Calgary’s Growing Need for Multicultural Media Coverage are popping up everywhere. And along with its flourishing distinctness comes Calgary’s demand for more multicultural media coverage. The City of Calgary leads the way in embracing multiculturalism. Their commitment to ensuring that unique stories from different communities are heard is evident in their partnership with the media industry. The city recognizes the importance of having multiple voices in issues that matter most to all Calgarians. And although it recognizes the complex hurdles it faces, it is optimistic in its promise to move towards a future where everyone, not just a portion of the population, is heard.

May 25, 2019 Calgary. What makes Calgary unique is its inherent multicultural roots. Before Calgary came to be, diversity was already seeded in its very core. To date, multiple cultures continue to flourish in different parts of the city. In 1996, Statistics Canada reports 1 out of 10 Albertan belongs to an ethnic minority group. By 2016, this number has become 1 out of 4. Booming communities with strong ethnic presence

Mayor Nenshi has been the most vocal in his pursuit to push for more media coverage on ethnic communities. Media coverage are often pervasively filled with negative news and divisive issues. What’s more alarming is the limited input from different community groups in the city. His vision calls for more news on celebration, events and distinct stories representing different communities. It is these multiple voices that make up Calgary. A daunting task is ahead for the city. The diversity rate is growing faster than the conventional media business. The demand for ethnic news coverage is sharply increasing and a gap in the media is becoming more strikingly evident. Regardless of the ethnic group a Calgarian identifies with, news is not complete when not provided from all views of the population. This is why the City of Calgary holds annual media forums. Issues such as multicultural coverage are discussed. This year, the city has pushed this to be one of the top media priorities. A commitment to multiculturalism is a responsibility held by everyone. Philippine Heritage Month: Minister Aheer June 01, 2019
Minister of Culture, Multiculturalism and Status of Women Leela Aheer issued the following statement to recognize Philippine Heritage Month in Alberta: Minister Aheer was first elected as the Member of the Legislative Assembly of Alberta for the constituency of Chestermere-Rocky View on May 5, 2015. She was re-elected on April 16, 2019, as the MLA for the newly formed riding of Chestermere-Strathmore.
“Our government is honoured to recognize Philippine Heritage Month and the contributions of Filipino Albertans to our province. June 12 marks the day when their nation of islands declared independence from Spain and the Republic of the Philippines was born. “Our province is blessed to have the second largest Filipino population in Canada. The dedication and hard work of Filipinos in Alberta have played an important role in Alberta’s economy and in our communities for generations. “No earthquake, volcanic eruption, typhoon or tsunami can wash away the resilient spirit and generosity of the Filipino people. We can all admire the strong value Filipinos place on family and community. “I encourage everyone to learn more about our Filipino neighbours as we celebrate their heritage this month. The Filipinos in Alberta and all over Canada sincerely appreciate the Proclamation by the Provincial Government and the Motion of the House of Commons of the Parliament declaring the PHM in June of each year and in perpetuity as “the opportunity to celebrate the contributions of Filipino-Canadians in Alberta, and to honour Philippine Independence as well as the historic struggles of Filipino.” The PHM also “recognizes the significant contributions of Filipino-Canadians to the social, economic, cultural and historical richness of the Province of Alberta.” The PCFG gives greater meaning to our celebration of PHM as a venue to further enhance bilateral relations especially with the Province of Alberta where over 180,000 Filipinos and Filipino-Canadians live and work. They make up the close to one million Filipinos in Canada. Food for thought
A satisfied palate is a key ingredient! DAS Filipino-Canadians’ celebration of the first Philippine Heritage Month from coast to coast to coast is in full swing. The beauty, uniqueness and colourful manifestations of the community’s culture, people and cuisines are in display and for enjoyment of everyone. The most practical, appreciated and lasting experience related to this month-long celebration is through the people’s palate. Essence, scents and succulent of wellknown cuisines, crafted by the very Filipino chefs, are the main attractions at all celebrations. Elsewhere, food served in various manner like boodle fight (i.e. Banff on June 1st – the longest and well attended, 800+, event in Alberta), buffet, served and potluck (Okotoks - June 15; Lethbridge- June 8; Strathmore June 9 and Airdrie - June 9) enriched the existing bond between and among Filipino-Albertans. These occasions certainly left lasting memories and positive impressions on what a group could accomplish collectively. Other events worth mentioning are the first-in-theprovince’s- month-long Restaurant Parade of Philippine Cuisines. Participated in by no less than 10 restaurants in Calgary and Rocky Mountains of which popular Filipino dishes are the main attractions. The Filipino Champion of the Year Awards and Recognition Gala (June 14) for outstanding Filipino-Canadian Champions showcased the contributions to and characters of Filipinos that garnered respect and honour from the mainstream Canadian populace. The Kalayaan 2019 Flag Raising ceremony in front of the City Hall (June 12) initiated by CAFFA, invoked the sense of patriotism and love for freedom and liberty. PIOC/SKS’s Sulong Kalayaan and Lechon Galore (June 16th) one of the most sought gathering was a testament to Filipino communities’ love for great tasting delicacies coupled with never ending fellowship. The Philippines Consulate General Office’s sponsored celebration of Philippines’ 121st Independence Day and 70th Anniversary of Philippine-Canada Diplomatic Relations manifested the value and significance of being free

