What is the role of African art in a global context? African art engages with history as well as global issues, which makes it very relevant. We’re seeing women artists talking about the transparency of the female in society. Sometimes in an aggressive way, other times it’s more symbolic. But it always aims to unify. How do you see Zeitz MOCAA fitting into this? It is going to have a huge effect. It is creating an institute that will allow Africa to define itself. How are local artists addressing Africa? Take Zanele Muholi’s ‘Faces and Phases’, a series that shows lesbian women who have survived hate crimes. She is portraying them as proud, fierce and vulnerable. Most importantly, they are being seen.

‘Developing a style requires planning. Think about tones and colours – and the bigger picture.’ ON TELLING A STORY

‘I’ve always told stories through social media. I don’t see them as individual images but as part of a larger whole.’

Through your writing, theatre work and KaMatla, your communityupliftment NPO, how are you helping the next generation to find their voice? I am striving to create a new narrative for the next generation by being insistent on living and sharing my art honestly. Being a storyteller is one of the most important aspects of who I am. I find it cathartic as well as necessary. What has the journey been like since publishing your debut work, The Girl Without A Sound? The book is available to download for free in four languages, though my hope is that people will order a hard copy, which allows us to get another hard copy to a girl in need. What’s next for you? At this year’s KKNK Arts Festival I debuted my one-woman show entitled The Swan Song. It wrestles with the metaphors of death and love and, as the protagonist slips between English and my native Setswana, language becomes another tool to bring to life the constant tension that exists in the worlds we know and come from. I intend on touring it next year as well as refocusing my attention on film.

Where did the idea behind creating fashion dolls with shades of brown skin come from? As a doll collector I noticed that beautiful black dolls were missing from the market. With black women embracing their natural curls, and teaching their daughters to do the same, I felt the time was right. Where do you ďŹ nd inspiration? When I worked as a model it allowed me to travel the world. That really helped me create the characters and stories for my dolls.

seeing this rise of the female comedian? It’s exciting to see more women directors, writers and producers taking charge of the television world, especially in comedy. I think we’re seeing a lot more interesting roles being written by women, for women, which is very important. That being said, in South Africa there is still a lack of these roles and that is one of the biggest challenges. What’s the next big thing? I think Ilana Glazer and Abbi Jacobson from Broad City and Issa Rae from Insecure are ones to watch. Their comedy is diverse, brave and completely weird. What’s really inspiring, for me especially, is that their work started on YouTube. That’s an exciting space to be in.

What was the ‘aha’ moment when it came to creating the character of Tali? I’ve had Tali in my back pocket for a while but it was about realising the direction I wanted to take her. It was only when I was planning my own wedding that I saw how much comedic scope there was in that. How do you think the character will fare in comparison to the cult following that SuzelleDIY has gained? ‘Use a plain or striped outdoor linen or canvas in a neutral colour for the main cushions and introduce vibrant colour and patterning through the scatter cushions,’ advises Yvonne O’Brien of The Private House Company. She recommends opting for either bright shades or bold patterning. ‘An outside area needs to blend in with nature.’

Instead of austere pruning, allow your plants to grow into shady ‘jungalows’ that offer dappled shade and an abundance of greenery. The look is especially suited to a wilder garden and speaks to a hotter tropical or subtropical environment. ‘Pergolas create pockets of intimacy and shady zones. Drape them in hardy climbers that will thrive despite sun and wind exposure. ‘I like authenticity in people and things,’ says Michelle Asbury. After years of running her own recruitment company, she is a good judge of the former. It’s only more recently, however, that she found expression for her love of the other with aThought, a range of beautifully handcrafted kitchenware. ‘I wanted to tap into something creative,’ she says of the transition to design. ‘To make original products that will last.’ This ethos is reected in her Hyde Park home, which serves as backdrop for her collection of art and furniture. Some pieces are inherited, others collected,

but all showcase Michelle’s eye for craftsmanship. The synergy of modern and classic is also present in the kitchen, Michelle’s favourite room in the house. Designed by friend and architect Minky Lidchi, it overlooks the rose garden with informal dining and seating areas for easy family living. The clean lines of the space echoes aThought’s aesthetic. A mix of inherited china and modern ceramics are displayed on the open shelves and the two freestanding cupboards. ‘I see no point in storing one’s beautiful things away,’ she says. ith their heavily scented, sumptuous blooms, roses exude an old-fashioned charm that appeals to almost everyone and make the most romantic arrangements, whether displayed singly, clustered in posies, or thrown together with other summer owers in a looser composition. For Rachel Siegfried, who grows cut owers on her farm in Oxfordshire, England, roses are an essential in the cutting patch. ‘Roses are probably my favourite of all owers,’ she says. ‘I grow repeat-owering, scented roses. Scent is so important because that is what is missing when you buy roses in the

