As an operator you will ensure that all our products are of a high standard and that all our manufactured products are processed in a timely and effective manner, to the correct level of quality and quantity. You will also ensure that any documents are read, understood and filled out correctly and that all non-complying products are segregated from good products.

This has proved to me is that we should never take anything for granted. I read somewhere that when we stop taking notice of the everyday, we forget to appreciate all the good things in our lives. Our health, our families and the environment are huge foundations for most people yet sometimes we don’t fully appreciate them until they are ‘broken’ or ‘gone’. We can spend so much time and energy focusing on acquiring more wealth and ‘stuff’. But when we step out of our routines – like we’ve been forced to recently - the materialistic things quickly pale into insignificance. So, if I’ve made any New Year resolutions at all, it is to focus on what I already have and to appreciate my family and friends even more. As I look forward to 2021 I’m even more conscious of our responsibility here at the Yaxley Gazette to keep our communities connected. Whatever awaits you in January – and the rest of the year – be kind to yourself, do the things that make you happy, and believe that things will get better. Stay safe and well. Until next time,

Your Care Due to the ever increasing demand within the NHS, there has been a national drive to ensure patients are seen and assessed by the most suitable allied healthcare professional, thus allowing Doctors to see the most clinically vulnerable and complex. Many of us have spent much of last year working from home, taking fewer screen breaks than we would in an office, while children have also used technology more than ever to engage with home schooling, keep in touch with friends and keep entertained during lockdown. This increased time on laptops, tablets, games consoles and phones soon adds up to many hours per day, and it is having a damaging effect on our eyes. Alongside this, we increasingly wear ear buds, or use similar audio equipment, to listen to music or while we’re streaming movies and TV shows. While the quality of listening through these new technological developments is better than ever, the volume of sound being received straight into the ear canal can damage our hearing. What has Covid-19 done for our Community Spirit? The end of the year is a traditional time for reflection though we might be forgiven for wanting to put 2020 behind us without the need to re-examine events! But far from wanting to forget it ever happened, there are certain aspects of the last 12 months that bear revisiting and prove that there are more positive things going on in the world than negative ones. Here are a few simple hints and tips! - The 20/20/20 rule for your eyes: Every 20 minutes, take a 20 second screen break and focus your eyes on something 20 metres away. - The 60/60 rule for your ears: Never listen at more than 60% of your device’s maximum volume and limit the amount of time you spend using earbuds to 60 minutes at a time. To help, many devices can be set to not exceed 60% volume. - If other people can hear what you are listening to while you are wearing ear buds… it’s too loud! - Book a sight and hearing test: many high street opticians offer both.

By Helen Say (www.cblservices.co.uk) is a freelance writer The UK’s response to Covid-19 has had an unexpected upside: it has demonstrated that we have an amazing capacity for generosity and community spirit at times of severe crisis. Feel-good stories about neighbours helping neighbours, clapping for the NHS and carers, and the heart-warming campaign of Captain Sir Tom Moore regularly graced the headlines, giving us a sense that all was not lost even as we battened down the hatches for a second time. The nationwide and regional lockdowns placed a huge emphasis on local communities and the need for people to help each other, particularly the elderly and vulnerable. Caring for others has always been part of human nature but the pressures of modern life meant it often got pushed down the priorities list. Being forced to stay at home means we’ve unilaterally developed a new habit of looking out for one another and its one we’re apparently keen to stick with. According to a recent survey 68% of UK adults want to continue helping others even after the current crisis has passed. It seems we’re getting used to being active members of our local communities. We’ve been discovering the joys of shopping locally, nodding at strangers even as we keep our

