Life and tourism in Southern Baja revolves around the ocean. For many, it's their livelihood, and the rich fishing history of the area will make any choyero (a Los Cabos native) proud. In this Destino issue dedicated to boating and fishing, you can go back to basics and take a journey through the prevailing fishing areas in Southern Baja, and if just cruising and enjoying the views is more your thing, we also have an inspiring piece on Yachting in the Sea of Cortez. I would like to mention that in the last issue (April 2019) there was a mistake in the printed article "Endemic Southern Baja Plants." After publishing the issue, the author of the article reached out to Destino to let us know that there had been some confusion on our end with the title of the article, and that those plants are representative of Southern Baja, not endemic. Los Cabos (“the capes” in Spanish) is located on the southernmost tip of the State of Baja California Sur and consists of four main areas: Cabo San Lucas, San José del Cabo, Todos Santos and the East Cape. La Paz is the State Capital. If you take a look at the "The Tip of Southern Baja" map on page 12 you can see that the highways and towns form a loop, which you can easily drive in one day. The Pacific Ocean and the Sea of Cortez meet at the very tip of the peninsula. It's very clear when you're on the Pacific side; the waves are much larger and powerful, and the winds are stronger and the climate and beaches are very different than on the Sea of Cortez side. It's usually a few degrees cooler, which is very pleasant during the warm summer months.

“The aquarium of the world”

is how Jacques Cousteau described the Sea of Cortez. It is said that eons ago, back when the Earth and Continents were still taking their shape, the edge of Mexico split from the mainland to form the Gulf of California and the Baja Peninsula. This allowed the Pacific Ocean to rush into the gap and create the Sea of Cortez, or as some call it, Mother Nature’s own fish trap. Hundreds of varieties of fish and mammals found their way into this "trap" and either stayed in the warm shallow waters or ventured down into the cool two mile-deep San Andreas Fault. For millenniums, the Colorado River has been dragging its rich minerals and nutrients into the Sea of Cortez, aiding the living species to thrive in these waters. In the months of January through March, Gray whales make their yearly migration from Alaska to give birth to their young in the shallow and warm waters of the Sea of Cortez. In Southern Baja, however, it's not just about the ocean, in this naturally magical place the mountains meet the desert and the desert meets the ocean. The Sierra de la Laguna is a mountain range that lies at the southern end of the peninsula. Above 800 meters in elevation dry forests transition to pine-oak forests, and you can find wild mushrooms, wild horses and deer. Ready to explore?

Cabo San Lucas

This tourist friendly town, also just known as “Cabo,” is located on the tip of the Baja California peninsula and is full of entertainment for every age and liking. The Sea of Cortez and the Pacific Ocean meet at Land’s End, where you can observe the beautiful rock formations and the famous Cabo Arch. In Cabo San Lucas you can find Medano Beach (the liveliest beach in the Los Cabos area), an impressive marina and countless restaurants and bars that keep the town alive day and night.

San José del Cabo

Walking around downtown San José will allow you to experience a traditional Mexican town. You will find yourself surrounded by colorful buildings and quaint cobblestone streets that lead to the town’s picturesque zócalo (main plaza). Over the years, San José has become an artistic and cultural centre with numerous fine art galleries in its downtown art district as well as world-class restaurants. San José has a beautiful beach where you can take a horseback ride to explore the estuary that is home to many different bird species.

The Corridor

The corridor is the 40 km highway that connects Cabo San Lucas and San José del Cabo (about a 20 minute drive). Along this highway you can find various hotels, luxury ocean front homes, and championship golf courses. Have your camera ready and make a roadside stop at the Costa Azul view-point for photo opportunities and a refreshing coco frío (cold coconut).

Todos Santos

Located on the Pacific Ocean side of the peninsula, Todos Santos is an oasis where artists and surfers flock to enjoy the culture and excellent surf. Home to the famous Hotel California, this charming town offers great restaurants and a cooler climate than Cabo San Lucas and San José del Cabo due to the breezes coming from the Pacific.

East Cape

People often call it “the old Cabo” because of its pristine beaches and small fishing towns such as Buena Vista and Los Barriles. The East Cape begins just east of San José and extends about 100 miles up the Sea of Cortez coast. Sixty miles outside of San José is the Cabo Pulmo National Marine Park, Nationally Protected coral reef that offers outstanding snorkeling and scuba diving. Very popular for fishing and surfing, the East Cape also attracts kite surfers, campers and those who just want to get away from it all.

La Paz

La Paz is the capital of the state of Baja California Sur and is known for its warm people and beautiful beaches. This authentic Mexican city (as well as the general south Baja region) has been rated as one of the safest in Mexico and still maintains the small town feel that is very welcoming for tourists. La Paz is a departure point for tours and charters to the stunning Espiritu Santo Island as well as whale watching excursions. Stroll down the colorful malecón (boardwalk), walk hundreds of feet in waisthighwater at Balandra beach or have a fine dining experience; La Paz has a lot to offer.

Loreto

Loreto offers the best of both worlds for tourists who long to escape to an 'authentic-Mexico' with settings that take you back-in-time along with ocean activities that rival that of any other modern coastal city. In Loreto you'll find historic buildings such as the enchanting Mision de Loreto - a mission-style church that was built in 1697 as well as The Islands of Loreto which boasts Mexico's largest marine preserve where dolphins, seals, turtles and sea lions all play in the sea. For those who are partial to adventures on land; there is hiking, biking, and nature-tours that fill up a camera with pictures of radiant natural settings. Loreto is the perfect place for everyone from honeymooners to large families.

ATMS

Dollars are accepted almost everywhere but you will usually get your change back in pesos. The exchange rate varies every day, but some places have a set rate posted.

The easiest way to get pesos is to simply withdraw money from an ATM in Los Cabos. Bank ATMs give the daily exchange rate (best possible rate). Examples include Banorte, Bancomer, Santander, Banamex, Banregio, and HSBC. Non-bank ATMs located in the streets or marina will charge higher fees. Some ATMs only give you dollars, some only pesos and some give you the option to withdraw both. Pay close attention to what currency you’re withdrawing and try to get as much cash as possible in one transaction to avoid paying high fees.

CASH OR CARD?

Visa, Mastercard and American Express credit cards are generally accepted, but you often run into cash only establishments. Always ask beforehand and carry cash just in case. Keep in mind your bank will most likely charge you international transaction fees if you pay with your card.

GROCERIES

In Cabo San Lucas, Walmart and Costco are good options and easy to get to. You can always find a taxi outside of these stores. San José has a Walmart, La Comer, Chedraui Selecto or Soriana. Mercado Santa Carmelo or California Ranch Market are good options for specialty foods and dietary restrictions. If you need a quick grab, OXXO stores are reasonably priced convenience stores located all over town.

HOW DO I DIAL?