In most circumstances, however, plants would last at least 10 years. Once the plants are established, they need to be pruned in late winter (although not just before or during a very cold snap). ‘We prune very hard – literally to about

October rose to-do list Water deeply to sustain new growth. Mulch with a thick layer of coarse pine bark, peanut shells or peach pips. Fertilise existing roses and plant new ones with Vigorosa. Pick blooms for the vase and deadhead to encourage new owering stems — be sure to leave enough photosynthesising leaves by not cutting too many long stems. Pinch red sappy basal shoots at knee height to promote long, pickable stems in the future.

30 to 40cm off the ground, leaving perhaps four main stems,’ says Rachel. A ‘ ll the normal pruning rules apply: cut out all dead wood and crossing branches, and cut the branches just above a main bud at an angle, so that the water can run off.’ Cutting the roses back brutally means that the regrowth produces long, straight picking stems, and it also takes out any potentially diseased material to rejuvenate the plant. After pruning, Rachel mulches

the roses with compost or manure and then waits for them to break bud. Once this happens, the feeding regime can begin. ‘If you want your roses to repeat ower throughout the season, you have to feed each week,’ advises Rachel, who uses a foliar feed high in potassium phosphate to make the plants more resistant to black spot and other diseases. ‘As the season progresses and the plant forms buds, you start giving them a high potash feed, like comfrey tea, which will keep the roses healthy and owering in ushes through the season.’ October is prime rose month, with blooms coming thick and fast. At this stage, you just have to keep picking, and deadhead like mad every week to encourage more owers. ‘You can pick roses when they’re quite tight in bud,’ says Rachel. ‘As long as the sepals are reexed back, they will open. I like to pick owers in different stages of growth for a single arrangement – some quite blown, and some in bud. I’m never governed by vase life – I’m trying to make a painterly composition and that’s why I like them in different stages. The arrangement will then look as if it was transferred straight from the garden into the vase.’ The roses produce a second ush of blooms in late summer. After this, they are lightly pruned again, with a third of the growth lopped off to prevent windrock damage through the winter. At this point the feeding ceases. ‘Roses are a huge amount of work,’ admits Rachel. ‘But most people will need to have only two or three plants to cut from and they are so worth it. I cannot imagine my life without them.’ Q

shops. They’ve had the scent bred out of them so that they can be transported from the main rose-growing countries – Kenya, Ecuador and Colombia. Scent shortens vase life, so that’s why it has been bred out.’ Rachel grows a mixture of hybrid teas, oribunda and shrub roses, choosing those that perform best over a long season. Because she is picking so intensively from her plants, they will eventually become unproductive,

THE CULTIVATED WILD Raymond Jungles (Monacelli Press, 2015)

In Bawa, you’ll ďŹ nd a visual feast of the two Sri Lankan gardens cultivated by Geoffrey and Bevis Bawa. Bevis created his garden on a rubber plantation called Brief Estate and it became one of the most inuential small gardens in Asia. At his own estate, Lunuganga, Geoffrey became so fascinated with architecture that he retrained and became one of the most well-known Asian architects of his day. The gardens both survive and are open to the public.

One of the characters of the garden design world, Raymond Jungles’s work in his hometown of Miami and elsewhere is about vigorous design and virtuoso plants, using a mostly subtropical palette. The effect is lush, vivid and unafraid — exciting and stimulating to behold. I particularly enjoyed the conceptual sketches, which depict the ideas behind and development of the gardens.

ucked into a leafy, urban cul-de-sac, plantsman and landscape architect Hank Lith has created an emerald oasis in the heart of Newlands Village. Spanning three strips of block paving, which wrap the sides and rear of Hank’s gracious Georgian home, the largely potted garden has evolved over time.

