a phobia! We all know what it’s like to lose trust in those around us and we continuously watch whenever we sense it!) The third love is Storge (pronounced stor-JAY) is a Greek word that is used in Christianity to mean family love, the bond among mothers, fathers, sons, daughters, sisters, and brothers of blood and, what I call, bonus family. Blended families that come together to make one family are bonuses not ‘steps’, I always say steps are something you walk on, I don’t let my bonus peeps walk on me, nor do I walk on them! It creates a great atmosphere to help mold everyone into the family unit. Every one of these forms of love are great, but the greatest is yet to come….

When I went to Dealerships later in the summer and fall, there were no new bikes on the showroom floor. People who had never owned a motorcycle before bought them up so they would have something to do. Unfortunately, their lack of training and experience reflects on the whole motorcycle population when Legislators are looking to make new laws. After looking at the stats we wonder what we can do as just an everyday biker. When you are having breakfast or lunch with your riding friends, bring up how you have seen riders riding way over their skill level. We need to talk about safe riding and try to get our fellow bikers to be aware. If you know of someone that goes every year and gets another temporary permit, get him or her endorsed even if you go take the class with him. Remember to ride SMART; Ride Sober, Ride Motorcycle Endorsed, Ride Alert, Ride with the Right Gear and Ride Trained.

LET’S MAKE RIDING G Planning is underway, but first some DECISIONS have to be made. This is the time of year when event organizers traditionally begin making announcements about their rallies, rides, and shows for the upcoming year. It’s usually one of the busiest times of year for us in the industry, even in Ohio where snow covers the ground and the ice / salt keep the bikes off the roads. This year, however, is certainly different. Even with a new digit on the calendar year and a vaccine hitting the streets – there’s still a lot of uncertainty as to what’s going to happen after all the craziness of the past 10 months. And unfortunately, regardless of how optimistic we as riders and event organizers can be – it really depends on what the folks in charge decide when it comes to planning. “We absolutely want to have an event this year, but it really depends on what the Governor decides and how the local Health Boards interpret that,” commented Steve Ernst, with Ohio Bike Week. “And that leaves us up in the air at this point.” “There are a lot of moving parts and the process takes months of not only planning, but applying for permits as well. Working within a city – on the actual downtown streets – there are a lot of departments and agencies involved.” Ernst, continued. “And everyone is waiting to see what the Governor and his folks decide.”

For this reason, Ohio Bike Week has decided to hold off on a decision and any official announcement until Mid-February in regards to their 2021 Rally. (For official announcements and updates, follow Ohio Bike Week on Facebook – www.Facebook. com/OhioBikeWeek.) It’s a little easier for events that are held on private property and don’t have to deal with as many different agencies. “We’ve decided that the Smokin’ Country Bike Rally will go on in 2021 as scheduled for May 28th to June 6th,” announced Elmer Cole, owner of Cole Farms - host of the rally. Cole Farms is a 180 acre rally and concert venue that offers camping and even amusement park rides on site. In 2020, they announced a new event – The Smokin’ Country Saloon Bike Rally with an exciting lineup of performers including Texas Hippie Coalition, Ron Keel, and Liliac. Originally intended for May, they were forced to reschedule the rally and entertainment to two weekends in the Fall. However, the pandemic and state mandates forced them to again revisit their plans and eventually cancel their plans for 2020. (www.smokincountryconcert.com) These are the hard take aways that many event organizers are grappling with as they look towards 2021. Ted “Hollywood” Heckman, working with the Smokin Country Saloon Rally, commented “We are in the process of adding new artists and building out our May event. We are working with the Health Department to assure a safe experience for everyone – but we believe that things are slowly returning to a sense of normalcy, well as normal as its possible to be! We will have to change some things, certainly, but our hope is that we will soon be able to get back to hanging out together, seeing great bands perform, and just enjoying life as we once did.”