DRIVING

Renting a car will allow you to enjoy the freedom of exploring Los Cabos. Driving in Mexico might be intimidating, but if you just go with the muddled flow, you will realize that there is some organization within the chaos. If you are pulled over by local police for committing a driving infraction, the standard procedure is for them to take your Driver’s License. You will then have to go to the Police Station to pay your ticket and pick-up your license. There are two types of gasoline: Magna, which is regular, and Premium. Lleno (pronounced ye-no) means full. Major credit cards are accepted. Tipping the gas station attendant around $10.00 pesos is customary. There is a toll road that takes you from the airport to Cabo San Lucas or to the Todos Santos highway. By taking this road you avoid the taxi and shuttle traffic on the main highway. The cost varies from $63.00 to $75.00 pesos, depending on your destination. ALTO STOP

With calm waters, extraordinary fishing and perfect weather, some may argue that boating is the most popular attraction in Los Cabos. Whether you want to take a cruise to Santa Maria Bay on a luxury yacht or wake up at the crack of dawn for a fishing adventure, there are endless options to fit your needs.

BOAT RENTALS Private yachts and sailboats There are many charter companies that can accommodate your needs. What you do on your trip is really up to you, but it will typically consist of a tour of the landmark arch, a few hours of fishing, and a cruise to one of our beautiful bays for a swim. Most boats have fishing equipment and a knowledgeable crew, but the biggest difference between a yacht and a fishing boat rental is the cost. Fishing Boat Rentals You can always fish on a yacht, but cruisers, pangas and super-pangas are a more affordable option. Cruisers accommodate larger groups and are more comfortable when the sea is rough on a windy day. THE MARINAS Marina Cabo San Lucas The area’s largest commercial marina features 380 slips and accommodates vessels of up to 375 feet. Amenities include 24-hour security, electricity and potable water, a fuel dock, and convenient laundry and shower facilities. Puerto Los Cabos

Located in La Playa just north of San José del Cabo is the newest marina in

the area with 200 available slips for boats up to 400 feet. Amenities are similar to Marina Cabo San Lucas, though the boatyard’s 150-ton travel lift can accommodate larger vessels. FISHING There’s a reason why the world’s richest fishing tournament - the Bisbee’s Black & Blue - has taken place in Los Cabos for over thirty years. This part of the world offers abundant sea life and an exceptionally high catch success rate, no matter what your level of fishing experience is. What to Expect Most charters include a fishing license, bait, tackle and equipment. Some also include food and drink or these amenities can be added at an additional cost. It is better to leave early; trips usually begin at 6:00 and 7:00 am and last around 6 hours. Cost will depend on the number of people in your party and the size of the boat you choose to rent. It is customary to leave the crew a gratuity of 15% to 20%. Bait and Tackle Most likely, the boat you charter will include your bait and tackle. If you need your own fresh bait, you may buy it along the Cabo San Lucas Marina or the crew you hire may also stop to buy it from the local fishermen on your way out.

From Tiger Woods to Nicklaus and Fazio, many of the big names in golf have designed courses on this unique landscape. Many courses offer a reduced rate later in the day during twilight hours. Appropriate golf attire is required on all courses and club rentals are available. Cabo Del Sol Ocean Course - A Jack Nicklaus signature course with six ocean front holes (1.5 miles). Known for its “3 finest finishing holes in golf” the Ocean Course is said to be one of the most difficult yet beautiful courses in the area. 18 holes, 7,075 yards, par 72. Desert Course – Designed by Tom Weiskopf, this course winds through the desert above the Ocean Course and challenges the golfer with risk vs reward type decision-making. www.cabodelsol.com Cabo Real The newly renovated Robert Trent Jones Jr. designed golf course is one of the Corridor’s first championship courses and boasts beautiful views of the Sea of Cortez, elevation changes, and has hosted two PGA Senior Slams. www.questrogolf.com Cabo San Lucas Country Club This course was designed by Roy Dye and is conveniently located outside of Cabo San Lucas and is the only one with views of Land’s End. Buggy Tours, ATV/UTV Rentas, and Biking There are several local companies which offer ATVs, buggies, and other off-road vehicles for trail and beach cruising. Strap on some goggles and hop behind the wheel of one of these off-road racers for an afternoon of fast-paced fun! Vehicles include typical ATVs or enclosed rail buggies or RZR ATVs. Tours are typically three hours, and drivers must be 16 years of age with a valid Driver’s License. If pedal-powered rides are more your speed, look into renting a mountain bike and taking a riding excursion, or maybe just a beach cruiser and joining a guided bicycle tour of town. Horseback Rides, Nature Walks, and Bird Watching Los Cabos (particularly San José del Cabo) offers a number of horseback excursions for all ages. Saddle up for a sunset guided beach ride, venture up a hidden canyon trail, or just sit back in the shade while experienced horse trainers give the kids lessons in horsemanship – there’s something for everyone! San José also boasts a natural estuary and nature preserve. Enjoy a peaceful, self-guided nature walk to observe some of the lushest landscape in the area. Species of flora and fauna are abundant: dozens of species of cactus, lizards, and birds can be spotted on this solitary walk, just a few minutes from downtown. Adventure Parks There are several adventure parks in Los Cabos where you and your kids can experience zip-lining, backcountry UTV and ATV tours, a camel safari, and more. Zip-lines are

appropriate for kids of 8 years and up and be prepared to hike from 5 to 15 minutes from line to line. Most companies include transportation. Water Parks Wild Canyon Adventures has recently opened its brand new water park section, which you can access with your park day pass, a perfect way to spend a full day of fun family activities. Wild Wet Fun Water Park, located about 30 minutes from San José del Cabo, has shallow pools and small slides for young children, water mushrooms and a pirate ship. For the adrenaline seekers, several fast and large slides stand tall and mighty and offer a great view of the beautiful surrounding mountains. To get there take HWY 1 north from the San José International Airport towards La Paz and East Cape. After about 15 miles, the exit for Caudaño and the water park will be at KM 66. Follow this road for a few minutes and you will find the park on your right. There are plenty of signs to guide everyone to this wonderful piece of paradise. After arriving in Santiago, turn right up the little hill towards the town square. KITE SURFING

SNORKELING SPOTS Cabo offers several methods for snorkeling. You may drive to a local beach and swim out, book a tour with one of the many popular companies, or charter a private boat. Tours are typically two or three hours. Stay away from the Pacific side of the peninsula; its strong currents make it very dangerous for any kind of water sports. Pelican Rock A quick five-minute ride from the Cabo San Lucas marina or Medano Beach is all it takes to get to this fish-attracting rock. Lover’s Beach

This popular and uniquely-named beach is accessible only by boat. Be on the look-out, however, as the water is not roped off for swimmers. Santa Maria Bay Snorkel tours regularly visit Santa Maria Bay. If you choose to drive there, it’s an easy swim from the shore to the reef on the right side of the cove. Chileno Bay Snorkelers will find a safe, roped-off area for swimming at this common tour destination. Cabo Pulmo A Natural Marine Reserve in the East Cape, and may offer the best snorkeling in the area. This eight-fingered coral reef is about a 1.5-hour drive from San José del Cabo, but it is well worth it!