‘The formality of the architecture called for a complementary garden linked to the interior of the house,’ says Hank. French doors and sash windows opened up opportunities for vista lines and focal points into the garden. By using high steel trellises to define areas, and Regency-style, metal garden furniture designed by Hank, just the right structural bones were laid. ‘The focus was on creating a garden

with several rooms – all with a specific function and giving the illusion of space,’ says Hank. When it came to planting, the directive was for a cool, calm mood and evergreen background that held its own throughout the year. Dicksonias, many other ferns, aspidistras and clivias were chosen for their architectural quality. For colour, camellias, azaleas, brunfelsias, wisterias and rhaphiolepis were

Pots allow for special plants and bulbs that wouldn’t normally grow in a bed with root competition. Plants with different water and nutrient requirements can be accommodated in one small area — thirsty hydrangeas, low-water ferns and acidity loving camellias could only live side by side in containers. Pots give you freedom to combine and curate a very specific look within a small area. They can be mounted on plinths to accommodate various heights and site levels. When not in flower, a potted plant can be put away to protect rare bulbs from pests.

The courtyard garden is low on maintenance and the plants require repotting only every few years. Being a shady garden, it doesn’t require much water, and the potted specimens allow for selective hand watering: clivias, begonias and ferns require little, hydrangeas more, but water does not get lost in a bed. ‘I find hand watering very relaxing and it gives me the time to examine the plants and pests, health and feeding needs,’ says Hank. A

sense of warmth and a unique personality should certainly be present in any living space, but these factors were of particular importance in architect and interior designer Dominic Touwen’s project of transforming a traditional Franschhoek property into a modern home, while still retaining a sense of heritage. As he began work on La Cotte, an important objective was the creation of a sense of homecoming for any traveller who stepped through its doors. Who better to instil the feeling of finding your way to the place you’ve been looking for than Dominic, who was in part

responsible for finding and acquiring the property before giving it its new look. Having put the word out in the small Winelands town that clients of his were looking for a property ready for rejuvenation, Dominic’s team knew immediately when they’d found what they’d been looking for. ‘It really was a once in a lifetime opportunity,’ he says, one that they jumped at, getting to work right away. ‘While we were obtaining planning approval for the restoration of the old homestead on the farm, we were able to renovate and refurbish La Cotte House, which is a more contemporary villa positioned on the upper slopes of the farm. Taking a rather frumpy, charmless house and transforming it

‘WE BELIEVE THAT VIEWS ARE ENHANCED BY GOOD FRAMING’ Dominic Touwen into a comfortable, charming home was a challenge but also a privilege,’ says Dominic of his work on La Cotte House. ‘I love an ugly duckling story.’ Today this notion seems laughable. Take one look at the property and it goes without 72

saying that the stately swan of a home that peacefully rests beside the water in the Franschhoek valley is difficult to identify with his description of its earlier attributes. What’s less obvious is how the effect of lived-in, easy-to-love languor was achieved.

It started with bringing the outdoors in. To create an airier, more spacious atmosphere, many of the doors and windows were replaced with larger sliding sashes, french doors and sliding doors that, when the weather is good, can be completely opened up. ‘We believe that views are enhanced by good framing,’ says Dominic. With vineyards in the foreground and a lake with a dramatic backdrop of mountains, the views hardly needed help, but are well worth highlighting.

The next step was an understanding of the space: that this is a large home with a look that works together cohesively, but that also has individual areas of interest, each with their own personality. In decorating La Cotte House, Dominic considered the Cape’s quality of light and climate, both of which are highly variable. His aim was to maximise large, open spaces and create cosiness in smaller corners. Colour had a key part to play: blue and white are a favourite combination, and