distance on long walks, litter picking in the local park, shopping for elderly neighbours and offering up surplus loo rolls. Even during the pared-down VE celebrations in May many people set up picnic tables in their front gardens and drives, waving to each other and chatting from behind garden gates and privet hedges as they drank tea or quaffed a cocktail or two. Who can forget the images of people singing on balconies in Italy? Or that over 750,000 people signed up to be an NHS volunteer? Or the hand drawings of rainbows in windows? This renewed sense of togetherness is a boost to our mental health, so its one that we should all work to nurture, not just for now but long into the future. Doing good gives us a rush, making us feel good in return, reducing our own stress and improving our wellbeing. As we head into the new year we should try to remember that despite all the panic and fear that this historic global pandemic has brought, despite the uncertainty and the disruption, this crisis has truly illuminated the best of humanity. We’ve witnessed a revolution of kindness and communities coming together just when we needed it most. Don’t let it die.

We hope that you all enjoyed Christmas even though it may have been very different from other years but with the coronavirus vaccine we may be able to get back to some sort of normality in 2021. As soon as we are able to restart our meetings we will of course give details of when, and our new venue.

Alison McGuinness, President We emerge from Lockdown 2 and now the Christmas season is fast approaching. If I reflect back on March this year little did I imagine we would still be in restrictions as we are now in Tier 2. We have just ‘dropped’ our Christmas themed educational bags to all our members containing a small individual one-person sized fruit cake, a bag of chocolate buttons (mine didn’t last long), and a couple of Christmas themed chocolate shapes. There is also

a Christmas quiz and a small Christmas wreath kit to make, which once completed, we need to photograph and show off to all our fellow members. There are also some crocus ‘Friendship’ bulbs to be planted and a mulled wine sachet for those days when we want something warming, and alcoholic. Anyone wishing to contact us please email WIholmevillage@gmail.com It is just left to say, we wish everyone a peaceful Christmas and (dare I say it), let’s look forward to next year.

A number of post boxes across the region have been stolen in recent weeks. One of the boxes was stolen from Church Street in Holme at some point between November 16 and 17. This has had a big impact on local residents who have struggled to post letters and cards during lockdown. Janice Osborn, Clerk of Holme Parish Council said; "With Christmas approaching it is all the more important to have

postal services at their best. This year people will be relying on sending cards to keep up their connections with friends and family they have not been able to see because of the virus. We only have one other post box in Holme and for some it is a long walk to use it. Apparently postboxes are stolen to sell and are only worth about £150. It is worth a lot more than that to us!" A note has been placed where the stolen postbox stood

inspire ST PETER'S CHURCH Dear Friends, As I write this, we are drawing to the end of one of the strangest and most unexpected years (not that you need me to tell you that!) I have been thinking that this time last year Coronavirus and Wuhan were distant news articles. I do not think that any of us thought that it would come close to our shores, let alone become a worldwide Pandemic that would put us into lockdown for several months closing down much of our country. As we head towards the end of the year, it is often a time when we look back on the year that has been, and we look forward to a New Year with new chances and opportunities. You may well be wondering what the next year has in store for us? We may be walking into the next year with quite a lot of trepidation knowing that it will not be easy. As you look back on 2020, what stands out – toilet paper? Home-schooling? Loss of job or relationship? Loss of loved one? Maybe there are equally some good things that you can look back on – More time with family? A slower pace of life, realising what is important to you? I obviously cannot tell you what next year will bring, but I know a God who has been with me all my life and yes, even in this year. As I walk into 2021 I do so believing and trusting in a God who does know the way. "The Gate of the Year" is the popular name given to a poem by Minnie Louise Haskins. The title that she gave it was "God Knows". The poem, written in 1908 and privately published in 1912, caught the public attention when King George VI quoted it in his 1939 Christmas broadcast to the British Empire. The poem may have been brought to his attention by his wife, Queen Elizabeth. (Thank you to Wikipedia) And I said to the man who stood at the gate of the year: “Give me a light that I may tread safely into the unknown.” And he replied:

The Patient Oyster and the Pearl During one of our Prayer meetings over the Internet Matt, the young man leading that Service, spoke about a grain of sand, while it is trapped inside the shell, irritates an oyster. How does the oyster rid itself of this frustrating thing in it's life ? Often Plan A is to pass it out naturally but sometimes this doesn't work and so plan B comes in to play. The Oyster secretes layer after layer of nacre which encases the grain of sand and creates a beautiful pearl. When you see someone wearing pearls, remember they are wearing an Oyster 's bad day!!

