According to the National Christmas Tree Association, approximately 25 to 30 million real Christmas trees are sold in the United States each year. Christmas trees also are big business in Canada, where Statistics Canada notes cash receipts from Canadian Christmas tree producers totaled nearly $163.5 million in 2022. Annual spending on Christmas trees underscores how important they are to holiday decor. Christmas trees serve as the centerpiece in millions of holiday home decor schemes, so it’s important to pick a tree that can shine in that role. This holiday season,

celebrants can consider these tips as they look for the perfect Christmas tree. • Measure the area where the tree will be placed. A large tree can be awe-inspiring, but also can stick out like a sore thumb if it takes up too much space. There should be enough room around the tree for families and their guests to sit around it. The home interior experts at Better Homes & Gardens recommend leaving a minimum of six inches between the top of the tree and the ceiling. If a tree topper will be added, make sure the top of the tree is at least 12 inches from the ceiling. Trees are living things, so it’s unlikely that buyers will find a perfectly symmetrical tree. However, a tree that’s misshapen or already has some sagging branches won’t make for an awe-inspiring addition to a home decor scheme. • Find the trunk (if you can).

A trunk that’s visible through the branches indicates the tree does not have dense branches, which will be necessary if homeowners want to dress the tree with ornaments. If it’s hard to find the trunk because of all the thick branches and green needles, then the tree is likely pretty healthy. • Test the needles. The home improvement experts at Lowes note that needles should be flexible but still snap when bent sharply. Avoid trees with needles that are already losing their color and can easily be pulled off. Tradition reigns supreme during the holiday season

Putting up Christmas trees, stringing lights, singing carols, and filling stockings with trinkets are just a few of the seasonʼs many cherished traditions. However, amid the typical holiday hustle and bustle, there also are traditions that are unique to various cultures and ethnicities and particularly those pertaining to foods and beverages. From minced pies in England to kutia in Ukraine to spiced hot chocolate in Peru, many different foods and beverages are savored this time of year around the world.

PUERTO RICAN EGGNOG INGREDIENTS: 1 1 1

can of condensed milk can of evaporated milk can of cream of coconut (most Puerto Ricans prefer Coco L—pez) 1/2 cup white rum (preferably Don Q or Bacard’) 1/2 teaspoon of vanilla extract 1 teaspoon of ground cinnamon (add more to taste)

PREP:

In a blender, add evaporated milk, cream of coconut, sweetened condensed milk, rum, vanilla extract, and cinnamon. Blend on high until mixture is well combined, 1 to 2 minutes. Transfer mixture into glass bottles and chill in the refrigerator until cold. To serve, pour coquito into small serving glasses and garnish with ground cinnamon or a cinnamon stick. Note: This is traditional Coquito. Individuals can experiment with different flavors, like chocolate, guava or even mango coquito if they desire.

cup raisins tablespoons water teaspoon lemon juice cup light corn syrup teaspoons all-purpose flour teaspoons sugar

apples (preferably a tart variety) cup brown sugar cup sugar teaspoon ground cinnamon teaspoon ground nutmeg teaspoons cornstarch

cup confectioners’ sugar tablespoons water tablespoon butter, softened

PLAIN PIE PASTRY

Makes two 9-inch pie crusts 2 cups all-purpose flour 1 teaspoon salt 2/3 cup vegetable shortening 5 to 7 tablespoons cold milk 1. Sift the flour and salt into a bowl. Cut in the shortening with a pastry blender until it is the size of small peas. Sprinkle 1 tablespoon of the milk over part of the

1. To make the raisin filling, combine the raisins, water and lemon juice in a heavy saucepan over medium heat. Bring to a boil, then lower the heat to medium-low and cook, stirring occasionally until the raisins are plump, about 15 minutes. 2. Separately, combine the corn syrup, flour and sugar and mix well, then add to the raisins and continue cooking, stirring occasionally, until thick and syrupy, about 10 minutes. Remove from the heat and cool until the mixture is just warm, about 10 to 15 minutes. 3. Preheat the oven to 400 F. Line a 9-inch pie plate with 1 rolled-out crust. 4. Peel the apples, cut them into thin wedges, and put them in a large bowl. Separately, combine the sugars, cinnamon, nutmeg, and cornstarch, then add to the apples and gently stir until evenly mixed. 5. Spread the apple mixture in the crust in an even layer, then spread the raisin filling evenly over the apples. Brush the rim of the crust with water, cover with the second rolled-out crust, seal and flute or crimp the edges, and cut a steam vent in the center. 6. Bake for 40 to 50 minutes, until golden brown. Cool on a wire rack for 1 to 2 hours, until completely cool. 7. To make the icing, combine the sugar and water and mix well. Add the butter and mix until smooth. Brush over the top of the cooled pie before serving. flour mixture. Gently toss with a fork and push to the side of the bowl. Press the dough together to form 2 equal balls, then flatten into disks. Roll out the crusts right away, or wrap the dough tightly, smoothing out any little wrinkles or air pockets and refrigerate for up to 2 weeks. On a lightly floured surface, roll out each ball to a thickness of 1Ú8 inch. Use a light touch and handle the dough as little as possible.

The Night Before C hristmas Twas the night before Christmas and all through the house not a creature was stirring, not even a mouse. The stockings were hung by the chimney with care in the hope that Saint Nicholas soon would be there. Then, what to my wondering eyes should appear, but a miniature sleigh and eight tiny reindeer, a little old driver so lively and quick, I knew in a moment it must be Saint Nick. More rapid than eagles his reindeer all came as he shouted, “Oh Dasher” and each reindeer’s name. And so up to the housetop the reindeer soon flew with the sleigh full of toys and Saint Nicholas, too. Down the chimney he came with a leap and a bound; he was dressed all in fur, and his belly was round. He spoke not a word but went straight to this work, and filled all the stockings, then turned with a jerk. And laying his finger aside of his nose, then giving a nod up the chimney he rose. But I heard him exclaim as he drove out of sight, “Merry Christmas to all, and to all a good night!”