He used it to bring youthful vigour to the rooms, adding accents of burnt red, saffron and green. To add rich colour, atmosphere and textural layering to the spaces, Dominic turned to an array of textiles from traditional prints to fresh, bold orals. It’s the smaller items around the home that add personality and detail, yet allows it to escape an artiďŹ cial, self-consciously decorated feeling. Dominic’s passion for collecting pieces from auction houses, antiques stores and junk shops came in handy here. ‘I stockpile these and then use them when I see the perfect spot,’ he says. ‘I love ďŹ nding just the right place for some object or piece of art that might be completely unloved or thrown out but that looks amazing in a new home. For a house to have soul it must have authentic pieces that have been collected over time.’ Completing that task successfully means that this is just the beginning: with a welcoming space created, the scene is set for ensuring that the personality grows with each new set of guests passing through. O

n nights when sleep evades him, Matthew Dillon will while away the hours till dawn watching the skies, challenging himself to single out stars and constellations, such as Alpha Centauri and the Southern Cross. Thanks to the skylight that stretches across the entire length of his Wentworth Falls, Australia, home, he can do it from the comfort of his bed. It is also for this reason that he decided to name the estate Pirramimma, which roughly translates to ‘under the moon and stars’ in the Aboriginal language of the tribesmen who used to live at the foothills of the Blue Mountains, where the house stands today. ‘This house is like a huge sundial. Once you get to know the architecture you can read the time based on the way that shadows are being thrown,’ says John Dillon, Matthew’s brother, who acted as project manager on this from-the-ground-up build. ‘Matthew has the vision – and the money – and I have the sense of detail and the know-how to implement the ideas,’ he continues, explaining how the brothers approached what would be a seven-year project. It was ambitious, but with two-anda-half hectares of picturesque land as a backdrop, it had to be. For Matthew, the mandate was clear. After a career in finance that took him from Tokyo to Singapore and, finally, Geneva, he needed his last home to be a retreat from big city life. ‘On the one hand I wanted to get away from it all but on the other it needed to be a place where the whole family could meet.’ As a nine-sibling strong family, there needed to be room to move. From the previous owner of the land, Matthew had inherited something of a show garden. Cultivated on the banks of a lake, he’d planted an exotic array of rhododendrons and azaleas alongside mammoth trees, such as Monterey pines and Himalayan cedars. ‘We actually

built the house just so that we’d be able to enjoy the garden,’ jests John, who lived on the property along with his wife and three children during the project. In fact, the rehabilitation of the forlorn garden (it had been left neglected for quite some time) was John’s first priority. After a large-scale weeding of the grounds, he worked closely with landscape planner Craig Burton to not only restore the garden but also enlarge the lake and add new elements, such as an orchard and a Japanese teahouse. In keeping with Matthew and John’s detailed brief, architect Peter Stutchbury has executed a building that, despite its distinctively steep pediment, is both elegant in its design and sensitive to its environment. With a basic structure of steel and concrete, this could very easily have been an aggressive, emotionless space but, through a clever use of salvaged eucalyptus, it becomes softened, its lines almost poetic. Finally, the roof was covered with zinc, the matte patina of the metal reflecting the Blue Mountains in the distance, while light floods the home through wide first-floor windows and the expansive skylight. The ground floor accommodates the public spaces of the home – open-plan living and dining area, kitchen, breakfast bar – as well as two guest suites. On the second level, however, Matthew opted to personalise his private portion of the home to suit his preferences. These include a spacious bedroom with

Furniture throughout subtly mixes mid-century Scandinavian sensibilities (but not effusively so; ‘Not too many iconic pieces, we didn’t want it to appear too arranged and artificial,’ says John) with contemporary design. ‘Matthew came back from a week in Bangkok, jumped in his car, and went on a mission to rattle every furniture dealer and auction house looking for the pieces he wanted,’ laughs John. Matthew’s extensive – and eclectic – collection of artworks should come as little surprise as, along with his degree in finance, he also studied fine art and today his home is filled with it, from sculptures by Catalan artist Marta Moreu to contemporary Chinese pieces. Since its completion, Matthew has been dividing his year equally between Pirramimma and his other homes abroad – but not for long. Soon his retreat, which is a quick hundred kilometres outside of Sydney, will be his permanent address. But that doesn’t mean that he’s done working on the property. ‘I’ve thought of setting up another house for guests or perhaps even creating a studio for an artist in residence,’ he says. For John, the land – and the house – has become so much more than something that two brothers built. ‘Matthew and I won’t be here in a hundred years,’ he says. ‘We wanted to create a sense of history that will endure, something that will be felt by the generations that live here long after we’re gone.’ Q OCTOBER 2017 HOUSEANDGARDEN.CO.ZA