This sport is most popular in the East Cape due to the El Norte winds. Playa Norte (the north-east side of the beach) in Los Barriles is said to be the most popular destination and is also the location for a professional kite-boarding school. La Ventana is also a popular spot and is closer to La Paz. There is less wind in Los Barriles than in La Ventana, but the surf is bigger. The best months are January, February, March, October, November, December. Every January, the Lord of the Wind tournament takes place in Los Barriles.

PARASAILING

For a unique vantage pount of Cabo San Lucas try a parasailing trip and gain some altitude to enjoy beautiful views while tethered firmly to a speedboat. Trips last around 15 minutes. You can find this activity on Medano beach.

The recent unsettled conditions for offshore and inshore have made a challenging game out of where to fish. On the Pacific side, local banks have been inconsistent as strong spring currents sweeping down the coast bring both off-color and lower sea temps. Tenacious anglers are finding some striped marlin ranging from so-so to fair results along with a few yellowfin tuna and an occasional wahoo or dorado for the very fortunate. There have been rumors of larger yellowfin caught on the banks farther uphill to the north, although none have been weighed at any of the Cabo Marina scales. Inshore on the surface, sierra, roosterfish, and skipjack plus a few smaller- size dorado have been found; while deeper, there have been some yellowtail, grouper, snapper, and cabrilla while fishing around the many pinnacles near the rocky points dotting the Pacific coastline. Working offshore southeast of Lands End, some yellowfin tuna were seen traveling with porpoise schools, mostly football-sized to 25 pounds, with a few billfish mixed in. There was even an early swordfish landed by one of the local fleet boats. Up at Puerto Los Cabos, the Eastern Pacific bonito averaging 4- to 6- pounds, with some as large as 10-pounds, were schooling on the pinnacles throughout the area. Like their bigger brothers, the yellowfin tuna dominated the catch. Not only are

they good eating, but they are also great fun to catch on light tackle. A few cabrilla, pargo, snapper and amberjack, and the old, reliable triggerfish joined the party, along with some quality-sized huachinango and one monster amberjack weighing near 100 pounds were landed from a panga using a whole bonito for bait! Wahoo, marlin, and dorado were tougher to locate, though with the sea temps beginning to make their seasonal climb, the action should improve. Small-to-medium yellowfin tuna are being hooked on the Iman Bank as well as the Gordo Banks, mainly using strips of squid for bait. It’s tough to get them to bite and of course even tougher to land the larger ones – sizes ranged from 25- to 90-pounds. Most restaurants throughout the area will prepare the freshly-caught fish in a variety of ways from Mexican sashimi to broiled to perfection. Along the shore, roosterfish, sierra and jack crevalle were scarce for those fishing from both the shore and by boat. Los Barriles at East Cape is shrugging off the mild, but winter-like conditions as seasonal north winds subside – a promising sign that has only lured a few local boats out to see what’s happening. The best results centered on a good-toexcellent snapper bite while bottom fishing on some of the favorite high spots off Buena Vista. Some breezing yellowtail were spotted, and the sierra and jack continue to make the beach scene interesting for small tin boaters frequently seen trolling close to shore. Locals at Muertos Bay and La Paz are finding what they refer to as “transitional” time that usually is a bit later in the season. However, they are quite

content to exploit the early arrivals. Catch cooler-water species like cabrilla, pargo, sierra, yellowtail, amberjack, snapper and more as they remain in the vicinity. However, species like dorado, tuna, wahoo, billfish, and larger roosterfish are starting to arrive with the surface waters warming. Add in bonito, jack crevalle, skipjack, and other year-round species, and you have plenty of variety right now providing some early spring action for several kinds of fish. You may not get a lot of any one species, but you could finish a day with six, eight, ten or more in the box at the end of the day. The boat right next to you could have another three or four different species. The next day you might get completely different species. As they say, variety is the spice of life. Farther up in the Sea of Cortez at Loreto, visiting anglers are just beginning to arrive in any numbers. They have been pleasantly surprised at the variety with catches of yellowtail, barred pargo, dog-tooth snapper, sierra, amberjack, bonito, jack crevalle, roosterfish (released), yellow snapper, cabrilla as well as tuna (lost) and wahoo (lost); plus signs of striped marlin seem to point to a productive spring and summer season. The hitch is that many of the fish are in shallow water right now or they are over structure, so many of the larger fish are being lost in the rocks, even though they’re willing to bite. The captains are returning from their trips slightly down about the catch results, but excited about the many huge rafts of sargasso already beginning to appear. It’s still early to daydream of jumping dorado because the next normally scheduled event for local fishing trips is the surface feeding of cabrilla and yellowtail as they do their “tail chasing!” “Tons of yellowtail” are out at Catalana according to recent reports; nevertheless the 40some mile distance one way keeps the visiting boats at a minimum. For the few people wise enough to troll an “orange tiger” lure, the result was the next best action – an “angry” instead of a “hungry” attack – resulting in pargo, cabrilla, and triggerfish, but didn’t include snagged baitfish! It’s super late for the big blue whales that are usually gone by now but are still in the area in smaller numbers. This is the time of year when change is welcome, and both the local and visiting anglers consider the improving conditions as an indication of another remarkable spring season for Baja Sur. *

If you love nature and ecotourism and want to see one of natural historyâ&#x20AC;&#x2122;s great spectacles, then visit Baja California Sur the middle of December to the middle of April . This season is the perfect time to see and swim with all the gentle giants of Baja. This area is one of the best places in the world to view whales and dolphins. Not only are resident and visiting marine mammals plentiful, but the diversity of species is phenomenal. In the Sea of Cortez you will often see blue whales, the largest animals to have ever lived on earth. Their primary food is krill and they can weight more than 100 tons. They come for feeding and breeding and they make their way to either Costa Rica or islands off California. There are fin whales who reside in the gulf that also feed and see them all year. Humpback whales are numerous off the tip of Baja California. Every year 10,000 humpback whales come to Mexico, and some of them as well as a few gray whales pass into the southern part of the Sea of Cortez. Most gray whales mate and give birth in lagoons along the Pacific side of Baja. They are the friendliest whales and you have the opportunity to pet them, an experience of a lifetime. Other marine mammals are charismatic dolphin species that thrill countless numbers of travelers. You may encounter hundreds to thousands of long-beaked common dolphins. These beautifully marked acrobats forage in groups, love to bow and wake ride. Bottlenose dolphins are also common. Orcas are always exciting to encounter in the Gulf of California, but they are less frequently spotted. You can swim with some animals like the sea lions. They are very playful and graceful underwater. They quickly transport you into your youth no matter what your age. The gentle giant whale shark is another incredible experience. It is the biggest fish on earth. Every autumn, they return to Baja to feed on the plankton bloom, and it is during this time that we can snorkel with them, a truly magnificent experience. Bird Watching is also another great option. Baja is comprised of a diverse range of ecosystems in a small geographic area, which means that we attract a vast array of birdlife. Over 430 species have been spotted in Baja California Sur. *

Imagine floating in a turquoise bay with coral colored sand, snorkeling with colorful fish or walking for hundreds of yards in waist-high water, every beach in Southern Baja offers something unique. Here is a list of the "must sea" beaches to help you decide which is the one for you or just visit them all!

