Hunter Mountain....Then and Now Hunter Mountain "Snow Making Capitol of the World"! But it wasn't always that way! Hunter Mountain was originally named Greenland Mountain in the mid 19th century then renamed after the town and village. Hunter takes its name from John Hunter, a local landlord. It is not known when the mountain was first climbed or by whom. It was believed that Hunter mountain was the highest peek; a popular legend has it that a hunter or other later landowner went to the summit with a hand level to ensure they had purchased the Catskill's highest peak and were satisfied until an unknown peak appeared on the southern horizon. Hunter Mountain was located close to settlements and saw considerable exploitation of its forest resources. Retired Colonel William Edwards was so successful harvesting hemlock bark for tanning during the mid 19th century in what is now the Hunter Ski area that the ridge was named the "Colonel's Chair" in his honor. On the other side of the mountain, West Virginia based Fenwick Lumber Company logged Hunter between 1903 and 1917. Some of the roads and railroads they built on the mountain still serve as trails today! In 1999, Governor George Pataki designated most of the Catskill High Peaks as a State Bird Conservation Area. In the mid 1950's, Orville and Israel Slutsky developed plans to revive the area's economy after the Great Depression, World War II and the decline of Catskill Tourism. Skiing was becoming popular at that time so they developed Hunter Mountain as a ski resort. The group contacted Denise McCluggage, a sports editor at the New York Herald Tribune notifying her that they had a mountain to give away to any developer who would build a ski area called Hunter Mountain! McCluggage wrote an article that attracted the interest of a group of Broadway show business people. A Corporation was created headed by James Hammerstein, the son of Oscar Hammerstein II, the famous writer/producer/director/ lyricist. Ground was broken in the Summer of 1959. As promised, the area was given to the group to operate with two stipulations: That it be called "HUNTER MOUNTAIN SKI BOWL" and that it have snow-making capabilities; which was a relatively new technology at the time. The Corporation went bankrupt by the middle of the 1961-1962 season and the Slutzky Brothers took over. In the summer of 1962, the "A" lift was completed which opened up skiing at the summit. New trails were cut over the next few years and more snowmaking was installed. During the summer of 1963, Hunter opened for Summer skiing on plastic chips which only lasted for a few summers. In January 1964, Kitty Falger a Hunter Mt. ski instructor appeared on The Tonite Show to teach Johnny Carson how to ski! The hilarious 20 minute skit gave Hunter Mountain national exposure and became the 1st Ski area in the world to feature snow-making on 100 percent of its trails. In 1989, Hunter became the 1st area in the United States to install an automated snow-making system. Currently, Hunter is known for it’s family entertainment such as: TAP NY, Mountain Jam, German Alps Festival, Celtic, Bluestock, Oktoberfest and of course their Zipline Adventure by Tower and Canopy tours. Today, people from all over the tri-state area and beyond come to experience the four star resort for skiing, festivals, lodging, a or call 1.518.263-4223. luxury spa, wedding & conference center. The evidence is in and everyone from guests to paranormal experts agree...THE PLACE IS HAUNTED!! The Shanley Hotel consists of 35 rooms, a hidden basement room, and the “Bordello”. Upon entering the Bordello, people have reported feeling light-headed, shortness of breath, heaviness, and an overwhelming feeling of joy/sadness. A photo has also been taken of a young lady star-gazing towards the mountains from a window. The Bordello is considered the most active place in the hotel! Sal and Cynthia Nicosia moved to Napanoch to restore a 1700 stone colonial in 2005. It took them four years and they opened the Shanley Hotel in 2009. It is believed that the Shanley Hotel has 33 resident spirits and 3 vortex’s. Many spirits come and go. They stop just to see

what’s happening; some stay for long periods of time while others just stop to chat with their old friends. Throughout the day and evening, rocking chairs can be seen rocking on their own, mysterious clocks chime, cold and hot spots felt, and unfamiliar smells experienced. Some have seen an aberration and have feelings of being watched and followed. Many guests have witnessed objects balancing in an unusual position or jewelry being pulled off!

Colorful Past From the late 1800’s to the early 1900’s, The Shanley Hotel was a summer vacation destination and had been the resting stop along the railroad line for many a weary traveler. It was the town’s favorite watering hole and home for men working on the constrution of the D&H Canal during the Industrial Age. The original hotel was first built by Thomas Rich in 1845 claiming in the local newspaper to be “one of the area’s best with fine food and new furnishings”.

In 1851, it became Hungerford’s Hotel, “one of the most beautiful and commodious public houses to be found in any area of the country!” Several owners later, Adolgh Wagner, a popular landlord, bought the hotel in January 1887. On March 18, 1895 a nearby house caught on fire and spread to the hotel burning it to its foundation. By September the new frame was up and in November it was reopened to the public.

The Shanley’s welcomed everyone with entertainment, card and domino tournaments, glorious parties and special events. In 1908 they added a bowling alley, a billiard room and a barber shop.

There have been many owners since then...but it was James Louis Shanley that seemed to place the old Napanoch Hotel on the map! Born in Ireland on Halloween in 1874, he moved to New York City with his family. James and his brothers were successful businessmen, opening many elegant restaurants and hotels across the country. For health reasons he moved upstate and purchased the hotel on October 1st, 1906. James was well loved in the community and married Beatrice Rowley, April 26th, 1910. The town turned out for a “good old time skimmerton” with a grand parade welcoming back the honeymooners from Washington, DC.