reating a succulent garden came about quite by accident really,’ says homeowner and passionate gardener Wendy Floquet of her 800 square metre succulent garden. One of the many rooms within her 2.4 hectare outdoor space in the Constantia winelands. On completion of building the family homestead in 2001, the Floquets discovered

a few rather tatty aloes along the eastern side of the property. Whilst Wendy began developing the garden around the house, the area to the east and the aloes lay largely dormant and unutilised. Years passed and it was only after a recent visit to the Huntington Gardens in Los Angeles, where Wendy was particularly struck by the cactus and aloe display, that she knew what she wanted to create. Initially the site was framed by trees, wild peaches and a variety of insignificant shrubs and fynbos. ‘It was the forgotten space,’ says Wendy. Most of the trees, some lawn and all plants were removed and the area

‘MY GARDEN IS MY HAPPY PLACE, SOMEWHERE TO DRAW BREATH’ Wendy Floquet transformed with the help of Green Cube Landscapes and Gardens. Mounds of earth introduced a gentle typography and the additional height worked to enhance the display of cactus and succulent specimens. To ensure good drainage, crucial for happy succulents, sand was added to the base layer of clay, mounds were layered with silica sand and the existing irrigation was removed. With natural air and a keen eye for combining plants, Wendy’s planting approach was to select larger aloe and cactus specimens to be framed by smaller varieties. The garden now abounds with rich combinations of ďŹ ery colour and texture from a myriad of euphorbias, sedums, vygies, agaves and cacti. Creeping ground covers and tiny crassulas are planted between the paving stones. ‘Succulents and

cacti have such variety of colour, texture and shape I was able to obtain a wonderful synergy in the plant palette. It was one of the most exciting gardens for me to create.’ The original aloes have been incorporated into the new scheme and the garden coined the ‘hot garden’, for the intense glow of brilliant reds, oranges and yellows when the aloes are in full bloom in July. Despite bold plant forms and a racy colour scheme, the garden is living testimony to Wendy’s philosophy that her garden should be, ďŹ rst and foremost, a place of calm and tranquillity – ‘a place to escape the hurly-burly of the outside world of today,’ she says. ‘My garden is my happy place, somewhere to draw breath‌ very slowly. ou can’t go far wrong when, as an interior designer, you reference Tom Ford and Milan’s hip rooftop hangout, Ceresio 7, as your influences. Inspired by a strong, sexy aesthetic with more than a little retro thrown in, the finished look of this Johannesburg home is youthful, sophisticated and unapologetically styled. ‘Every corner has been thought out, every room carefully put together and each piece thoroughly considered,’ says designer Dean van Aswegen of the fourbedroom Hyde Park property.

If Ceresio 7 (which, incidentally, is owned by design duo Dsquared2) is the home of Italy’s beau monde, then this house is one of Jo’burg’s. Owned by young financier couple – Doug and Marc – the pair initially called on Dean to give the home a minor upgrade, but were soon convinced by the merits of a huge design overhaul. ‘They were dream clients,’ he says. ‘They travel a lot, so were looking for that European hotel look and gave me carte blanche to deliver it. We were excited to go on the journey together that essentially meant starting again.’ When they are not abroad, the owners regularly entertain so one of the main stipulations was a party-friendly space

with seamless indoor-outdoor flow. It had to be flexible, too, in order to facilitate everything from laid-back pool parties to intimate dinners and after-dark drinks. Fortunately, the open-plan ground floor – painted entirely in unifying white – lends itself to hosting. The heart of the house opens up to guests as soon as they step across the threshold and into the double-height entrance hall. Flanked by a staircase on the left, a sunken lounge presents itself to the right which, in turn, opens up via glass walls to the outside. Accessed down two steps, Dean has used a U-shaped seating configuration to create a designated indoor living room. This space is grounded by two points:

a curved custom velvet indigo sofa and a black oak-clad wall that houses the TV and ďŹ replace. They are two bold full stops in a purposefully free-owing space that otherwise leads visitors straight outside. Mirroring its internal counterpart, the other side of this feature wall has also been clad in black (this time in tile) and anchors the outdoor living area. Here, Dean’s decision to approach the outside in the same way as he would the interior is the secret to its success. ‘All the furniture was deliberately designed to look like indoor furniture,’ he explains. ‘I wanted the outdoor living room to feel just as sophisticated as its indoor counterpart.’ As a result, cream club chairs from Tonic Design and a custom low-slung sofa and bench have been carefully chosen