Lovers Beach Getting there is an adventure in itself, since it is reachable only by boat, kayak or any other water vessel. The easiest way to get there is to take a water taxi from the Cabo San Lucas Marina or Medano Beach. Your captain will cruise by the arch and the sea lion rock for some great photo opportunities. Walk to the other side of the rocks and you’ll find yourself looking at the Pacific Ocean (Divorce Beach). This side is very dangerous for swimming, so swim on Lover’s Beach side only. Location: Land’s End beside the famous arch. Tips: On occasion there are a few vendors who offer beer and water, but you won’t find any other services.

Medano If you’re looking for the action, this is where it is. El Médano (as the locals call it) is a 2-mile stretch of hotels, restaurants and bars, right on the sand. It’s a swimmable and familyfriendly beach with endless options for souvenir shopping. Numerous activities and water sports are available. If you want to take a water taxi to Lover’s Beach, this is the best spot to do it. Its stunning view of Land’s End and the vast entertainment options make this beach a must-see. Location: In the heart of downtown Cabo San Lucas. The beach is accessible by foot through the east side of the marina or via Avenida del Pescador. Tips: Be prepared to be approached by a lot of souvenir vendors. If you’re not there for the shopping, just respond with “No gracias.” Water sports are available such as jet skis, parasailing, flyboarding, stand up paddle boarding, kayaking, and more. Visit Lover’s Beach while you’re there.

Chileno Chileno Beach is a very popular location for snorkeling and swimming due to its calm waters. You’ll find tide pools at the left end of the beach and beautiful reefs offering excellent snorkeling and scuba diving. Public restrooms and showers are available, as well as a handicap ramp that takes you right to the beach. Location: Going from Cabo San Lucas towards San José, follow the signs for Chileno Beach Club near KM 14 of the main highway. Tips: Snorkeling visibility is often better in the early mornings and you’ll avoid the mid-day snorkel tours. Bring snorkeling gear!

Santa Maria Santa Maria is a stunning horseshoe cove with coarse coral colored sand and abundant marine life. Boat excursions and private charters often stop here to enjoy the snorkeling and scuba diving that this National Marine Preserve offers. This family-friendly beach is relatively secluded; therefore, you rarely run into beach vendors. However, the beach does have brand new bathrooms and palapas. Location: Traveling west from Cabo San Lucas towards San José, follow the sign which reads “Santa María” and exit the highway at Km. 13. Follow the dirt road until you reach the parking area. Tips: Swim from the shore towards the rocks on the right side of the beach for a great snorkeling experience.

Palmilla Palmilla Beach is known for its family friendly calm waters and a mile-long stretch of beach. Located within the resort community of Palmilla, you will find yourself surrounded by oceanfront luxury homes and the One&Only Hotel. Pangas and fishing cruisers are available for charter, but you won’t find water sport rentals such as kayaks or jet skis. Location: Take the Palmilla ramp exit at KM 27. Follow the signs and turn into the main beach parking area before the entrance to the One&Only Hotel. Tips: Palmilla is popular among local families on the weekends, so arrive early if you want a palapa, or bring your own umbrella. No services are available here.

Balandra A stunning bay in La Paz (the State's Capital) that will take your breath away. You can walk back and forth in the bay in waist-high water that is crystal clear. Follow the shore towards the north-east side and you will find the famous “mushroom rock.” You won’t regret visiting Playa Balandra! Location: A two hour drive from Cabo San Lucas. Once you're in La Paz, follow the main drag along the boardwalk, pass Costa Baja Resort and continue to wind around the coast and through the mountains until you see the signs for the beach. Tips: No bathroom facilities. There is a truck where you can buy water and snacks, but it is recommended to bring your own in case they are closed.

Cerritos Cerritos Beach is a popular surf spot and swimming here is relatively safe. The scenic 45 minute drive from Cabo San Lucas is well worth the trip as you drive along the pristine Pacific coast. You can rent a boogie board or surf board or even take a surf lesson. Location: Exit at KM 66 of the Cabo San Lucas to Todos Santos Highway. Watch the markers and look for the signs. Tips: Come prepared with food, drinks and beach gear. The ocean currents are strong and the waves can be quite powerful, so swim with caution.

achting in the Sea of Cortez, whether it be by visiting the islands close to La Paz or cruising nearby to Cabo San Lucas to visit its famous Arch and beaches is an experience that we are very lucky to enjoy in the Southern Baja. Jacques Cousteau once described the Sea of Cortez as the â&#x20AC;&#x153;aquarium of the worldâ&#x20AC;? and with good reason. If you are cruising on a yacht departing out of Cabo you will have some of the best vessels to choose from, and all easily accessed at walking distance from downtown in the nearby marinas. Yacht departure points are usually from IGY Marina and Marina del Rey, with options of a full day, half day or even a sunset cruise. Whale season from December to March allows visitors to enjoy luxury and wildlife simultaneously, while the Arch views never disappoint. You may also encounter other wildlife such as sea lions, dolphins, manta rays, turtles, amongst others.

Paz and discover the surrounding islands. Most people who are based in Cabo simply use ground transportation to arrive in La Paz in two hours and board their yacht there. If you are in La Paz there are several marinas you can depart from, only about a 10 to 35-minute drive from the malecón or main boardwalk. Yacht departure points include Marina La Paz, which is closest to town, Marina Palmira and Costa Baja. From there, in under an hour you will find yourself at Playa Balandra, rated one of the most beautiful beaches in the world and then in about an hour or so you will reach the beautiful island of Espiritu Santo. This island is an uninhabited beauty, with white sand beaches and turquoise waters, not to mention activity options for everyone (unless you're looking to go shopping or stop for lunch). Fortunately, when on a luxury yacht, crew and the chef aboard take care of every need and this shouldn't be an issue. Espiritu Santo is also a protected area so no fishing or specific motorized vehicles such as wave runners are allowed, but kayaking along its coasts or paddle boarding are wonderful experiences. You can even head to Los Islotes at the Northernmost point of the Island to swim with the sea lion colony there during season. Your yacht charterer should inform you to purchase your park pass or purchase it for you to visit these areas. Swimming and visiting this sea lion colony is definitely an experience to tick of your bucket list. Other nearby islands include Cerralvo Island, which is great for diving, scuba and snorkeling. If your budget and time permit, you may head to the nearby islands of San Francisco and San José. The first is very small, and in the shape of a hook (appropriately nicknamed Hook Island because of it) and the latter is quite big, with the largest mangrove system of any island in the entire Baja. Waking up or taking in the sunset in either of their bays is an otherworldly experience, and as not many tourists go much further than Espiritu Santo or the La Paz bay, you can usually get this anchorage all to yourself (or with only a handful of others). From here on North there are many more beautiful, untouched beaches, wildlife encounters beyond your wildest dreams and sunsets and sunrises that take your breath away. Making it as far North as Loreto (which you could do in a trip of say 6 or 7 days departing from La Paz) is an experience of a lifetime and unlike anywhere else in the world. In all of my years of yachting experience and travels around the world, there is not yet a yachting destination that compares itself to Baja and the Sea of Cortez. Cabo’s growing tourism and the arrival of high-end luxury yachts to the area are evidence the growth of yachting of the area, mainly supported by the ease of travel between naturally beautiful and pristine areas, and a mix of opportunities for nightlife, first-class restaurants and leisurely activities. Cabo and the Southern Baja areas are well on to their way to becoming some of the most exclusive yachting destinations worldwide, giving us Baja natives another reason to be so lucky to call this place home. If you want to live a life of beauty, luxury and yachting adventures beyond your wildest dreams, this Southern tip of Baja is truly the place, and now at much closer reach than ever before. *