In 1927, the community suffered a great loss when James endured a heart attack and died on August 26th. In 1944, the hotel was sold to Al Hazen and Beatrice moved back to New York City. Strangely astonishing, Al Hazen and James Shanley shared the same dates in both birth and death but different years.

The rich and famous were also fans of the Shanley’s. Thomas Edison and Eleanor Roosevelt were frequent guests and close friends; Beatrice was known for her highteas and social card parties.

Pumpkin Chicken and Sage Risotto Original Recipe From: Laura Pensiero, RD Managing Partner, Gigi Hudson Valley www.gigihudsonvalley.com In this autumn inspired recipe fresh pumpkin is ideal, but one half cup of canned pumpkin puree can be substituted and will lend creaminess and pumpkin flavor to the rice.

Makes 6 first course servings or 4 main course servings: 8 cups chicken stock 2 tablespoons olive oil 2 tablespoon unsalted butter 1 small onion, minced 2 cups short grain Italian rice (Carnaroli or Arborio) 1 1/2 cups diced pumpkin 2 tablespoons 100% pure pumpkin puree 1/2 cup dry white wine 1/2 cup grated Parmigiano-Reggiano or Grana Padana cheese 1/3 cup toasted pumpkin seeds In a medium saucepan, bring the stock 8 ounces skinless raw chicken to a boil. Reduce heat to simmer. (breasts or thighs), diced; or 2 cups chopped cooked chicken (skinned) Heat the olive oil & 1 tablespoon of the 4 to 5 fresh sage leaves, roughly chopped butter in a 5 to 6 quart heavy pinch nutmeg and salt saucepan over med. heat. Add onion

& cook, stirring, until very soft, but not browned, about 1 minute. Using a wooden spoon, stir the rice into the onions. “Toast” the rice, stirring constantly, until it looks chalky, about 1 min.; do not brown. Stir in the wine. Cook, stirring, until wine is reduced, 1 to 2 mins.. Add the pumpkin, pumpkin puree, chicken, nutmeg & sage. Add 2 cups of the simmering broth. Stir the rice until the liquid is almost completely absorbed. Continue adding broth, 1/2 cup at a time, stirring after each addition & allowing the rice to absorb the liquid before adding more. After 14 to 15 mins., taste a grain of rice. It should have a slight resistance to the bite. If it seems too hard, add a little more broth & continue cooking for another min. or two. When the rice has absorbed the last broth addition, remove from the heat. Stir in the cheese and the remaining butter. Whip with a wooden spoon to bring out the creaminess of the rice and to incorporate all the ingredients. Season with salt. Divide the risotto among serving plates & top with toasted pumpkin seeds.

Santo Stefano Winemaking Families Coming Together Giovanni Petretta might have arrived in the U.S. with just a suitcase, but he has brought so much more than he ever could have imagined. Giovanni left his hometown in Santo Stefano del Sole, Italy after a devastating earthquake in 1980. That is where his family heritage and vineyards were, dating back to 1525. The Petretta family was one of the founding families of Santo Stefano del Sole and their grapevines go back six generations. For years the family recipes lay unused. Giovanni met his future wife Kathy and they settled in nearby Connecticut. Giovanni worked as a decorative contractor and Kathy as an early intervention therapist while raising their own family. Kathy knew her husband missed the traditions of his homeland and she suggested he bring some of his old world into their new world, something that could reconnect him to the land he still loved! So Giovanni started barrelling 200 gallons of wine in their basement that represented 500 years of wine making. That's how Santo Stefano Wine was born! The first year, the Petretta's invited friends to help in the wine-making process using the old family recipes. Each year the group of friends grew, as did the amount of wine they produced. Together, as a family they created something new; plus the wine they created with the old family recipes did not include sulphates for preservation. Aside from being a healthy choice, this method was good for those who have certain food allergies or other sulfite-sensitive health issues. Then in August 2008, the Petretta's choose to open Santo Stefano Winemaking operations in the Hudson Valley because the Hudson Valley was the first area in America to make wine! The rest is history. They found 10 acres in Wappinger Falls and refurbished an old hunting and fishing Lodge. Today, families are coming together to crush, press, rack and bottle their own wine at Santo Stefano's in Wappinger Falls. The Heritage Experience is four 2-hour sessions. The Crushing and pressing in September-October, the racking of bottles in Winter and the following Summer bottling with your own custom label! This is a time for families and friends to be together and celebrate! Plus catering is available to make the experience all the more unique for each family function and/or organization. "Vino Patrino" and "Believe 44" are two blends that are especially noted. "Vino Patrino" is a blend of Merlot, Petite Syrah and Cabernet making it graceful and full bodied. Santo Stefano Winemaking serves many purposes. To families it's a way of getting together and celebrating. Taking advantage of their catering for private and corporate functions makes it a place for great wine and food created by top chefs from the Culinary Institute of America. Available for birthdays, weddings, and special occasions as well as private functions in the community. It's a family landmark to host traditional events, occasions and a day of fun! There are Weekend Family Nights, Family Dinners and Wine Tastings, Vintner Barrel Tastings, Comedy Nights and other events. Many community and not for profit events are held as well. Santo Stefano Winemaking hours change throughout the seasons and some events are by appointment only so it's best to check their website for event updates at www.santostefanowinemaking.com or call 845.297-2580.