alongside a sink-in grey rug from Papilio. The cluster of coffee tables add interest to the deďŹ nition-defying space. Classic Tom Ford references abound throughout, with a notable lack of clutter that makes the scheme feel serene. Think smooth planes of deliciously dark oak interrupted only by brass punctuation points or velvet tailoring and cream-andgrey linen offset by a smattering of bold statement art. With such a lack of distraction in the form of ornament or clashing pattern, the devil is most deďŹ nitely in the detail; be it the brass feet of a table, the yellow pop of silk backing on a cushion or glossy marble tabletop. Most of the furniture has been designed by Dean, with every element there only because it ďŹ nishes the look.

The master bedroom is the perfect example: the four-poster bed’s base deftly slotting into the bedside tables. One of Dean’s favourite parts, however, is the dining nook. Here the eye can’t help but dart from the turned legs of a Gregor Jenkin dining table, over the clean lines of a Tonic Design mustard dining chair to the black and white fabrics of the breakfast bench. On the ‘Zig Zag’ bookcase – designed by Dean in black powder-coated steel, brass and oak – every piece has been picked for its shape or texture. ‘Every element needs to be considered for the ďŹ nished look to work,’ he says, readily admitting that he still returns once a week to style the coffee tables. ‘It needs to be perfect,’ he says. W

hen she was a child, Sarah Vanrenen told her mother, ‘I’m never going to be an interior designer.’ But this charming house in a south London terrace, its interior newly decorated by Sarah, is proof that we do not always know our own minds when we are 10 years old. Sarah’s mother, the interior-design doyenne Penny Morrison, simply led by example, designing beautiful and constantly changing houses for the family. She now has a thriving interior-design business of her own, which she started 12 years ago, though at first she resisted her fate with jobs at Christie’s. ‘I’ve grown up with decorating; you just imbibe it,’ Sarah says. ‘It took a while, but now I’m really passionate about it.’ The owner had already lived in his house for 10 bachelor years before he called in Sarah. ‘The house was looking tired and grungy,’ 96

he says. ‘It was all red chenille, dark furniture and kilims.’ He now lives mainly in Australia, returning to England occasionally. He wanted a fresh, lighter look for his London base, and was keen to incorporate the clean, modern lines and simplicity of Australian houses. ‘He is also very much an Englishman, and wanted a calm, comfortable house that felt English, too,’ says Sarah. When it came to the design, Sarah had two pieces of luck. First, the house is half a size wider than its terraced neighbours, which meant she was able to create two generous, well-proportioned rooms on the ground floor, by knocking down walls and taking over part of the garden with an extension at the back. The front door opens onto a narrow hall, but the house then seems to expand as you turn right into the spacious sitting room. Turn left out of this room and you arrive in a large, open-plan kitchen and dining room. In warm weather, when the doors along the back wall are completely folded back, the small garden becomes part of the room. Sarah’s second stroke of luck was a set of paintings by the client’s grandfather, Howard Dietz, a vice president at MGM Studios in

Hollywood in the thirties, who is credited with creating its roaring-lion logo. Sarah was able to design the rooms around his paintings – for example, echoing the shades of green in one above the sitting room chimneypiece in the ottoman that faces it. The walls, painted in Farrow & Ball’s ‘Skimming Stone’, and the neutral sofas and curtains were her response to the client’s request for calm, but then Sarah has brought in a bit of fun with clusters of bright cushions on the sofas, a geometric-patterned rug from Robert Stephenson and a black-and-white zigzag fabric on a pair of chunky stools. In the dining area, Sarah has mixed different eras: a sixties brass light fitting hangs above a modern wooden dining table, surrounded by bobble dining chairs, which, though new, hark back to styles of the late nineteenth century. An oversize mirror, a Provençal fruitwood cupboard and an ingenious wine rack, designed by Sarah and painted to match the walls, make up this ensemble. If a neutral backdrop with bright touches is the watchword downstairs, upstairs the theory is reversed: Sarah has chosen 98