Ohio Bike Week raise funds for local charities. Thunder Roads Ohio teamed up with GAMC and the calendar founder – Rich Robinson – years ago to help produce and distribute the calendar. Each year, the whole process kicks off with a meeting of riding clubs, promoters, charities, and ride stops at the club the 3rd Sunday in January. With so much uncertainty and questions abounding, a new approach was decided for 2021. “This year’s meeting will be held at the Kent American Legion Post on Sunday, February 28th at 2pm,” Pat Tenney, with GAMC, announced. “They have the space to better allow everyone to spread out and more easily follow social distancing guidelines. Even then – we will be able to accommodate a LOT more people this way.” “Instead of our traditional format, we will be starting with a general discussion amongst everyone as to what they are planning, concerns they have, and possible solutions available. Even if you’ve never participated in the calendar before, if you are thinking of hosting a ride, bike night, or any type of motorcycle event in the area – we’d like you to come.” Tenney continued. Thunder Roads Ohio will be sharing information on their online registration system and options for digital check-in’s for rides. Working with ReasonsToRide.com, both programs allow organizers to offer a COVID compliant, safer option for riders that’s more likely to not only work – but attract MORE riders! New England Riders Regular readers of Sport Touring Corner have heard me mention New England Riders- on several occasions. This month I'd like to shine the spotlight on them and tell you about all the great things they are doing. I first became aware of the New England Riders website several years ago while looking for Garmin BaseCamp GPS learning resources. Their downloadable tutorials, developed by Ed Conde, have become known as the best BaseCamp training materials on the web. The online PDF tutorials take you step by step from downloading the software, installation, setup, creating routes and tracks, transfer to and from your GPS etc. Beginnings New England Riders started out in the 1990s when several members of the online Honda Shadow Riders forum got to know each other and decided to meet and go for a ride together. One rode down from New Hampshire toward Connecticut, meeting up with the other two. One of them had a fun, bike friendly route laid out that they rode that day.

When the ride was over and they were back home discussing it online, they agreed that New England Riding is some of the best in the country, and that they should get together and form rides. This was the birth of New England Riders- to get out and ride and enjoy the good company of other like minded bikers.

Around the year 2000, several other members of the Honda Shadow forum, including Ed Conde, noticed about half the posts from the Shadow forum were about plans for the New England group, so they started talking about starting a group of their own.

They bought the domain name newenglandriders.org and built a small website. It caught on quickly, but the guys were still looking for a way to stay in close contact. This led to them setting up a New England Riders Forum as well. In 2010, they started the New England Riders Facebook group, which has grown to over 12,000 members.

In addition to the "Best of" categories, there are NER Trips. They are multi-day trips, complete with hotel booking information, suggested day routes, etc.

The website has grown over the years into one of the best resources in the motorcycle community. Let's take a quick tour of newenglandriders.org.

There is a POI (Points of Interest) category that offers downloadable files for Restaurants, Covered Bridges, Lighthouses, etc. Easy Ed's Bests offers a collection of Ed Conde's favorite rides, roads and scenic views.

Ride The Ride section of the site has categories for "Best of the Northeast," "Best of Appalachia" and "Beyond the East." Each category allows you to select a riding locale that leads to a Ride Planning panel. In each panel is a map plus listings and GPX Downloads for Roads, Scenic Views, Hotels, Dirt Routes, Restaurants, Attractions, Campgrounds and Complete Day Rides.