Just a short 45-minute cruise from Cabo’s main beach at Medano Bay you can find yourself at two of the nicest snorkeling beaches, Santa Maria and Chileno Bay, where the Captain and crew will drop anchor and allow you to enjoy the area. Most yachts boast a range of water toys such as paddle boards, kayaks, and snorkeling gear, for your personal use and will have a fresh cooked meal waiting for you when you desire. Of course, the drinks will always flow freely too. Depending on your charter option you may also be able to do an overnight stay on board, or even set up a multiple day trip. The Cabo area is perfect for either of these experiences, and considering some of Cabo’s hotel prices, this may even be a luxury that is quite attainable, especially when traveling with a small group. Luxury yachts ranging from 55’ to 100’ typically will sleep from 4 to 8 or 10 guests aboard, and for an overnight trip in the bay may include all meals and drinks. If you prefer to stay nearby to the nightlife, shopping or restaurants, then sleeping onboard your luxury yacht under the stars in the middle of Medano Bay with everything at arm’s reach may be just the thing for you. Waking up at sunrise to paddle board out to the Arch is one of the favorite perks of this luxury experience. Although with the tempting Cabo nightlife a few may be just rebounding the yacht at this time. For those wanting to get away from it all, and dive into the natural beauty of the area, with at least two or more days available you may venture up the coast to San José or further North to Cabo Pulmo. For multiple day trips, pricing will usually be a yacht base rate, just for the rental of the yacht itself, with expenses for fuel, drink, food and any tours or excursions at an added cost. In the yachting world, this is called an Advanced Provisioning Allowance (APA), which usually is based at about 30% of the base cost of the yacht. This pricing system is put in place because the tastes and preferences of guests may vary greatly, and this allows the charterer to provide (almost) anything the guest desires and can also be used to cover any unforeseen costs along the way. If any of the 30% allowance is not used, then it is returned to the client and clear records are always kept. Cabo Pulmo is a natural ocean reserve on the East Cape which boasts some of the best snorkeling and scuba diving in the world. This is honestly quite far via sea, as cruising speeds are much slower than by car. Some yachters may opt for boarding in San José, leaving out of Marina Puerto Los Cabos (which is only a 40 minute drive from Cabo). Others may choose to drive to Cabo Pulmo and board there for a scuba or snorkel tour by marine park guides and board their yacht subsequently. Although the Cabo Pulmo area itself is protected and no fishing is allowed, there are nearby areas, such as Los Frailes which are great for fishing. You will anchor around here for overnight trips or day trips anyway because of park restrictions. Also close by are luxury resorts such as Costa Palmas, the new Four Seasons development neighboring the small scuba town. For those who are watermen, the East Cape also boasts a few awesome surf spots along the way up to Cabo Pulmo to try out. For a yacht trip of a lifetime, head up even further North to the Bay of La

PISCES SPORTFISHING

pril 15th, 2019. Anglers on board of the Pisces Sportfishing 31’ Bertram, “Tiburon” were about to call it a day when a marlin hit their trolled lures. It hit so quickly that they didn't even get a good look at it, and during the fight they estimated it at about 300 lbs. Boy where they wrong… the fish ended up being one of the largest marlin caught in Cabo San Lucas history; which if caught during a tournament, like last year’s Bisbees Black & Blue, would have earned them up to $3 Million dollars. In this case, it earned four novice anglers memories to last a lifetime, and a hardworking crew, the recognition they well-deserve. As the fight with the monster fish took its toll on the first angler, he passed the rod on to the next and so on. After a few hours, they realized, the fish had unfortunately died on them, although the original intent was to tag and release it. Now their job would be even harder, as they would have to reel in dead weight. The Captain and Mate did not give up and aided the anglers for another 2.5 hours, until they got the marlin to the boat. At almost 15 feet long and 6 feet around, they were unable to load it into the boat and had to call for back up. Finally the fish made it to the docks, and as the crane lifted it to the weigh station a 30 lbs dorado fell out of its mouth. Its unofficial weight marked 814 lbs. here’s little doubt or controversy about Los Cabos having grown into an international resort city renowned for sport fishing, golf, luxury hotels, beaches and so much more and looking for Baskin Robbins? Costco? Walmart? Or many, many chain restaurants and hotels, you’ve come to the right place! Any questions about finding comfort and convenience in these areas would soon be put to rest while strolling through Cabo’s IGY Marina. Just look around, and you’ll see the fleet of sport fishers that have grown to include anything that floats -from well-equipped outboard-powered pangas to mega-yachts -huge, fast, sleek -- all underscoring the popularity of larger boats that can easily venture farther and more comfortably in search of gamefish. And yet, that’s an obvious veer from course for many knowledgeable Baja anglers seeking that "classic, old-Baja style" that first ignited the imaginations of Baja pioneers like John

Steinbeck, Ray Cannon, Earle Stanley Gardner, Gene Kira, Neal Kelly, and others. Perhaps we’re returning to a time when revisiting fishing and fun matters more than all the other factors. Development has overwhelmed some of the larger, more popular areas, but many visitors have resisted that trend. They have heralded a return to the basics, and there have been several large areas that have fought to remain relatively undeveloped by today’s standards -- remaining outposts in populated areas attempting to stay as authentic an “Old Baja” as possible. John Ireland, from East Cape’s Rancho Leonero, is an example of a long- time owner who has insisted on providing a remote and authentic “Baja experience” to his guests. The 34-room “Rancho,” perched on a rugged point, is only accessible by a dirt road and overlooks a submerged reef teeming with sea life and a broad view to the north and south of the Sea of Cortez. His resort has a fleet of 10 super pangas up to 25 feet that are preferred by many anglers for a variety of reasons. With only the captain on board, everyone becomes part of the crew and enjoys the openness the boats offer. The versatile pangas are equally as effective for inshore fishing for wahoo, dorado, roosterfish, and jacks along the miles of sandy beaches in both directions, while offshore, they offer a stable platform to chase billfish and yellowfin tuna. For those wanting to stay even closer to shore, not only are kayaks available, but also there is the opportunity to walk the beaches, fishing from shore using either fly or conventional tackle. Meanwhile, farther down the Baja Peninsula on the Pacific side, surf fishing has also earned a following of anglers using spin-gear to cast over the huge waves

