or many people, the holidays mean time with family and friends, often gathered around a homemade meal. We look forward to holiday traditions, including foods such as pecan pie, sweet potato casserole and of course, a turkey. But for people with busy schedules, trying to eat healthy during the holidays, or accommodating family members with food allergies can be a struggle. Three local West Michigan entrepreneurs have built their businesses to address the needs of those looking for healthy ingredients or dealing with allergies and food sensitivities. Each also offers multiple options to keep your holidays stress-free and healthy.

Allergy-Conscious Goodness Cooking for friends with food allergies can seem daunting, especially if you’re trying to keep your favorite holiday foods on the menu. Angela Specter, owner of Silverberry, understands the struggles of creating or offering food to friends and family with food allergies. When her young son was diagnosed with celiac disease and other food allergies, Specter began cooking meals for her family that were gluten- and dairy-free. Now she shares her knowledge at Silverberry, a European-style cafe that serves gluten-free breakfast and lunch options. Specter’s sensitivity to the individual needs of her customers shows in her willingness to adjust her menu for even the rarest food concerns. One customer, for example, is allergic to cinnamon, which was originally in the crépe recipe. After learning of her allergy, Spector decided to change the recipe. “It was specifically for her that we took cinnamon out of the crépe batter,” says Specter. “How much effort does it take to just add cinnamon to another person’s crépe?” And when it comes to holiday meal prep, if you need to cook for someone with a food allergy, don't be afraid to ask them about it, suggests Specter. “It’s important for the person with the allergy to communicate with you.” Also, a bit of research online can help with selecting recipes to accommodate their specific sensitivity. Simple adjustments to your current recipes can accommodate family members while keeping your familiar holiday traditions on the table. For example, Specter suggests that if green bean

casserole is a favorite, change the recipe a little to remove the fried onions, and instead sauté green beans in olive oil with onions, garlic, and rosemary for a healthy alternative. Another idea is to stuff your turkey with oranges and apples instead of stuffing. A major concern while cooking for a family member can also be cross-contamination, or using the same bowls and spoons to cook gluten-free items that were used to prepare other foods. Specter prepares every glutenfree item in a separate area of her kitchen, ensuring that items used to prepare the ingredients are never used for non-gluten-

free foods. For those at home who can’t do this, she suggests simply buying disposable containers and utensils to use in preparing food for the person with allergies. Menu options at Silverberry include crépes, deli sandwiches, pastries and bakery items, and customers can place special orders for dairy- or nut-free desserts. During the holidays, they also plan to offer holiday pies and tortes—and by calling ahead you can also order items to accommodate your specific food allergy. “We try to make people with allergies feel special, and not like a burden,” says Specter. silverberrykitchen.com

Making Thyme Homemade Convenience

The holidays can be full of parties and friends and family to cook for, which makes finding time to prepare your own meals challenging. To help solve this problem, Karen and Ken Bryan, a husband and wife team, have created a company to provide fresh, homemade meals when your schedule gets hectic. After leaving careers in graphic design and sales and marketing, the couple decided to start their own business. “We were looking for something to do together,” says Karen. “We decided that what people really needed was quality food that was convenient.” They began Making Thyme 10 years ago and continue to provide quality entrées and side dishes made from local produce. Karen and Ken create the homemade, fresh meals you want to provide for your family, but don’t always have time to prepare.

Customers can stop by their shop at the Downtown Market to pick up items for dinner, or place orders for multiple entrées and freeze the foods for up to a month. Many customers will come looking for something to feed a family member with a specific food concern, and the Bryans are happy to

adjust. “A lot of our foods are gluten-free because they’re all made with whole foods,” says Karen. In addition to convenient meals, the couple will offer desserts during the holiday season, including carrot cakes, pumpkin pie and traditional cookies such as molasses spice and sugar cookies. Whether you want to bring a homemade dish to pass at the next family dinner or need a night off from cooking, Making Thyme provides convenient and healthy options.

Their philosophy is simple: you don’t have to do everything—find someone who will cook the way you want. “We’re between a personal chef and you doing it yourself,” explains Karen. The couple uses local meat and dairy, and they purchase Michigan produce daily, keeping their meals as fresh as possible. They use many organic ingredients, but place priority on supporting local farmers. Since they source so many items locally, the menu changes monthly. Holiday options include salmon with mascarpone cheese topped with sundried tomatoes, pork tenderloin stuffed

Organic Options, Delivered Maintaining a clean diet or purchasing local produce through the holidays can be difficult, but Doorganics, a home delivery company, provides weekly deliveries of organic fruits and vegetables.

As a young professional, Mike Hughes’ busy schedule rarely allowed him time to go to the grocery store, let alone purchase local foods at the farmer’s market. “I wanted it to be easier to buy local and organic foods.” So he started Doorganics in 2011, and the company has grown from delivering produce from a few farmers to offering organic produce from all over Michigan. His delivery options also include meat and dairy products, which can be added to your weekly bin, but not ordered without a delivery membership. “All our meat is from small, Michigan farmers that are pasture-raising their

items delivered in the winter are certified organic items from around the country. Each week, a customer’s bin includes one featured item and also a recipe on how to prepare it. Customers are sent the list of items in their bin the week before delivery, and they can edit their order to include more or less of particular items. “I think what we bring to the table is selection and convenience,” says Hughes. “We really know our farmers.”

Fall VegetaBOWL Salads don't often sound great this time of year, which is why we make vegetaBOWLS: a bowl of cooked, roasted, and raw vegetables, drizzled with an amazing dressing that will make your tummy growl and your taste buds sing. Eating a combination of cooked and raw veggies, with healthy fats enables your body get the nutrients it needs. Fats are vital for your body to absorb the nutrients from the veggies. Cooking some of the veggies makes the nutrients more accessible, and leaving some raw gives your body a boost of enzymes to help with digestion. It's a winning combination in terms of taste and nutrition. And adding roasted potatoes is essentially like topping your salad with french fries - obviously a good idea!

1 Preheat oven to 375. Wash and chop, potatoes, (keep skins on if organic) and squash. Place on a baking sheet and toss with olive oil, sea salt, and black pepper. Roast in oven for 20 - 30 minutes, until tender.

2 Meanwhile, rinse lentils, and place in a pot with 2 c. water. Bring to a boil, reduce to a simmer and cover for 20 minutes.