(country) and in great diplomatic relationship with countries across the ocean like Canada. Filipino-Albertans are blessed with various groupinitiated celebrations: Philippine (human) Flag gathering at Euclaire Market (June 1); Kalayaan 2019 gathering hosted by Filipinos attending Centre Street Church (June 14); films showings (Kanana Kanu and Anak ti Pating - to be held) on June 29 at the Calgary Central Library, and one culinary related showing (Ulam Main Dish / Cocktail Reception and Film Premiere) in Calgary’s oldest cinema house (June 16) provided venues for Calgarians to experience Filipino heritage. The creativity, passion, innovation and drive to make the above celebrations are vivid reflection of what Filipino-Canadians can do. It is indicative of a heritage that spell out the best from the community – People Engagement, Cultural Enhancement and Culinary Excellence!

The other highlights of the Tuna Festival are the parades, street dances and trade exhibits all centered on the sashimigrade fish. The best part though about the Tuna Festival is the gastronomical feast where one can try the many different dishes prepared by the different restaurants that take part in this event. MassKara Festival (Bacolod)
MassKara Festival began at the time of doom and gloom in Negros Occidental. World market prices for sugar, the province’s monocrop, went down. And its impact was felt, all ones. A year before the MassKara Festival was born, two artists approached then Mayor Jose “Digoy” Montalvo and broached the idea of popularizing mask masking as an alternative livelihood for the city. The two, George Macainan and Ely Santiago, offered to help train barangay folk how to make masks out of paper mâché. Montalvo liked the idea of maskmaking for livelihood. But how will the masks produced by the barangays be marketed? Who will buy them? The mayor had an answer: Let’s have a mask festival! Santiago drew the first MassKara logo, and thought of the name of the festival: MassKara; “mass” meaning many; “kara”

meaning faces. Literally, it is a Festival of Many Faces. Then M/V Don Juan—an inter-island vessel carrying many Bacolenos and Negrense, inclusing prominent families—sank in April 22 of the same year, adding to the gloom. In its wake, the question rose: With the crisis and tragedy, shall the festival proceed as scheduled? Montalvo had answered: “Precisely because of the crisis and tragedy, the more we need a festival that will bring back the smile on people’s faces and make them dance. Thus the MassKara’s underlying meaning is that it is a declaration of the people’s resolve to rise above adversity and triumph over crisis, tragedy, and disaster. It also followed the positioning of Bacolod as “The City of Smiles”. Major activities such as beauty pageant MassKara Queen, Electric
MassKara—Bacolod’s biggest street party, MassKara Red Party—a party for the Bacoleño youth, Choreographers’ Face-off—a street showdown of the city’s top choreographers, singing and dance contest, and fireworks competitions, among others, are being organized each year. Singkaban Festival (Bulacan)

Singkaban Festival is an annual provincial event of Bulacan where Bulakenyo culture and arts are featured in a week-long celebration. It showcases the traditional arts of the literary form “Balagtasan,”folk dances, and traditional songs known as “kundiman.” The main focus though, is on the singkaban, a Bulakenyo art of creating an entrance arch and other decorative materials mainly from bamboo. The main event of the festival is the street dance and float parade where representatives from different Bulacan towns, as far as San Jose del Monte in the southeast and San Miguel in the north, travel to Malolos during the festival season. These events showcase Bulacan’s local