What do you want to accomplish in 2021? Do you want to earn more money? Do you want to spend less on frivolous purchases? Do you want to go on a big holiday as soon as we can travel again? Do you want to learn how to invest? Set a specific goal for whatever you want to accomplish. Goal setting is good because even if you don’t attain the goal, the fact you were motivated to act means you will be closer than you would have been otherwise.

Set Milestones Milestones are simply smaller goals that help you get to your larger goal. They serve to keep you on track. For example – paying off debt the milestones might be: Set up a budget to work out much money you have

We would never have chosen to go through the struggle, pain or heartache of this pandemic. We hoped that Plan A would see a quick solution and all would be well and we would be on our way out of this surreal time. But we had to be patient while we obeyed the rules and after months of patience, vaccines are being discovered by people who have worked tirelessly to offer us hope. An end to our 'bad day'.

However, if the July 2020 payment was deferred until 31 January 2021, this was automatically granted with no applications required. No penalties or interest for late payment will be charged in the deferral period. Therefore, anyone who wished to make their payment by 31 July 2020 could do so. On 24 September 2020 as part of the Winter Economy plan it was announced that taxpayers with up to £30,000 of Self-Assessment liabilities due on 31 January 2021, whether deferred from July 2020 or not due by 31 January under selfassessment, could make payment in 12 monthly instalments under the time to pay arrangements. This means the final payment would not be due until January 2022. Taxpayers using self-serve time to pay will still be required to pay interest on tax owed from 1 February 2021. No eligibility criteria have yet been released and it may be that taxpayers will need to provide evidence that they are unable to pay on time. Going forward it is likely that many businesses will also see a drop in profitability in the 2020/21 tax year. The first Income Tax payment on account for 2020/21 will be due on 31 January 2021, businesses should monitor their position as we reach the end of 2021 and make an appropriate claim if necessary.

This allows HMRC to comply with UK banking regulations to notify payers of the date and amount that will be taken. Agents will no longer be able to use the agent online service to submit VAT returns. Returns must be submitted via the agent’s Agent Service Account (ASA). VAT registered businesses were not required to make VAT payments that were due from 20 March 2020 to 30 June 2020. This relief was automatic - it did not need to be claimed. The VAT liability and payment was not cancelled, they were deferred. Any VAT liability will need to be settled by 31 March 2021 unless the payment scheme is used.

The Unlikely Pilgrimage of Harold Fry by Rachel Joyce Retirement is meant to be relaxing, isn’t it? You do what you love doing and enjoy yourself. But what if you suddenly receive a letter out of the blue? A woman who worked in your office many years ago has cancer and is dying. She just wants you to know. This touches you for reasons you can’t quite explain, so you write her a note to say that you are sorry to hear that. Putting on your coat and your yacht shoes you leave with the note. Your destination? The post box. Just as far as the end of the road. And so, starts Harold Fry’s extraordinary journey: 627 miles in 87 days. With no plan, other than to reach Queenie, he sets off on a journey of faith. Scribbling on the note he tells her to wait for him. This debut novel from radio and TV writer, Rachel Joyce, will take you on a gentle journey with Harold and the various people he meets along the way. Totally unprepared for what he will encounter, his faith in positive thinking keeps him going as he learns more about his life and relationships with his wife and son.