Learn The Learn section is another valuable section of newenglandriders.org. This is where you will find all the GPS learning materials, as well as Riding Technique and Safety, Training/Instruction, Group Riding, Gear and numerous other categories. There are also learning activities- for example in 2021 they have 2 Non-Sportbike Training Days scheduled. M nshiners and Motorcycles Ohio has a lot more history in moonshining and distilling than people realize. As families moved to Ohio for work because there was no work in the southern states, that history came with them but often skipped a generation. It is now being picked up by the next generation as they try to keep family tradition alive. As for my history, my family was from Eastern Kentucky, a little town called Boonville. My great uncle was a moonshiner for many years. My family moved to Ohio for work and it skipped a generation. I am now trying to keep the family tradition going, like a lot of other Ohioans. From Season One of Discover Channel’s Moonshiner’s Master Distiller show, Lawrence Pritchard from Napoleon, Ohio, has a similar story. He is the grandson of Ohio moonshiner, Lawrence Pritchard Sr. He is founder and Head Distiller of Flatrock Distilling Company in Napoleon, Ohio. Stop in and check them out, if you are in the area. This would be a great ride destination. For Season 2, there are 4 Ohioans. I am in The Peach Brandy Episode. Tom Spisak III is from Middletown, Ohio and was on The Cherry Bounce Episode that aired on 12/29. Tom has background on both sides of his family. His Great Grandfather on his father’s side was arrested several times for illegally running a moonshine still from 1905-1930. He actually has old newspaper articles detailing the escapades. His Grandfather, on his Mother’s side was convicted of moonshining in 1947, a short sentence but a felony, nonetheless. At that point, he ended his moonshining career, but in 1992, he applied and was granted a presidential pardon from President Bush Sr. Tom is a millwright, welder and pipefitter and also a motorcycle rider. He has an 08 Softail Custom. He also has a 69 TR6C Trophy 650 Triumph that he has restored. Season 2 of Moonshiner’s Master Distiller is now being shown on the Discovery Channel. I’ll be featured on the The Peach Brandy Episode, scheduled to air on February 2nd at 9pm. Be sure to tune in to see how it turns out. Steve Watson, AKA Big Steve is another Ohioan on Season 2. He lives in Duncan Falls, Ohio. He is on the Ultra High Proof Episode that will be airing on February 9th. The fourth Ohioan on Season 2 is Shawn Rigsby from Springfield, Ohio. He is on the Mountain Vodka Episode that will be airing on February 23rd. Tune in to see Ohio well represented on the show!. Our good friend, Charles Ketchum, AKA Crazy Chuck, was born and raised in Youngstown, Ohio. He joined the Navy at 18 and served during the post Vietnam War Era. He now resides in North Carolina. He has been a cast member of “Moonshiners” with Josh Owens on Discovery Channel. The two of them got into racing. Being a biker, he got with Godspeed racing, Brew Cycles. He is a Bike Builder and Motorcycle Racer with Billy Lane’s Sons of Speed Vintage Motorcycle Racing. He contributes his success to good Christian people that helped him change his life through biking and serving Jesus Christ that made him a better person. He now has a legal label moonshine called 24

“Purple Jesus” produced by South Mountain Distillery. He feels very blessed and appreciates all the support that he has received from his friends and fans. Coming up at the end of the month is Winter Hillbilly Jam in Maggie Valley, NC. February 25-27th . What is their Contribution?

You just patched a new guy. His patch is not even dry on his back. He has been riding a brand spanking new bike for about a year. The only previous club he has been in is a bowling league. What could he possibly have to contribute to your nation? What could he possible teach a 30-year club member? I have heard this many times. The NFG does his probationary time, patches, and then is told to STFU until he “learns”. Let me let you in on a little secret. Sometimes the quietest guy in the room has the best idea. Let me say that again, MANY times the quietest guy in the room has the best idea. If your Ego gets in the way of your ears you are doing your nation a disservice. So many times, the description of “can’t see the forest for the trees” prevents new ideas from emerging. I am guilty of being narrow minded sometimes. I may be passionate about a direction or an action I feel that our club needs to do, and then out of nowhere, the guy who rarely says anything, or the guy who is newest to the chapter, says something that is genius. I have been in this game awhile. I have been in ranking leadership roles for more than a decade in club life, and even longer at work. Can I contribute gainful knowledge to our organization? I think I do. Am I smart? I think I can hold my own. Often what makes me smart is that I recognize in every conversation that I am most possibly not the smartest guy in the room. I recognize the difference between someone who thinks they know it all, and someone who might have a good idea. Or a better way. I also must be humble enough to sometimes let the idea I do not agree with play out. It might work after all. You might have just patched a guy that is successful in business, or finances, or just thinks outside the box. Let him speak. Some bullies love to speak over everyone and show the room how “smart” they are. They are most often not the smartest guy in the room. Nor do they always have the best ideas. But they think they do. Let me tell you something. If you think you are