the best fishing is within a few miles of the shoreline -- the bottom drops off rapidly, and it is not uncommon for folks arriving late to see fish already being caught as they are loading their gear into their respective boats. The area offers a broad array of species -- from billfish to triggerfish. Another rustic and remote destination at the very end of a barely passable one-lane dirt road, almost an hour from La Paz or La Ventana/Muertos Bay is Rancho Las Cruces, truly in the middle of nowhere! Although built in 1948, the hotel lays claim to being one of the oldest in Baja Sur and is distinguishable by the three crosses perched on a point near the hotel overlooking the Sea of Cortez. Many oldtimers still swear the fishing here is better

points and sandy beaches that extend northward along the western side of La Paz Bay. On the eastern side of the Baja Peninsula – both north and south – there are miles of rocky coastline easily accessible by local pangas and cruisers and home to trophy-sized grouper, snapper, cabrilla, and many other fish. Traveling approximately 105 miles north is Ciudad Constitución, where there is a turnoff to Puerto San Carlos, which is 32 miles west on a paved road. It is the epicenter of the only deep-water port on the West Coast of Baja with a population of approximately 6,000. For those truly seeking the basics of Baja, Magdalena Bay is one of those places that time has virtually left behind and is considered one of the

Next, on our return to basics list, La Paz is often described by locals as “tourist friendly” but NOT “touristy!” The capital of Baja California Sur, this old colonial city is more like the old-Mexico of decades ago. It is family-oriented and still offers plenty of DIY fishing from shore as well as on similar pangas as Muertos. Several islands to the north outside La Paz bay offer not only some extraordinary sportfishing for a laundry list of species, but some unique snorkeling areas also. There is a paved road extending to the northward accessed from Mex 1 just north of town at El Centenario. This road allows anglers to explore the rocky

most important wetland ecosystems on the Pacific Coast! It is as large as San Francisco Bay, and stretches approximately 132 miles along the West Coast of southern Baja, encompassing nearly 1,500 square miles approximately 600 miles below the border as the frigate bird flies. Protected by five barrier islands along the West Coast of Baja, it has remained an enigma, tantalizing and bewildering even the most seasoned Baja traveler. With its stunning, rugged desert landscape shaping a backdrop for hundreds of miles of mangrove-lined channels, Magdalena Bay attracts an overwhelming collection of wildlife unduplicated anywhere else in Baja!

Most visitors are drawn to the larger, more popular tourist destinations scattered across the Baja landscape with easy access by commercial aircraft. Even those who drive the length and breadth of Baja’s peninsula seldom venture the extra 32-plus miles out to Puerto San Carlos or Lopez Mateos, the largest villages on the bay. More services are offered in Puerto San Carlos than in any other village on the bay, including a few hotels, motels, markets and restaurants along with pangas and some cruisers for sportfishing in the bay and Pacific. The miles of mangrove-lined channels are considered the largest snook habitat in Baja. Water temperatures peak in the fall months and produce the best snook action. Sizes range from a few pounds to a respectable 40-plus. By far the most productive method is fishing live sardines or shrimp. Live bait drifted in the deeper channels up against the mangroves provides the best shot to catch snook. If you were to poll seasoned captains from around the world, their consensus would be there are few spots on earth where so many billfish congregate offshore so predictably, usually from October through late November or later. From Puerto San Carlos, Five Barrier Islands create the bay. The channel to the Pacific is about 19 miles to open ocean and from there to the north is Santa Maria Bay where many boats can be found anchoring at night during the fall months. There are banks where large quantities of sardine and mackerel are scattered up and down the Pacific. Crews will likely hook more fish in a week or two here than they will see anywhere else in the world over a handful of seasons in these fishing grounds. Boats and crews, dazzled by the sheer volume of fish, often think that triple- digit totals are what it’s all about. Over the years, many seasoned captains wisely focused on taking advantage of the volume to finetune their techniques on a variety of tackle – light, heavy, spinning and fly – or who wanted to improve their boat handling, cockpit management, and fish finding capabilities, ultimately return home much more skilled than when they arrived. Adolfo López Mateos, located about 30 miles up the bay from Puerto San Carlos, is about a third of the population with a little over 2,100. It has a few hotels and motels, as well as a small fleet of individually-owned

that often crash on the beaches. Their success can be remarkable, landing huge roosterfish, jacks, snook, sierra, and even dorado. Because of the lack of swells or surf at East Cape most of the time, the beaches are more user-friendly. That soft water feature has not been unnoticed by the flyfishing community that flock to the area. Although most commonly known for its success on freshwater lakes and streams, fly-fishing has taken a big bite out of the saltwater scene. Case in point: roosterfish. Many guides are now plying the surf line with anglers at their sides, spotting gallos cruising close to shore searching for food. You can spot the roosterfish crowd generally in early spring after the north winds subside until late fall when the north winds return; this is a popular pastime for hordes of fly-flinging anglers! Farther up the road at a popular spot also located on the beach, the Hotel Buenavista Beach Resort offers mostly cruisers and a panga or two. At the heart of East Cape is Los Barriles, where the Van Wormer Resorts located right on the beach offer a wider variety of accommodations and choices. Also, Martin Verdugo’s, a small RV park where many DIY-type anglers (do-ityourselfers) gather for the season to fish in their trailer boats. In addition to the RV Park, Verdugo’s offers rooms and areas for camping. Roughly 30 miles north of Los Barriles up into the Sea of Cortez, and twice that distance south of La Paz, there is another remote area – Muertos Bay and Las Ventana. This area offers one highend resort, Rancho Costa, Bahía de los Sueños, plus a few very basic family-owned operations that are spread out along the shore at La Ventana facing Isla Cerralvo and offering ocean adventures including sportfishing in spring, summer, and fall plus windsurfing in the winter months. Muertos Bay boasts a large fleet of independently-owned pangas that launch every morning attracting anglers from both La Paz and the East Cape area as well as some who choose local accommodations. This area is unique as knowledgeable anglers know because of how inexhaustible the bite is! It is important to have your tackle rigged when boarding the boat as often the moment the boat pulls away from shore, the fishing begins. There are no long boat rides here. Most of the time

pangas and cruisers that anglers can hire for sportfishing in the bay and open Pacific. The bay continues up the West Coast nearly 40 miles farther. There is also a dirt airstrip available, the only one around. For the last Back to Baja beginnings’ destination on our list, Bahía Concepción lies 625 miles south of the Tijuana border, but just 28 miles south of Mulegé. Those 28 miles of highway hug the coast offering direct access to what are considered by many to be some the finest beaches in all of Baja. This rugged paradise is the real “old” Baja -- just over 20 miles long and varies in width from two to five miles, uncrowded and just plain “fishy.” One of the most beautiful spots in Baja, it is another place that offers a variety of ways to fish: shore, kayak, inflatable, panga or small cruiser. With its dramatic scenery along the western coastline of Bahía Concepción, the ultimate photo opportunity for those traveling south by car or boat is available for Baja visitors. This giant bay, within the Sea of Cortez, offers travelers a glance of what “The Real Baja” is all about, but it must be seen to be appreciated. The incredible bay once teemed with scallops, oysters, butter clams and nice-sized game fish. On my first visit to Bahía Concepción in 1973, after Mex 1 had opened, I lay in my sleeping bag dazzled by the dark star-filled sky adjacent to a mound of scallop and oyster shells higher than I was tall. These days, the clams and the larger fish are found only along the