Runner was initially published in 2009 but came to prominence with the release of the film adaptation in 2014. Thomas is a teenager who awakes to find himself in a box in a place called the Glade. He has no memory of who he is or how he came to be here, but he is thrown into this new community, and as a reader so are you. Before long you become familiar with the terminology used by the boys and you feel as if you are a Glader along with them. As Thomas adjusts to his new environment, he learns about the Maze which surrounds the Glade. Each day the walls open and a select group of runners spend daylight hours exploring and mapping it. It is a race against the clock because at sunset the Grievers – giant robotic creatures – enter the Maze and they are deadly. The walls close to protect the community and overnight the structure of the Maze changers, leaving the runners to start again in the morning.

New Year, New Excitement!

THE BIG GEEK

Normally, a 'Hapypy New Year' wish could seem a bit disingenuous, however after the year we have all just had, I am sure we are all hoping and wishing for some sort of normality when it comes to viewing our TV shows and, more specifically, movies. Netflix, Disney, Amazon, HBO Max et al have really cleaned up on the streaming front during this year, which has altered, potentially irrevocably, the way we enjoy our favourite movies and series. Time will tell for sure. January brings with it some excellent TV shows and movies; here's hoping the cinemas stay open so that we can enjoy them on the big screen! These are all planned for release at time of writing but are, more than likely, subject to change!

Mortal Combat A reboot of the popular video game of the same name was always on the cards after the cheesy original, however it remains to be seen whether they can translate the more gruesome aspects of the recent games releases onto the big screen. Expect this to be one that will either be very good or, as I suspect, very bad.

Peter Rabbit 2 - The Runaway James Corden returns as Peter Rabbit, the affable, mischievous rabbit who loves to cause havoc. The first Peter Rabbit film was met with love and adoration by kids and parents alike, but critics seems to be unimpressed with it. Obviously, we know who really matters! Expect kids to be begging to see this when it is released on the big screen.

Chaos Walking With a strong cast including Spiderman actor Tom Holland, Daisy Ridley and Mads Mikkeleson, this dark sci-fi-esque thriller is sure to get the grey matter working. A women killing germ and an unrelenting noise that attacks men? Sounds like a good, original movie that could be a surprise package!

The Croods: A New Age The long-awaited sequel has a release date of 5 February. Bringing back the amazing cast including Ryan Reynolds, Nicholas Cage and Emma Stone, this sequel sees the family searching for a safer place to live, whilst trying to outwit and outdo the Bettermans; a family that are (a lot) further up the evolutionary chain than they are, before an unexpected turn of events means they must all work together to survive, or be wiped out.

Cobra Kai Season 3 (Netflix - 8 January)

The juggernaut that is Netflix saw sense in buying the rights to this Karate Kid TV show spin-off from the now defunct YouTube streaming service, and has brought over the already completed season 3, that sees the season 2 cliffhanger resolved, so to speak. Johnny must also deal with losing his beloved dojo to the obviously deranged John Kreese, who has brainwashed the kids into following him, much like in the original film. Daniel must fight his demons and seek some sort of resolution to them by trying to connect to Mr Miyagi in the only place he knows, Okinawa, Japan. Add into the mix the potential for the amazing Elizabeth Shue reprising her role as Ali, the woman to come between Daniel and Johnny in the films could be the catalyst to bring them together to take down Kreese. Not much is known at the moment with Netflix teasing us at every opportunity, but be assured this season will be the most intense so far.

The Chilling Adventures of Sabrina (New Year's Eve)

Another Netflix win is this excellent, modern take on Sabrina The Teenage Witch, but with added dark, moody tones and minor gore. The final season of this show promises to be something of a spectacle, so expect more of the same from The Spellmans as they fight of The House of Night and all those who are party to it.

WandaVision

(Disney Plus 15 January) The first of Marvel and Disney's attempt at bridging the gap between the new Phase of Marvel Films and the last, is this original TV show starring Paul Bettany and Elizabeth Olsen, who both reprise their Marvel Characters in this show that follows them through a Truman Show style script that may ultimately have them questioning their places within their surreal, idyllic suburban life. This will be signs of things to come from marvel and Disney, with other TV shows slated for the remainder of the year. Expect some other excellent movies and TV shows to spring up as the world gets to grip with what has been happening and is able to adjust itself accordingly...