the smartest guy in the room, you are most often not. You might be the highest-ranking member. You might have the longest time in the club. But if you cannot learn from other ideas, you are most definitely not the smartest guy in the room. Your club “church” should be an open forum where everyone, and I mean everyone wearing your patch should be heard. If it is not, you are doing your club a tremendous disservice. Too often people in leadership roles forget where they came from. They forget that they once were “that guy” in the room who is still getting comfortable in his patch. Two things are accomplished by letting him speak. One, you might learn something from him. Two, he may say something that has been tried and tested but did not work out for one reason or another. Now you have heard him and taught him. Sometimes you might hear him, and he teaches you. I have been witnessed to this in my own leadership roles many times.

The belt seems to be one of the more misunderstood and feared maintenance items on motorcycles. Despite what people may initially think, they are incredibly durable and strong. I know of many people who have gotten over 100,000 miles out of their belt. Alignment of a Harley belt is critical to life of the belt and handling of the bike. Especially on the rubber mounted Dynas and baggers. If you have misalignment of the belt, it will not only make the bike track slightly out of line, but it can create a bounce or tension in the driveling that turns into a “tank slap” or a “death wobble. *Check your engine mounts too if you have this problem. Let's get started with alignment of the belt. Make sure the belt is looped over the pulleys and in place then install the axle and all the spacers. I would recommend snugging up the axle nut just to make sure everything is seated and still spins properly. Loosen the axle back up enough that the axle can be adjusted forwards and backwards. Now you will want to turn the axle adjusters in at an even rate until the belt has a moderate amount of tension, and you can just eyeball the alignment at this point. On the dyna there is a small hole in each side of the swing arm just in front of the axle. This hole is a reference point use for the belt alignment. Alignment on the Dyna is measured from this hole to the center of the swingarm. You will use either Harley's special tool or dial calipers to measure the distance from the hole to the center of the axle. This measurement will be compared with the measurement on the other side. As you tighten the axle adjusters to zero in the alignment, don't forget that you are also tightening the belt so you will need to keep an eye on that tension. I generally align within .062” (1/16th), then set tension by turning each screw in an even amount. ¼ turn left, ¼ turn right, then check tension again.

the alignment studs and reinstall the primary cover. Start each bolt in be a few threads and be careful to make sure the gasket aligns with each bolt. I once trashed a new primary gasket by not doing this. The Cometic gasket I use has a metal internal frame, which helps to hold the shape of the gasket. Once all the bolts are started in, torque them to 108 inch pounds, in the pattern specified by Harley. I exclusively use Cometic Gasket products. Their micro cell primary gasket has been working for me for many miles, and the rest of their products have always served me well. Plus they are in the Greater Cleveland Area, so it is always good to support local products. Add your favorite oil to the primary. DON'T FORGET TO DO THIS BEFORE YOU REINSTALL THE CLUTCH COVER OR SHIFTER PLATE! Personally I recommend Synthetic primary oil. If it is not easily available try 75-140 gear oil with friction modifier. I have heard of some people using ATF transmission fluid. That stuff is entirely too thin for your chain and primary tensioner. You need at least a 50 weight oil in there. No break in required, just take it out and ride the snot out of it. Periodically stop and check for leaks or parts or something coming loose. After the first test ride I would recheck the belt tension every few tanks of gas. It should not need any readjustment, but if there is a problem, now is when it will show up. The factory recommends 5/16 to 3/8” deflection with 10 pounds of force, and of course, they sell a tool too check this measurement with. *this tool can be acquired online for under $30. I once was told you can check the tension by twisting the belt with your fingertips. You should be able to twist the belt to 45 degrees with your fingertips, but no more, no less. That proven to be a pretty reliable measurement over the years and miles Once you have nailed down the alignment and belt tension, torque the axle nut to 60-65 ft lbs, and then reinstall the retaining clip on the axle nut. Your belt will walk back and forth on the pulley a little. However it should never look like it is hard against one side or look like it is trying to climb out of the pulley. Sometimes I touch each side to make sure it is not getting hot, because if there is heat, you may have alignment problems. Now that the belt is installed, aligned and tightened down, we will reinstall the primary cover. *No reason that this could not have been done before the belt. Ensure that the gasket & gasket surface is clean and free of burs. Hang the primary gasket on 30

Two senior citizens are pushing their carts around Walmart, looking left and right, when they collidehead-on. The first guy says to the second guy,"Sorry about that. I'm looking for my wife, and I guess I wasn't paying attention to where I was going."