a strong peacock blue for the main bedroom walls. ‘Bedlinen should be crisp and white,’ she says. She used Pret a Vivre’s ‘Bruges’ linen in Oyster for the headboard and bed valance, and the blue brings all this white into relief. She follows the same idea of contrast in the first-floor bathroom, where dark Grigio Carnico marble and strong green walls work well in a small space. By contrast, in the main bathroom, mirrored cupboards bounce the light around and give the illusion of a bigger space, while concealing extensive storage. ‘There are rows of highly polished shoes in there,’ says Sarah. The owner loves the look and comfort of Sarah’s design: ‘It was fantastic to specify exactly what we wanted for the sofas, for example, and get it.’ He is grateful, too, that she brought out his own taste instead of imposing her own. And now that he is having a house built in Australia, he realises to his cost quite how clever Sarah was at avoiding potential mistakes. ‘She spotted the glitches before they happened,’ he says ruefully. This seems to come easily to Sarah, who has come a long way since her initial reservations. Q

For the gravlax 750g salmon fillets, skin on 150g coarse sea salt 180g caster sugar 20g dill, finely chopped For the pickled cucumber 1 large cucumber 3T sweet white-wine vinegar 2T caster sugar

1T finely chopped dill 1T finely chopped herb fennel (optional) For the herbed cream cheese 140g cream cheese 1T finely chopped chives 1t lemon juice loaf of rye bread, sliced 3 hard-boiled eggs, peeled and finely chopped 1. Put the salmon skin-side down in a nonmetallic baking dish, deep tray or plastic container large enough to fit the fish with a little room around the sides. 2. Mix the

rest of the gravlax ingredients together and pour them over the salmon so it is submerged. Smooth the surface, cover with cling film and lay a flat object over the top, to act as a weight. Refrigerate for at least 24 hours, turning the fish once or twice during this time, making sure that it is always submerged. 3. Top and tail the cucumber, then remove strips of the skin with a peeler and discard it. Cut in half lengthways and use a teaspoon to scrape out the seeds. Lay the cut halves flat side down and slice into thin slivers, on an angle. 4. Mix the rest of the pickling ingredients and 1/2t salt together in a bowl to dissolve the sugar and salt, and add the sliced cucumber. Stir well and leave to sit for at least 15 minutes (or up to one day in advance). 5. Mix the cream cheese, chives and lemon juice together in a small bowl and season with salt and pepper (this can be done up to a day in advance). 6. Remove the salmon from the cure and discard the solution. Pat the salmon with kitchen roll to remove any excess salt and lay it skin-side down on a board. Cut the fillet width ways into slices that are about 1/2cm thick, stopping at the skin. Lay your knife flat against the skin and cut under the slices in a smooth movement to separate them from the skin. 7. Spread each piece of rye bread generously with the cream cheese and lay 3 or 4 slices of salmon over the top. Add a few slices of pickled cucumber and top with chopped boiled egg, and serve any remaining cucumber and egg in a dish on the side.

MENU 1 large red onion, roughly chopped 8T extra-virgin olive oil 250g white sourdough or ciabatta, torn into 6cm chunks 1.5kg large, very ripe tomatoes 1 glass of red wine 20g basil, chopped 25g Parmesan, grated To serve Green salad 1. Heat the oven to 200°C/fan

oven 180°C/mark 6. Put the garlic, onion, 6T olive oil and 1t salt into the bottom of an earthenware or heavy baking dish (large enough to fit the rest of the ingredients) and bake for 15 minutes. 2. While the onion is softening, put the torn bread onto a baking tray and place it on the lower shelf of the oven for 5 to 8 minutes to dry out slightly. 3. Cut the tomatoes into quarters, removing any tough white cores. Remove the onion dish from the oven and add the tomatoes, wine, bread and lots of black pepper, stirring everything together well. Bake for 45 minutes, stirring the mixture occasionally so the top doesn’t get too brown. 4. Remove from the oven, add the remaining 2T olive oil and the basil, and stir well. Turn up the oven to 250°C/fan oven 230°C/mark 10, sprinkle the grated Parmesan all over the top and bake for another 10 minutes, so the top becomes crisp. Serve in the dish, with a green salad – I like butterhead lettuce, dressed with a vinaigrette of chopped chives, rapeseed oil, Dijon mustard, white-wine vinegar and sugar.