One thing is certain, though. Our movie viewing life has been changed forever, and streaming directly on demand will be HUGE this year. Richard hosts Big Geek Life on Fenland Youth Radio every Monday Evening at 7pm and has his Big Geek Life Podcast available on Spotify now.

From discovering the game of chess in an orphanage basement to the pinnacle of the chess world, a woman powers through the ranks to become a giant-slaying grandmaster. Netflix’s recent miniseries The Queen’s Gambit is a stylish exercise in spiritual battle, solace, control and addiction, and moreover, succeeds in triumphantly placing the pieces firmly back on the board of chosen pastimes. Peterborough Chess Club Captain, Marcus Connolly, shares its history, and his own experiences and passion for the game. by Marcus Connolly The game of chess, which was called chaturanga, started in India in 550 AD and over the centuries swept across Europe. The strongest nations are Russia, USA, China and India with England currently in 13th place. There has been a surge to buy chess sets, after the phenomenal success of The Queen’s Gambit, a seven¬-part series currently available on Netflix. The main character is a female orphan, Beth Harmon, who is a chess prodigy and enters tournaments where she beats all the male players. There are many parallels between her and Bobby Fischer, an American who became the World Champion in 1972, which was the last time there was a chess explosion! Sadly, Bobby died at the age of 64, the same number of squares as on a chess board! Peterborough Chess Club was formed in 1892, and we still have the secretary’s books from then, indicating a regular membership of over 40 members. It has been my honour to organise Peterborough Chess Club for the last 30 years. We have won the Cambridgeshire league on many occasions. I have also organised many school chess clubs. In 1992 The King’s School chess team reached the final eight of “The Times British Schools Chess Championship”, which attracted teams from many public schools.

The chess club has had many venues including the sewing room in a house on the Cathedral grounds and the museum. Did you know that Chess is recognised as a sport by the International Olympic Committee and formed part of the Sydney Olympic Games in 1999 as an

At junior chess congresses at weekends there are as many girls as boys, up to the age of 8. The games are usually one hour each with as many as five in one day. Playing chess helps with concentration and forward planning. Unlike most sports, in chess you do not rely on others and there is no luck involved. If you lose you have either lost to a stronger player or you have made more mistakes. Games at the highest standard can take up to 7 hours, which is why clocks must be used. I can recommend that every family should purchase a chess set and allow children of any age to learn the game. There are many websites and online videos teaching the rules, and it does not take long to learn the names of the pieces or how they move. If your child starts to outplay you, it is time to find a friendly chess club.

Winter Lockdown It appears that we are set for a winter under lockdown of varying degrees, meaning our attention will focus evermore on our gardens and nearby green spaces. There is a tendency to utilise bright days to get outside and get busy in the garden. But at this time of year getting busy generally means raking up leaves cutting down plants and removing debris which is, of course, great for a smart looking winter garden but really bad news for any over wintering wildlife. The prunings, detritus and debris we are so keen to clear away are the beds and insulation for our wildlife keeping them safe from the cold. Hedgehogs, toads, newts, bumblebees and so many other animals have by now settled into what they consider a safe warm place to see out the winter in much the same way as on a cold day we might huddle by the fire with a Netflix boxset. Removing

this protection may be throwing these creatures into our brown bins or, at the very least, exposing them to winter’s cold. Look out for hidden winter gems such as architectural seed heads from 2020 in the frost, or dandelions flowering out of season. Be careful with your winter tidying; we need to get outdoors and relieve the monotony of Covid precautions but we also need to protect our wildlife that, come spring, will brighten our lives, pollinate our food and flowers, control our pests and hopefully, herald the end of our winter confinement.