beaches of the eastern shore. Though the bay inhabitants still include: cabrilla, grouper, snapper, triggerfish, sierra, jack crevalle, roosterfish. At the mouth of the bay, yellowtail, amberjack, snook, plus dorado, striped marlin, sailfish are still found offshore. It is still known as one of Baja’s favored spots for campers, kayakers, those with RV’s, and those who love beautiful beaches and quiet coves; the bay is especially good for kayakers as it is usually quite calm with light winds and not much in the way of strong currents. There are beach-side campgrounds, with varying degrees of services for RV’s and campers scattered along the coast below Mulegé. Some of these campgrounds offer complete services and even a restaurant or two. Mulegé is the home of the iconic Hotel Serenidad that also boasts an airstrip for fly-in visitors. In the town of Mulegé, there is a complete array of stores and services available. There are other destinations for those looking to return to the basics that we haven’t mentioned here. And for other visitors who look for the beautiful, well-developed locations with cookie cutter comforts, there are many places we didn’t even try and name; there are many articles that have been written about them. But for the many out there who choose to have experiences where beaches are unspoiled, the food is basic but wholesome, and the local culture takes you back to a time where life is simple, and adventures are fun, give some of these a try. You’ll be glad you did. *

ONE-ON-ONE WITH JOHN IRELAND by Michelle Monroy

“Fishing is like life in many ways.” had the pleasure and honor of chatting with Mr. John Ireland, a long-time family friend and owner of Rancho Leonero Resort – aka The Ranch – for over 30 years. As we sat in the dining room of the hotel overlooking the Sea of Cortez, I couldn't but help think how John's love for the area is contagious and inspiring, especially if you have been bitten by "the Baja bug," as many of us have. He is loved and appreciated by many, including generations of faithful returning hotel guests, which in his own words, “makes it all worthwhile.” MM: When was your first trip to Baja and what was it like? JI: I came down a long time ago, it was 1969, we drove Hodaka motorcycles and made it down as far as La Paz in that first trip. I was a surfer in Malibu and Santa Monica, so I came down for surf a few times with friends, but never to the East Cape. The first time I came to the East Cape was around 1979. I knew Mark Walters from Rancho Buena Vista, so I came over and visited him. Then in 1982 or '83, I ran into the Rancho Leonero property and purchased it in January of 1985. When I found the property it was very inexpensive, Los Cabos in general was inexpensive, no one was interested in this area, and about a year or so after I bought the property Cabo just boomed. When I purchased the property, there was only one house on the property, and the original porch is still here. I slept on that porch many nights with a kerosene lamp, staking out my property.

MM : ...something that Rancho Leonero visitors really like is the rustic look of the buildings... JI : Yes, the rock comes from the mountain behind the ranch. You see this rock all over Cabo, it all comes from that mesa. We have a quarry on the property and we quarried all the rock. It used to be by necessity because it was the cheapest way to build, and so were the palapa roofs, which now are very expensive. Now every cargo has to be federally permitted, and they only cut the palms five days before the full moon and 5 days after, that's the time of harvest because they think the bugs will eat it, did you know that? MM : Do you remember the moment when you decided that Baja had to be a part of your life forever? JI : It was when I first snorkeled the reef in front of the hotel. When I first came to see the property it was a beautiful and perfect day, I had my mask and fins with me. I went out there and schools of jacks, among many other fish, were surrounding me. It was pristine. I came out of the water and I said - this place is magic. The property is like a park, I couldn't believe it was for sale, there must be a catch.

MM : How would you describe your relationship with fishing? Do you enjoy the thrill and game side of it? Or is it more about being out on the relaxing water? JI : Fishing is like life in many ways. When it rains it pours, it comes in bunches. You never know for sure what you're gonna get. I like the unpredictability of it. I also like to drive the boat and figure out where we're going. Rancho Leonero actually started as a diving resort, and then I figured out everyone else around was fishing. Divers are transients, they don't come back, next time they go dive a new site, so that's why we transitioned into a fishing resort. MM : How would you describe the essence of Baja? What is Baja? JI : Baja is special. It's unique. It's so close and accessible to the USA, yet it feels so far away and remote. I think that's the attraction, and also the ideal weather we have. And of course the people. The locals are so nice, and such good hearted people. *

MM : What is your favorite or most memorable fishing adventure story? JI : We lost a big marlin once. Our manager back then had just bought all new equipment, it was his second or third time fishing. He'd been reading an article about tying all the rods together when you get a big fish. We put it out right in front of the ranch and hooked into a huge marlin, probably over 1,000 lbs. The biggest I've ever seen. We got it onto the swim step, and I saw that she had no bill. I was in a little 20 ft boat and I couldn't get the deckhand to put the gaff in because he was afraid it would sink the boat. Finally, it rolled off of the swim step and went straight down, and took all the poles that Gary had tied together with her. That is my most memorable story, the one that got away.