culture, heritage, and artistry, and the various towns’ entries feature all things Bulakenyo. The singkaban (bamboo artworks), after which the festival was named, is a prominent theme, especially in the entry of Hagonoy town. The theme appears as dancers’ headdresses, the arch and backdrop of the Desposorio, and as parts of the dancers’ costumes. Guiguinto’s Halamanan Festival, San Ildefonso’s Gulay Festival, Pandi’s Baro’t Saya Festival, Plaridel’s Goto Festival, San Jose del Monte’s Camotes Festival, Bustos’ Minasa Festival, and Baliwag’s Buntal Hat Festival are
just some of the local festivals that took part in the colorful street dancing during the past Singkaban festivals. Unlike other famous festivals around the Philippines which feature Mardi Grasstyle revelry, most of Singkaban Festival entries stay true to the local culture of Bulacan. This is evident in Singkaban’s Santa Cruzan theme in which the use of the baro’t saya, the Maria Clarastyle gown, the camisa chino, and the singkaban is abundant. Though named after the singkaban arch, “Singkaban” also stands for SIniNG at KAlinangan ng BulacAN (Arts and Culture of Bulacan). It is celebrated in Bulacan every 3rd week of September. Kadayawan Festival (Davao)
Observed every third week of August, Kadayawan Festival is Davao City’s biggest and grandest festival. The term “Kadayawan” is derived from the Mandaya word “madayaw”, a greeting used to explain a thing that is good, valuable, superior, or beautiful. It is a
week-long celebration and thanksgiving for nature’s harvest. During this time, locals and tourists flock the streets of the city to witness major events such as the Indak-Indak sa Dalan and Floral Float Parade. (Source: Kadayawan Fest)

Brown as simply called by all his peers and group he belongs to, aims toward red and blue seals to further his career in Canada. Chef Brown never ceases on enhancing his carving talent and skills as he continues to participate voluntarily in his association as Culinary Artist and Eastern Vice President of the Philippine Culinary Federation of Canada (PCFC). At 43 and happily married to his wife Shiena, has been gifted with two adorable children. Chef Brown is hailed and raised in Binangonan, Rizal, a city of less than 35 kms East of the country’s capital Manila. His parents are both from the island of Luzon which makes him “taal na tagalog” (rooted from true tagalog regions) Currently, Chef Brown is an ethnic cook for Chefs Fiery Kitchen at the Calgary Farmers Market. Prior to that, Chef Brown also honed his skills as 3rd cook, kitchen artist at Blackfoot Hotel, Calgary. Before deciding to reside in Canada, Chef Brown skills and talents were enhanced in the Middle East at Casablanca Hotel in Jeddah, Saudi Arabia. His strong willed personality took hm up from the bottom as a roomboy and waiter and just in few years, worked his way up as banquet supervisor, kitchen artist all the way to assistant manager of the hotel’s restaurant. Chef Brown’s high school education makes him crave for more. According to him, he is always in the learning mode and has attended several seminars and received certificates on food safety and sanitation. He is also an active junior member of the Culinary Federation of Canada.

Biringhe Bulakenyo
“Hamonado” is a process of marinating the meat with sweetened pineapple sauce overnight. The same marinade is used to simmer the meat slowly with few more additional ingredients. “Endulzado” or sweetened is where the taste originates. Pork Hamonado is often always served during Christmas season and Pampanga is not only hailed as Mecca of Philippine Cuisine but also the Christmas Capital for Giant Lanterns Festival. Biringhe Bulakenyo Bulacan, the heart and gateway to the north was once called the “Rice Granary of Luzon”, the main big island. Biringhe is the native or poor man’s Paella (Spanish). Even though it was originated in Pampanga, Bulacan took away it popularity from them due to the province’s abundance supply of rice. The distinct taste of Biringhe which sets it apart from its original version is the use of coconut milk and turmeric oil with very little meat and ingredients.

Durian means Thorn in Malay Language. This pungent fruit is from Malay Peninsula, brought in the Philippines using land bridge. Davao is the city capital of this southernmost part big island of the Philippines, Mindanao. For most, it may described it with the most offensive smell, however for those whose palates are more adventurous, the exquisite flavour made them truly love it. Yes there is such a group called “Durian Addicts”.

Calamansi A very small citrus fruit ubiquitous to any Filipino kitchen or table. Also known as Philippine Lime but the taste is like lime, orange, lemon combined the three together. Calamansi is staple for marinating and match made in heaven either as table condiment or dipping sauce for fried, grilled and salted main courses. Mango Soft, chewy, delicious and the sweetest Mango in the world can be found in the Philippines. This exotic fruit which is a pride of the Philippine Archipelago, is undoudtedly the sweetest, as proven by Guinness World Records in 1995.