Farcet C of E Primary School It’s been a busy term here at Farcet with lots of exciting learning experiences and school events. We’ve seen some amazing creativity in the classrooms!

William de Yaxley CE Academy Lockdown Learning ...

Our Year 5 and 6 Class have been very busy with their ‘Allotment’ topic and really enjoyed studying the work of Georgia O’Keeffe. They created their own art work inspired by her work.

You may be aware, that some of the children at William de Yaxley CE Academy have had to experience remote learning over the past few weeks, due to class 'bubble' closures. We thought you might find it interesting to read their thoughts and feelings about this, and how 'Lock Down Learning' has been for them… My experience of home learning was a bit lonely, but there was plenty of work to do. This time it was more challenging than it had been before. Other pupil's experience was that they found it much easier to learn at school.

Year 3 and 4 have enjoyed creating jewellery in their Art lessons. They thought about how to arrange the beads to make a pattern and how to manipulate the wire to ensure their pieces stayed attached. They were very proud of their designs!

Year 1 and 2 have shown some great skills in their music lessons and have explored pulse and rhythm this term. They are all working hard to improve their ability to play the glockenspiel. Our Years 1 and Reception children explored Remembrance, they printed using their hands to create a whole class poppy wreath and remembered those who had been lost in war. We also came together as a school to wear something spotty and raise money for Children in Need; an opportunity to show our school value of compassion. We are looking forward to the Christmas celebrations in school and lots more learning together next term.

We had Zoom calls with teachers all morning. At 9.30 Mrs Milne 'Zoomed' us for maths and then at 10.45 our other teacher, Mrs Birley “Zoomed” us for English. If we needed resources, they were sent to us via our usual portal. Our English teacher sent us photographs and diagrams to allow us to complete our non chronological reports about WWII Evacuees. She also sent us a task connected to WWII rationing. We had to measure out the amount of sugar, butter and cheese that one individual was permitted in one week. We were surprised by how little they were allowed! We also created Christmas tree designs and planned an electrical circuit to put inside it, so that it would light up (examples below).

We have valued wooden toys over plastic ones for a number of years now at Folksworth Preschool. We have switched to biodegradable glitter and stopped using single use plastic when we can. My mum helped me with the task and we took a picture of it so that my teacher could put it in my topic book. I had help from my teacher if I needed it and help from my mum, but I was glad to get back to school again. Our children definitely agree that being in school is best, but that if that can’t be the case, their teachers have been absolutely brilliant at providing them with work, help and any support that they might need in order to complete the government expected amount of work per day. Yaxley Girldguiding Oh, yes we are! ... Oh, no we're not! ...Oh, yes we are! Girlguiding Yaxley Units managed a few weeks of socially distanced face to face meetings from September until the end of October. It was all going so well! The HQ building had been scrupulously examined and Covid- secure measures put in place, a great work of collaboration between Scouting and Guiding leaders. First of all we could meet outdoors, and then, with extra paperwork of course, indoors at last! As Commissioner I attended a Brownie and Guide meeting outside, a Guide meeting inside and several Zoom meetings as well as dealing with all the Risk Assessments. It was heartwarming to see how much the girls (and leaders) were enjoying being back together again. Just as we were getting into the swing of things the 2nd lockdown