Amongst the poorly-paved streets of San José Del Cabo lies culinary vision that is unparalleled throughout the rest of the Baja. Indian food, steakhouses, brewing companies, vegan spots and coffee shops line every single-lane road as the town comes alive for evening events. We recently visited Casa San José 23400 during our latest trip to the east side of Cabo’s playground to enjoy the mixology and creative mind of executive chef Ulises González. Open every day of the week from 2-11 pm; nothing but ambiance fills the courtyard area of a rustic old house that has been transformed into a modernly decorated dining facility. Wall-sized windows line the kitchen for viewing as Sr. González and his team form dishes like wood fire prawns and apple & salmon ceviche on a nightly basis for your viewing pleasure. An entire section of the restaurant is dedicated to the cocktail bar; from hand- crafted drinks that include cucumber and mezcal, to tequila infused watermelon liquor, there are options for everyone as the two bartenders rotate schedules weekly. Gonzalo (not to be confused with the head chef) is a young, aspiring sommelier who knows how to make a mixed drink sing. Our party of four was greeted upon arrival with open menus and smiles from all staff. As we were not attending during a Thursday night art walk, there was no struggle to get a table, unannounced, on a Tuesday evening. Drinks hit the table before the menus were fully analyzed. In traditional family style dining, we ordered appetizers for the table. Avocado tartar with tuna ceviche was a no-brainer as the waiter poured the garlic coriander dressing atop the fresh blend of seafood. Tostadas for the fish added a crunch as we awaited the evening special. Lightly breaded fish medallions with chipotle aioli. Needless to say these were remarkable and will surely be inquired about during the next visit. For entrees, the most notable were surely the local catch of the day (sea bass) in a lemon-olive crust, the fall-off-the-bone pork shank and the charbroiled octopus. All served with freshly picked vegetables, the octopus was seared to perfection among the grill, then served in a glass dome to encapsulate the essence of smoke that was transfused into the dish. With the perfect portioning taken into consideration, to-go boxes are frowned upon when the food is this good. The worst part about the entire experience was that we forgot to save room for dessert. A solid atmosphere, friendly staff, fresh ingredients and an innovative mind from the menu creator left a dining experience that we cannot wait to repeat. elcome to Los Cabos, you are in for a seafood feast! Cabo is the perfect place to eat seafood, so let me tell you a little bit about some of my favorite sea food dishes that you can find here. Ceviche - Ceviche is considered a National heritage food in Perú and has its roots from Polynesia, and the southern Pacific coast of America. Ceviche can be made many different ways, but it is usually made from marinated fish and vegetables, but sometimes it can be made from shrimp or octopus, and even have mango in it. The fish is always marinated in lime to cook and can be diced in medium or small squares or sometimes ground. It is usually made with white fish, and one of the very special ceviches is made from Sierra (mackerel). The marinated fish is mixed with vegetables and spices like cilantro, parsley, red or white onion, tomatoes and cucumber, and it is served with corn tostadas or salted crackers. This is a very refreshing and revitalizing dish for a hot day. It is served chilled. Fish burritos - Here in Baja and in northern Mexico we have what are said to be the best flour tortillas, so I highly recommend you trying some smoked marlin burritos. They are usually made with onion, tomato and bell peppers. These are a great option for any outing as they keep well and are easy to pack and carry. You can find burritos in many stands and little convenience stores all over Cabo. Sashimi - Cabo is renowned for its amazing sushi restaurants. You will find the freshest options of sashimi which is raw fish served in thin slices or diced cubes accompanied by wasabi and soy sauce. Here, you will for sure find the very popular Hamachi (Yellowtail) and of course tuna and many other fish for sashimi. In Mexico there are a lot of sushi fusion dishes, so you will also encounter these great choices to choose from. Some have jalapeño peppers or other chiles and taste really good. Fish and Shrimp Tacos - These are the all-time traditional food in Cabo. You can find them everywhere and in many different presentations. Some are on the grill, breaded or battered in special recipes and in flour or corn tortillas. Then you can add an almost limitless amount of salsas and veggies like tomatoes, grilled onions, avocado

or guacamole, cabbage, etc. Always available at a good price and for sure a must this vacation. Aguachile - This is a traditional dish of northern pacific Mexico, and is made from thinly sliced cooked or raw shrimp, marinated in lime juice and covered with hot chili peppers, sliced onions, cucumbers and salt. Aguachile is very popular with the locals of Los Cabos. It can be eaten with tostadas or crackers. It is served chilled. Pescado Empapelado - This is one of my favorite dishes. A fish fillet or full headless fish is placed on top of aluminum paper and topped with onions, carrots, squash, epazote (wormseed), olive oil or butter, salt and pepper and queso asadero (ranch string cheese), and then sealed and cooked on a grill. This a super juicy way to cook a fish. I like to add lime when ready to eat, and then make some tacos with it. Pescado Zarandeado - The fish typically is split in half from head to tail, leaving in the bones and skin. It is superficially cut a few times in diamond shapes on the meat side and marinated in a special sauce like BBQ sauce with salt, pepper and garlic. It is then grilled to a perfect outer crisp and usually served with a side of rice and vegetables. You will find this delicious and abundant dish on most seafood restaurant menus. The other top fish dishes you will find on such menus are Pescado a la Diabla, Pescado al Mojo de Ajo, and Pescado Empanizado, which are fish bathed in red chili sauce, fish fried with garlic, and breaded fish fillet. Caldo de Camarón - This is a very traditional dish especially during Christmas season. It is spicy shrimp soup that is made with spicy shrimp broth filled with either cooked and peeled shrimp or dried shrimp. It is always served very hot (temperature wise) and completely filled with shrimp. Some people like me like to add a lot of lime juice before eating. Coctel de Mariscos - Very similar to Ceviche is the very popular Coctel de Mariscos (seafood cocktail). It is made with a lot of seafood like diced fish, shrimp, octopus, clams, scallops,diced onion, cucumber, and placed in a tall thick glass with lime, clam and tomato juices and salt. People here love these on Sundays after partying a lot because they revive you. They are also usually served with tostadas and crackers. It is served chilled. Filete de Pescado con Pure de Papa - Usually a plate served at fine dining restaurants. This dish is a must try if on the menu because we have some amazing tasting fish here in Baja that are perfect for this dish like Pez Gallo (Rooster Fish), Pargo (Snapper), Tuna, Cabrilla (Sea Bass), Dorado (Mahi Mahi), Pez Fuerte (Strong Fish), Botete (Puffer Fish), Huachinango (Red Snapper), Perico (Parrot Fish), Jurel (Yellowtail), Pez Espada (Sword Fish), etc. This dish is served with a side of smashed potatoes and veggies like carrots, broccoli and asparagus. Camarones al Coco - Another fine dining experience, these are deep fried shrimp battered or breaded in coconut and accompanied by a spicy mango sauce to dip in. It was one of the dishes that made me fall in love with Cabo a long time ago. And finally, and not to forget, and one of my favorite things about Los Cabos is eating fresh clams and oysters straight from the shell. Of course you can find these at most restaurants, but my favorite spot to get them are at the little stands under highway bridges or on the side of the road all over Cabo. I like Almejas (clams) and Ostiones (oysters) the most natural way by just adding lime and sea salt. I hope you enjoy your vacation very much and I am sure you will have some great meals while you are here. 7th Cheese & Wine Festival – The 7th Cheese and Wine Festival was held on Saturday March 16 at the Sheraton Grand Los Cabos Hacienda Del Mar. The event is always a favorite among Cabo locals, and this year did not disappoint! For only $999 pesos (about $55 USD) guests enjoyed generously poured wine, cheese, cured meats, pizza, breads, passed desserts, ice cream and more with live music and dancing. The ballroom was set up with food and drink stations throughout the room, including vintage cars that functioned as both décor and serving tables, allowing guests to wander about and mingle with friends and the wine and cheese experts. A few new options were added this year including a special room rate of only $1,200 pesos plus taxes for Baja California Sur residents who wanted to stay the night, and a Sunday day pass option to enjoy the day after the event at Sheraton Grand Los Cabos! Gala de Danza – On Saturday April 6th, Destino attended Gala de Danza, a

captivating and magical evening of professional dancers and entertainers at Viceroy Los Cabos. Their website explains, “Since the summer of 2013, Gala de Danza has brought together artists from around the world to help enrich the lives of young dancers and the community. Dancers, choreographers and musicians from 20 different countries, have shared their talents in Los Cabos.” Seven years ago, Director and Founder Christina Lyon’s brought her vision of the best global dance gala to life, and it has continued to grow and thrive. GDD also collaborates with Danza Téllez and Danza que da Esperanza (Dance that Gives Hope) in San José del Cabo. The program provides scholarships for dance instruction, academic counseling, and meals for talented children and young adults in vulnerable conditions who don’t have the economic resources to attend classes. Lovers of Reggae, Surf and Tech music will enjoy Panda Beach Fest on Saturday, May 4 at 6pm on Cerritos Beach in Pescadero.