For the roast chicken 1 large free-range, organic

chicken (about 2kg) 1 unwaxed lemon 20g tarragon 2T olive oil For the mayonnaise 2 free-range egg yolks 1t Dijon mustard 290ml light olive oil 1T lemon juice 3T chicken cooking juices zest of 1/4 lemon 2T chopped tarragon To serve Boiled Cornish early new potatoes with steamed carrots and fennel, or green salad

ROAST CHICKEN WITH LEMON AND TARRAGON MAYONNAISE

1. Heat the oven to 200°C/ fan oven 180°C/mark 6. Season the chicken inside and out and stuff the cavity with half the lemon and half the tarragon. Roughly chop the rest of the tarragon and push it under the skin of the breast. Cut the remaining half lemon into 6 slices. Lay 2 long strips of tin foil over the bottom of a roasting tray, with enough extra to cover the whole bird. Arrange the lemon slices in a layer on

the foil, then sit the chicken on top. Pour the olive oil all over the skin of the chicken and wrap the bird completely in the foil (you may need to use more to cover the top) so it is covered like a parcel. Roast for 11/2 to 2 hours, or until the legs feel wobbly in their sockets and the juices run clear when a knife is inserted between the thigh and body. 2. Unwrap the bird and pour all the juices into a saucepan.


MENU Put the chicken on a plate to cool slightly (it will be served at room temperature). If any juices have escaped the package, you can deglaze these in the pan with a little water or wine and add them to the saucepan, too. Remove any excess fat from the juices before bringing to the boil and reducing to 3T. Cool in a bowl over iced water. 3. To make the mayonnaise, put the egg yolks and mustard in a bowl and slowly begin to add the oil, drip by drip, while whisking. As the mixture begins to emulsify and thicken, increase the flow of the oil. When you have added about 75ml oil, whisk in the lemon juice and the cooled cooking juices, then continue to add the rest of the oil. When all the oil has been added, you should have a thick emulsion. Stir in the lemon zest and tarragon and season to taste. The chicken juices may make it quite salty but you might want to add a little more salt, along with some pepper. 4. Tear or carve the cooled chicken into portionsize pieces, removing the skin if you prefer, and serve with the mayonnaise on the side.

For the poached peaches 5 ripe peaches (about 780g) 1 vanilla pod, seeds scraped 1T lemon juice 60g caster sugar 300g mixed blackcurrants and redcurrants, plus extra to garnish 4 sheets filo pastry 60g melted butter 50g ground almonds 50g demerara sugar 25g flaked almonds To serve Clotted cream or crème fraîche 110

POACHED PEACH AND BERRY STRUDEL

1. Heat the oven to 180°C/ fan oven 160°C/mark 4. Cut each peach into 6 or 8 wedges, discarding the stones. Put them into a large, shallow pan with the vanilla seeds, lemon juice and sugar. If the peaches aren’t very juicy, add 1 to 2T water. Cook over a low to medium heat, semi-covered, for about 5 minutes, until the peaches are really soft, but still holding their shape. Add the berries and stir well, then cook together for another minute so they

begin to release their juices. Remove from the heat and strain, keeping any juices. 2. Brush both sides of a sheet of filo pastry with melted butter and lay it on a large baking sheet. Mix the ground almonds and demerara sugar together and sprinkle about a quarter of the mixture over the sheet of pastry. Repeat with the next three sheets, making sure you butter generously on both sides and top with the sugar almond mixture. 3. Put the peaches and berries in a line along one of the long sides of the top filo

sheet and roll them up, like a Swiss roll, ending with the seam on the underside. Sprinkle flaked almonds all over the top and sides, and tuck any escaping fruit back inside at either end. Using a skewer or the tip of a sharp knife, pierce holes along the length of the roll. This will help the filo layers crisp up in the oven. 4. Bake for 25 minutes until crisp and brown. Cut into thick slices and garnish with the extra berries as desired. Serve while it is still hot. Q

As an experimental garden and visitors centre dedicated to nurturing and understanding xerophytes – succulents, cacti and other plants that require little water to sustain themselves – Desert City is one of the biggest and most important buildings of its kind. The linear glass corridors that span the length of the garden not only protect it from the nearby highway but also serve to connect two rectangular blocks at either end, effectively containing the open-air garden.