sent us home again. Most of the units met online during this time but in December some groups decided to meet face to face again if only to have a socially distanced party. In the new year we hope to have all units back at HQ weekly and we will be looking for new leaders/helpers and girls to join us, particularly at Rainbows. The Scout and Guide HQ committee also needs some extra parents or supporters to help - if you are interested in helping the Scouts and Guides but maybe can't or don't want to help weekly/with the youngsters, how about a committee role? Yaxley Infants School Despite the challenges of last year YIS were determined not to let 2020 hamper our Christmas spirit. Over the final few weeks of the autumn term we still managed to facilitate Christmas activities for our children and parents. The Friends of Yaxley Infant School continued to raise funds with a Christmas Raffle. Children and parents had the opportunity to win vouchers, toys and hampers donated by parents, businesses and the local community. The restrictions of the COVID pandemic did not stop us having a Christmas Panto for our children. We were able to book a virtual panto which had sign language to support SEND children. The children watched the panto on the penultimate Friday before the end of term. All the children enjoyed the virtual performance of 'Dream Catcher'. All of our children also took part in performing the 12 days of Christmas. Each class were videoed singing a verse of the classic Christmas song that was changed to make it personal to Yaxley Infant School. We posted the Videos on Tapestry for parents and children to see. A great way to be together even when we have to stay apart. We are also very lucky to have as part of our Governing body the Vicar at St

Peter’s church, Sarah Hare. Together we were able to organise a visit to the church with our year 2 children. The children had a lovely time learning about the features of a church and wrote some enquiry questions for Sarah to answer. The School also have a new website www.yaxley.cambs.sch.uk which has been used to post work for remote learning when we have had to close bubbles. The site includes all the information parents will need so we encourage you to visit our new site if you are a current or prospective parent. Normally at this time of year we would be advertising school tours to prospective parents. Sadly, this year we are unable to do this. Hula Fitness During the first lockdown I rather enjoyed the enforced laziness. I am a gym member, but I don’t really love it. After a while though I noticed that while I didn’t miss weights and running on the treadmill, I did miss the classes, and the rush of endorphins that followed. Then one day while idly flicking through YouTube videos I came across a ‘hula-fitness’ workout. It looked fun. I grabbed one of my daughter’s neon hula hoops and had a go. Much harder than it looked but I enjoyed it. The next afternoon I had another go and my teenage daughter joined in. We laughed a lot (which was a bonus as anyone who has a teenage daughter will acknowledge) and afterwards we investigated hula-fitness a bit more. Hula hooping is inexpensive, and you can do it practically anywhere, which was kind of the point back in lockdown. All you need to get started is a hoop and room to move. Standard hula hoops are cheap as chips but after a few sessions we invested in weighted ones. Even they didn’t break the bank. Ours cost about £15 each but even the more expensive ones were only £40. It is important to find the right-sized hoop. Larger hoops are a little easier

Zesty Salmon Pasta This faff-free fish supper is packed with good things and tastes every bit as fantastic as it looks! Ingredients

500g dried fusilli pasta

Method

Low-calorie cooking spray

Cook the pasta according to the pack instructions, then drain and return to the pan, reserving 100ml of the pasta cooking water.

4 skinless and boneless salmon fillets, cut into bite-size chunks 2 peppers (any colours), deseeded and chopped 1 garlic clove, crushed 300g green beans, trimmed and halved 100g fat-free natural fromage frais 1 large unwaxed lemon, zested and cut into wedges Small bag of watercress, a few sprigs reserved, the rest chopped

Meanwhile, spray a wide non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the salmon chunks and cook for 1-2 minutes or until just cooked, stirring occasionally. Transfer to a plate. Add the peppers, garlic and green beans to the frying pan and cook for 6-8 minutes or until tender and lightly charred, stirring often. Add to the salmon cubes and mix gently. Toss the salmon mixture through the pasta and stir in the fromage frais, lemon zest, chopped watercress and as much of the pasta water as you need to make a good sauce. Season lightly and divide between plates or shallow bowls. Scatter over the watercress sprigs and serve with lemon wedges to squeeze over.

