We are #VAstrong Together. In 2019, the Virginia F&B segment enjoyed robust sales and tourism. And then, in March of 2020, COVID-19 turned off the light switch. Overnight, restaurants, farm markets, shops, and craft beverage makers had to pivot to a new “way of business.” These are our friends, our clients, and the market that we love. Team DW&S decided to invent some ways to offer support. Here are a few of the ways… We posted many stories, recipes, photos, and book reviews to our website as blog posts. Check out the website, www.DineWineAndStein.com And we re-purposed a fan chat room on FaceBook and opened it to the public. Now, anyone can browse @DWS Food And Beverage Lovers of Virginia. We encourage those managing a Food & Beverage business to post to this page at no charge. Now, the public group is filling with curbside menus, promotions, and recipes. If you would like to support local business, we encourage you to visit this open group page. It is updated several times a day. Team DW&S continues to post on all brand social media pages. Support local businesses by sharing the posts. Many Virginia business leaders pivoted fast. Out of a crisis comes ingenious ideas. We have seen many creative ideas across the Commonwealth of Virginia. Restaurants introduced Curbside Pickup and Family Style Meals. Bars and restaurants are now delivering or offering craft cocktails to go. Wineries, cideries, and distilleries are now offering virtual tasting parties. Will our magazine print edition return? Yes, but for early Summer, we are presenting our second eBook, “Welcome Back Virginia.” Enjoy this eBook as you relax in beautiful Virginia. Read it on your tablet, phone, or computer. Tasty Inventions Out of Crisis comes Ingenuity Ice Cream for the Win Have you ever had to pivot, in life or business? For the Virginia entrepreneur, a pivot is usually both a business and a life change simultaneously.

In the Spring of 2020, COVID-19 reached Virginia, and we were all asked to shelter at home. But there was a distant light on the horizon. Restaurants and craft beverage makers were still allowed to provide take out, delivery, and curbside pick-up. With hundreds of options, business owners knew that they had to create something with spark across the Commonwealth. Something that would stand-out. Virginia prevailed. The outcome included some delicious inventions.

A friend sent us a message early one Saturday morning. “Have you seen the Crazy Shakes at Mabel’s? I am going there today.” The best way to describe a Crazy Shake is a thick shake in a glass adorned with more custom-made treats. Actually, the best way to fully understand this mega shake is to go to their online shop and browse the photos. Pre-order the shake and then make your way to Powhatan, Virginia. It is worth the drive!

Speaking of ice cream, Smileys Ice Cream, @smileysicecream, has invented some amazing Summer flavors, including fresh strawberry. Yes, each flavor on the calendar is lovingly made by hand. We know that we will be stopping by their shop at least once a week. Follow along as we post their ice cream flavor calendar all Summer.

A Special Columbian Treat in NoVA For a unique combination of fresh fruit, shaved ice, cheese, and ice cream, we stopped by Columbian’s Place at ChefScape in Leesburg, Virginia. We first saw these amazing photos, posted on the public Facebook Group, @DWS Food and Beverage Lovers of Virginia. So, we reached out to them to find out about their popular Summer Chaloa and their fruit salad. “Cholao” is a fresh similar colorful salad with all kinds of fruit and flake ice, condensed milk and sweet syrups of different flavours and are ideal for cooling you during the Summer.”—Graysi Medina

At Home with a Chef Mise En Place Cooking School Launches Online Classes

Learn to Make Cider Cocktails What happens when you’re planning to launch a new seasonal cider, and a pandemic keeps everyone from visiting your cidery? Bold Rock Hard Cider dealt with that exact situation earlier in May. It turned a challenging situation into an opportunity for innovation. Their approach included a drive-thru parking lot pick-up so that fans eager to try a new style could snag Pineapple Cider at their Nellysford Cidery while maintaining a safe distance and ensuring minimal contact. They built on a successful launch of Pineapple with a Facebook Live cocktail class to keep the fun rolling. Fans learned to make cocktails by following along with Lindsay Dorrier III, Bold Rock’s Brand Manager. Game on, Bold Rock! Team DW&S decided to invent our own pineapple cider cocktails, and Valley Pike Farm Market created one too. You will find the recipes included in this eBook. With its culinary studio temporarily closed in Shockoe Slip, Mise En Place Cooking School launched its cooking classes online, via zoom. Join Chef Christine Wansleben for Friday night cooking classes. Guests register online and will receive a grocery list with tips and techniques to cook along with friends. Class registration is $25 per household. You can find all of the details on their Facebook page, @miseenplaceRVA “Although we can’t host you in our kitchen, it doesn’t mean we still can’t cook together,” Wansleben said. “We can still interact in new ways, building and renewing relationships with every chop, dice & saute, and still maintain social distancing.” Kevin Clay, Big Spoon Co, participated in the first class as he posted on Facebook. Dinner looks great, Kevin. Also, Mise En Place is also offering private online cooking parties for corporate team building with a customized menu made for each group. n

