La Cabro d’Or takes its name from this excerpt of the poem Mireille by the great Provencal poet Frédéric Mistral. The name suits it well, because it is that free spirit, above all else, which characterizes this property, the first of Les Maisons de Baumanière. Here in the narrow valley of Les Baux de Provence, the Alpilles mountains have a look of Tuscany about them and the spacious gardens of La Cabro d’Or add their own exotic note, with lush, colourful plantings that provide a vivid contrast to the jagged white rocks of the Val d’Enfer. Originally created as a country inn belonging to l’Oustau de Baumanière, where horseback riders would spend the night, La Cabro d’Or quickly outgrew its status of little sister. Animated by the same spirit as its older sibling, it lost no time making a name for itself within the Relais & Châteaux hotel association and among the leading restaurants of Provence, earning 1 Michelin star. Five acres for leisurely walks, a large swimming pool by which you can have breakfast in the summer, tennis and now a Spa… Jean-André and Geneviève Charial say that La Cabro d’Or was made for happiness and has a holiday atmosphere, even when the holiday takes the form of a seminar. Nature was generous with La Cabro d’Or and the large Provencal country house makes the most of its natural gifts, without any artifice. The luminous rooms, most of them at ground level, open either onto private terraces or onto the gardens, which Geneviève Charial never stops transforming. The ducks from the pond often waddle onto the hotel terrace, in search of shade and the odd crumb dropped from a table. No one is surprised to see them, because they are part of the family, just like the horse-drawn carriages, which pass through the grounds daily.

Gastronomy
Michel Hulin, the chef of La Cabro d’Or since 2001, makes the most of his years of experience working with master chefs Gérard Boyer at Le Château Les Crayères and Michel Guérard at Les Près d’Eugénie. He draws his inspiration from the fresh produce of the organic kitchen garden and the AOC olive oils produced in the Baux Valley. His cuisine has a remarkable creative freshness to it and he showcases the locally produced olive oils in every dish of the tasting menu he has dedicated to them.

Cooking classes
Our one Michelin star Chef Michel Hulin opens the kitchen’s doors twice a year. “The Spring Session” (from March to May) is to be defined in February. “The Autumn Session” (from October to December) is to be defined in September. The class starts at 09:30 AM in the Cabro’s kitchen. You will cook the entire morning under the management and the recommendations of our Head Chef. After the class, you will enjoy the lunch that you personally made, at the restaurant. Classes of 10 persons maximum Prices: € 145 per person
Wine classes
You will discover several wines with our sommelier. You will learn about the different grape varieties, grounds and vintages. The class will be followed by a lunch. On request, depending of our sommelier availability.

Spa Baumanière
In every Baumanière establishment, the saying is that simplicity is very hard to achieve, luxury should be discovered not advertised and each guest must find his/her own way of living the Baumanière philosophy. The Spa is no exception. On the occasion of his first visit to the Spa, in the company of Evelyne Bouix, and Jean and Zofia Reno, Pierre Arditi made this philosophy the basis of his reflection: “I could talk about the food, or the rocks in Baux, of my favourite rooms or of how Geneviève discreetly takes such trouble to cater for your every need: it would take forever to list all the reasons why this place is so wonderful. But there is one thing that stands out above all others: the freedom to do just as you please. If you will accord me this same freedom in the Spa, it will be my favourite place for the rest of my life”. He could not have said it better, for if one was to try and sum up what Geneviève Charial wants to achieve, it would take only these few words: « we hope that this new journey of the senses will bring you face-to-face with the very best of yourself”. The whole point is to invite you to partake of the good life, but only if you want to.

Les Maisons de Baumanière After having opened L’Oustau de Baumanière in 1945, Raymond Thuilier, Jean-André Charial’s grandfather, took the first step in its expansion by opening a second, “simpler” restaurant. Today, La Cabro d’Or is a 25-room Relais & Châteaux hotel, with a Michelin-starred restaurant. In 2005, Jean-André took over La Place, a bistro in Maussane-les-Alpilles, a neighbouring village to Les Baux. There was not even any need to publicize the relationship between the bistro and Baumanière: word of mouth travelled fast. Within a few weeks, French and foreign clients knew the new address. It is only natural for Baumanière to expand on home soil, since its history is closely linked to the resurrection of the village of Les Baux de Provence.
The voyage has not stopped there. Jean-André and Geneviève Charial visited Le Prieuré in Villeneuve-lès-Avignon and fell under the charm of its priest’s garden and wisteria-draped trellises, in the heart of the medieval town. They undertook the complete renovation of this 14 th C convent, which has been a hotel since 1943, and reopened its doors in the spring of 2007. Just a few months later, the Spa Baumanière saw the light of day. A large, airy space, with bright, luminous treatment rooms opening onto a patio, the Spa Baumanière was conceived for sensual pleasure. Last but not least, Le Strato, a 5-star luxury hotel at the foot of the ski slopes in Courchevel, opened its doors for the 2009-2010 winter season, with the team of l’Oustau de Baumanière in charge of the restaurant.