A man went to the Police Station wishing to speak with the burglar who had broken into his house the night before. "You'll get your chance in court." said the Desk Sergeant. "No, no, no!" said the man. "I want to know how he got into the house without waking my wife. I've been trying to do that for years!"

The second old guy says, "That's OK, it's a coincidence. I'm looking for my wife, too. I can’t find her and I'm getting a little desperate." The first old guy says, "Well, maybe I can help you find her. What does she look like?" "Well, she is 27 yrs old, tall, with red hair, blue eyes, long legs, and is wearing short shorts. What does your wife look like?" "She can wait. Let's look for yours." "If there are any idiots in the room, will they please stand up" said the sarcastic teacher. After a long silence, one student rose to her feet. "Now then young lady, why do you consider yourself an idiot?" inquired the teacher with a sneer. "Well, actually I don't," said the student, "but I hate to see you standing up there all by yourself."

RECIPES

Crockpot Cabbage Rolls Serve 6 (or 3 hungry bikers)

Chicken Soup with Fluffy Dumplings Serves 4-6 (or 3 hungry bikers)

1 large head cabbage 1 - 8oz can tomato sauce ¾ cup quick-cooking rice ½ cup chopped green pepper ½ cup onion ½ cup crushed crackers 1 egg, beaten 1 ounce onion soup mix 1-1/2 pounds lean ground beef 1 – 46oz bottle/can V8 juice Black pepper 1 cup Parmesan cheese

8 cups Chicken Stock 1 cup baby Carrots, chopped 3 stalks Celery, chopped 1 med Onion, chopped 2-3 cup Cooked chicken meat, chopped 2 tbsp Chopped garlic 2 tbsp Oil 1 tsp Basil 1 Bay leaf ¼ tsp Red pepper flakes ¼ tsp Black pepper Salt to taste

Dunk cabbage in boiling water, holding it under, just until leaves begin to fall off the head.

DUMPLINGS:

Set aside 12 large leaves for rolls; drain well. (Reserve 4 extra leaves then store cabbage in fridge for another use) Cut out the thick vein out of each reserved leaf by making a V-shaped cut, set aside. In a large bowl, combine the tomato sauce, rice, green pepper, onion, cracker crumbs, egg and soup mix. Work raw beef over mixture till thoroughly mixed. Place about ⅓ cup meat mixture on each cabbage leaf, overlap cut ends of leaf. Fold in sides, beginning from the cut end. Roll up completely to enclose filling Secure with toothpicks if desired. Place 2 left over leaves in bottom of a 3 qt crockpot Place cabbage rolls on top of leaves. Pour V8 juice over rolls. Cover and cook on low for 6-7 hours

1 cup All-purpose flour 1 tsp Baking powder ½ tsp Salt 2 tsp Butter ½ cup Buttermilk In a large pot, heat oil over medium heat. Sautee onions for 5 minutes, then add in the celery, carrots and garlic. Pour in stock and simmer over medium heat for an hour adding water as needed. Add in chicken, cook over medium-low heat for 30 more minutes. Make dumpling dough - In a medium bowl, sift flour, baking powder, and salt. Mix in butter into dry mixture until it all resembles coarse crumbs then add the buttermilk and stir just until moistened. Drop the dumpling batter by spoon into a few mounds on top of the chicken. Bring to boiling then reduce heat to a simmer. Covered and cook for 12 to 15 minutes or until a wooden toothpick inserted into a dumpling comes out clean. Do not lift cover while simmering or you lose the heat in the pot.