FARM TO FAMILY: Locally Spiked Summer Smoothies With summer heating up, the state of Virginia is slowly finding its way back to “normal” amidst the outbreak of Covid-19. At Valley Pike Farm Market, we used our downtime to continue to move forward, try new Virginiamade beverages, and concoct some delicious local recipes. One of our favorite creations for the summer happens to coincide with Bold Rock Hard Cider’s release of their newest flavor, Pineapple. We love it on its own, and so does our community, but we’ve found a delectable new way to use the pineapple hard cider! With a little help of our Valley Pike Farm Market team, we’ve created a spiked summer smoothie made with fresh fruits, local honeys, and Bold Rock’s pineapple hard cider! Below are a few quick ingredients to gather from local small businesses near you: •

1 cup fresh mango

1-1/2 cup fresh pineapple

12oz. Bold Rock Pineapple Hard Cider

1/2 cup of fresh vanilla yogurt

2 Tablespoons of local honey

1-1/2 cup ice

Combine the ingredients in a blender and mix until smooth. Pour the mixture into your favorite chilled glass and enjoy, preferably on your porch with a Shenandoah Valley view!

A Social Media Win By Team DW&S

The day you are scrolling through your foodie social media pages, and you see this one... You know that Virginia foodie and craft beverage social media is on fire. Each day, the creations get bolder. “Who has it or where can I find it?” And as we all stayed home for weeks, we noted that we hardly ever saw a photo of a kale salad. Kale was out… replaced by some fantastic plates of food.

Flip through this eBook and read about some Tasty Inventions too. Many in the Virginia food & beverage segment came forward with some delicious ideas.

Virginia Craft Beverages It was not just the amazing food photos that caught our attention. Social media posts also showcased Virginia wine. On Twitter, Virginia came in second—only to TN—on tweets about wine. We joined the public group, @Support Virginia Wineries, during COVID, created by Nancy Bauer of Virginia Wine in My Pocket. The members of this public FB group know Virginia Wine and entertained many with their wine pairings and photos. Which Virginia wineries are open for on-site visits? Which is delivering or offer curbside pick-up? Here is the latest information from Virginia Wine in My Pocket: http://vawineinmypocket.com/Articles/1140?p=28030 And what about the To-Go Cocktails? Frozen cocktails, margaritas in mason jars, adult “Capri-sun style” pouches, and cocktails in cans. We enjoyed seeing all of your photos on social media.

The “Give a Biscuit” Campaign ISocial media also helped area restaurants support first responders and those on the front-line of the fight against COVID. Just one example is Richmond, Virginia based restaurant Salt & Forge. It brought some joy -- and biscuits -- to area hospitals during Nurses’ Week (May 6-12). Pulling together resources and connections, Salt & Forge was able to secure funding to prepare and deliver over 1,500 biscuits. The “Give a Biscuit” project was born out of necessity.

How could the restaurant keep its staff employed while closures across the country put many on unemployment? How could the restaurant support their community and uplift those in the trenches, responsible for caring for Richmond’s vulnerable? This project was an answer for both. The “Give a Biscuit” project was made possible by donations from SAVE RVA Restaurants, Richmond Academy of Medicine, FLAG RVA, and the generosity of Salt & Forge customers. Customers had the option to add a $5 “Give a Biscuit” to their orders, thus supplying one biscuit to a front-line healthcare worker. Watch the “Give a Biscuit”video here: https://bit.ly/BRclassdws

A Time Capsule Our social media team continued to post several times a day. We posted on our usual social channels and the public FB group, @DWS Food and Beverage Lovers of Virginia. We shared menus, farm market news, and recipes. We offered anyone in the VA food & beverage segment free posts too. In the coming years, we will probably often think back to 2020. We stayed at home for weeks and enjoyed food and beverage photos posted from friends, family, and even strangers. The local food and beverage lovers of Virginia pulled together to support a cause. Team DW&S hopes that you download this eBook and keep it. It is a time capsule of photos from social media during our fight against an invisible enemy—COVID 19. It is a testament to #VAstrong Together. n

To Those That Ordered #TakeOut—Thank You As we reflect back to early 2020, we remember sitting around a restaurant table with friends and family. We shared a tasting flight of our favorite craft beverages, paired with an ample menu. Our fight against COVID-19 changed the Virginia food and beverage market, like flipping a light switch off. Sadly, some iconic Virginia restaurants closed their doors forever. But, thankfully, some were able to pivot to new ideas. Hello‌Family Meal Deal!

