Banana Almond Pancakes

INGREDIENTS • • • • • • •

1 banana, mashed 1 free-range egg 1 heaping Tbsp. almond flour 1 tsp. vanilla extract Dash of cinnamon 1 Tbsp. sour cream or yogurt (optional) A few blueberries

DIRECTIONS • Mash one whole banana and lightly beat with the egg • Add almond flour, vanilla and cinnamon • Pour mixture into a frying pan and cook until golden on each side • When both sides are done serve with the sour cream and blueberries

Susan says: For most of us there’s no getting around it, sooner or later a craving for something sweet is going to hit.