This past year has been a year like no other. I think we can all agree! It feels good to put 2020 behind us and press on to not only a new day but a new year. This year on the farm we are in a much better position than last year with all of our crops nearly sown and no sign of flooding or excessive rain to drown our growing crops. The sheep are content in their grass fields and we continue to see the wildlife thriving throughout the farm. This past December we decided to lay some more of our ancient hedges along one of the roads that borders our farm. Hedgelaying is a long-standing countryside craft (and art!) and we are so pleased to be continuing this process on our farm. In fact, the very first description of hedgelaying is in Julius Caesar’s ‘Commentaries on the Gallic War’! It is

the process of bending and partially cutting (or pleaching) through the stems of the shrubs and small trees near ground level. The craftsman (or craftswomen!) then arches the stems without breaking them so they can grow horizontally and be intertwined. To find out more about this fascinating craft you can go to: hedgelaying.org.uk. This past December we were also very pleased to release our newest website and online shop. We love developing programs and events that generate not only a sense of community but also give opportunity for exploration and education on farming. We hope that people find they are deepening their sense of knowing & connection to our food, the soil and nature. Through our website, you’ll be able to keep up to date with everything happening on the farm

goodfood Basic Overnight Oats Ingredients 1/2 cup dry oats (the actual cup size doesn’t really matter. It’s about proportions…just use a bigger cup if you have a bigger appetite) 1 cup of unsweetened milk (I like almond milk but cows’ milk, soya milk, plain yoghurt or a mix of yoghurt and milk is all good) Fruit of choice (fresh, frozen or even tinned) 1 tbsp chia seeds or flax seeds (optional but good for healthy omega 3 fats) Nuts (optional) Method

Overnight Oats Have you made healthier eating a part of your New Year plan? If so you should definitely try this healthy, hearty breakfast. A friend introduced me to overnight oats and I have to say I’m hooked. First, it’s the easiest breakfast ever. There’s nothing to cook; you make it the night before in under 5 minutes, and when you wake up, it’s there waiting. All you have to do is eat it! The basic recipe is very adaptable; you can do so many different things with it. I tend to eat mine cold but if you like things hot, heat them up in the microwave Oats help to reduce cholesterol and are a whole, unprocessed source of carbohydrates, which release energy slowly so are a great start to the day.

Oven-Roasted Cauliflower Cheese

1. Combine everything into an airtight bowl or jar (I leave nuts out as I like them crunchy) 2. Leave in the fridge overnight 3. Eat in the morning! You can heat them if you like. Variations: Fruit: apples, banana, nectarines, blueberries, strawberries, figs, redcurrants (most fruits taste great). Flavourings: flaked or desiccated coconut, ground almonds. Sweeteners: If you have a sweet tooth you can add maple syrup, honey or jam. My kids experimented with chocolate milk too – lovely with bananas. Healthy fats: flax, nuts, nut butters Toppings to add in the morning: granola, nuts, raisins, sour cherries, additional fruit, chocolate chunks

Roasting the cauliflower imparts a lovely sweetness to the dish and the mustard means you need less cheese so it’s better for that post-Christmas waistline! Ingredients 1 large head cauliflower, cut into florets Salt and freshly ground black pepper For the sauce 20g/¾oz unsalted butter 20g/¾oz plain flour Grated nutmeg to taste 250ml/9fl oz skimmed milk 40g/1½oz mature cheddar, finely grated 2 tsp Dijon or wholegrain mustard 15g/½oz parmesan, or similar hard cheese, finely grated Method Preheat the oven to 200C / Gas 6. Place the cauliflower florets into an ovenproof dish and season with a pinch of salt and pepper. Roast for 20 minutes, or until tender and starting to brown. Meanwhile, make the sauce by melting the butter in a saucepan, then adding the flour and cooking for 1-2 minutes, or until a light golden colour. Gradually add the milk until smooth, and then cook over a gentle heat for 3-4 minutes stirring constantly until thickened. Add the grated nutmeg. Reduce the heat then add the mustard and cheddar cheese. Put the roasted cauliflower into the sauce and mix so that all the florets are coated. Pour the cheese and cauliflower mixture back into the roasting dish, sprinkle over the parmesan and return to the oven for 10-15 minutes, or until the cheese is golden-brown and the sauce is bubbling. Serve as a supper dish with a green salad.