We first experience a Family Meal Deal from Devils Backbone in Nelson County, Virginia. The DW&S HQ is in the area, and several of our writers live close-by. We each found the

boxes full of food to enjoy at home. Just follow the easy-to-understand instructions and re-heat your favorite from DB in your own kitchen. Enough to feed a huge family,


or two people for days. (Now, we are looking for the restaurant that has the Family Diet Box) Soon, #TakeOut meal deals flooded social media. Tacos to feed a crowd, fried chicken for at-home picnics. Creativity abounded, and so did the options. Curbside Pick-Up became the catch-phrase. #TakeOutTuesday became a social media tag, a national campaign. That’s when a public Facebook group caught our attention, @RVA Dine-Take Out & Delivery Options. Started by Kevin Clay, a Richmond Food & Beverage marketer and owner of Big Spoon Co, the public group soon went viral. As of today, the FaceBook group has 16,777 members. If you want to see some awesome foodie photos, this is the group for you. If you are craving a particular food, just post, and many will tell you where in the RVA metro area to find it. Soon, public social media groups opened in other Virginia regions.

#TakeOut provided some income to restaurants and their staff during a challenging time. We would like to thank each of you that purchased, ordered direct delivery, or used Curbside Pick-up. You did make a difference. As we are writing this story, most of Virginia has moved into Phase One of recovery from COVID. Many restaurants are now offering outdoor dining. Some are waiting until a later phase to offer on-site dining. The best news is that everyone that wants to support a Virginia restaurant has many options. Take Out, delivery, family meal kits, on-site patio dining, and possibly indoor dining soon. If you do not feel comfortable dining on-site, then please still order #TakeOut…every order helps get the Virginia food industry back on its feet. n

2020 TREND: The Food & Craft Beverage Weekend Escape By Paula Thomasson

Survey DW&S readers and you will find that they often download our published weekend get-a-way guides. Include some delicious food, craft beverages, and some Virginia history, and you have a memorable weekend. A group of Northern Virginia entrepreneurs and business leaders are collaborating to provide a ready-made experience for those who are searching for a planned weekend. The alliance has already created a Virginia food and beverage experience that will “wow” foodies and craft beverage lovers. The joint effort first caught the attention of Team DW&S. When Cork & Keg Tours partnered with ChefScape to provide a cooking class and Loudoun County wine tour as a day-long experience. Here is the day that caught our eye… Imagine starting at ChefScape, where you will learn to make Thai Tappas. You are handed a glass of sparkling wine as you arrive, and Chef Heather then teaches you to make a four-course Thai Tapas menu. (You will even create two of the four courses yourself.) Pair your masterpiece with a glass of wine or beer and enjoy your lunch. But, your day is not over… After lunch, you will be whisked away in luxury transportation to visit both Lost Creek and Fabbioli

This promotional day was in February 2020, but you can create your own day or weekend with this group of business owners. Here are some ideas. But first, Where to Stay for the weekend? Virginia’s Craft Beverage Trails are OPEN Virginia’s beverage trails are open for business. As Virginia’s craft beverage industry slowly reopened, we began receiving #DWSfan photos from across the Commonwealth. Along the way, everyone discovered some favorite cold cans and bottles that will surely be Summer favorites.

Virginia Wine Trails DW&S Fans traveled from the Blue Ridge Mountains to the coast to enjoy Virginia wine. As wineries on the Shenandoah Valley Wine Trail and the Chesapeake Wine Trail began to open, fans started sending us photos. The cans of wine at Bluestone Vineyard are going to be a hit this Summer. They remind us of the Cold Cans Competition from Summer 2019. So, we asked our fans to send us photos of their favorite Cold Cans and Bottles for Summer 2020.

Cold Cans and Bottles for Summer 2020 On the Nelson 151 Trail, in beautiful Nelson County, fans discovered three Summer favorites. Blue Toad Hard Cider has a new line of skinny hard ciders—Granny Light. The lemon is perfect to also mix with some vodka and a slice of lime.

Also, on the Nelson 151 Trail, fans found both the Blueberries on Acid and the Raspberries on Acid at Blue Mountain Brewery. Here’s a description of Raspberries on Acid from the brewmasters at Blue Mountain: “Raspberries on Acid is a tart imperial witbier that is kettle-soured with Lactobacillus and fermented with one pound per barrel of raspberry puree. The beer is fermented in a local First Colony wine barrel that previously held their Meritage Blend. It is, quite simply, like drinking a raspberry.”

Did you know that the Brew Ridge Trail is the oldest and original craft beverage trail in Virginia? Here’s a list of breweries that you can visit as you make your way through the valleys of the Blue Ridge Mountains.
